Each year, the coffee industry eagerly awaits the results of the Pentair Everpure Golden Bean Roaster’s Competition and Conference – the world’s largest coffee competition. We’re thrilled to announce that this year, Jamaica Blue cafés took out the top award! By Sarah Megginson

A

t the 12th annual awards ceremony at Port Macquarie on November 25, 2017, Jamaica Blue took out the highest accolade possible, winning the Overall Large Franchise/Chain Store Champion category. Pulling off the win meant Jamaica Blue had to beat out more than 60 other competitors in the Large Franchise/Chain Store category. We also scored medals across the four other categories we entered, picking up three silvers for our Decaf, Signature Blend (Espresso) and Seasonal

Single Origin (Filter) coffees, and a bronze for our Signature Blend (Milk) coffee. Our resident coffee aficionado, Jeremy Regan, believes Jamaica Blue’s success is down to our mission to source the very best coffee possible, so we can help our customers enjoy a little escape from the everyday hustle and bustle of life. When asked about our award success, Jeremy confirms, “It reinforces our commitment to ensuring that our customers receive consistently high-quality coffee.”

The event, which has been running for more than 10 years in Australia, branched out into North America in 2015. It endeavours to find the best coffee roasting businesses across a four-day event, which also includes networking opportunities and educational workshops for coffee industry professionals. Managing Director of Café Culture and Event Organiser of Golden Bean, Sean Edwards, says that this years’ competition was the largest

on record, with more than 200 entries from coffee roasting businesses across Australia and New Zealand. The judges diligently sipped their way through more than 1,400 coffees in the blind tastings, to find the very best brews in each of the 10 categories. The Overall Large Franchise/ Chain Store Champion award is always hotly-contested, and is a remarkable achievement for Jamaica Blue. “We hold ourselves to the highest standards in sourcing and roasting great coffee,” says Jeremy, adding that “to be recognised by our peers in the coffee industry is a great honour”. In order to receive the Overall Large Franchise/Chain Store Champion award, a coffee business must have highquality roasting across several categories. The judges add the scores from the Espresso, Milk

Jamaica Blue cafés is expanding its footprint and growing in popularity in Malaysia, with two new store openings in recent months! By Sarah Megginson

he location of Malayasia’s newest Jamaica Blue café couldn’t be more fantastic – Seremban Gateway is a real tourist hotspot, right beside the State Museum and State Theatre, and consists of 45 retail stores spread over the vast 200,000 square foot centre. In November 2017, Jamaica Blue celebrated the opening of a brand new outlet at the

Seremban Gateway shopping complex in Kuala Lumpur, Malaysia. It’s the first Jamaica Blue outlet to open in Kuala Lumpur outside Klang Valley, and even boasts a small playground where the kids can entertain themselves while their parents enjoy a relaxing cuppa. It also has a function room, complete with a projector, making it a great spot to hold

a small meeting or corporate function. With 850 square feet of indoor space, and a 300 square foot alfresco area, it will serve the Jamaica Blue Signature Blend, Jamaica Blue Mountain and Seasonal Single Origin from Colombia, as well as a comprehensive food menu including the Vintage Beef Burger, Pasta Boscaiola and Jamaica Blue Big Breakfast.

Roger and Lydia Kobeck are the proud franchisees of our new Jamaica Blue café at Liverpool Hospital in Sydney, which opened in September 2017. Roger, a shopfitter by trade, has been working on fitouts for Jamaica Blue for some time, which inspired him to take the plunge and become part of the Jamaica Blue family!. By Sarah Megginson

W

hen the opportunity to snap up a franchise presented itself, Roger didn’t hesitate to pounce, having experienced first-hand how professional and easy to deal with the company is. He and Lydia, who has a background in the travel industry, have previously owned a coffee shop franchise through another company, and while Lydia fell in love with the industry, they found the support to be lacking. However, they say the support from Jamaica Blue has been unbelievable. “Head office have been fantastic, they’ve been so good to us,” says Roger. “Anything we needed, any help at all, they deliver.” When building his premises himself, “there were a few extra hurdles to jump,” says Roger, “but I worked hand-in-hand with the great design team and we got it done.” Roger says their location puts them in a niche market, compared

to cafés located in shopping centres. “We can’t put up posters and things like you can in a shopping centre, so our business really comes down to how good the coffee and food is, and word-ofmouth.” For this reason, they’re focused on delivering incredible quality when it comes to food, beverages and service, he adds. “There are four other food and beverage outlets in the hospital, so we have a one-in-four chance of getting the customers in the door, then a fifty-fifty chance of getting them back, but we already have regulars who come in daily or even a few times a day – it’s a true testament to the quality of our food and our coffee.”

n The Robertson, the new mixuse development project in the Kuala Lumpur city centre, Jamaica Blue’s newest café opened its doors in December 2017. Situated amidst offices, hotels and hospitals, The Robertson will eventually be home to 11 floors of commercial space, as well as two towers of residential condominiums. Boasting three levels of retail lots, including a childcare centre and gym, and a further eleven floors of wholesale stores, the commercial tower is a hive of activity. Our Jamaica Blue café is conveniently located on the ground floor, in a prominent 1,400 square foot corner lot right beside Jada Pudu, the main road and one of the busiest streets in Kuala Lumpur. It’s sure to be popular with the doctors, nurses, administration staff and shoppers who frequent The Robertson, and will serve the Jamaica Blue Signature Blend and Jamaica Blue Mountain coffees, along with a range of main meals, cakes and pastries. On opening day, guests were only too happy to take full advantage of their grand opening special, with buy one, get one free drinks on offer.

Designed and manufactured in Melbourne, with printing, distribution and assembly hubs in Australia, the US and UK, our KeepCups are made from PP (Polypropylene), LDPE (Low-density polyethylene) and silicone, meaning they have low embodied energy in manufacture, and have been tested to withstand up to 1,500 uses. In the US, 58 billion disposable cups end up in landfill each year – that’s 158 cups for each man, woman and child in the country. t Jamaica Blue, offering our customers a selection of mouth-watering menu items, using the very best seasonal produce, is one of the cornerstones of our business. We couldn’t serve our customers such delicious food without the help of our amazing suppliers, who ensure we have the freshest and highest-quality ingredients on hand to create our signature dishes. Our tasty seafood products are sourced from Pacific West, who have been supplying the Australian food and beverage industry with top-shelf seafood since 1995. With their trusted global supply chain, Pacific West is able to source a wide range, including seasonal products, helping Jamaica Blue to consistently meet our customers’ expectations. Geoff Crosby, National Business Manager at Pacific West, began

working with Catherine and Danika from Jamaica Blue in mid-2017, as they sought to source exciting new seafood options for the summer menu. “Jamaica Blue were in need of high quality, portion-controlled seafood products that could be easily prepared on-site, and our team had the solution,” Geoff says. “Jamaica Blue were also keen to include a signature dish on their menu, something really on-trend. We recommended our award-winning Charcoal Kuro Prawns, sourced from sustainably managed fisheries in Argentina,” he says. “They are a large wild-catch, cold water prawn with a naturally sweet flavour, encased in charcoal panko crumb, and are delicious on their own or accompanied by a green salad.” Geoff’s team also worked on providing an authentic calamari

product, the lightly dusted and seasoned baby calamari. “It was the perfect fit for Jamaica Blue,” Geoff says, “as it’s sourced from New Zealand, and is a great addition to the menu, served with a salad or fries.” The partnership between Jamaica Blue and Pacific West Foods works so well as both businesses share a commitment to sustainability, with the latter sourcing their seafood from well-managed fisheries that use sustainable practices. Many of their products meet Marine Stewardship Council (MSC) Certification standards, and they are a proud signatory to the Australian Packaging Covenant, a sustainable packaging initiative which aims to increase recycling and reduce litter. Geoff adds that Pacific West has a passion for developing innovative new seafood products for the food service industry, and prides themselves on working with sustainable fisheries – providing their clients with unequalled product choice, from ocean to plate. This was particularly important to their collaboration with Jamaica Blue, so Geoff and his team worked very hard to find a species that would be suitable for the fish and chips item on the new menu. “We sourced sustainable flounder fillets from Alaska – the sweet flavour and delicate, flaky texture of the flounder is complimented by the light tempura crispy batter,” says Geoff. JB ENTERTAINMENT JESSICA ROWE “I didn’t always think I’d survive,” laughs Jessica, who has worked across networks Nine, Seven and Ten. “But I'm a big believer in giving things a crack. It may not always work out the way you hope, but I’d always rather give something a go and see what happens.” It’s this attitude that has helped the veteran TV star find the “right place, for right now,” as co-host of Channel Ten’s breakfast show, Studio 10. “It’s a great team of people and we’re given permission to let our personality come through and that’s what resonates with people,” explains Jessica. She has been hosting Studio 10 alongside Sarah Harris, Ita Buttrose, Joe Hildebrand and Denise Drysdale, since 2013. “It’s a cliché I know, but we’re friends with our viewers and because we cover a range of topics - from the silly to the serious - I think that strikes a chord with people too.” The show manages to find the balance between humour and headlines, and it’s this point of difference that is also its greatest strength. “It felt different from day one, softer, lighter, more open, there’s just no trouble,” says Jess. COFFEE CORNER Coffee is the key to Jessica Rowe’s early morning routine

Why is coffee an important part of your day? Well, I can’t speak until I’ve had a cup of coffee, so it’s really essential. My brain doesn’t get into gear until I get a cup of coffee.

When do you have it? First thing is I get up, shower, get dressed and have a cup of coffee. Only then can I begin to function! I’ll have one at home, that’ll get me going. Then when I arrive at the studio I'll have one before we go to air.

What’s your go-to beverage of choice? Strong flat white is my beverage of choice. So two strong flat whites and I‘m ready to roll for just about anything!

s a chef who spends her days working with food, Danika Heslop admits she likes to please people. As Jamaica Blue’s Executive Chef for the past five years, Danika has been in charge of creating countless menus for the food served over the counter at Jamaica Blue cafés. But Danika admits she has noticed a change in customer tastes across recent years, most noticeably with early morning customers coming in for breakfast. It seems, while many customers still like the tried and true menu favourites, others have shown a demand for a flexibility to the menu and/or to create their own breakfast order. “There’s been some interesting trends especially with millennials in the way the younger generation like to dine out, and about tailoring it to their tastes and making it more personalised,” Danika says. “So we’ve gone down that path of how can we adapt that strategy to implement that into our menu, where our customers can literally tailor their breakfast to exactly what they’re craving that morning.”

Jamaica Blue is all about offering more choice in allowing people to make up their own breakfast order, she admits many customers coming in during those early hours of the day need all the help they can get. “Sometimes people don’t think that well in morning before their first coffee – and I know a lot about that as I am one of them!” Danika laughs. “Before my morning coffee, I am all for minimal decision making! “So if you’re someone who is not great at making decisions early in the day, this move is all about helping to nudge them in the right direction with a couple of suggestions we know go well together, and so they don’t feel like they’re out there on a limb on their own.” As for the side additional extras on offer, bacon remains the favourite, but what has emerged strongly as new choices are haloumi, salmon and avocado. “It’s been really interesting to see the way people want more variety, and are embracing

different tastes to what they would have been ordering 10 years ago,” she says. “That says a lot about the new curiosity that has emerged with foods across the past decade, as a result of all the cooking TV shows where people are encouraged to explore foods from many different cultures. We’re seeing more of that in what people are asking for in our cafés, and I think that’s great. Haloumi is now really popular and has established itself as a staple of the breakfast menu.” Another trend Danika has noticed is what customers order once they’ve sipped down the final drops of the first coffee and finished off their breakfast. “The second drink people have is often not another coffee, but they want something a little more creative, so we see them ordering a smoothie, a juice or an iced coffee,” she says. “And we’ve also noticed changes in the types of milk people now order with their coffee. We have seen a 20 per cent growth away from dairy

milk into plant-based milk, with almond now our fastest growing milk category.” Which is all, she adds, just about expanding what’s on offer on the Jamaica Blue menu to suit the changing tastes of the times. “I love that, as it means our customers are telling us what they want, and we’re finding new ways of delivering that. And that keeps it interesting for all of us.

HOW WOULD YOU LIKE YOUR EGGS? Of all the egg varieties on offer at Jamaica Blue, Danika says there is one style that is the clear favourite in all cafés. “That has to be the fried egg – it’s the style people love the most, and it’s a top-selling product,” she says. “Scrambled eggs are a good one for Sundays and often we see a spike in those orders on weekends. I think on the weekends, people have more time to enjoy it.”

The Gold Coast has undergone a citywide makeover and is ready to roll out the welcome mat, as people from 70 nations arrive to take part in the Commonwealth Games. By John Burfitt

Commonwealth Games will be the biggest international sporting event staged in Australia for a decade – since the 2006 Melbourne Commonwealth Games. It will also be the largest ever hosted by the Gold Coast. The Gold Coast stretches from Coolangatta near the NSW border all the way to Alberton, 70 km north, boasting 52 km of sandy beaches. It’s defining image is of the towering skyscrapers along the Surfer’s Paradise coastline. The many beaches, lush rainforests and mountainhigh locations will all provide spectacular backdrops throughout April for the Commonwealth Games, as the events are broadcast to the world. Over 6600 athletes from across

the world will take part in the 18 sports, including athletics, basketball, cycling, hockey, netball, rugby, swimming and triathlon. Prince Charles will officially open the Games on April 4. In addition to the athletes and officials, over half a million visitors from around Australia and the world are expected to visit the Gold Coast for the Games. The TV audience is estimated at 1.5 billion. And these Games will deliver a couple of significant firsts. Not only will the women’s program be identical to the men's program for the first time ever, but these will also be an inclusive Games, as the seven para-sports will be integrated into the overall program. a central role in the Games, holding 40,000 spectators for the Opening and Closing Ceremonies and all track and field athletic events. The Optus Aquatic Centre in the Broadwater Parklands is where all the pool action will take place for the swimming and diving events. The Triathlon and Marathon will take place in the adjacent Southport Broadwater Parklands.

How do you feel about the upcoming Games?

This is an exciting time for anyone taking part, as it’s not often you get to compete at world level on your home soil. A swimmer’s career does not last that long, so to be able to have that opportunity to swim in Australia at Games like these makes the world of difference. What are the events you are most excited by? The relays are always the most fun and exciting events, you get to be part of the team and they are the events where the crowd always goes wild. Did winning the Gold medal at Rio change anything? It means nothing different to me, but I do think it makes people

have a higher expectation of me when I swim. But I just get into the pool and give it a go. Is the Tokyo Olympic Games in 2020 in your sights? The Olympics are the pinnacle and obviously I want to go to another one. So I am working to get there and the Commonwealth Games are another step on my way there. If people get inspired to get back in the pool to swim after the Commonwealth Games, what’s your advice for good swimming? Do it because you love it, have fun with it and build slowly so you want to come back and keep doing it!

here’s a slightly different take on all things to do with chocolate when talking with the people from chocolatiers Haigh’s. At 103 years in operation, Haigh’s is Australia’s oldest family-owned chocolate company, and they obviously like to do things their own way. Instead of Easter Bunnies, 25 years ago Haigh’s announced they were ‘rabbit-free’ and introduced the Bilby, a tradition that’s still going strong. In the place of the beloved Freckle, Haigh’s instead offered the Sparkle. And on the topic of the

If a busy schedule is taking its toll, making time for your mental wellbeing needs to become the top priority, explains author Nikki Fogden-Moore. By John Burfitt

s life has become busier and multiskilling has turned into something of an art form in recent years, we’ve been told that to succeed in modern times means to become a master in the act of juggling. Effective time management in all areas of life is considered an essential for negotiating a path through a busy schedule involving all aspects of home, career,

family, partners and children. Which is all very good when it all works out, admits lifestyle coach and author Nikki FogdenMoore, but she wonders about the mental health cost of being so driven to achieve it all. “The problems start when you have the expectations that you must have everything running smoothly, and in some ways, it’s become that being busy is now a badge of honour,” Nikki says. “There’s many messages on

social media driving this, with some people projecting this image of, ‘here’s me running a seven-figure business from home as I balance my beautiful baby on my lap while I type on my computer keyboard’. With those kind of messages, we’re getting a false sense of seamlessness about modern life. Keeping up with that kind of expectation can come at a cost.” Nikki, the author of the

an hour to meditate; it’s about just allowing yourself a few moments to regroup and get your breath,” Nikki explains. “Meditation is great and ideal to do regularly, but if you’re busy, just pressing pause regularly throughout your day can make a huge difference to keeping the battery going to get through everything on the schedule.”

THE TIME INVESTMENT Making a time investment in your mental and physical wellbeing is about dedicating one per cent of your day to it. Nikki explains her one per cent rule is something that can be adopted into any schedule. “One per cent of your day is only 15 minutes, so dedicate one per cent of your day to some kind of movement,” she says. “It can be walking, gym work, swimming, tennis or exercises on the floor. Then realise if you did that for one per cent of your day, in about 100 days, you will be 100 per cent better off.”

THE WINNING WEEK If your dream is to get through your schedule in an easier way, Nikki says to schedule everything in it – including exercise, meditation and ‘Me Time’. “This is making yourself a priority in your week, so that along with work meetings, bank appointments and pickups from school, you have also allowed time for yourself to function,” she says. “If you schedule it, you’re far more likely to do it, rather than trying to squeeze it in around everything else. Making time for yourself needs to become a priority. With that approach, you will soon find you are rarely overwhelmed.”

Getting a restful night’s sleep is vital for maintaining good mental health. But it’s not just duration that counts. The quality of your sleep is equally important. By Shane Conroy

good hormones. “Anxiety, on the other hand, is more about the stress hormones. So if you’re not sleeping enough, your stress hormone levels are going to be higher and you may be susceptible to more severe anxiety during the day.”

SIGNS YOU ARE NOT SLEEPING WELL Winnel is also quick to point out that it’s not just sleep duration that plays a role in maintaining good mental health. The quality of your sleep is equally important. Unless you suffer from insomnia, it can be difficult to know whether you are suffering from poor sleep quality. However, there are a few signs to look out for that may signal that your sleep is being disrupted. “When people get good quality sleep, we tend to be much more resilient and tolerant,” says Winnel. “So when our sleep quality is poor, you may notice that you are more irritable or short tempered. “Poor sleep quality can also affect mental clarity so your response times might be slower, or you may feel unmotivated or sluggish. People who don’t sleep well may also eat more because they are not creating appetite-supressing hormones. And they’ll often reach for food that is higher in sugar because they are looking for an energy or emotional boost.”

HOW TO IMPROVE SLEEP QUALITY When it comes to improving your sleep quality, Winnel

believes it’s a battle of the mind. “Our habitual thought patterns can really affect how we sleep,” she says. “For example, if someone constantly applies a worst-case scenario lens to their thinking, they will produce stress hormones that really wreak havoc on sleep. So watching out for those negative though patterns and beginning to change them will help to improve sleep quality.” Winnel also recommends taking time out during the day to relax: “This helps train your relaxation muscles so it’s easier for you to turn off at night. “We also sleep better when we integrate the right and left hemispheres of the brain so I often recommend exercise where you are alternating between the right and left part of the body.” Last but not least, Winnel warns that the blue light emitted by digital screens can reduce sleep quality. “At night, we naturally convert serotonin into melatonin but the blue light from digital screens stops this process. You can download apps like F.lux that filter out blue light from your screen at night, and many TVs allow you to turn down the blue light in the settings. Failing that, you can buy glasses that block out blue light. “Good quality sleep presses the refresh button. When you wake up in the morning after having slept well you’ll have mental clarity. But when you haven't slept well, you’ll wake up irritable and mentally drained. Eventually that wears your system down.”

ustralia is in the grip of a sleep deprivation epidemic that could be damaging our mental health. That’s according to research by the Sleep Health Foundation that reveals between 33 and 45 per cent of Australian adults either sleep poorly or fail to get enough sleep. Insufficient sleep has been linked to a range of mental health conditions including depression, anxiety, mental distress and exhaustion, manic episodes, and even Alzheimer’s disease. So how much sleep do we actually need to help protect our mental health? According to sleep expert and master sleep coach, Elina Winnel, the magic number is between seven and eight and a half hours every night. “That’s important because at the beginning of the night we do more physical healing and towards the end of the night we do more mental and emotional healing,” she says. “So if you are only getting four or five hours of sleep, you might get the physical healing but you are not getting the mental and emotional healing.” Lack of sleep can also have an accumulative effect, says Winnel, and can starve the brain of the hormones we need to maintain stable moods. “We produce a lot of hormones while we sleep, so not getting enough sleep has a huge impact on our moods,” she says. “For example, people with depression who are not sleeping enough may not be producing enough of those feel-

Research is showing that diet plays an important role in maintaining good mental health. Here’s what you need to know. By Shane Conroy

pproximately 45 per cent of Australians will experience a mental health condition in their lifetime. That means that whether you suffer from a mental health condition directly, or care for a loved one who does, most of us will be touched by mental illness. While many mental health conditions are genetic, emerging evidence suggests that lifestyle factors such as diet may play a role in anxiety

and depression. Researchers have identified a potential link between gut bacteria, inflammation and brain health, and many scientists now believe that gut activity and the inflammatory response may disrupt brain processes that help to regulate our moods. And studies have shown that people with high levels of inflammatory markers in their blood are more likely to develop depression. But it’s not all bad news. A

healthy diet can help promote good gut bacteria and decrease inflammation throughout the body. “Your gut is known as your second brain, and there's a very strong link through a nerve between your brain and your gut,” says nutritionist and health expert, Samantha Gemmell. “Your gut actually produces a lot of the neurotransmitters that affect your brain health. So eating things that support your gut

health will in turn support the production of your feel-good hormones.”

BEING GOOD TO YOUR GUT So how exactly do we support our gut health? According to Gemmell, we need to start with pre and probiotics. “Probiotics are sources of good bacteria, and prebiotics act as fuel for those good bacteria to establish in the gut,” she says. “If you don't provide the fuel, good bacteria will never quite establish in your gut.” Gemmell says you can find these vital probiotics in fermented foods such as sauerkraut, kimchi, pickled vegetables, miso soup and yoghurt. Prebiotics, on the other hand, tend to be abundant in highfibre foods. Leeks, onions, raw garlic, whole grains, bananas and honey are valued for their prebiotic qualities. However, you’ll also need to stay away from certain foods that can be damaging to your good bacteria. “Processed foods and highsugar diets can throw out your gut balance because sugar feeds all the bad bacteria and the good guys pretty much just starve off,” she says. “Stress is actually toxic to good bacteria as well. A lot of people don't realise that that's why when they are stressed their tummies can get so upset.”

FIGHTING INFLAMMATION WITH FOOD We can also modify our eating habits to fight inflammation,

says Gemmell. Antioxidants found in most bright coloured fruit and vegetables, nuts and seeds can be an effective weapon against inflammation. “It's best to eat most of your fruit and veggies raw in order to get the most water soluble vitamins out of them as these can be quite heat sensitive,” she advises. “Aim for about 75 per cent raw and 25 per cent cooked. “A lot of people are also very, very low in magnesium these days. The body uses a lot of magnesium in stressful situations, and it is actually one of the co-factors you need to produce some of the key neurotransmitters. My favourite form of magnesium is dark chocolate, but you can also find it in leafy green vegetables.” Gemmell also recommends diets high in plant foods to ensure you are getting all your B vitamins, and says good quality proteins such as salmon and sardines are helpful for keeping your B12 and Omega3 levels up. However, she’s also quick

to point out that there are no magic overnight fixes, and fad diets should be avoided in favour of a well-balanced lifestyle. “You can't expect a chronic health condition to heal overnight. However, when my patients follow all the advice I give them, I would expect to see small improvements within a month, and significant improvements within three months.”

health. Not surprisingly, in a review of hundreds of research papers, it was found that when we eat is as important as what we eat. This is important to note as our increasingly busy lifestyles are leading to a decline in the habit of eating regular meals, while snacking has become more prevalent. In fact, in the 40 year period between 1970-2010, the amount

of energy (kilojoules) obtained from the standard three meals of breakfast, lunch and dinner dropped 5% while calories consumed from snacks rose 5%. It may not sound like a lot but on a population level this represents a big change in where our calories are coming from. It seems we are gradually turning into a nation of snackers and grazers and this may not be the best option for

METHOD 1. Pre-heat oven to 200˚C. Boil 1L water in a medium saucepan. 2. Add macaroni pasta to boiling water & boil as per instructions on packet. 3. Once macaroni is cooked strain into a colander and run under cold water to stop from over-cooking. 4. Grate the jack/cheddar, parmesan and mozzarella cheeses into a bowl, mix together and set aside. 5. Dice the bacon and onion into 1cm pieces. 6. Place oil in a medium saucepan on a medium heat. Add the diced bacon, onion and chopped thyme to the oil & cook until onion is softened & bacon is slightly coloured, approx. 2 – 3 minutes. 7. Add the butter to the bacon and onion. Once melted add the flour and stir continually for approx. 1 minute to cook flour. 8. Add the milk to the saucepan and continue mixing well to stop any lumps from forming. Continue

to stir until sauce thickens. 9. Remove from heat & add the Dijon mustard and salt and mix these into the sauce. 10. Add half of the grated cheese mixture to the sauce and mix well to melt cheese & combine ingredients. 11. Place cooked macaroni into a large mixing bowl & add the sauce with cheese mixed through. 12. Mix sauce and macaroni together to combine the two.

13. Add the macaroni mixture to a baking dish then sprinkle the remaining grated cheese mix evenly over the top. 14. Sprinkle the breadcrumbs over the cheese and place in oven; bake for 20 – 25 minutes or until the golden brown on top. TO SERVE Remove from oven and allow to sit for approx. 5 minutes. Slice into six equal portions.

BRIOCHE FRENCH TOAST WITH SPICED APPLE AND BUTTERSCOTCH

Makes 4 portions

INGREDIENTS SPICED APPLE  2 cups tinned apples  ¼ tsp. cinnamon (ground)  2 tbsp. brown sugar BUTTERSCOTCH ½ cup butter  ½ cup thickened cream  ½ cup brown sugar 

ALMOND CRUMBLE ¾ cup plain flour  ½ cup butter (diced)  ½ cup brown sugar  ¼ cup rolled oats  ¼ cup slivered almonds 

REUBEN SANDWICH

Makes 6 portions INGREDIENTS  2 cups sauerkraut (tinned)  6 tbsp. sour cream  6 tsp. Dijon mustard  3 tsp. honey  ½ cup shallots (sliced)  6 tbsp. mayonnaise  12 slices rye bread  500g sliced pastrami  6 slices cheddar cheese  6 gherkins (sliced)

METHOD 1. Open and drain tinned apples. Add to a bowl with brown sugar and cinnamon then mix together well to combine. 2. Add the butter, cream and brown sugar to a microwave safe container then heat in microwave for approx. 4-5 minutes. Remove and stir well to ensure no lumps and all ingredients have incorporated, then allow to cool slightly. 3. Pre-heat oven to 180˚C. Add flour, butter, brown sugar, oats and almonds to a large mixing bowl. Rub mixture together with fingertips to incorporate butter into other ingredients. This should resemble a coarse breadcrumb or wet sand texture. 4. Line a baking tray with baking paper and place the mixture on top. Bake for 10 minutes or until golden. Remove from oven and allow to cool on bench before breaking up into a crumble.
