aker extraordinaire Anil Kumar Singh has helped the United Arab Emirates (UAE) achieve first place in Jamaica Blue's International Food Art competition, with his delectable chocolate fondant recipe, beating dishes submitted from Australia, New Zealand, China

His talents and accomplishments are not going unnoticed, as Anil has recently been promoted to Head Kitchen Coordinator – New Store Opening Support in the UAE. In this role, he is responsible for the training of all of the kitchen staff to ensure that Jamaica Blue's high standards are followed in all cafés. "Presentation, quality control and food safety standards are of the utmost importance," says Anil. Congratulations Anil! and Singapore. Anil, 28, joined the Jamaica Blue team at the IBN Battuta Mall Dubai six years ago. Prior to moving to the UAE, he was working with some of India’s leading hotels as an in-house baker. His skill in the kitchen is legendary, to the point that Anil’s carrot cake has become famous with customers at the IBN Battuta Mall in Dubai. Several regular patrons have placed orders for whole cakes! The talented chef is passionate about food and enjoys experimenting in the kitchen and exploring how different ingredients can complement each other. He has a particular interest in desserts and sweet treats, which prompted him to submit his recipe for chocolate fondant in the International Food Art competition.

he Mackay cook was declared the winner following the Grand Final Cook-Off, held in Sydney in September, which saw him work in a team of three to create and serve an inspiring three-course menu. Sam wins a $1,000 gift card, which the talented cook plans to put to good use on a well-deserved holiday. With more than seven years of cooking experience and almost two years at Jamaica

Blue Mackay Canelands, Sam beat more than 90 competitors from across Australia and New Zealand to make it to the national final of the Golden Cuisine Challenge. Sam is thrilled to have taken out the top prize, saying he entered the competition to challenge himself and see how he shaped up against Jamaica Blue competitors. “I think passion, creativity and an eye for detail are the key ingredients that make a great

chef,” he says. “Personally, the part of being a cook I love most is watching the joy on people’s faces as they eat the food I have created for them.” On the day prior to the Grand Final Cook-Off, six state finalists travelled to Foodco head office in Sydney to tour the training centre. Here, they were given the opportunity to familiarise themselves with the kitchen and the equipment they would use in the final competition.

The six cooks then participated in the first phase of the competition. They were given time to prepare and produce a spring-inspired seasonal dish to feature in their own food market stall, with each finalist creating 50 bite-sized samples based on their own original recipe. At their stall, each person then attempted to entice staff in the Jamaica Blue head office to sample their dish and vote for them to earn bonus points. All finalists also participated in a session of upskilling at Cucina Italiana Cooking School, where they shared an evening of hands-on cooking.

Sam and his fellow competitors were evaluated and scored based on each of these

For Thomas Schnetzler, Master Chocolatier at Lindt Australia, producing heavenly chocolate has been a life-long calling. By Shane Conroy

istening to Thomas Schnetzler talk about his childhood in Switzerland, images from Charlie and the Chocolate Factory float to mind as he describes the boyhood delight he felt peering through the windows of his village’s artisan chocolate shop.

“I come from a small town outside of Zurich which is probably more famous for watches than chocolate,” says the enthusiastic maître chocolatier at Lindt & Sprüngli Australia. “But growing up in Europe, virtually every small town had their own chocolate shop, so as a little kid seeing the

“My mum was also a really good cook, and I think I had a passion for food from a young age. I was always in the kitchen licking the spoons!” - Thomas even then it was really coarse and grainy – it wasn’t like what we know chocolate to be today.” At the same time SprüngliSchwarz was inventing new ways to use chocolate in his pastry shop, a chocolatier by the name of Rodolph Lindt in nearby Berne was hard at work developing a new method of processing chocolate. “When he was 24, Lindt invented a machine and a process called ‘conching’, which is a superior method of refining chocolate into a product with the rich, creamy texture we know today. Of course the machinery has changed a little

bit, but the principle remains exactly the same as it was 160 years ago.” Then, in 1899, Sprüngli acquired the Lindt chocolate factory in Berne along with the expertise of its brilliant head chocolatier, and together set about creating the world’s finest chocolate. Today, Schneztler continues their work in the test kitchen at Lindt & Sprüngli Australia’s Victorian head office where he creates decadent recipes that feature in magazines and in the company’s marketing material. “We do monthly recipes exclusively for our 182,000 Facebook followers. We put ideas forward and work on new recipes, and experiment with flavours,” he says. “With all things in food – and coffee is the same – creating a premium product is all about the quality of the ingredients that go into it. We source the very best cocoa beans from around the world and, when we’re looking at milk chocolate for example, we’re spoiled in Switzerland with really good quality dairy products which make a really rich, creamy and silky milk chocolate. “Technically you only need three or four ingredients to make chocolate, so the process itself and the skill of blending and roasting the beans is really crucial to set the chocolate apart.”

chocolatiers creating beautiful window displays for Easter and Christmas was really fascinating. “My mum was also a really good cook, and I think I had a passion for food from a young age. I was always in the kitchen licking the spoons.” Schneztler traded his mother’s kitchen for an apprenticeship as a chocolatier in Switzerland, and went on to work his way around the world in a series of five-star hotels. When his journey led to Australia, the experienced young chocolatier noticed the success Swiss company Lindt & Sprüngli Australia was having in the domestic market, and felt a pang of patriotic pride. “I sent a note to them saying that if they ever need a chocolate expert, let me know. And they did,” he laughs. “That was nine years ago.” Schneztler and Lindt & Sprüngli share a common story. The company’s origins can be traced back to a small pastry shop in Zurich’s old town when, in 1845, confectioner David Sprüngli-Schwarz added an emerging delicacy called chocolate to his menu. “When chocolate first came to Europe from South America it was only used as a beverage. It wasn’t until the early 1800s that it became something people could eat,” says Schneztler. “But

4 Tbsp. Caster Sugar 2 Tsp. Vanilla Extract 1 Punnet Strawberries

French Croissant Bread & Butter Pudding Made with Lindt Makes 12 portions

Ingredients 5 Croissants ¼ Cup Orange Marmalade 150g Lindt Excellence 70% Cocoa – Roughly Chopped ½ Cup Dates - Roughly Chopped 1/3 Cup Raisins 9 Eggs 1 ¼ Cups Cream

2 Cups Milk ¼ Cup Caster Sugar 2 Tsp. Vanilla Extract 1 Tsp. Ground Cinnamon (Vanilla Ice Cream And Icing Sugar To Serve)

Method 1 Preheat oven to 160°C 2 Lightly spray a deep 24cm x 24cm baking tray. 3 Cut Croissants in half horizontally and spread evenly with marmalade. Then cut in half again vertically. 4 In the baking tray, place the croissants. Scatter the chocolate, dates and raisins over and in between croissants. 5 Whisk together the eggs, cream, milk, vanilla essence and caster sugar.

6 Gently pour egg mixture over croissants. 7 Leave to sit for 10mins so that the egg mixture is slightly absorbed by croissants. 8 Sprinkle the cinnamon on the top. 9 Bake for 30-40 mins or until the egg mix is set. 10 Serve warm from the oven with ice-cream, or refrigerate for 2 hours if cutting into 12 portions.

Dark Chocolate & Pumpkin Loaf Made with Lindt

Makes 10 Slices

Ingredients 1 ½ Cups Caster Sugar 250G Peeled Pumpkin Cut In 2cm Pieces ½ Cup Vegetable Oil 1/3 Cup Water 1 ¾ Cups Plain Flour 2 Eggs 1 Tsp. Ground Cinnamon

½ Tsp. Ground Nutmeg 1 Tsp. Baking Powder 1/4 Tsp. Salt 180g Lindt Excellence 70% Cocoa – Roughly Chopped ½ Cup Walnuts - Roughly Chopped

7 Finally add the chocolate chips and walnuts. 8 Fill loaf tin with the mixture. 9 Bake for approximately 1 hour and 15 mins or until an inserted skewer comes out clean. Cool on wire racks for 15 minutes before removing the loaf from the tin. 10 When cool this loaf will cut into 10 slices. We recommend serving the toast warm with butter and sprinkled with cinnamon sugar.

1 Preheat oven to 160°C. 2 Spray a medium loaf tin with canola oil and line it with glad bake. 3 In microwave bowl add the pumpkin then cover with cling wrap. Cook in the microwave for 6-7 mins then mash with a fork when soft. 4 In a large bowl, combine sugar, mashed pumpkin, oil, water, and eggs. Whisk until smooth. 5 In a separate bowl, mix the dry ingredients together flour, cinnamon, nutmeg, baking powder and salt. 6 Gently stir the dry ingredients into the pumpkin mix.

(Loaf can be stored in the fridge for up to three days or frozen.)

nce upon a time in television land, as Kerri-Anne Kennerley tells, it wasn’t the done thing for a woman to reveal her age, let alone celebrate her birthday. And for good reason. “I never celebrated birthdays simply because as a woman working in TV, announcing your age could be a death knell,” she reveals. “Professionally, it has never been a great idea to flag your age, so I always kept it quiet.” But on September 22 just a few months ago, when the TV veteran celebrated the milestone birthday of 60, she couldn’t help but enjoy a smile of satisfaction

eFirst Lady Kerri-Anne Kennerley has overcome the tough times of recent years to stand atop another milestone and now, the first lady of Aussie TV reveals why she is far from done. By John Burfitt

as she accepted the best of birthday good wishes. Kerri-Anne’s battle with breast cancer just two years ago changed the attitudes she once had about growing older. While she courageously beat the condition and was recently given the all-clear with her health, she says she also decided that birthdays are to celebrate. “After hitting a few health speed bumps, it makes you realise that birthdays are actually great,” she says. “When you face the very real prospect of not having a birthday at all, you realise it is time to celebrate life and just to get on with it. And that is what I have done.”

As she heads towards marking another milestone in a few years with her 50th year in television - she began on a kids TV show at age 13 - Kerri-Anne shows no sign of leaving behind the industry to which she has devoted her life. And she’s hoping she can be pushing those boundaries for years to come. When Kerri-Anne began her career, turning 40 meant retirement for a woman from TV. But now, at age 60, she is as busy as ever as host of two new

projects – Time of My Life for the Seven Network and Behind Mansion Walls for Foxtel. Time of My Life is an interview series in which a number of high-profile Australian achievers recount their tale of success and the best life lessons learned along the way. within their walls “Both these series are a change of pace for me, and I want that at this stage of my career – I want new challenges,” she says. “Time of My Life was great as it was a reminder I have spent the most interesting years of my life talking to some of the most interesting people in the world, and the reason these people are interesting is because they achieved something great. “But I have loved working on Behind Mansion Walls as I have a passion for the genre of true crime. It always reminds me that fact is so much stranger than anything fiction can come up with. The stories in this series are a reminder that greed is alive and kicking and will make some people do anything.” It’s a telling insight that even at this point of her career, when she has earned the title of First Lady of Aussie TV, Kerri-Anne says she still wants to learn how to be better in the way she works. After almost five decades in TV during which she hosted breakfast television’s Good Morning Australia for over a decade, lunchtime variety staple The Midday Show, almost another decade on the Mornings show as well as a celebrated swirl on Dancing With the Stars (“still the hardest thing I have ever done,” she laughs), she admits she now feels like the next chapter of her career has begun. And as it does, she says the industry that has been her home has changed, and for the better. “Society has changed and best of all, the way women are viewed on TV is so different today,” she admits. “We stand on the shoulders of many great

Pilates and cycling. “I have set up a room in my house with equipment and that seems to be making it easier than having to do the trip to the gym,” she says. “Then again, that five metre walk down the hall to the fitness room can sometimes be the toughest walk I do all day! “The thing is to keep working at it, and not to give up. I also made a resolution never to feel guilty about what I didn’t do yesterday or beat myself up over what I ate. But I will work to make up for that today and again tomorrow. It all balances out. But I am thrilled to say my health is terrific” Another resolution Kerri-Anne and John have made is to do more travel. “I love jumping on a plane, and John and I promised we would do more of it,” she says, adding she has just returned from a trip to Perth for her role as a director on the board of Golf Australia. “These days, if I can fit golf in with where we travel, then I am happy,” she says. “I want to do more of both, and if I can juggle that with everything else I am working on, then I am happy. “Look, I have never had a grand plan with everything all mapped. I just kept going and doing it and would look at the signs of what was going on, and just respond. You have to keep going but also keep working at it every step of the way. And that is what I still do every day.”

women who went before us and refused to give in when they turned 50 or 60. They kept going and on their own terms. “We are now upping those age limits and we are changing. Going back 25 years, women panicked about how many working years we had in front of us and when we would reach that use by date.” “I look at the range of women of all ages on TV now and think we are in pretty good shape. It is a better reflection of what we are like as a society.” The health battles of 2012, however, marked a dramatic turning point and made KerriAnne re-evaluate her lifestyle. While she is now cancer-free, she has since battled another health issue with Vitamin D deficiency. The result is a commitment to her health and fitness has been placed at the top on her daily agenda. “I believe fitness and weight are key indicators to overall health. Fitness is one of the key things we can do to boost our immune systems,” she says. “I am now always working towards keeping that in check and in working order. “Like everyone, I struggle to do it on a constant basis, but as we head into summer again, I feel I am on the winning side. And, of course, I go backwards occasionally. Time is always the challenge, but now I make time to do it, and everything else falls in around it.” Aside from her husband of almost 30 years, John Kennerley, golf has long been one of the passions of Kerri-Anne’s life. Her weekly fitness routine now also includes long sessions of walking, weight training,

hey are the words from Damian Cerini, the man behind Tour de Vines, which has specialised in winery cycling tours across Australia and Europe for the past 10 years. Cellar doors of wineries have become big tourist business, as visitors arrive to taste wines and learn what foods are best suited to what drops, as well as taking in the vistas of the regions. Being able to purchase bottles of wine direct from the supplier that has grown the drop from the time of planting the seed is added attraction.

hen Andy Allen showed up on the MasterChef set in 2012, he thought his days were numbered. So low was his confidence that the 24-year-old apprentice electrician told his boss he’d be back at work in Maitland on the following Monday. “My boss and I actually had a laugh about it when I told him,” says Allen. “I figured I’d have an interesting weekend and then they’d send me on my way.”

With one cookbook – The Next Element – already under his belt, he’s currently testing his mettle with a full-time chef’s role at Sydney restaurant Three Blue Ducks. “It’s funny because I never actually wanted to be a chef,” he says. “When I was 15 I worked in a restaurant as a dishy and I watched many of the chefs lose their passion for the job. But now that I’m in the grind, I’m loving it more and more.” While he’s not rushing himself, Allen has ambitions to open his own restaurant and is returning to the screen via his own YouTube channel – Andy Allen Cooks – that will document his travels around Mexico on a real food tour with Intrepid Travel. “It’s a really exciting time for me,” he says. “But whatever happens, I’m just so happy to be doing what I love.”

But Allen was to be in it for the long haul, eventually winning the series in the high-rating finale. “I honestly didn’t believe I could win it at any point during the series,” he says. “Even when I finished the dessert on the final episode, I was thinking that I’d probably curdled the cream or something.” Allen discovered his passion for food on fishing trips with his dad after experiments cooking their catch, and during his teenage years shunned MTV for the Food Network. “At 19, I’d skip out of uni lectures early so I could come home and watch cooking shows,” he says. “I’d ring mum on her way home from work with a list of ingredients to pick up so I could recreate what I had seen for dinner that night. It wasn’t about impressing anyone. Cooking was just something I loved to do.” But with no formal training, Allen felt unequipped to match it in the MasterChef kitchen with older and more experienced contestants. Yet it was his uncertainty that he feels ultimately worked to his advantage. “I knew I had so much to learn, so whenever we weren’t filming I had my head in a cook book. And I was so eager to learn – not just in the MasterChef kitchen, but even when all the contestants would come back to the house and cook dinner together. I think if I had have felt more sure of myself, I may not have been so open to taking on so many new skills.” With the bright lights of

t’s often been said that when times are tough, box offices of theatres around the world are busier than ever. It seems there is no escape we enjoy quite like the fun and spectacle of a night at the theatre. Our senses are in for a workout this summer as some of musical theatre’s greatest gems take to the stage. Returning due to popular demand are such favourites as The Lion King, The Rocky Horror Show, Mamma Mia and Wicked. But not all of the upcoming season’s acts are of an international flavour. In fact, one of the most highly anticipated

acts on the 2014 calendar is a strictly homegrown tale. What is little known is that one the most successful Australian movies of all time, Strictly Ballroom, began as a small stage play in the mid-1980s. It is now about to return to where it began, this time as a full-scale musical, which opens in Sydney in March. The movie’s director Baz Luhrmann will return to his roots to stage the adaptation of romance set against the world of ballroom dancing. He says the tale has been a 30-year journey. “I have often marvelled at how this story, born so long ago, has been in my life for so many

Week one Getting started

Hands up if you’re guilty of thinking, “Maybe I’ll start next week.” Procrastination is the enemy of exercise and if you’re serious about getting fit and healthy, then its time to make a change right now. “Make a start in the coming weeks to find time every few days to get sweaty as the weather warms up,” Leanne advises. We’re not expecting you to go from couch potato to Rocky Balboa overnight, but

start slow and build up. Week one should consist of three half hour power walks to revitalise your routine. And on the food front, it’s time to reassess your eating habits. Leanne says: “Write down a normal week and then start to take out the unhealthy things such as biscuits, take away foods and other high sugar and fat choices.”

WEEK TWO BUSTING BAD HABITS

A major part of beating the bulge is learning which habits are wreaking havoc on your health. Head for the cookie jar every time you’ve got the three o’clock blues? Can’t drag yourself to the gym during the week? A top tip is to leave yourself notes – think of it as mental motivation – to break your bad habits and to keep a goal in mind. Ideas to write include, “I love looking at myself in the mirror”, “I can succeed in losing weight” or “Should I have fruit instead?” Leanne says: “Bust your early morning hoodoo by getting your training done before the start of the day.”

So, it’s time to focus and target in on specific areas, like the core with exercises like crunches, planks and sit-ups. The trick to these exercises is to do them for as long as you can whilst maintaining good form. Leanne says: “Apart from your abdominals looking fantastic when they are strong they are also a crucial element for preventing injuries, getting stronger and improving your posture.”

Drink up

Drinking enough fluids everyday is essential for good health, especially over summer when it’s hotter outside and you’re likely to spend more time in air conditioning. Fluids from your favourite drinks such as water, juice, cordials, milk, soft drink, tea and coffee all count toward your daily requirement. However, aim to meet most of your fluid requirements by drinking plenty

of plain water and keeping sugar sweetened drinks to a minimum. Staying well hydrated makes it easier for your body to maintain energy levels, transport nutrients around the body, get rid of wastes and maintain your body temperature. If the body doesn’t get enough fluid, dehydration can occur. Even mild dehydration can cause serious side effects, such as headache, tiredness and light headedness, and dry, flushed skin. Most of the time it’s fine to let

your thirst guide how much you drink, but when you’re in the sun or exercising it’s important to drink regularly even if you’re not thirsty. Two litres of fluid a day is an average recommendation for adults, although this can change depending on your body weight. And you’ll definitely need more than this if you’re spending time in hot weather or if exercising. In both of these cases, aim to add an additional 2 glasses of fluid (500ml) for every hour you’re in the heat or spend exercising.

DOES CAFFEINE CAUSE DEHYDRATION? For many years it was thought that caffeinated drinks such as coffee, tea, cola and energy drinks caused dehydration. But research shows that drinking up to 4-6 cups of instant coffee or 2-4 cups of espresso or plunger style coffee per day is unlikely to have negative side effects, including dehydration. However above these levels caffeine can cause other problems such as addiction and insomnia so enjoy caffeine containing foods and drinks in moderate amounts.

Keep these cut-out summer recipes

PINK LEMONADE 1 lime 15 mint leaves  100g frozen raspberries  400g ice

INGREDIENTS:  4 lemons - juiced  ½ cup sugar  1L water

METHOD: 1. Heat 1 cup of water in a microwave proof bowl in the microwave for 1 minute or until hot. Add the sugar and stir until dissolved. Add the raspberries then put aside to cool. 2. In a separate container, juice the lemons. Strain the juice to remove any seeds. 3. Slice the lime into half and then into thin

slices. Add this into the lemon juice. 4. Pick the mint leaves and add to the juice. 5. Add the raspberry mix to the lemon juice and mix together. 6. Poor the juice into a jug and fill to the top with ice. 7. Fill with 1L of cold water and serve.

CABBAGE SALAD WITH HONEY YOGHURT DRESSING

SALAD INGREDIENTS:  2 carrots - peeled, grated  1 fennel - finely chopped  1 lemon - juiced  ¼ of a green cabbage and ¼ of a purple cabbage - both shredded

 1 red capsicum - deseeded and thinly sliced  ½ red onion - peeled and thinly sliced  1 shallot - finely chopped  30g parsley - chopped  15g dill - picked

METHOD: 1. Preheat oven to 200C. 2. In a bowl, mix together the cashews with the cumin, paprika, salt, sugar and water. Spread out the nuts on a baking tray lined with baking paper. 3. Cook nuts for 4 minutes take out of the oven to cool. 4. Place the chopped fennel and lemon juice together in a container; this will stop the fennel from discolouring.

Leave aside for 5 minutes. 5. In a bowl, place the carrots, fennel, lemon, green and purple cabbage, capsicum, onion, shallot, parsley and dill. 6. In a separate bowl, mix together the Greek yoghurt, dijon mustard, honey, oil, salt and pepper. 7. Mix together the vegetables and dressing. 8. Serve in a bowl and garnish with cashews, dill and parsley.

BEEF AND BEETROOT RELISH BURGER BEEF PATTIES: 500g beef mince  2 tbsp dried mixed herbs  1 egg  ¾ cup dried breadcrumbs METHOD: 1. Finely chop the onion. 2. Place all ingredients in a bowl and mix will until combined. 

BEETROOT RELISH: 450g canned beetroot  1/3 cup red wine vinegar  1 red onion METHOD: 1. Finely chop the onion. 2. Drain the beetroot and roughly chop in a blender or dice the beetroot on a chopping board. 3. Sauté the onion in a 

3 tbsp sour cream 1 tbs salt  1 tbs pepper  1 red onion  

3. Separate the mix into 5 patties and press into a round flat shape.

SERVES 5

½ cup brown sugar  ½ tsp salt  1 tbs olive oil medium sauce pan in the oil until soft. Add the beetroot and remaining ingredients then mix well. 4. Boil the relish for 10 minutes or until reduced. Remove from the stove. 

1 cucumber - sliced ½ cup mayonnaise  3 cups mixed salad  1tbsp olive oil  

METHOD: 1. Set the oven at 180 degrees. 2. Heat the 1 tbsp. of olive oil in a frying pan. 3. When hot, add the beef patty and cook for 3 – 4 minutes on each side until cooked through. Flatten the patty if necessary. Place in the oven on a tray to finish cooking, for approx 5 minutes. 4. Warm the sourdough rolls in the oven. 5. Warm the beetroot relish

in a pot on the stove. 6. Take out the rolls and cut in half. Spread the mayonnaise on the bottom half of the roll. 7. Top with salad, sliced tomato and sliced cucumber. 8. Place the patty on top followed by the beetroot relish. 9. Finish with the top of the burger and serve. (Patties and relish can be made the day before and stored in the fridge.)

RICOTTA AND BERRY PANCAKES INGREDIENTS: 2 cups flour  2 tsp baking soda  2 tsp baking powder  ½ tsp salt  3 eggs  1 cup milk 

1 cup yoghurt 3 tbsp butter - melted  1kg mixed berries  1 cup sugar  2 cups ricotta  Spray canola oil  

SERVES 12 SMALL

6. In a frying pan on medium heat, spay with canola oil and ladle in a small amount of pancake mix to the centre of the pan. 7. When bubbles form on the surface of the pancake, use a spatula to flip the pancake. 8. When the pancake is golden on each side, remove from the pan and place on a tray. 9. Serve the pancakes on a platter with the berries and ricotta in separate bowls to accompany.
