he recently refurbished Cranbourne Park Shopping Centre has gone through extensive renovations worth an estimated $110 million over the past 12 months. It’s also become the home to one of our newest Jamaica Blue cafés, run by husbandand-wife team Sophia and David. The couple were already running another food business in the centre before launching Jamaica Blue, which is a fresh addition to the new dining and entertainment precinct. “We’ve been here for five years already with our Muffin Break store,” Sophia explains. “We took on Jamaica Blue because we wanted to expand our business and our first franchise experience was fabulous.” Having swung open the café doors on March 26 this year, Sophia says they’ve already amassed a loyal following of locals keen to come in for a cuppa and some great food, as well as the morning exercisers who take part in the centre’s twice-weekly health walks.

“We’ve got lots of regular customers already. Because we had the Muffin Break, many of our customers came in to say hello and have now followed me over to Jamaica Blue, and go between the two!” she says. Sophia also says it’s been great to be involved in the reopening

of a well-established shopping centre, as it gives customers a chance to rediscover an old haunt. “It was a massive opening and the crowd numbers went well up,” she says. “It’s calmed down a bit now, but the relaunch has really been great for business.”

ox Hill Central, located in Melbourne’s eastern suburbs, is the prime location that Vincent Zeng settled on to set up his Jamaica Blue café in April this year. “Vincent is Chinese and Box Hill has a large Asian community,” store manager Paul tells Jamaica Blue Escape. “However, despite some other stores altering their food offering, he’s chosen to stick with the traditional Jamaica Blue fare.” It’s a smart move, as the freshly-prepared food and stylish café setting has been well received by a growing group of loyal customers. Box Hill Central is also unique in that it’s home to its very own train station that stops right in the shopping centre! Breakfasts are proving the popular menu choice so far, as commuters make their way to their daily train ride and stop

by for a coffee and food fix as they start their day. “Our Chicken and Mushroom Crepes are proving popular, but our Mini Breakfast Frittatas and Big Breakfasts do exceptionally well too,” Paul says.

an eight-cinema complex and an ice skating rink. “We’re right near The Hive and the outdoor area near the movies. We’ve really got the best of both worlds, because we’re close to the fun and then if people come in to do their grocery shopping, we’re near to them as well,” she says. The most popular menu items so far “would have to be the Avocado Smash and Maple Bacon!” Sarah says. “I love the avo smash, but I also love

the Salt and Pepper Calamari Salad.” As new business owners, Sarah and Steve are working overtime to introduce Erina Fair shoppers to the Jamaica Blue way of life. As such, we couldn’t resist asking: how many cups of Jamaica Blue’s fine coffee does Sarah make her way through on an average day? “Just the one, to get me through,” Sarah jokes. “But I know it’s always going to be a good one!”

The other factor in their favour is their location in the popular centre, which includes

Australia’s best coffee isn’t confined to just one place, but is available at many café hotspots across the country; after all, Jamaica Blue prides itself on supplying the freshest cups of brew you’ll have the pleasure of sipping. But two locations now stand out as the “cream of the crop”, after they placed first in Jamaica Blue’s annual Barista Championships!

rom Murdoch in the country’s west to Cooroy in south-east Queensland, coffee aficionados Australia-wide are covered when it comes to tracking down the best brew in the country. Nineteen-year-old Hannah Betham, hailing from Jamaica Blue Fiona Stanley Hospital at Murdoch, creamed her competition at the grand final of the 9th annual Jamaica Blue Barista Championships, held in June 2015 at the Foodco Centre of Retail Excellence at the Entertainment Quarter in Sydney’s Moore Park. Franchise business owner and trained barista, Nicholas Comino, 30, was then crowned the winner of the 2nd annual Jamaica Blue Franchisee Barista Championships. Hannah competed against five other Jamaica Blue baristas in the grand final. The shortlist of finalists was drawn from a pool of over 120 baristas across Australia who entered the competition.

Nicholas was one of three franchisee grand finalists who knocked-out entrants from 40-plus Jamaica Blue cafés across Australia, before he took out the top prize in the final round of the competition. After producing 12 cups of premium-quality coffee within just 15 minutes, the panel of expert judges declared Hannah the 2015 Jamaica Blue Barista Champion, saying they were impressed with her exceptional technical skills, confidence in her presentation, and incredible coffee knowledge. “I was so surprised when they called my name! It truly proves practice makes perfect and my advice for great tasting coffee is perfect extraction, silky smooth milk and fast service,” Hannah says. “I’m ecstatic to have won the title for Murdoch and I can’t wait to go back to my customers and continue making them delicious coffee and latte art designs.” Meanwhile Nicholas, known as

The winning formula Grand Final judge and Jamaica Blue National Brand Manager, Drew Eide, said the quality of talent displayed by this year’s finalists was exceptional. But what did it take to truly stand out? “To make it to the Grand Final is an incredible accomplishment and I am very proud of this year's grand finalists. However, no matter what the task and the amount of practice that one puts in to it, a degree of genuine passion is needed to be the best. Hannah and Nicholas are clearly passionate baristas and are an asset to Jamaica Blue and to the coffee-lovers of Australia," Drew says. In addition to winning the coveted title of 2015 Jamaica Blue Franchisee Barista Champion, Nicholas has won a week's supply of Jamaica Blue coffee and Vitasoy milk for his Jamaica Blue café at Cooroy. Barista champion Hannah won a La Spaziale Coffee Machine and Grinder (valued at $3,500), along with professional mentoring and entry into the prestigious DaVinci National Coffee Chain Competition event, held in Melbourne in September 2015.

something of a latte artist, blew the judges away with his engaging performance and excellent latte art skills, with his cappuccino being a particular favourite. “I have just started out on my coffee journey and my goal coming into this competition was to have the best coffee on the Sunshine Coast, so this is just such a great feeling,” Nicholas says.

The street food revolution has captured the hearts of everyone from time-short city workers to Michelinstarred chefs. Now, Jamaica Blue is hitting the streets with a new range of street-food inspired dishes. By Shane Conroy

food after his travels to South East Asia inspired his new venture, dubbed StreetXO, that puts a kerbside spin on the finedining cuisine at his multipleaward-wining Madrid restaurant, DiverXO. And the fabled Michelin reviewers came calling when former Four Seasons chef Mak Kwai Pui opened Hong Kong holein-the-wall dumpling joint Tim Ho Wan, which became a global food destination when it was awarded a Michelin star. Celebrated as the ‘cheapest Michelin-starred restaurant in the world’, diners are known to queue for more than an hour to sample its cheap-as-chips dumplings, and, after a rapid international expansion, the restaurant now boasts outlets around the world. For Heslop, there’s an aspect of authenticity to street food that makes it so hard to resist. “Street food is essentially comfort food that connects us to the familiar,” she says. “When we were researching traditional Jamaican flavours, for example, we found a lot of fruit and meat pairings. “My team and I initially had a laugh that it reminded us of the ham and pineapple pizzas from our childhoods. But we realised this is familiar comfort food for many Australians. This inspired us to add pineapple to our Jerk Chicken Burger, for example, which is both authentic to Jamaican cuisine and connects to an Australian classic that we all love. “I think this is the real secret, and pleasure, of street food.”

W

hen Jamaica Blue Executive Chef Danika Heslop was tasked with developing a new range of Jamaican-inspired dishes, she instinctively turned to the street food revolution for inspiration. It’s a trend that’s swept cities around the world as hipster taco trucks and artisanal dumpling stands have increasingly become mainstay culinary attractions on busy CBD streets. And, says Heslop, there’s good reason for our hearty embrace of street-based snacks. “The beauty of street food is its simplicity,” she says. “The best street food serves beautifully balanced flavours in every mouthful, which gives it that real ‘wow’ factor. Street food can’t be mediocre. Vendors focus on one thing and do it so well that people are willing to line up for it.” It is this seductive balance of flavours and wait-worthy quality that Heslop is looking to recreate with Jamaica Blue’s range of Jamaican-inspired menu specials. “When the team and I started the development process, I wanted to create dishes that could be picked up and eaten like street food, with every mouthful delivering that perfect balance of sweet and salty, with just the right amount of heat and a fresh citrus finish.” That’s a quest that has attracted many of the world’s top restaurant chefs who are increasingly turning their backs on fine dining for a return to simple street food fare. he biggest flower show in the Southern Hemisphere, Canberra's Floriade is one of the main attractions of Australia's national capital. This year's 28th Floriade carries the theme of Reflection, paying tribute to the 100th anniversary of the ANZAC landings at Gallipoli in Turkey during World War I. The festival's Dianne Ireland reveals why this year's Floriade will offer a change of tone.

he Bondi to Bronte clifftop ocean walk in Sydney is spectacular at the best of times, but when this unique art exhibition is held, it becomes a feast for the eyes with its extraordinary collection of images, shapes, colours and creations. The stretch of the walk between Bondi and Tamarama is transformed into a 2km long temporary sculpture park, featuring over 100 sculptures by artists from Australia and across the world, all with views of the Pacific Ocean as their backdrop. This year, the festival received 500 submissions, from 41 countries and six territories around the world, with the final selection of artists yet to be named. So popular has this art by sea concept become, Sculpture by the Sea is now also being staged on the other side

he grand southern city of Melbourne dons its fanciest frocks and highest hats for the spectacular that is the Spring Racing Carnival, across six main horse racing events. y some standards, Amanda Keller really should have enjoyed her time in the spotlight by now, and at her age, be settling into an easier pace. For a long time, that was the rule for women in broadcast media. Once they hit the age of 50, it became harder to secure prominent roles as the next generation eagerly waited to take their place. Just try applying that rule today to Amanda. At age 53, she is enjoying her greatest success as the host of the hit lifestyle TV show The Living Room, and as one of the reigning queens of radio on Sydney’s WSFM. While she has been a regular on TV for over three decades, it is finally as the host of her own show that the real Amanda has emerged in all her many colours. “I’m truly astonished that in my 50s, I am busier than I have ever been,” she admitted in a recent interview. And while this new wave of career success since The Living Room launched in 2012 may have caught her off guard, Amanda has only one intention now - to enjoy the ride for all it is worth as this is not how she ever imagined her career plan would

r e e r Ca have panned out. “I’ve got a bit in my diary that I wrote when I was a teenager,” she recalled. “I pictured that at 40 I'd be staying home and doing the ironing. “I am just so grateful to be the advanced age of 53 and feel that, professionally, it just keeps getting better and better.” And there are no arguments about that. Earlier this year at the Logie Awards, The Living Room marked its place by taking out the award for Most Popular Lifestyle Show – a category that its opponent Better Homes and Gardens had owned for well over a decade. “It feels like such an amazing achievement … we’re really starting to hit the sweet spot,” Amanda said after the win. The industry recognition for one of TV’s perennial performers comes after a 30-year trek through many and varied areas of the media landscape. In recent years, she has regularly featured on shows like Talkin’ About Your Generation, Spicks and Specks and even twirled it up on Dancing With the Stars. Her entrée into television in the mid-1980s was as a researcher on the afternoon

kids’ show, Simon Townsend’s Wonder World. She continued in behind-the-scenes roles for Good Morning Australia and The Midday Show, where her effervescent personality and whip-smart mind attracted the attention of the show’s host, Ray Martin. “I bow down to Ray, because he was the one who said, ‘You should really have a crack at being a reporter,'" Amanda recalled. “And in the following years, lifestyle TV really kicked in.” And with it, Amanda’s star began to shine. After Midday, she joined shows like Extra Dimensions and then Beyond 2000, where she won many awards, including the United Nations Association of Australia’s Media Peace Award. It was once Beyond 2000 finished that Amanda launched into radio as the sidekick of her old university buddy, Andrew Denton. The pair ruled the breakfast airwaves in the later ’90s, and it is where Amanda’s razor-sharp comedy style was honed. “Radio, unlike any other medium, unmasks you,” Amanda said. “It is you, raw and unplugged, every single

morning. There’s no other job I can think of where there is no filter between your brain, your mouth and the audience. You are making a million decisions in a single second and the potential for it to all go horribly wrong is great. That’s the thrill of it.” Looking back on the early years of her career, however, Amanda confesses she has a few regrets – the main one being that she was afraid of the big risks. “I wish I’d been less frightened of change,” she said. “I’m conservative by nature, and there’ve been times when even the most wonderful opportunities have terrified me and made me wish I’d never been offered them. Idiot! “I’ve still always taken the plunge, but I wish I could have done it with more enthusiasm and less anxiety.” One area where she did happily take the plunge was with producer Harley Oliver, who she has been married to for 23 years. They met while both were working on Beyond 2000. The pair are parents to sons

In her late 30s when she became a mother, Amanda quickly learned that becoming a parent brought a range of new challenges. “When we first married, I was travelling a lot for work and by the time we got around to thinking, ‘let’s have a crack at this’, it took its time,” she said. “We had been trying for years and it just hadn’t happened." Once her sons arrived, she discovered that while her life took on a joyous new outlook with her family, she was also relieved to discover she was still herself after all. “Before I had kids I imagined the experience of motherhood turned you into a combination of Mother Theresa and Sir Edmund Hilary!” she quipped. “You're still the same person on the other side of childbirth, you're still as selfish - not that I'm that, of course! “But I’ve been surprised to discover that I’m still ‘me’. I’m still impatient, still lazy domestically – all the things

I was before. But I feel a little vulnerable now. There are two little things in my life that I love above all else, and now the world can hurt me.” It has been through the eyes of her children that she has helped to put some of her own big dreams from childhood into new perspective – not the least of which is the value of where she finds herself today. A few years ago when she rediscovered her diary from her teenage years, she also found an old Snoopy bean-bag toy. It was to Snoopy that Amanda addressed her most personal diary posts. These days, her beloved toy takes pride of place on Amanda’s bed. “I used to write to him in my diary and now he lives on our bed as a reminder of how good my life is,” she told. “Snoopy reminds me that my 15 year old self would have thought all of this was great – this wonderful family and this job I love.”

We have had our Jamaica Blue café in Mackay for three and a half years, and it feeds our passions for food, coffee and dealing with customers. It also makes us stay focussed on what is going on with the business and what we need to do within the next 12 month period. The most important lesson I have learned this year is to never be afraid to ask questions. I don't care how long you have been in business, you are continually learning, and if someone is talking to you about something you have no idea about, then say so and ask them to explain it. It is amazing where those very honest conversations can lead you.

Jo Schneider trained as an engineer, but is today a business management consultant and entrepreneur in Adelaide. She says taking a broader view of her career has proven the most valuable lesson of all. I originally studied engineering at the University of South Australia and then worked as an engineer. A few years ago, I moved away from engineering and began my own management consultancy, DVE Business Solutions. I was always sure engineering was an excellent foundation for my career, but felt I had moved away on new paths. What I have learned in the past 12 months is you need to take a broader view and think about all the other ways you can use your skills and take up good opportunities. It is a matter of seeing your career in much broader terms. Earlier this year, I was asked if I would return to be the face of the new University of South Australia's advertising campaign. They said they asked me to be involved as I didn't just stick with engineering but had looked at all the other things I could do with my degree in recent years. Realising that made me feel I had come full circle in my work and made me look at my career as a much bigger picture. I always knew those

original engineering skills were valuable as they have also set me up to do so many other things. I now feel like all the pieces have come together. It is about having a level of calculated risk and having the confidence to go forward and trying new things. It is all about putting some thought into what you want and having a plan to follow. Last year I was thrilled to win the Telstra Young Business Woman of the Year (SA) award, and I am starting to do more with that, like writing a book and developing programs of leadership potential in young women to help them realise they can build careers from an early stage. People too often put on a brave face and think they should know everything, but that can be such a bad move. You are far better off just saying, 'Sorry, you have lost me – can you explain that to me in a simpler way please?' No matter who it is, that can really help as a far more effective way to be communicating. It comes down to just asking the simple question. Just knowing there are people around you can ask questions of really can make the world of difference. You might think you will look silly, but in the end it can lead to far greater understanding. In fact, it could be the smartest thing you do all day. Flexibility is the key to our success. Just because you did something one way a year ago or even six months ago does not mean that is the way it should be done now. Business changes fast all the time, so you need to look at what it is you have on offer and know what you have to work with to suit your customers. We were honoured last year to win the FoodCo award for Retail Excellence as well as our centre's Retailer of the Year award. We are also looking to open a new Jamaica Blue later in the year. So there are more questions ahead to be asked, and I am sure that is a good way forward.

“It's one of the oldest tricks in the book – nothing bounces natural light like a mirror. In a recent 1970s bathroom renovation we worked on, I wanted to allow as much light to flow through the space as possible. I used glass petitions to separate the bath and shower from the toilet, and then positioned the vanity and full length mirror on the opposite wall to the north facing windows. This reflected the beautiful natural light around the bathroom, creating the effect of natural light bouncing from both sides of the room.”

A grand entrance “We meet and greet people at the front door and entry, so this space should really offer a sense of welcome and a hint of who we are. It gives guests an insight into our personalities, letting them know what you and your family stand for. While the kitchen is always seen as the heart of our home, its still a service area and this is another area to focus on for making a statement – it is the ideal setting for a quick chat and a cup of tea.”

Don't let your springtime fitness resolutions get lost in the pace of the new season. Starting small and slowly can be the secret to making real change. By Blake Dennis

nce spring has sprung, it seems like the perfect time to dust off those fitness goals and get started on the path to a healthier you. But no matter how good the intentions, the sad reality is that as few as one in 10 people end up achieving their goals. It is a pattern Melbourne fitness coach Leanne Sklavenitis knows only too well from the parade of new clients she sees every spring. “Sometimes it just comes down to people biting off far more than they can chew,” Leanne says. “They arrive with a long list of great things they want to achieve, but find they can't maintain that kind of pace and so get deflated very quickly.” The secret to making a longlasting lifestyle change is,

Leanne says, to start small and start slowly. “If you just try to change one thing, and then continue doing that one thing, then that helps set you up in the long run,” she says. “I encourage people to start slow and steady and once those small goals have been achieved, then aim higher.” Leanne offered her top five tips for fitness success, and promises these small goals can bring on big results.

“None of us are moving enough in our daily life, and we need to change that. Every hour, get up from the desk and move – take a walk to the kitchen for a glass of water, move around the office or even do a few stretches. Not only will your entire body feel better, but you will be far more productive throughout the day.”

LEANNE SAYS: “Pick the one sugary thing you know you can do without, and then decide to cut it out. If weight loss or energy levels are your goals, you will quickly notice the difference. Again, just start by getting rid of only

one thing.”

CHANGE YOUR ATTITUDE The benefits of positive thinking are hardly new, but too many people try to change everything about their outlook in one go. Instead, target one area of your attitude that needs improvement, and try to look at life from a different perspective.

You can choose to be happy rather than feel like you are fighting your way through life. Due to rising rates of obesity, we hear so much about eating fewer kilojoules to manage our weight, however, many people may be eating too many kilojoules, while others aren’t eating enough or may be eating the wrong amounts at the wrong times of the day. The number of kilojoules in a food or beverage is a measure of the amount of energy it provides and on average, a person needs around 8,700 a day (to check your specific needs go to http://www.8700. com.au). If you’re eating too many kilojoules this can contribute to weight gain and

slow you down, in turn leading to lower energy levels. On the other hand, if you’re not eating enough kilojoules, you may not be getting sufficient amounts of energy to power your body through the day. Eating too much at night and not enough during the day can also lead to poor energy levels. A good guide to ensuring you’re eating the right amount of kilojoules is to eat every 3-4 hours, eat an amount that has you feel comfortable and satisfied without feeling overly full or still hungry and to monitor your weight over time. Weight changes provide feedback on whether the amount you’re eating is right for your energy needs.

Carbohydrate Surprisingly and despite popular diet myths, including enough carbohydrate in your diet is important to provide the body with sufficient energy. Carbohydrate is the body’s preferred energy source and comes from both starches and sugars found in a wide variety of foods. Excellent energy giving sources of starches include, barley, quinoa, rye, oats, wholegrain bread and legumes (kidney

Good sources of iron include lean beef, lamb, veal, eggs, green leafy vegetables and wholegrains.

Magnesium Often an overlooked mineral, magnesium is needed for many functions in the body including bone, nerve and muscle functioning but is also important

for maintaining energy levels. Magnesium can be found readily in plant foods like oats, rice bran, soybeans, peanuts, pumpkin seeds and sesame seeds. Eating a variety of nutrient rich foods everyday will ensure you meet your needs for the key nutrients needed to boost energy levels. It’s also important to eat regularly over the course of the day and in particular, to ensure you eat enough during the day, to prevent over-eating at night. SPRING RECIPES CARIBBEAN FISH TACOS

Fish Fritters Ingredients  500g Barramundi fish fillets (boned & skinned)  150ml Water  1 lemon (zest & juice)  1 tbsp. salt  ½ tsp. pepper  3 sprigs coriander  1/2 red capsicum  1 red chili  2 shallots  3 sprigs coriander  1 tbsp. plain flour  ½ tsp chili flakes  ¼ tsp paprika  1 egg

Method 1. Preheat oven to 180 degrees. 2. Place the fish in a baking tray. Add the water, lemon juice, lemon zest, salt, pepper and coriander. Cook in the oven for 15 - 20 minutes or until cooked. 3. Once fish is cooked cool slightly. 4. Discard the poaching water. In a bowl, gently break up the fish. 5. Finely dice the capsicum and chili (no seeds), and finely slice the shallots and coriander. Add these together in the bowl with the flaked fish. 6. Add the plain flour, chili flakes, paprika and eggs to the bowl. Gently mix all ingredients together. 7. Form rough golf size balls of around 30gms each, and place on a tray. Refrigerate until needed.

Makes 8 tacos sliced) 1 shallot (finely sliced)  2 sprigs parsley (chopped)  ½ cup roasted peanuts  1 tbsp. lemon Juice 

Method 1. Place all of the salad ingredients into a bowl and mix. 2. Refrigerate until needed.

To Assemble & Serve (Makes 1 portion) Ingredients  ¼ cup canola oil Taco Salad Ingredients  1/2 carrots (peeled & grated)  8 Mini tortilla wraps  100gm green cabbage (shredded)  ½ cup Mango & Kaffir Lime  100gm purple cabbage (shredded) Chutney from Hanks  ½ stick celery (sliced)  2 limes  ¼ red onion (peeled & thinly  3 sprigs coriander (to garnish)

Method 1. Pour the oil into a large pan on medium heat. When the oil is hot, add the fritters into the pan (you may need to do this in batches depending of the size of your pan). 2. Lightly press the fritter to flatten. 3. When it is golden, flip the fritter to the other side, and cook until hot and golden. 4. Heat the wraps on a plate and microwave for 15 seconds. 5. Place 1 tbsp. of mango chutney on each wrap. 6. Place a ¼ of a cup of taco salad on each wrap. 7. Place two hot fish fritters on top of the salad on each wrap. 8. Garnish with a lime wedge and a sprig of coriander then serve.

Ingredients  16 x 120g chicken thigh fillet  2 tbsp jerk spice mix  ¼ cup olive oil  6 pineapple rings (tinned pineapple)  6 burger buns (at Jamaica Blue we use brioche buns)  ¼ cup aioli  ½ tsp. paprika  3 cups rocket  12 slices tomato  2 gherkins (sliced)  6 tbsp. jerk sauce Method 1. Heat the oven to 180 degrees. 2. In a bowl, combine the chicken with the olive oil and Jerk spice mix. Mix together and then place on a tray in the oven for 25 minutes or until cooked. 3. In a bowl mix together the aioli and paprika. Set aside. 4. In a hot pan, place 6 pineapple

Jerk Sauce Ingredients ¼ cup sweet soy sauce (Kecap Manis)  ¼ cup water  ½ cup orange juice  1 tbsp. all spice powder  1 cup brown sugar  1 tsp. chopped thyme

¼ cup tomato paste ½ tsp. crushed garlic

Method 1. Add all ingredients into a microwave proof bowl and mix well to incorporate all ingredients. 2. Microwave on high for 5 minutes. Stir well and allow to cool.

Jerk Chicken Burger

Makes 6 burgers

200g pulled shredded beef 2 tbsp. parsley (chopped)  200g can black beans (drained and rinsed)  4 sheets puff pastry  1 egg
