EPCAS Summer General Assembly 2013 Italy | 29-31 July 2013
Preface Dear (potential) EPCAS member, You are invited to our upcoming EPCAS Summer General Assembly, which will take place from Monday the 29th of July until Wednesday the 31st of July 2013, in the region referred to as “Little Venice”; Pordenone, Italy. Together with our Italian hosts, Alessandro Barbisotti from Backstage Catering and Alberto Sbalchiero from Electrolux Professional, EPCAS has planned a programme to inspire the food loving side of each of us. Due to the culinary focus, EPCAS invites you to bring your chef to take part this summer. A separate Chef’s programme will be organized, together with the chefs of Electrolux Professional. The chefs will have separate meetings and will join in parts of the EPCAS programme as well. To give the programme an Italian touch, several local food orientated businesses are providing authentic products and presentations about these products. There will also be visits to local companies in the area and workshops at Electrolux Professional to inspire both (potential) members and chefs. Besides the Chef’s Programme, EPCAS will host the Official Programme with topics such as the EPCAS Initiative against Food Waste and the industry benchmark "Quarterly EPCAS Monitor". Best Practices from our members will also be shared. Potential members are more than welcome to join, in order to get to know our association and our members. Chef’s programme This year, EPCAS invites you to bring your chef along to the General Assembly. The focus will be on Italian cuisine and on food waste reducing kitchen skills. There are workshops and best practices to further explore these subjects. There will also be a mystery box challenge in the Innovation Center of Electrolux Professional to motivate the chefs to work together and to incorporate their newly gained knowledge about reducing food waste.

Moderator & Keynote speaker Alberto Sanna Alberto Sanna, lecturer at the University Vita-Salute in Milan, is the Scientific Director of an innovative Research Master in Service Design: e-Services for Life Design. He is active in the redesign/reengineering of food services to promote healthier and greener individual and collective behaviour. Together with his group, Alberto has developed a unique, innovative and integrated service platform for catering at locations such as workplaces, schools and hospitals. They test this platform on the premises of the City of the Future Living Lab in Milan. Furthermore, they are very active in promoting nutritional education and consumer awareness, to leverage on customer loyalty and satisfaction within healthier & greener added value food services, as well as corporate social responsibility. Alberto is actively fighting food waste within these projects and has therefore been asked to give a presentation to all attendees, and to moderate during the chef’s programme.
Electrolux Professional Our host, Alberto Sbalchiero from Electrolux Professional, welcomes EPCAS to hold part of the programme in their Headquarters in Pordenone. Electrolux Professional is a world leader in the production and distribution of professional food service and laundry solutions. Electrolux is the only company in the world able to provide complete, high performing professional kitchens of one brand. Electrolux Professional has built an Innovation Center at their Headquarters, to offer professionals in the Catering and Hospitality business a unique educational experience. The 3.500 m2 center includes a showroom of the entire Electrolux Professional range, 4 training kitchens and a company restaurant equipped as “visual laboratory”. The Electrolux Chef Academy is also held in this Innovation Center. The EPCAS attendees will have the opportunity to become more acquainted with the equipment through workshops, with an eye on how to reduce food waste by using the right equipment.
