WORD OF WELCOME Dear EPCAS member, Dear EPCAS friend, “Bem-vindo ao Porto!” We are happy to welcome you as our guest at the EPCAS Summer General Assembly 2016. Our programme is all about getting inspired, and what better place to get inspired than sunny Porto. The city located along the Douro River in the North of Portugal has one of the oldest city-centres of Europe. Its history, authentic architecture and gastronomy will hopefully surpass your imagination. The Summer General Assembly concentrates on the theme ‘Concepts & Formulas’, on which our speakers will focus during their presentations. Besides our keynote speakers, Best Practices will be shared by some of our members, an interactive session on the European Event Catering Academy will take place and EPCAS matters will be discussed. An outstanding programme has been created in co-operation with our friend, Artur Junqueira, from Silva Carvalho Catering, part of Grupo Ibersol. We are sure that the content of the programme and the highlights of Porto ensure something inspiring for all. Welcome to Portugal, one of the most authentic countries of Europe! PORTO Portugal is known for the exploration of the world and their empire in the 15th and 16th century. The Summer General Assembly takes place in Porto and its urban area. The “Cidade Invicta” (unvanquished city) has grown to a global city with a long history in the Iberian Peninsula. Portugal’s most famous export product, Port wine, is known all over the world. Besides these fortified wines, Porto is known for the six bridges crossing the Douro River, the typical architecture and music. Last but certainly not least is the Portuguese cuisine, which we will get a taste of during our stay. We will let you experience first-hand why Porto is worth a visit. Get ready to be inspired!
LOCATIONS PORTO PALÁCIO CONGRESS HOTEL & SPA In the heart of the historical city centre of Porto, you will find the Porto Palácio Congress Hotel & Spa. The hotel of our stay is known for great attention to detail to ensure quality and capture the essence of every moment.
CAVES FERREIRA Caves Ferreira was founded by a family of winemakers in 1751 and still possesses a rich tradition and prominent role in the history of Port wine. The Ferreira cellars invite us to discover a brand which is more than 250 years old and functions as a symbol that captures the Portuguese heart and soul.
SUPER BOCK BEER HOUSE (UNICER BREWERY) The most popular beer of Portugal, Super Bock, is brewed in the Unicer Brewery in Porto. Besides a tour, to learn about the brewing process, we will have a tasting of different Super Bock beer types and have lunch between the copper kettles.

CLUBE UNIVERSITÁRIO DO PORTO This preferred and new venue of Silva Carvalho Catering is owned by the University of Porto and dates back to the 19th century. The interior reveals details that respect and align the history. The building is surrounded by stunning and romantic gardens, situated in the heart of Porto.
DOURO RIVER (6 BRIDGES BOAT TOUR) The Douro River finds its way through Portugal and the centre of Porto. What better way to explore Porto and the bridges connecting both sides of the city, than on a boat where we can admire the historical and architectural highlights of our hosting city.
ALFÂNDEGA CONGRESS CENTRE We will conclude the Summer General Assembly at the Alfândega Congress Centre. The Congress Centre is a beautiful building with an amazing view over the Douro river. It was awarded Europe’s Best Meeting and Conference Centre by Business Destinations Travel Awards in 2014 & 2015.

KEYNOTE PRESENTATION FRANK LINDNER – FOOD INSPIRATION Reconnect / Foodlov Piramid In this accelerating world, people need a moment where they can find a sense of place and time. Every day food and catering professionals provide a service more valuable than any currency: flavour, emotion, connection; the fuel for social cohesion. Frank is going to highlight the most important trend for the coming decade in our industry: Reconnect. As he explains: “We need to restore a connection that has been lost, the connection between consumer and food-producer; people and seasons; and among people themselves. A restaurant or catered meal serves that higher purpose, with transparency, integrity and empathy as main values. It’s time to reconnect!” The food trendwatcher is going to explain us Reconnect by demonstrating the Pyramid of Foodlov, a theory Food Inspiration developed based on the pyramid of Maslow. 9

PRESENTATION CHEFS ASSEMBLY BY MATTHIAS RETZKI - CULPEPPER EVENT We are proud to announce that we will launch a separate Chefs Assembly, from Monday October 3rd until Wednesday October 5th, hosted by Culpepper Event in Berlin, Germany. The Chefs Assembly 2016 will be inspired by culinary trends. Matthias will elaborate on the programme, which is established for executive chefs as well as kitchen managers and sous-chefs.
Interactive Session EUROPEAN EVENT CATERING ACADEMY BY STEPHANIE VAN OORSCHOT The Pilot Course of the European Event Catering Academy took place 2,5 months ago. With 16 participants, representing 11 companies from 7 European countries, we look back on a successful pilot. To further develop the academy and show its uniqueness, we collectively need to further define the ‘why’ and the ‘how’.
