Dear (potential) EPCAS member, We are pleased to invite you to our upcoming EPCAS Summer General Assembly, which will take place from Sunday, July 26th until Tuesday, July 28th in Milan, Italy. This year, the EPCAS Summer General Assembly is inspired by Expo Milano 2015, which has the overall theme “Feeding the Planet, Energy for Life”. Over a six-month period, Milan will become a global showcase where more than 140 participating countries will show the best of their technology that offers a concrete answer to a vital need: being able to guarantee healthy, safe and sufficient food for everyone, while respecting the Planet and its equilibrium. A platform for the exchange of ideas and shared solutions on the theme of food, stimulating each country’s creativity and promoting innovation for a sustainable future, Expo Milano 2015 will give everyone the opportunity to find out about, and taste, the world’s best dishes, while discovering the best of the agri-food and gastronomic traditions of each of the exhibitor countries. As this is a unique opportunity, we do not want to have our (potential) members miss this exciting event and therefore decided to host the Summer General Assembly 2015 in the beautiful city of Milan. During the official meeting, we will discuss important EPCAS matters, several (potential) members will share their best practices and we will enjoy interactive sessions. The remaining two days are dedicated to an exciting programme in and around Milan and of course at Expo Milano 2015. Together with, and thanks to, our Italian friends Roberto Lion and Alberto Sanna, we have put together an extraordinary programme not only for our executives, but also for our chefs. We can proudly announce that the chefs’ programme is ‘made by chefs, for chefs’ and we are pleased that Jochem Sneep (Cuise), Eric Miete (Koppert Cress) and Eugène Swalen (Koninklijke Van den Boer Groep) assisted in creating an inspiring programme for all chefs of our (potential) EPCAS members. With the combination of all these elements, we truly believe we offer something unique and appealing to all of you. We are looking forward to welcoming you in July! Christian Bärtsch • essento Continuing our programme on Sunday with interaction and new inspiring input, we are happy to welcome Christian Bärtsch representing the Swiss start-up essento. Together with his business partner, Matthias Grawehr, he founded the company with the aim of developing solutions for private households but also the gastronomy to promote edible insects. The team is completed by two Food Product Developers who are graduates from the Swiss Federal Institute of Technology in Zurich. On Sunday, Christian will introduce their business, present some of their innovative solutions and prepare a sample of edible insects for a tasting.

CHEFS’ PROGRAMME Monday → KEYNOTE SPEAKERS EXECUTIVES’ PROGRAMME We are proud to announce that we will welcome wellknown international food specialists as keynote speakers for our executives programme, arranged by our special guest Marco Gualtieri. Marco is the director of Seeds&Chips, a great event where food and digital technologies come together. The first edition of Seeds&Chips took place in Milan in March this year. The event brought together enthusiastic innovators, companies and investors eager to change, and in some cases revolutionize, the way food is produced, distributed, consumed and depicted. It included a wide range of workshops, conferences and presentations mainly focusing on food and territory, solutions for developing countries, sustainability and waste reduction, traceability and food safety. With 100 exhibitors and 6000 visitors, they can definitely call this first edition a success. We are more than happy that Marco is inviting a selection of the inspiring speakers who also spoke at Seeds&Chips to our Summer General Assembly where they will present their views to our executives during the programme on Monday.
By chefs, for chefs This year, the chefs’ programme will be a journey of inspiration, tasting, learning and experiencing. The programme ‘made by chefs, for chefs’ includes numerous highlights: GUALTIERO MARCHESI Thanks to our special guest Enrico Dandolo (shown on the right in the picture below), the chefs will visit the famous Accademia Marchesi, founded by the great Italian chef Gualtiero Marchesi. Having graduated at Ecole Hôteliere in Switzerland, he started working in the family restaurant creating an avant-garde cuisine, which respected traditional as well as classical cooking. He was the first chef in Italy who was awarded three Michelin stars (1986) and the first one in the world who gave them back, in 2008. It will be an honour for our chefs to be welcomed by Mr. Marchesi himself and get introduced to his latest project, his own academy (opened in 2014). DR. GINO CELLETTI Dr. Gino Celletti is well known in the world of olive oil as the creator of the Monocultivar Olive Oil project, which includes tasting courses and exhibitions dedicated to single olive varieties. His tasting expertise and his communication initiatives are also part of the Bio-Mediterraneum Cluster at Expo Milano 2015. At the Accademia Marchesi, Dr. Gino Celletti will provide a workshop and tasting of Monocultivar Olive Oil and let the chefs experience the great variety of olive oil and how it can be included in the kitchen. MARCO SACCO In the afternoon, the chefs will meet Marco Sacco, two Michelin star chef and owner of the restaurant Piccolo Lago. In accordance with his motto: “Take up the past, shape it in the present, project it into the future”, the chefs will enjoy an excellent cooking session. In the great atmosphere of Riso Buono, a prestigious family owned risotto factory close to Milan, the chefs will first get a tour and be introduced to the wonderful world of risotto and the long-standing tradition of the family of Luigi and Carlo Guidobono Cavalchini. Afterwards, together with Marco Sacco, they will prepare a delicate risotto dish and be introduced into the secrets of risotto cooking.
REGISTRATION & COSTS Please confirm your participation by completing and sending the attached registration form to the EPCAS Secretariat via office@epcas.eu before June 22nd 2015. Per EPCAS Full Member, two representatives can attend the Summer General Assembly free of charge, as this is included in the membership fee. For EPCAS Basic Members, as well as for each extra attendee (potential members, chefs, business partners, spouses), EPCAS asks for a contribution of € 795,- per person. The following is included in this contribution: • Hotel accommodation from July 26th until July 28th (2 nights) • F&B during the official programme (excluding the optional dinner on Tuesday, July 28th) • Transport during the official programme • One day ticket for Expo Milano 2015 on Tuesday, July 28th (and one extra day ticket on Monday, July 27th for the executives) In case you would like to enjoy another day at Expo Milano 2015, you are more than welcome to stay an extra night (on own expense) at the DoubleTree by Hilton Milan for a special EPCAS rate. In any case, we would be more than willing to assist you with extending your stay in Milan.
TRAVEL INFORMATION The hotel is strategically located in the business district (Viale Certosa) close to Expo Milano 2015 and the city centre of Milan. There are two international airports in Milan: Milano Malpensa Airport (41 km), which is located North West of Milan and Milano Linate Airport (16km), located in the East of the city of Milan. When planning your trip, please take at least half an hour of travel time into consideration between the airport and the hotel.
