FOOD WASTE INITIATIVE We strive to be sensible and aware regarding food waste, because we believe that “Wasting food is economically bad, environmentally wrong and morally, ethically inacceptable!”. For that reason the EPCAS Food Waste Initiative has been established. The Food Waste Initiative consists of two components: • Best practices and information from leading members in food waste reduction • To reduce food waste with the help of the EPCAS toolkit for members On the EPCAS website, you can find in detail the levels of the Food Waste Initiative, as well as the Food Waste Toolkit. As agreed during the Summer General Assembly last July, all members must reach the next level in the Food Waste Initiative before the upcoming Winter General Assembly in Maastricht. So please make sure that you meet the requirements in time and send the required proof to the EPCAS Secretariat.

Per EPCAS Full Member, two representatives can attend the Winter General Assembly free of charge, as this is included in the membership fee. For EPCAS Basic members, as well as for each extra attendee (potential members, business partners), EPCAS asks for a contribution of € 795,- per person. The following is included in this contribution: • Hotel accommodation from February 8th until February 10th (2 nights) • F&B during the official programme • Transport during the official programme • One entrance ticket for Food Executive Europe (worth €1.250 per ticket)

TRAVEL INFORMATION Thanks to its central location, Maastricht can be accessed easily. Within a one-hour distance from Maastricht, there are 7 airports: Maastricht Aachen Airport, Brussels South Charleroi Airport, Brussels Airport, Eindhoven Airport, Köln Bonn Airport, Airport Weeze and Düsseldorf Airport. Schiphol Amsterdam Airport is also a good option, located 2 hours from Maastricht. From the airport(s), Maastricht is best reached by train, with the exception of Maastricht Aachen Airport, whereof it is easy to take the bus. Dear EPCAS member, Dear EPCAS friend, It is our pleasure to invite you for the EPCAS Winter General Assembly, which will take place from Sunday February 8th until Tuesday February 10th 2015, in Maastricht, The Netherlands. This assembly will be hosted prior to, and alongside, the 2-day programme of Food Executive Europe.

Maastricht includes many historical and culinary highlights. These two aspects will be combined in an inspiring evening. We will be welcomed at ‘Buitenplaats Vaeshartelt’, known for its focus on local specialties, ‘Château Bethlehem’, home of Hotel Management School Maastricht, and ‘Château Jerusalem’, heart of European networks in hospitality.

This year’s Winter General Assembly will revolve around managing expectations and offering added value, so basically it will revolve around you. What does your ‘Agenda for the Future’ look like? Which topics do you expect to become increasingly important over the next 2 years? And what role can EPCAS play in that? Learning new things from a like-minded colleague can help one focus on one’s business. Therefore, we have composed a programme with inspiring industry leaders as keynote speakers, a best practice programme by professionals from the foodservice, hotel and catering segment, an Experience Center showing the latest innovations and trends, and inspiring culinary components. Monday February 9th This year, we are also including the participants from the European Mise en Place Cup (EMCup) in FXE; 150 students, deans and coaches of leading European Hotel Management Schools will gather in Maastricht (Sunday February 8th & Monday February 9th) for this annual competition. The EMCup allows the teams to come up with innovative solutions for the rising issues in this sector, and providing them with networking opportunities with industry leaders (preceding the upcoming ‘War on Talent’). This will give you the chance to meet the future leaders in hospitality, so keep your eyes and ears open for these young talents!

The award is granted to a successful young entrepreneur who is active as supplier to the hospitality industry or who has created an innovative hospitality concept. The Columbus Trophy does not focus solely on the product or service, but focuses on the entrepreneur behind it. After an extensive selection process, the 12 European finalists will be represented at FXE.

Tuesday February 10th Industry leaders from the hotel, foodservice and catering segments will provide the attendees of FXE with best practices about their newest concepts and innovations. These best practices will provide valuable insight in what is happening in other segments of the hospitality industry, guaranteeing an optimal 360° of inspiration for all.

Monday February 9th & Tuesday February 10th Positioned at the heart of FXE, the Experience Center is the perfect place to meet, interact and network. It includes various F&B outlets, a ‘Facts & Figures corner’ and a Food Art Gallery. The partners of FXE and the finalists of the Columbus Trophy will present their newest innovations here. Part of the Experience Center is the EPCAS Food Carnival, where the EPCAS chefs can show their skills & specialties.

DAVID RUSSELL Keynote Speaker David led the creation and delivery of the Food Strategy for the London Olympic Games in 2012, delivered the same role for Sochi 2014 and is undertaking the role for ER 2015 and Qatar 2020. He is regularly named in the list of most influential individuals in the UK Food and Leisure Sector. DANIEL MÜLLER Keynote Speaker Since 2010, he works at the Motel One Headquarters, first as Director of Operations and since 2012 as Board Member and COO. Motel One is one of the fastest growing hotel companies in Europe and will soon open their “One Campus” – the Motel One Academy.

GIGI WANG Keynote Speaker She is an expert on the success factors for a growing company and will share her view on ‘the enterprise of the future’, by providing hands-on examples about the rapid development of companies GIGI WANG in Silicon Valley.

RICHARD BERGFORS Best Practice Richard Bergfors, Managing Director & owner of Scandinavian company Max Hamburgers, will guide us through the Agenda for the Future of Max Hamburgers, Europe’s oldest and Sweden’s most popular hamburger chain.
