C.O.R.E. is the Jamaica Blue Training centre for all of Jamaica Blue’s new franchisees, explains Natalie Brennan, head of Services and Support at Jamaica Blue Training. “It’s also a retail operation where we can trial aspects of the Jamaica Blue concept. It consists of a retail outlet that is open to the public, as well as a Coffee Training Room, Training Kitchen and a classroom environment,” she says. The multi-faceted new facility, that compliments the existing
cinema and shopping precinct at one of Sydney’s favourite entertainment destinations, will help to deliver a better overall customer service experience by giving Jamaica Blue franchisees more on the job, practical experience. “We have always had a centralised training centre where franchisees learnt how to run their business,” Natalie says. “But we wanted to give them more exposure to real-life situations. The retail store allows new franchisees to learn

skills in a safe environment with qualified trainers prior to going into their own business.” A great deal of time and effort is spent not only on the business owners learning the finer art of preparing and serving high quality food and coffee, but also mastering the back-end of the business as well. “Our franchisees attend three weeks at C.O.R.E. as part of their initial training when they buy a business,” Natalie explains. “New franchisees often don’t have the practical knowledge of coffee making or food preparation, so during this time there is a lot of practical skill learnt. We also teach them how to run their business using the Jamaica Blue systems to create a profitable store.” As an added bonus for customers, Jamaica Blue will also use the Centre Of Retail Excellence to trial new menu items that, if they prove successful, will be rolled out across our cafés around Australia and globally. “We are able to trial products and get real-time feedback in relation to what the customers think about the product,” Natalie reveals. “It assists in getting products to market faster because we can get that immediate response and make changes.” Ultimately, the buck stops with the food and that’s why Jamaica Blue’s team is always on the hunt for new menu items to compliment fan favourites – one of many ways to keep the business fresh. “Jamaica Blue offers two

amaica Blue Australia was thrilled to be awarded as first runner-up at the 2015 DaVinci Gourmet Australian Coffee Chain Championships, held in Sydney in September. The competition, staged by the Australian Specialty Coffee Association (ASCA), consisted of three intense rounds, where baristas from around Australia were tested on their coffeemaking and customer service skills. The first section was a latté art challenge, which required competitors to replicate three patterns in coffee foam as determined by spinning the Dairy Farmers Latte Art Wheel. Challenge two saw individual baristas come together in teams to create a signature beverage using DaVinci Gourmet syrups

– and then provide a business case to convince the judges why their creation deserved to be included on their café's menu. And finally, teams were judged on their level of service, with each group charged with the responsibility of fulfilling 20 distinct coffee orders within 10 minutes. They were judged on accuracy, time, consistency, cleanliness and customer service. The competition was designed to seek out and reward the cream of the crop within Australia’s coffee scene so, of course, Jamaica Blue put a team forward. It proved to be a tough competition with plenty of talent on display, but Jamaica Blue was able to nudge out the
competition to take the first runner-up position – thanks in large part to the rigorous training program run by Simon Au-Yeung, Jamaica Blue Coffee Trainer, and Jeremy Regan, Head of Coffee at Jahnus (Jamaica Blue’s coffee roaster). “All of our baristas undergo regular training to ensure topquality coffee is served at every Jamaica Blue store every day. We have in-house training programs that support our baristas and coffee experts to enable them to provide the best possible coffee daily,” Regan says. “Our baristas were judged on the core values and skills of our industry and to place in the top three, for the last three years in a row, is a testament to our employees and the training systems we operate.”

He may be a star in Hollywood and on Broadway, but Hugh Jackman reveals why it is so important he’s coming back home to Australia this summer. By Jenny Cooney Carrillo

“When I get off a plane, I start dreaming about swimming in our ocean. Australian beaches are magical to me.”
global star status as Wolverine in a series of big screen action epics, deserves his reputation as one of the nicest guys in Hollywood. So it makes sense that he views his new role with Qantas as an extension of that. “It means a lot to me and was not something I took on lightly,” he explains of his sponsorship deal. “I remember as a kid watching Rain Man (1988) when Dustin Hoffman’s character makes that announcement after Tom Cruise’s character says, ‘every airline has had a crash’ and he replies, ‘not Qantas, Qantas never crashed’ - and the entire cinema cheered!” he recalls with a laugh. “So there’s that sense of pride that all Aussies have and now here I am, 25 or more years later, working with Qantas.” Hugh Michael Jackman was raised in Sydney as the youngest of five children. After earning a journalism degree from University of Technology Sydney, he instead decided to pursue an acting career and graduated from the Western Australian Academy of Performing Arts in 1994. Fresh out of drama school, he landed a role in the ABC prison drama Corelli opposite veteran star Deborra-Lee Furness and the couple’s on-screen romance quickly led to a real one. They married in 1996 and have two children: Oscar, 15 and Ava, 10. But Jackman admits after more than 30 films over the past 15 years, it wasn’t until recently that he felt like he had found the right balance in his life between family and career. “I weirdly feel happier as I get older, and I think it’s because I used to put a lot of pressure on myself and that

t was the late Australian performer Peter Allen who wrote the musical love letter to his country, I Still Call Australia Home. But these days, it’s Hugh Jackman who embraces the anthem, and not just because he sang it on stage every night for his Tony awardwinning role as the singer in the Broadway hit The Boy From Oz. Even though we are sitting in a New York hotel room half a world away from Australia, the conversation often veers towards talk of home. Hugh, 47, recently joined Qantas Airlines as an official ambassador and at the same time, was preparing for his Australian stadium tour of the show, From Broadway to Oz. “I can check that box off my bucket list!” he admits excitedly. But the actor pauses as he looks out the window framing his adopted home’s skyline and nods at the suggestion that he’s becoming more patriotic the longer he’s been away. “Yeah, it’s interesting but fairly common isn’t it?” he muses. “I spend a fair bit of time away and I spent most of my childhood dreaming of travelling. I had a map of the world on my bedroom wall and all my brothers and sisters were backpacking and travelling to Europe and my mum was living in England so I just couldn’t wait to travel but be careful what you wish for,” he adds with a grin. “Now I feel that I have seen a lot of the world and increasingly I feel that pull to revisit places in Australia and spend time there with family and friends, so maybe I am becoming more sentimental with age.” Jackman, who cemented his

is lessening as I start to value different things,” he says. “Obviously when you start as an actor you are like, ‘will I pay the bills?’, ‘will I get another job?’, ‘am I any good?’ and these are simple questions I have mostly answered now, so I just value the quality times I have with my parents and my wife and kids and I value the experience of the job itself.” Jackman is a walking advertisement for his homeland, as he raves about his recent family holiday in Victoria’s Mornington Peninsula, and spending time at his favorite swimming spot, Sydney’s Bondi Beach. “My ritual is to wake up and I usually go to the gym, and then I swim in the ocean and every time, it never fails to get me, it’s so wondrous,” he says. “When I get off a plane, I start dreaming about swimming in our ocean. Australian beaches are magical to me.” The actor was nominated for an Oscar for his singing performance in the 2012 musical film Les Misérables but confesses dancing has always been another passion that he’s excited he can finally show off in his one-man show. “When I was 11,

a teacher said to me, ‘you have real talent as a dancer, and you should do dancing classes’,” he recollects. “But unlike Billy Elliot, I didn’t actually go to dancing classes because someone said to me, ‘you are a sissy if you dance’ and it wasn’t until I was 18 that I went with this person to see the musical 42nd Street and he told me, ‘I said something stupid to you when we were younger and you should be up there on that stage.’ It was too late for a dance career but I signed up for dance classes the next day and still love it.” After playing the clawed mutant Wolverine in seven X-Men films, Jackman confirms the untitled 2017 Wolverine movie will be his last. “It just feels like the right time,” he says proudly. If the franchise continues, who would replace him? “The first name that comes into my head is Tom Hardy,” he responds candidly. “But I was 30 when I got the role, so it might be nice to see a Wolverine at age 20 or even as a teenager.” Jackman likes to joke that his wife, actress and activist Deborra-Lee Furness, keeps him grounded (“when I was named

When he recently took his mother to the London premiere of Pan, the Peter Pan prequel in which he donned a wig, makeup and ruffles and feathers to play an over-the-top version of the pirate Blackbeard, she was recognised by press on the red carpet. “When asked by the third journalist, ‘oh your son is the nicest person in Hollywood’ she just responded, ‘in my day, I think we called it manners!’” he chuckles. “But I do love my job and I feel really lucky and actually blessed, so I don’t take it for granted. I am not always nice and there is darkness,” he cautions, “but I think that is one of the great things about my job actually, that you have to be in touch with that too.”

or some people, summer is the time of year when they take on the job of being the host with the most at many festive lunches and dinners. And with these party hosts, it always seems so very easy. The food is delicious and the atmosphere is so relaxed, as all the great tastes are rolled out and served up in the easiest of ways.
But it is not always so easy for every party host. It may be done with greatest enthusiasm, but the process causes enough stress to register on the Richter scale! Jamaica Blue's Executive Chef Danika Heslop admits she is often asked for advice by her family and friends on the easiest ways to get entertaining right. And, the master chef admits,

she always offers the same advice. “Just get as much as you can ready long before your guests come through the door – that’s the secret,” Danika says. “And be sure you have a good variety of things ready to go so there is always something on offer. If the guests don't like one thing, then there is something else on its way. “That’s where a lot of people get confused or overwhelmed when preparing for a lunch or dinner. They try to do too much, and try to do too much when the guests are already there. That then makes them become frantic and nothing is enjoyable. The more work you can do well in advance, the better it is for everyone.” Danika, the talented chef behind the menus and range
of treats served at Jamaica Blue cafés across Australia and New Zealand, suggests planning for a lunch or dinner party should begin in the days well before you open the doors and invite the first guest in. “If anyone saw me at home in action on the day when I have people over, you would see my ideal scenario is this - having the dish already prepared in the refrigerator, taking the plastic off and putting it on the table. That is what I call summer entertaining,” she confesses with a laugh. “What I mean by that is to get it all done well beforehand so that by the time your house is busy with people, all the work is done and you are literally just serving up, and enjoying the company of your guests.”
Danika adds that making the most of the great outdoors through the long, warm and easy living days at this time of year is paramount. So much so, it is outside at the barbeque that is the only area where Danika allows any cooking at party time. “And that is something I leave for my husband, Niklas, as that is his job,” she says with a laugh. “I’m happy to get the marinating done and have the meat ready, but I will leave the cooking to him. But the barbeque can be a good focal point to a party, as people like to gather around the grill while the meat is being cooked and chat. It is about making the most of all you are doing so that everyone – and that includes the host – have a great time.”

IT’S ALL IN THE PREPARATION “Whether you are marinating beef, lamb or pork for the barbecue, make sure it is all ready so all you need to do is take it straight off the fridge shelf and out to the barbeque,” she says. “It is the same with the stuffed pastries I like to serve. Have them ready to be taken from the fridge, into the oven and then straight to the table to serve.”

ENTERTAIN OUTSIDE “It is such a great time of the year, so make the most of being outside,” Danika says. “And eating outside in the fresh air is so much less formal than when you are all inside, which is why I love the barbeque as you are cooking out in the fresh air, and continuing that easy process of going from the grill direct to the plate, ready for eating.”
HERBS IN THE CENTRE “Fresh herbs are so readily available at this time of year, so when having a party, I place a couple of pots of herbs in the middle as table decoration,” Danika says. “The freshness of the herbs is nice to have on the table, and it also allows the guests to pick their own herbs and use them on their dishes. It also adds to the outdoors vibe.” FRUITS OF THE SEASON “One of the best things about summer is all the fresh fruits that are in season,” Danika tells. “I love mango and don’t know anyone who also doesn’t enjoy it. Fresh strawberries are also a favourite. A big fruit salad on the table during lunch will always be popular, and again, it is so easy to prepare beforehand.”
CATER TO THE SWEET TOOTH “Any lunch or dinner needs to finish with something sweet,” Danika says. “I love a cheesecake and that is never complicated to make up and have ready. It is relatively straightforward to take that out of the fridge, pop the fresh fruit on top and just serve direct to the table.”
SALAD DAYS “I love how salads have changed so much – they are a long way from those old memories of some lettuce leaves with a few tomatoes tossed on top,” she says. “We might now serve up a number of salads with some kind of meat and fresh bread, and that is a great lunch. I always try for a meat option, a fish option and a vegetarian option, and then everyone is happy.”

DANIKA’S FAVOURITE SUMMER LUNCH RECIPES SWEET POTATO & BEETROOT SALAD Ingredients 600g sweet potato 270g baby beetroot (canned) 400g tomato 130g red cabbage 2 avocados 100g rocket 30g pine nuts 15mls balsamic 50mls olive oil Method Preheat oven to 180C. Peel and cut sweet potato into 3cm dice. Spray with canola oil and roast for 30 minutes
or until cooked. Mix the olive oil and balsamic together, then set aside in a serving dish. Cut tomatoes and avocado into 1cm dice. Finely slice red cabbage. Drain beetroot on paper towel and cut into wedges. Combine all ingredients except the dressing in a large bowl and gently mix together. Serve with the dressing on the side.
Serves 6
COCONUT & MANGO CHEESECAKE Ingredients Base 1 cup pistachios 1 cup shredded coconut 1 cup almond meal 120g unsalted butter Filling 500g cream cheese ½ cup coconut cream ½ cup honey 1 egg 1 tbsp. vanilla essence Garnish 2 mangos 1 lime
Method Base Preheat oven to 160 degrees.

Line the base of a 20cm round cake tin with baking paper. In a food processer, blend the pistachios, coconut, almond meal and butter. Press into the base of the cake tin. Bake for 5 minutes, then remove from the oven. Clean the food processer.
Filling Next into the food processer, add the cream cheese, coconut cream, honey, egg & vanilla essence. Blend together until smooth, but do not over mix. Pour the cream cheese mix into the cake tin on top of the nut base. Cook in the oven for 20 minutes or until the mixture looks cooked and no longer a liquid. Cool in the fridge for 2 hours
before removing from the tin. Allow the cake to set. Garnish Peel the mango and cut off the flesh pieces from the seed. Slice the mango flesh into thin strips and place it in a bowl. Zest the lime into the mango and squeeze in the juice. Remove the tin from the cheesecake (use a small knife to run around the sides of the tin if necessary). Place the cheesecake on a serving plate, then place the mango on top of the cheesecake to garnish. Serve when required. Serves 10

All the stars come out to play for the annual film and TV award season, but as John Burfitt reveals, the greatest show is often what goes on behind the scenes.
I
t’s often said about awards season that what goes on away from the cameras and spotlight is usually far more entertaining than anything that ends up on the TV screen during the awards telecast. That is, by and large, absolutely true. And with the

awards season about to get underway over the coming months as red carpets are rolled out for the AACTA Awards, Golden Globes, Oscars, BAFTAs and TV Week Logies, wondering exactly what is really going on behind the scenes is something that always intrigues me. As part of my job as an entertainment editor and showbiz reporter, I have been walking red carpets for the best part of 30 years. On a number of occasions, I have also worked
behind the scenes on awards ceremonies as an editor, producer, judge, scriptwriter, star-wrangler and publicist. I have seen the best of times, and the worst of times. So each year when awards season rolls around, I am under no illusion as to what an award show truly is. They are the greatest show on earth – both on the screen, in the ceremony room and behind the scenes. By their very nature, awards shows are planned and plotted

didn’t win, he tried to smash up a glass lift, or the soapie star twirling her knickers above her head on the dance floor?
"Fragile egos out of control. Local stars behaving grandly. International guests misbehaving even worse. And a TV telecast that remains one of the top raters of the year. It is a recipe where something out of the ordinary is bound to happen." Then there was the naked newsreader found in the early hours wandering the hotel corridors, the award winner
pinned to the ground by the zealous hotel security and the drunken chat show host demanding to know why his recent acting performance had not emerged a winner. Most memorable for me is the football TV host who accidentally threw his awards entry ticket into the garbage, and demanded a work experience student dig through the dumpster to find it. I know a lot about that one – I had to help the student climb out of the dumpster once the mission was accomplished. Some of this makes it into the headlines, but most times it is swept under the red carpet. Australia’s TV Week Logie Awards has earned something of a reputation for the antics that go on behind the scenes of

to a fine point. An enormous amount of effort goes into producing the ceremonies, all with the aim of creating a glitzy show to hand out the awards, show off a range of famous faces in fancy frocks, provide an array of entertainment and wrap it all up in a decent amount of time. But no one ever plans for the unexpected, which is usually when the highs and lows of the human ego kicks in. And with star egos in the mix, the stakes are even higher. Take for example, the star who had a hissy fit at one awards when he didn’t like the set. Or the feuding stars who had to be seated on opposite sides of the room. What to make of the popular hunk so enraged when he

Aussie TV’s night of nights. Fragile egos out of control. Local stars behaving grandly. International guests misbehaving even worse. And a TV telecast that remains one of the top raters of the year. It is a recipe where something out of the ordinary is bound to happen. As a disclaimer, I have worked on the Logies seven times, and was Senior Editor of TV Week magazine for a number of years. And there was one question I was asked every year as Logies time rolled around – is it rigged? And every year, I responded with the same line – I wish it was, as it would have saved me and a whole team of lawyers, accountants and assorted fact checkers from many long days and nights of intricate checking and double-checking and triple checking the tabulated results. But it turns out it is no different on the other side of the Pacific. I have attended the Golden Globes twice in Hollywood, and chats with their team reveal the same question about the veracity of the voting is regularly asked of them. But that is about where the similarities between the two award shows end. The Globes in Los Angeles is best described as ‘the Logies on steroids’, as everything about it is bigger – bigger stars, bigger budgets and far bigger hair. But surprisingly, not bigger egos. It was astounding just how chilled out most stars were once inside the Globes ceremony and ready to chat, as I found out while standing at the bar, with Mark Wahlberg to my left and Jake Gyllenhaal

to the right, who piped up a friendly conversation, asking how my night was going, if I was an actor and what I was working on. Later on in a corner, I found myself drawn into a conversation with Melanie Griffith and Glee’s Jane Lynch on the topic of Frank Sinatra, and then in the men’s room, I was washing my hands at the sink next to Kevin Spacey. After exchanging smiles in the mirror, I reminded him about an interview we had done a few years before, and he happily chatted on as we walked back into the room. I had a reminder that even stars even get star-struck when my conversation with Nicole Kidman was interrupted as Jane
Fonda came over to introduce herself to Nicole. After polite words were exchanged and Jane departed, Nicole giggled with excitement as she exclaimed, ‘Wow, that was Jane Fonda!’ And that moment is something no cameras captured. Neither did they at the end of the night see a barefoot Robin Wright holding her shoes as she patiently stood in line waiting for her car. That sight reminded me of another barefoot diva – this one, a presenter on an Aussie lifestyle TV show after the Logies a few years back – who approached me as we left one of the network parties and confessed she was too drunk to remember how to get back to her hotel. As I walked her back to her hotel foyer in the early hours, we gossiped about the highs and lows of the evening, and she revealed details of a fight in the ladies room she had broken up between two rival TV reporters. “Only at the Logies!” she laughed. And I smiled, as I figured an awards show just wouldn’t be the same if it were any different.

Swift is redefining pop for a new generation of music fans, on the way becoming a cultural touchstone, and her stadium shows with ‘Riptide’ singer Vance Joy are hot tickets. Her pal Sheeran will also light up stadiums with just his voice and guitar, alone on stage. Sam Smith, fresh off the back of providing the theme to 007’s Spectre, will take local starlet Emma Louise on his run of dates.

The strength of the coming season means Swift, Sheeran and Smith are just the first course; the feast continues through to the end of summer with a range of treasured voices. The A Day On The Green concert series brings John Farnham, Elton John, Simply Red and Paul Kelly to regional wineries and estates, while Sufjan Stevens and Adam Lambert also keep the tunes coming. Elton’s shows will see him tour with his band to capital cities, including the last ever show at Sydney’s Qantas Credit Union Arena before it is torn down. Paul Kelly presents a special “Merri Soul Sessions” lineup, with a soul revue with Clairy Browne and Dan Sultan as support.
Pop might dominate the concert season, but it wouldn’t be a summer without some old-fashioned rock’n’roll. AC/DC return for their first Australian tour since 2010, supporting latest album Rock Or Bust. Multiple shows have already sold out, with extra stadium concerts added. Beloved Cold Chisel also return for their first shows in years, their ‘One Night Stand’ tour hitting all corners of the country. Jimmy Barnes will also head out on tour in his own right, topping the bill for the Red Hot Summer tour with Noiseworks, The Angels and Mark Seymour which winds around the country in January and March. Rosalie Gordon, real estate agent with Sydney’s Planet Properties says. “As prices have increased so considerably, buyers are now prepared to compromise, and one of those factors is on home size. “With the busy lifestyles of most people now, the quarter acre home block is no longer as attractive due to all the maintenance it requires. Many people are also happy to buy a smaller property to be closer to amenities of the city. One bedroom apartments have never been so popular.” The Small House Movement, which promotes living in houses of less than 93 m2, has grown in popularity over the past decade. In the wake of the Global Financial Crisis, the movement attracted new focus as it recommends housing that is more affordable and

ecologically friendly, taking up a much smaller environmental footprint. While space is negotiable, the one thing many people refuse to compromise on, Gordon says, is style. “People are as demanding as ever of smart living, clever design and so space saving ideas are very much in demand,” she says. “It is a matter of making the most of your space, so that nothing is left wasted.” Which is today a big part of business for Melbourne interior designer Joanna Ford. “Smaller homes are popular, and so that is a matter of having to rethink the way we live,” she explains. Attending to design elements is, Joanna says, the key to getting the process right. One of the first acts is to de-clutter and replace large, bulky items
designed for bigger spaces with pieces that are smaller and multi-functional. Utilising dual purpose items, like an ottoman which can also act as a seat, a table as storage, or a desk that can also double as a table, is a must. “It is making sure the items can be used for many different purposes so that you always have options,” she explains. Making the most of light, letting it shine into every corner, is another key to making smaller spaces appear bigger. “Never put anything in front of the windows, as you want to capture in all that light so that the rooms are filled with natural light,” she says. “Using mirrors is a great way to achieve this, as they bounce light and change the dimensions. The impacts of small tricks can be dramatic.”

At a time when obesity and mental health disorders are major health issues across the western world, the case for including exercise into a weekly fitness routine for a happier outlook on life has never been stronger. Much of this is to do with the impact of endorphins being released into the body during exercise. As the heart pressure increases during the activity, the brain releases a protein called BDNF (Brain-Derived Neurotrophic Factor). This acts as a reset switch, which is why we so often feel much more relaxed after exercising. There are some exercises that are more likely to get those endorphins flowing, and fast track those happy feelings as a result. “It needs to be exercise of moderate to intense activity and you need to be at it for 30 minutes to get the endorphins

with the world passing you by,” Jacquie says. “With the heart pumping and that aerobic activity kicking in, it gets everything firing, including those happy feelings. Just start slowly and build into it.”
POWER WALKING

CYCLING “The thing I like about cycling is it gives you the mental space to leave the worries of the world behind as the scenery rushes by while you hit the pedals,” Jacquie says. “Cycling can be great fun in a Spin class at the gym, as it is

a very up activity, and will keep the heart pumping. It can also be fun to be a part of all the other people giving it their best.”
SWIMMING “There is just something wonderfully calming about the water rushing over your head and body while swimming,” she says. “I think people go into a very Zen space as they swim up and down a pool, which is a great physical workout for the entire body. There is a good reason why you often see swimmers smiling as they get out of the pool – they feel great!”
EXERCISE CLASSES “They’re intense, high energy, the music is good, there is social interaction with other people and you know you are going to sweat it out,” Jacqui says. “The atmosphere of people working hard and having a good time in a class can be really infectious. Circuit and cross fit classes are especially good if you want to get the heart pumping.”

The other effect of endorphins is they diminish the perception of pain as they are released in response to brain chemicals called neurotransmitters. They also can act as sedatives. Slice the buns in half and toast under the grill in the oven until golden. Spread the aioli on each side on the bun. Top with the rocket, tomato slices and cucumber slices. Next remove the beef patties from the oven and place them on the burger. Finally add the sliced gherkins and the crispy bacon. Top with the lid of the burger bun and serve.
