Editor ponders the many joys of homemade recipe folders - a window, if ever there was one, to the foodie's soul My cousin's husband Mike has a huge lever-arch file filled with laminated A4 recipe sheets photocopied carefully from books or printed from the internet. In between the immaculate laminated sheets are file dividers, indicating sections for starters and mains (in fish, meat, and veggie sub-sections), puddings and sweets (with sub-sections for cold and hot). I too have a folder of recipes photocopied from books, printed from the web and torn from magazines. Mine, however, are not laminated. Some of them are inside plastic pockets, but most of them aren't. There are no subject dividers either, and the folder is, well, a bit knackered. And here, dear reader, we have a window into two cooks' souls. Mike likes his recipes to be all ship shape - hence the laminator - whereas I, even though I am generally houseproud, believe that recipes should be spattered with kitchen stains. Culinary war wounds, if you will. Hence, my most oft-used recipes and cook books are

crinkled and stained - indicators of meals much loved and oft-cooked. The page of Delia Smith's Christmas book with the rich fruit cake recipe is scribbled with workings out indicating where I've scaled the recipe up and down. Its scribbles and stains are reminders of the many Christmas cakes made from this recipe, and the two boozy wedding cakes - my own and my colleague Rosie McGlade's - which demanded all that scaling up and down. My mother had a hardback exercise book in which she jotted recipes. Now it is mine, and all I have to do to go back in time is open it, read the recipes written in her hand, and remember gammon and poached peaches, cottage pie, parkin, flapjack, and so much more. My folder is dominated by curry recipes, whereas cousin Mike's is stuffed with puddings. We like a hidden gem here at appetite HQ, and The Wentworth Café in Hexham fits that bill. It was taken on a year or two ago by some bright young things who have introduced a fresh menu, the best of which is the burger and chips, the gluten-free cheese scones, the breakfasts and very good homemade soups. CHIP OFF THE OLD BLOCK Hints, anyone, on what to do with an 80kg block of wood, caked in grime and butcher’s shop bloodstains, lately arrived in the appetite kitchen? This courtesy of the ed’s husband, who can’t resist a freebie and thought, he said, it might be useful should we ever wish to conduct a post-mortem (on him, presumably?). It’s since been thoroughly disinfected and sanded and the lingering smell of blood has gone. It’s now become a very good prepping block and leaning post for our regular coffee breaks. The irony of the fact that it arrived minutes after the ed appeared on BBC Radio Newcastle’s mid-morning show extolling the virtues of vegetarian food was lost on no-one!

This salad is packed with flavour and great cooked on the barbecue or grill. You can use flat iron, sirloin or rump steaks combined with pasta, fresh garden peas, courgettes and tomatoes finished with a chilli and coriander dressing. Ingredients 450g lean flat iron, sirloin or rump steaks salt and freshly milled black pepper 1tbsp rapeseed or olive oil 300g filled pasta shapes (tomato and ricotta is good) 50g fresh or frozen peas, blanched in boiling water 1 small courgette, grated 8 plum or cherry tomatoes, quartered For the chilli and coriander dressing: 1 large handful freshly chopped coriander pinch dried chilli flakes 1 garlic clove, peeled and finely chopped 2tbsp extra virgin rapeseed or olive oil 4tbsp Worcestershire sauce 2tbsp white wine vinegar
Method Remove the steak from the fridge at least 1 hour before cooking, transfer to a shallow dish and bring to room temperature. Place steaks on a chopping board, season on both sides and brush with the oil. Cook on a prepared barbecue or under a preheated moderate grill according to your preference. Transfer to a plate, cover with foil and leave to rest for 5-10 mins. This is very important. Cook the pasta according to the packet instructions. Drain, cool and transfer to a large bowl. Add the peas, courgettes and tomatoes. Meanwhile, prepare the dressing; place all the ingredients into a screwtopped jar. Shake well and set aside. Slice the steaks diagonally and toss the strips in the salad with any meat juices from the plate. Shake the dressing, spoon over the salad and serve.

Inthecountry Jane Pikett enjoys a day at The Milkhope Centre I’ve always liked the Milkhope Centre; a lovely country retreat just outside the city, where you can mooch around the farm shop, the cook shop, an art gallery, furniture store and more, and relax in the café, which at this time of year is quite the sun trap with its lovely outdoor terrace. My purchases here over the years include a painting, several pairs of earrings, a wedding hat, even a hall table. But it’s food and kitchen kit which comes home most often, and Blagdon Farm Shop is a deserved national
award winner. It works with farms which are either organic or follow traditional farming methods which are kind to the environment. I love this shop; it’s big, with a proper butchery stocked with the produce of the fields on the estate and nearby farms. There is Northumbrian rare-breed fillet steak, Blagdon Farm free-range chicken and Blagdon ham, wild roe venison from the Blagdon Estate, and a huge range of sausages. The produce of the shop kitchen includes ready meals, quiches, cakes and tray bakes. You can buy fruit and veg
grown on the Blagdon estate, jams and preserves, Craster kippers, Doddington ice cream, and Northumbrian cheeses. Make sure you’ve room in the fridge and freezer at home because you’re going to buy a lot more than you intended when you set out. My husband, an ill-educated man in the needs of the modern kitchen and dining room, complains that I don’t need any
more mixing bowls, milk jugs, or kitchen, carving and cake knives, but obviously, as a reader of appetite, you will be aware that every good cook’s kitchen has room for more of all these things. At La Cookshop I can indulge my love of Sophie Allport oven gloves and aprons, kitchenware by Le Crueset, Stellar, Bodum, Aga and the like. I love a bit of Royal Worcester (yes, I do need two Evesham gravy boats, thank

THE GRAZER PORK SHOULDER

This month, food writer The Grazer, aka Anna Hedworth, is mostly making salami...
y on-going interest in preserving food has led me recently to homemade salami, which turns out to be reasonably easy with the right equipment. Start with a pork shoulder and trim it of any sinew or fat. I ended up with about 700g of chopped meat. You also need 200g of back fat. Slice the pork shoulder into pieces, discarding all fat and sinew, and then dice it so you end up with
1cm cubes. When the meat is done, dice the back fat into cubes about half the size. You want tiny pieces of fat running through it. Now, salt the meat. I decided to do two different types of salami, so I divided the pork into two bowls of half fat and half meat. The amount of salt is critical for the curing process, so you should weigh everything accurately. You must add at least 25g of salt to every 1kg of meat. Each of my bowls weighed 422g so I added 10.5g Maldon sea salt crushed finely in a pestle and mortar to each.
For flavouring the first batch, I decided on a simple combination of ½ tsp fennel seeds, ½ tsp black peppercorns and 1 clove of garlic, all crushed to a paste. The second batch was a bit more adventurous and more French in style, with red wine and walnuts. I added ½ tsp black peppercorns, 2 crushed juniper berries, 1 clove of garlic, again crushed to a paste, along with a handful of chopped walnuts and a splash of red wine. I mixed both bowls to combine everything thoroughly and put them in the fridge
to mingle for a few hours. Next comes the stuffing. I ordered 38mm natural hog casings for the job, a salted pig’s intestine, and soaked them overnight to remove the salt and soften them up. They come bunched up tightly on a tube ready to pull off and pipe in the sausage stuffing (they don’t smell very nice). If you have a mincer they often have a sausage stuffing attachment, or you can use a small sausage funnel or pack it by hand, making sure it is packed full and squeezing out any air bubbles as you go. finally and ended up with six salami in total. I tied each end with string, tying the intestine into the knot so it doesn’t slip through when you hang it. Each salami needs to be labelled with its full ingredients and its weight. The salami is ready when it has lost 30% of its weight. Hang your salami inside for a few days while the skins dry out and tighten up, then hang them either outside, under cover or in a draughty porch or garage. RECIPES ROAST RED PEPPER AND TOMATO SOUP WITH QUALL’S EGG AIOLI TOASTED CIABATTA AND PARMESAN CRISP SERVES 2
Ingredients 6 red peppers 1 bulb garlic drizzle of olive oil 3 banana shallots 150ml water 1 tin cherry tomatoes ½ tsp smoked paprika 2 tsp tomato purée sea salt and white pepper 2 tbsp balsamic vinegar 50ml double cream 3 tbsp good quality mayonnaise 3 sprigs fresh thyme 2 tbsp grated parmesan 1 ciabatta 2 quail’s eggs

Method Pre-heat the oven to 180C/Gas4. Place peppers and the garlic bulb on an oven tray with a little olive oil and salt and roast for about 25 mins. Finely chop the shallots and fry until golden. Take peppers and garlic out of the oven. Put the peppers in a bowl covered in clingfilm so the skin becomes easy to peel. Peel the garlic and skin the peppers and discard the seeds. Put the peppers in a blender with 4 of the garlic cloves, the shallots, the water and tinned tomatoes and blend for 3 mins, adding the paprika, tomato purée, some sea salt and a little white pepper. When you’re happy the soup is smooth enough, transfer it to a saucepan and gently simmer, adding the vinegar and the cream to finish. Test for seasoning again after the cream. For the aioli, mash up the remaining garlic cloves and add to a bowl with 3 heaped tablespoons of mayo. Add a little sea salt and decorate with a few pieces of thyme. To make the parmesan crisp, finely grate a little parmesan onto grease proof paper and bake in the oven on 180C/Gas4 until melted and golden. Leave to cool and firm up. Take the quail’s eggs and cook for 3 mins in boiling water so the yolk is still a little soft. Peel and cut in half ready for the soup. Toast your ciabatta and then pour the soup into bowls, adding two halves of egg to each bowl and a parmesan crisp at the last moment.

PANKO BREADED CHICKEN WITH A SPICY NOODLE SALAD AND CHARRED PINEAPPLE SERVES 2
Ingredients 150g rice noodles 1 clove garlic 1 chilli| 2 cms ginger 2 spring onions 3-4 large handfuls of enoki mushrooms salt and pepper 150g panko breadcrumbs 1 tsp garlic salt 3 tbsp plain flour 3 eggs 2 chicken breasts
1 pineapple 2 pak choi a little fresh cress fresh coriander handful of toasted cashews drizzle of chilli oil For the dressing: 3 tbsp light soy 1 tbsp dark soy 1 tbsp rice wine vinegar 1 lime 1 tsp ginger 1 tsp garlic
Method First, mix all the dressing ingredients in a bowl and leave for the flavours to infuse. Cook rice noodles in boiling salted water according to pack instructions and then rinse off with cold water. Gently fry off the garlic, chilli, ginger, and spring onions for about 1 min just to soften them slightly. Take out and set aside. Add the mushrooms to the same pan and cook for about 30 seconds, then set aside on some kitchen roll. Season the breadcrumbs with salt and pepper and 1 tsp garlic salt. In another bowl, season the flour with salt and pepper. In another bowl, beat the eggs. Heat a deep fat fryer to 180C. Slice the chicken breasts lengthways and roll first in flour, then egg, then crumb. You only need to do this once. Skin and core your pineapple and cut into wedges. Heat a little oil in a griddle pan and cook the pineapple chunks just until you have good char lines on each side. Now drop the chicken in to the fryer and cook for 5-6 mins or until golden. Gently fry off the pak choi and the fried garlic, ginger, chilli and spring onions you set aside earlier. Add the noodles and mix well. Pour over 4 tbsp of the dressing and add a few coriander leaves and toasted cashew nuts. Take out the chicken and place on kitchen roll to drain off the excess oil. Assemble the dish and drizzle a little chilli oil over the chicken and sprinkle over a little cress then serve.
PAN-FRIED HALIBUT WITH BASIL PESTO RISOTTO AND CRISPY PROSCIUTTO SERVES 2
Ingredients 2 slices prosciutto 2 halibut fillets 2 knobs butter sea salt and pepper For the pesto 60g basil 2 garlic cloves 2 tbsp grated parmesan 50g pine nuts gently toasted for 2-3 mins 150ml good olive oil juice of about ¼ lemon pinch salt and pepper For the risotto 1 tbsp olive oil 2 banana shallots, finely chopped 1 clove garlic 200g arborio rice 600ml chicken stock (keep it in a pan just under boiling as you’re cooking the risotto) 30g parmesan Method Add all the pesto ingredients to a blender and whiz until smooth. Dry fry the prosciutto in a pan, using the base of another pan to keep it flat, for 1-2 mins. Set aside on kitchen paper to crisp up. To make the risotto, gently sweat off the shallots and garlic in a little olive oil in a pan then add the rice and stir for 2 mins until the rice turns slightly opaque. Start adding the chicken stock one ladleful at a time. Keep stirring to make sure you get a creamy rich finish, and adding more stock when each ladleful is almost absorbed. Cook until the rice is just under done and then stir in 2tbsp parmesan and half the pesto and stir. Season the halibut with a little sea salt and fry skin side down in a little oil until it is cooked ½ to ¾ of the way through. Turn the heat down to finish the cooking, dropping in a couple of knobs of butter and basting the fish until it’s done. Let the fish rest, then ladle the risotto into 2 bowls. Top with the fish, the crispy prosciutto, a little pesto and a drizzle of olive oil and serve.

he power of plants to maintain, heal and renew never ceases to amaze me. When my colleague Rachel started working with us, she immediately tried rhubarb complex for a full 28 days and the difference was amazing. The bloating disappeared, she had more energy, a brighter complexion and felt better in herself. She now does the full 28-day detox twice a year, and also has a couple of tablets when she’s had a particularly indulgent weekend to help her system rebalance. Her next ‘must take’ is Anxiety

Formula to help keep calm and level her out. She says she can get stressed and worked up (can’t we all!) and once it starts it can become an ongoing spiral. CHICKEN PHO WITH SWEET AND SOUR BERRY SAMBAL SERVES 4 This wonderfully fresh tasting chicken broth is packed with oriental flavours, shreds of chicken and fresh crunchy vegetables then topped with a taste exploding spoonful of naturally sweet berry fruits mixed with chilli and rice wine vinegar Ingredients Method 1.2 litres good chicken stock Add the stock to a large saucepan then add 1 bunch spring onions, thinly sliced the white spring onion slices, carrot, chilli, 1 carrot, thinly sliced ginger, garlic, lime leaves, fish sauce and 1-2 red chillies, halved, deseeded ketjap manis or soy sauce. Bring to the boil 5cm piece root ginger, peeled, thinly sliced stirring, then add the whole chicken breasts, 3 garlic cloves, thinly sliced cover and simmer gently until is cooked 2 small fresh or dried kaffir lime leaves through. While the chicken pho simmers, add 2 tsps Thai fish sauce all the sambal ingredients to a saucepan, heat 1 tbsp ketjap manis or soy sauce gently until the sugar has dissolved then boil 500g boneless, skinless chicken breasts rapidly for 10 mins until the fruit is soft and 200g choy sum, leaves shredded, stems cut pulpy. Spoon into a dish and leave to cool. in bite-sized pieces When the chicken is cooked, lift the pieces 300g chilled cooked rice noodles out of the pan with a draining spoon then tear 100g beansprouts, rinsed into fine shreds on a chopping board. Add the handful coriander leaves, roughly torn choy sum leaves and stems to the broth and Sweet and sour berry sambal cook for 2 mins then add the bean sprouts and 225g strawberries, sliced coriander and cook for 1 min. 175g raspberries Divide the noodles between 4 deep serving 100g caster sugar bowls, top with the chicken shreds then ladle 2 tbsp rice vinegar over the broth. Top with spoonfuls of the 2-3 red chillies, roughly chopped with seeds sambal to taste. Any leftover sambal can be 2cm piece root ginger, peeled, finely chopped kept in a screw topped jar in the fridge up to 1 small onion, finely chopped 2 weeks.

SEAFOOD SALAD WITH STRAWBERRIES SERVES 4
This healthy, low calorie salad is bursting with health-boosting antioxidants, vitamin C and protein. Ingredients 450g strawberries, hulled, halved 500g watermelon, peeled, deseeded, cubed ¼ cucumber, skin partly peeled away, deseeded, diced 1 little gem lettuce, thickly sliced 180g frozen cooked and peeled prawns, defrosted, rinsed, drained 30g baby kale leaves 50g pomegranate seeds Dressing 1 lime, grated rind and juice 3 tbsp avocado oil or light olive oil ½-1 large mild red chilli, deseeded, finely chopped handful fresh mint, finely chopped salt and freshly ground black pepper Method Add all the salad ingredients to a large shallow bowl and gently toss together with two spoons. Fork all the dressing ingredients together, drizzle over the salad and serve with warmed flatbreads.
SALMON WITH THAI STRAWBERRY SAUCE SERVES 4
Ingredients 250g strawberries, hulled ½-1 red chilli, halved, deseeded, finely chopped 2.5cm root ginger, peeled, grated 1 tbsp sweet chilli dipping sauce 1 tbsp soy sauce 1 tsp fish sauce 4 salmon steaks 200g thin rice noodles 1 tbsp sunflower oil 300g stir fry vegetables 150g frozen edamame beans fresh coriander, roughly chopped Method Mash the strawberries in a bowl, mix with the chilli, ginger and stir in the sauces. Spoon 1tbsp of the strawberry sauce over each salmon steak and grill until browned. Add noodles to a pan of boiling water, cook for 2-3 mins, then drain. Stir fry vegetables and frozen edamame beans for 2-3 mins. Stir in half of the strawberry sauce, add the noodles and cook. Put the remaining strawberry sauce in a bowl, set on a large platter, stir half the coriander into the noodles then spoon on to the platter. Break the salmon into large flakes, scatter over the noodles with the remaining coriander.
MIXED GRAIN SALAD WITH BLUEBERRIES, CARROTS AND NEW POTATOES SERVES 4
Ingredients 150g baby carrots, scrubbed 400g baby Anya potatoes 1 tsp fennel seeds 4 tsp pumpkin seeds 2 tbsp maple syrup 2 tbsp olive oil salt and black pepper 250g ‘ready to eat’ mixed grains 100g spinach, rocket, watercress 100g blueberries 100g feta cheese, crumbled Dressing 3 tbsps olive oil 1 tbsp red wine vinegar 1 tsp maple syrup 1 tsp wholegrain mustard Method Preheat oven to 200C/Gas6. Add carrots and potatoes to a small roasting tin, sprinkle with fennel and pumpkin seeds, drizzle over maple syrup, oil, salt and pepper. Roast for 30-40 mins. Reheat the grains in the microwave, tip on to a platter, sprinkle with the salad leaves, blueberries and feta. Mix dressing. Add the roasted vegetables to the salad with pan juices, dress and serve warm.
BLUEBERRY AND RASPBERRY SMOOTHIE SERVES 2
Revitalise yourself with this vitamin and antioxidant bursting berry juice. Full of natural sugars, it will soon boost energy levels. Ingredients 225g or about ¼ red cabbage 225g or1 large beetroot trimmed, scrubbed 175g raspberries 100g blueberries 2 tsp runny honey Method Cut the red cabbage and beetroot into small pieces and then press them through an electric juicer to a pulp. Purée the raspberries and blueberries with a little of the red cabbage and beetroot juice in a liquidiser until smooth then add the remaining juice and sweeten to taste with honey. Pour into two glasses and serve immediately or pour into a sports drinks container, seal well and take to the gym for a post-workout energy boost.

To the castle born Rosie McGlade makes an impression at Langley Castle
L
angley Castle makes a huge impression as you round the bend and turn into the drive; a fairytale castle hidden in wonderful Northumberland woodland, its romantic qualities on a fairytale level. I’d like to say we made an equal impression ourselves, and we possibly did, though not quite in the same way. I was given the key to possibly the most spectacular room in the castle, complete with Rapunzel window and four-poster bed. Unfortunately, I wasn’t sure my husband could make it up the stairs, having just developed sciatica. “We do have a service lift?” the receptionist offered. “Think about it and we’ll have someone come out for your bags.” The person who came for the bags was lovely. Our dog was with us though and what with my husband messing with the bags, she escaped. After the city, it was just too much for her, being in the spring countryside, you see,

and she had joy in her heart. I’d never seen peacocks fly, and it seems that neither had the dog. The guy with our bags looked on calmly as she bounded over to the tree where the peacocks had landed, barking loudly, my husband limping wildly across the immaculate lawn after her. Later, I watched from our window seat with some awe as other couples arrived without drama, as if they did this sort of thing all the time, holding hands and all dressed up ready for dinner. It’s a treat to stay over, but you don’t have to be a resident to eat here, and with chef Daniel Grigg (pictured above) now about year in post after cutting his teeth at The Samling it’s well worth the 40-minute trip from Newcastle. We chose the tasting menu (£65 per person, £40 with a wine flight). There’s also a four-course table d’hote menu at £49.50. We were impressed with the amuse bouche - a wild garlic veloute with a quail’s egg and purple heritage potatoes. There were lots of trendy ingredients
throughout the meal, served on boards and glass trays and some rather beautiful plates. Foie gras isn’t for everyone but if your conscience allows, it’s absolutely delicious when the quality is this good. The plate was stunning, with curls of parma ham and dainty shavings of the foie gras artistically balanced, and a dusting of Blumenthal-esque ‘ham powder’ on the side. There was a salt cod take on a korma, and poached trout on butter beans with crispy morel sprinklings. The venison that followed (we were supposed to have Herdwick mutton with lobster wonton, water chestnuts and miso broth, but my husband won’t eat sheep) was delicious and, like the foie gras and parma ham, I’ll remember it for ages. It came with a lovingly crafted sort of venison sausage roll, lentils, sauerkraut and chocolate sauce. Cleansing our palate was a creamy cucumber jelly, with dehydrated cucumber garnish over frozen gin ice, and that was gorgeous, as was dessert - toffee
apple pannacotta with a tangy bright green apple sorbet, dotted with tiny cinnamon buns. A feast, yet we still took the additional cheese course - a great selection with lovely accompaniments, and well worth the small supplement. Taking it to our beautiful room and eating it overlooking the fountain outside in the fading June light, we felt very, very special. I barely heard mention of back pain. Breakfast was tremendous, my husband had the traditional cooked, while I, unable to make up my mind, had a half portion of eggs Benedict and a half of Canadian pancakes with crispy pancetta and maple syrup. We had to go back to bed to accommodate it, but then leaving that room was always going to be difficult, so we thought we should enjoy it for a little longer. It’s nice writing reviews like this because you live the experience again, and our castle sleepover was a lovely experience. I just hope those peacocks have made it down that tree.

A
landmark, dear reader, in a young life has been reached. Number three son, aged seven, has discovered the joy of oysters. Precocious I call it, but then there is a bit of me that’s a little bit proud of such sophisticated tastes in one so young, even though I ended up quite a bit poorer since I had to order extra. Plus, it’s something in which, I think, you can share, it having taken place in the name of an appetite magazine lunch review at Blyth Boathouse, which is a good place to taste your first oyster, by the sea, coastal air in your lungs and the River Blyth making its way seaward yards from your table. This was one of those lunches where you end up fighting off tiny hands which reach across the table to nab not only oysters, but crab claws, panko fish fingers, sweet brown shrimps, big juicy prawns, roll mop herrings, mackerel and more from the
seafood platter which had been ordered, we thought, for the adults of the party. The young pretender to Egon Ronay’s crown also made short work of a plate of fantastic salt, pepper and chilli squid and an excellent smoked salmon selection, so there was no option but to order more of those, plus another half dozen oysters – ‘so fresh and clean-tasting, just like eating the sea,’ declared my friend Vicky, who is more than partial to them herself. We got a bit of peace when the young culinary pretender and friend (chips and panko fish fingers and far too polite – and squeamish – for oysters) went to run off some energy on the big riverside terrace, and we watched through the huge picture windows as they bounced around wildly, fuelled by the pure unbridled joy of childhood and the sea; that unique exhilaration which comes only by the coast and then leads to a massive energy drop later, when the post-seaside yawns

come, and they were dozing by the time we got home. For me, a pescetarian, this place is food heaven. Sister to the excellent The Old Boat House on Amble Harbour, where the seafood travels just yards from the fishing boats to the kitchen, it’s part of the port heritage centre on a site which also houses a marine science building for Newcastle Uni and the Blyth Tall Ship heritage boat building workshop, which makes it rather special. Come at the right time, and you might see the boats which land the catch on your plate, while the meat on the chalkboard menus is reared on Northumberland’s green and pleasant land.
The kitchen and waiting team is young and enthusiastic, which is always nice to see, and the dining room itself is happily understated in blond timber. This place, and its sister in Amble, are part of the Old Boat House Food group owned by chef Martin Charlton. He’s doing a grand job of spreading the word for good, fresh fish, landed locally, the premise being, if the boats have landed it, you can have it. And my, the produce of the North Sea is a marvellous thing, all the more so when you’re very young and tasting some of it for the first time. We’ll be back, and next time we’ll have two dozen…

Agranddayout Summer is here and a weekend in the foodie village of Cartmel is on the cards. Rosie McGlade finds that one of the best meals ever doesn’t have to cost a fortune…
T
he problem with somewhere like L’Enclume, Cartmel’s famous Michelinstarred restaurant owned by Simon Rogan - he of Claridge’s, London - is, let’s be honest, the price. I’m not suggesting it’s not worth it - the long waiting list suggests it certainly is. It’s just that sometimes you have to make choices with your money - like will we eat there and not go on holiday this year, or eat somewhere cheaper and book a little package? I’m exaggerating of course, but all the same, it’s £120-a-head kind of money. But then we pause. Nothing

is cheap here, but for £5 or so more than the average, we can go to Rogan & Company. This is L’Enclume’s little sister, owned by the same Simon who seems to have taken over half the village, and a considerable step up from Pig & Whistle (also Rogan’s) where we have previously eaten potted chicken and belly pork in a rather bland dining room. But Rogan & Company is gorgeous and we have absolutely one of the best meals we’ve had in a long time. The staff also treat you like minor royalty, which is nice, and we take the opportunity to find out where all the diners over at L’Enclume actually come from. “London,” our waitress whispers
conspiratorially. “Though last summer, it seemed like every other person was Australian. I asked one of them what was going on and they said the TV programme The Trip had just been on there, when Steve Coogan and Rob Brydon visited Cartmel.” Inside, Rogan & Co is a lovely former pub with beams, a big coal fire and beautiful photographs of the fells on the walls. Next to a tiny bridge over the village stream, surrounded by cobbles and with a sky full of stars, it looks like something out of a storybook. Mind, L’Enclume is similarly magical, though it is interesting to note that you’re prevented from staring at the privileged diners inside by frosted windows.
Back to Rogan & Co, and we are treated to a surprise amuse bouche of melting pork balls and a little loaf of sourdough with whipped Cumbrian butter, one half of it infused with seaweed. Oh, we do feel grand. It’s amazing how good food can lift the spirits. The hot and sour soup with chicken, brown shrimp and spring onion salad allows for some theatre, the salad arriving alone, an unusual medley in the middle of a bowl which seems not to know what to make of itself until the waiter produces a steaming kettle from which he pours a deliciously scented broth. But the big thrill of the night is the rabbit terrine - meltingly

delicious, with tarragon, meat chunks and liver parfait delicately rolled and served with a crisp vegetable wafer. I’d read you don’t get much here, but that’s not true. The portions look pretty and are plentiful. I’d also read it’d taken a bit of experimentation for the restaurant to find its identity, but it’s found its place now, it seems. “Some of the dishes take a full day to prep, almost like L’Enclume,” a waiter tells us with an air of awe. There are a sensible seven main courses to choose from, with local fish, meat and a veggie option. The haunch of red deer comes with smoked potatoes, hay-cooked celeriac and creamed kale - the vegetables almost outshining the excellent venison. The lamb rump, meanwhile, which arrives in a fanfare of orange foam and vegetable crisps, is earthy and delicious. Having come all the way from
London or Australia, L’Enclume regulars often make a weekend of it in a package which includes breakfast and one of their meals at Rogan & Co, so there are some super people-watching opportunities to make up for the frosted glass over at L’Enclume. It also means that standards here, too, have to be super-high. Our two starters, two main courses, and one driver’s glass of big, spicy South African Lammershoek red comes to £65. I could save up and take the family to L’Enclume, or come back and eat here and still have the funds to treat ourselves to wonderful adventures in the Lake District. Whether you favour Romney’s, Wilson’s or Quiggin’s, it would be rude to walk up a fell in the Lake District without a bar of Kendal Mint Cake in your rucksack. The team at Michelangelo’s pride themselves on the friendly atmosphere in all three of their restaurants. In addition to the à la carte menu, the popular Happy Hour menu is served 12pm-7pm Mon-Sat and all day Sunday, featuring one course for £4.95, two courses for £5.95, and three courses for £6.95. New dishes have recently been added to the menu, and all the food is freshly made and inspired by traditional family recipes. La Taverna at Ryton also offers tapas and real ales.
Eslington Villa is set in two acres of beautiful gardens in the quiet, leafy district of Low Fell, Gateshead. The award-winning restaurant is at the heart of the hotel and the kitchen team led by head chef Jamie Walsh enjoys an excellent reputation for dishes which reflect the best modern British and continental cuisine. The Terrace overlooking the gardens is the perfect place for pre-lunch or dinner drinks and al fresco dining. The early bird menu is served Mon-Fri 5.30pm-6.45pm, with two-courses priced at £14.95,
and three-courses at £17.95. Every Tuesday, diners can choose any wine from the wine list and pay half the price of the bottle, available on tables booked from 7pm onwards. During August, Appetite readers can enjoy a half bottle of champagne on arrival, three-course dinner in the AA rosette restaurant followed by an overnight stay and full English breakfast for only £160 per room (normally £175), based on two sharing. STRAWBERRY CHIFFON CAKE

INGREDIENTS

175g strawberries, hulled 250g self-raising flour 1 tsp baking powder 6 large eggs, separated 125ml vegetable oil 1 lemon, grated rind only 225g caster sugar dash red paste food colouring Filling 150g strawberry jam 2 tbsp cold water 2 tsp powdered gelatine 400g strawberries, hulled 125ml double cream Frosting 250g mascarpone cheese 1 lemon, finely grated lemon rind 2 tbsp icing sugar 400ml double cream a little red paste food colouring To decorate a few pink primula flowers and/or viola flowers a few small strawberries
METHOD
Preheat the oven to 180C/Gas 4. Grease and line the bases of 2 x 20 cm springform tins with non-stick baking paper. Purée the strawberries, press through a sieve and discard the seeds. Mix flour and baking powder in a second bowl. Put the egg yolks, oil, lemon rind and 175g of the sugar into the bowl of an electric mixer. Add the strawberry purée and a little food colouring and whisk for about 5 mins until thick. Beat the egg whites until stiff, then gradually whisk in the remaining 50g of sugar a teaspoonful at a time until the mixture is smooth and glossy. Sift the flour and baking powder over the strawberry mix then gently fold in. Stir in a large spoonful of the egg whites then fold in the rest. Spoon the mixture evenly between the two tins and level, then bake for 20-25 mins until the top is set, very lightly browned and a skewer comes out clean. Leave to cool, then remove the sides. Remove the base when cold. Peel off the base paper, cut each cake in half, and set two of the halves aside. Stack the other two halves and cut out a circle from the centre using a smaller 15cm baking tin as a template (you don’t need these circles again, so eat them now if you wish!). Put one of the whole circles of cake on a serving plate, spread a band
of jam around the outer edge then place one of the ring cakes on top. Spread the top edge of the ring cake with jam and add the second cake ring. Add the cold water to a heatproof bowl, sprinkle over the gelatine, make sure all the powder is absorbed and set aside for 5 mins. Pick out the best strawberries and arrange inside the cake to check they fit, then set aside on a plate for later. Purée 175g of the remaining strawberries, press through a sieve and discard the seeds. Stand the bowl of gelatine in a pan of simmering water and cook for about 5 mins, stirring from time to time until it becomes clear. Whisk the cream until it forms soft peaks, add the strawberry purée and gradually mix in the gelatine until smooth. Spread a few spoonfuls on the base of the centre of the
cake, arrange strawberries on top and cover with the remaining cream. Stick the other cake half in place with jam around the edges. Chill for 4 hours. An hour before serving, whisk the mascarpone, lemon rind and icing sugar together then gradually whisk in the cream until soft and spreadable. Take out one third of the frosting, divide between two bowls, colour one pale pink, the other a deeper pink. Spread a very thin layer of the un-coloured frosting all over the cake to keep any crumbs in place, then spread a thicker layer all over. Smooth with a knife. Press small dots of dark pink frosting around the base. Make a second paler pink band above it and a third band of un-coloured frosting. Smooth, then decorate with edible flowers and small strawberries.
