Industry news Ohio Pork Council Members Re-Elected to National Boards During the National Pork Industry Forum, held March 3-4, two Ohio Pork Council members were re-elected to serve on the national boards. Duane Stateler of McComb, Ohio, was reelected to a three-year term on the National Pork Producers Council. Rich Deaton of New Madison, Ohio, was re-elected by the Pork Act Delegate body to a three-year term on the National Pork Board, subject to approval by the United States Department of Agriculture. Stateler operates Stateler Family Farms, a wean-tofinish and crop operation in Hancock County. He has served on the OPC Board of Directors since 2007, in which he has served as President and member of various committees. Nationally, Stateler has served on NPB’s We Care Advisory Committee, in addition to NPPC’s Investor and Member Relations, and Nominating Committees. Stateler has also served as an NPPC delegate for numerous years. Deaton is a sales representative for PIC, a seedstock producer located in Tennessee. In addition to his involvement in numerous OPC committees, he has served on the OPC Board of Directors since 2011, serving as President from 2017-2018. At the national level, Rich has been involved in numerous task forces, and as a Pork Act Delegate. Stateler serves among 14 on the board to advocate for the public policy interests of America’s pork producers. Deaton, along with 14 other board members, utilize National Pork Checkoff funds to implement programs of promotion, research and consumer information designed to enhance the marketing of U.S. pork and pork products. OPC members Josh Berry, John Heinz, Rich Deaton, Scott Isler, Nathan Schroeder and Drew Eckert served as 2021 NPPC Delegates. In addition, Janel Hord, Ryan McClure, Dave Shoup, Nick Seger and Rich Deaton served as 2021 Pork Act Delegates. Ohio Porkline | www.OhioPork.org 4

Ohio State Fair Volunteers Wanted While a final determination has not yet been made on the 2021 Ohio State Fair, the Ohio Pork Council has started making plans to host the OPC Pork Stand, in the event that the fair takes place as scheduled. OPC is seeking volunteers to work at the pork stand at the Ohio State Fair, currently scheduled to be held July 28-August 8. As in years past, OPC will begin recruiting volunteer groups, such as FFA chapters and farms, in early summer. Individual volunteers willing to serve as day captains, assisting the grill master and providing directions to volunteer groups, are also needed. Volunteers will assist OPC staff and fellow volunteers by preparing pork products – like fanfavorite pork loin sandwiches, pig wings and pork chops - fulfilling customer orders, and maintaining a clean work environment. With last year’s fair being cancelled, OPC hopes to be back on 17th Avenue serving flavorful pork dishes for those in attendance, and we need your help! OSU To Conduct Mini Meat Cutting Workshops

Virtual Field Trips Following a successful fall season, the Ohio Pork Council will host six Virtual Field Trips to Ohio pig farms this spring. Virtual Field Trips are open to elementary, middle and high school students, with streaming available through Zoom, and Facebook Live or YouTube Live. By streaming the trips on various platforms, OPC is able to reach students learning in the classroom, or remotely at home. Trips will be hosted on the following dates:

The Ohio State University extension meat specialists are offering two-day workshops to help the current labor force navigate challenges brought forth by the 2020 pandemic. Those who attend will gain a better understanding of the anatomy, muscle myology, cutting guidelines, food safety, meat quality, the role of processed meat and government regulated ingredients. Participants will also conduct hands-on cutting tests to understand the impact of yields on profit margins.

Pork in the Classroom This spring, OPC’s Family and Consumer Science Presenters are offering virtual learning resources that cover proper pork cooking techniques, pork nutrition and modern farming practices. Resources include a step-by-step purchasing pork video, numerous pork recipe tutorials and an informative PowerPoint on Ohio pig farming. To supplement these resources, OPC is offering participating teachers reimbursement to cover the purchase of fresh pork product used to complete the cooking demonstration and supporting materials. Each teacher is eligible for a $20 reimbursement and a digital meat thermometer for completing all requirements. For more information, contact Meghann Winters at mwinters@ohiopork.org.

Save The Date: 2021 World Pork Expo The 2021 World Pork Expo will take place at the Iowa State Fairgrounds in Des Moines, Iowa. Professionals in the pork industry can expect three days of networking, education, and innovation from June 9-11. “We’re more than thrilled to be hosting World Pork Expo this year,” said NPPC President Jen Sorenson, communications director for Iowa Select Farms in West Des Moines, Iowa. “We look forward to connecting with our fellow producers, business partners and others who contribute to our nation’s essential pork production system.” NPPC will continue to monitor developments in COVID-19 guidelines (local, state, federal) for the World Pork Expo to ensure the health and safety of all participants. NPPC will provide guidance to exhibitors and attendees. Registration information will soon be available online for those who plan to attend.

HOW CAN WE BETTER POSITION OHIO’S PORK INDUSTRY FOR A FOREIGN ANIMAL DISEASE? Do you lack the motivation to prepare for the “what ifs” in your swine operation? Waiting until regulatory officials stop all animal movement is not exactly the right motivation to develop your farm’s emergency response plan. A foreign animal disease (FAD) outbreak, such as foot and mouth disease, classical swine fever or African swine fever, will halt the movement of animals and animal products in an effort to control the spread of these very contagious animal diseases. The unknown factors can hinder progress in preparing for a possible FAD outbreak. However, in order to eradicate the spread of disease, OPC needs unified effort from Ohio pork producers to build an effective FAD plan.

Here’s how you, as a farm, and we, as the Ohio Pork Council, can work in lockstep to prepare for a possible FAD -

Farm To-Do List: Acknowledge that everyone involved in Ohio’s pork industry has a responsibility in the state and national FAD plans. Make sure your Premise ID Number (PIN) information is up-to-date. The OPC office can double-check your PIN information. In an outbreak, the PIN ensures producers will be notified if they are in a regulatory Control Area, which speeds response time, and is necessary in requesting a movement permit. Involve your herd veterinarian. Establish your Secure Pork Supply (SPS) Continuity of Business Plan for your swine operation; it doesn’t matter if you have 10 or 50,000 pigs, every farm needs an SPS plan. The Ohio State University and OPC are collaborating to guide Ohio pork producers and their herd veterinarians through the steps to write individual SPS plans. All SPS plans need to be approved by an accredited veterinarian. Sign up for AgView. AgView is a free, opt-in technology solution from the National Pork Board that helps producers of all sizes and types provide disease status updates and pig movement data to State Animal Health Officials. Determine how to securely store and backup your farm’s SPS plan. In the event of an outbreak, the plan needs to be easily accessible for your team. Consider your options to save the finished plan – does your farm have a secure server, or should you utilize other available services? OPC has volunteered to safely store electronic SPS plans, and AgView provides each farm the option to save the plan. Through AgView, producers can quickly and safely transfer SPS plans to regulatory officials in the event of an outbreak.

Record Turn-Out - 2021 Friends of Pork PAC Auction

or those who attended the 2021 Friends of Pork PAC Auction, formatting looked a bit different. This year, the Ohio Pork Council established a virtual component to complement the in-person Live PAC Auction held on Tuesday evening of Ohio Pork Congress, enabling virtual attendees to support the PAC. Johnny Regula served as auctioneer, Gilbert Slothour served as online auction clerk, and livestream services were provided by Ohio Ag Net. Proceeds raised during the Live PAC Auction surpassed previous years, raising $32,005, while the Silent Auction raised an additional $1,550, for a grand total of $33,555 raised in 2021. Thanks to the support of many generous donors, in-person bidders, and virtual bidders, OPC was able to increase funds raised for the PAC fund by 21% yearover-year.

It is Time To Get Back to Legislative Normalcy By Cheryl Day, Executive Vice President

W

ith a year of the COVID-19 pandemic in the rearview mirror, state legislative work resembles a close to typical spring budget session, while federal legislators sift through administration changes, massive spending bills, and a proposed tax hike strategy. Still, the agenda of America’s pig farmers is clear; it is time to get back to the business at hand - raising wholesome, delicious pork.

State Budget Update The Ohio General Assembly is making headway with the budget progress, on target to pass the budget in mid to late April. For the main operating budget - House Bill 110 - the first round of amendments was due March 11. At press time, the House Finance Committee had yet to announce if they will adopt a substitute bill, revealing the first round of changes. According to the Ohio Constitution, the operating budget must be signed by June 30. The Senate is currently working on the state’s transportation budget, House Bill 74, which is historically passed by the General Assembly and signed by the Governor around April 1. The workers’ compensation budget, House Bill 75, and the industrial commission budget, House Bill 76, are also separate bills currently working through the Ohio House, likely approved sooner than the operating budget. Both measures traditionally contain minimal policy changes and pass relatively smoothly.

Operating Budget proposals: • H2Ohio fully funded at $242 million (M): $100 M agriculture, $92 M Ohio Environmental Protection Agency, and $50 M Ohio Department of Natural Resources. • Increase animal health line item from $3.7 M FY21 to $4.517 M FY22 and $4.517 M FY23, partially restoring staffing laid off last year. • $460 M grants for small businesses, targeting the hospitality sector OPC will continue to advocate for funding to enhance the animal health infrastructure, including the state’s animal disease diagnostic laboratory.

House Bill 2: broadband expansion grants for improved infrastructure. Status: Passed the House; Moves to Senate House Bill 95: tax credits for beginning farmers who participate in a financial management program and businesses that sell or rent agricultural land, livestock, facilities, or equipment to beginning farmers. Special Congressional Election Governor DeWine set the special election to fill the vacancy left in Ohio’s Congressional District 11, formerly held by U.S. Representative Marcia Fudge. The Special Election’s key dates include a Primary Election on August 3, 2021, and the General Election on November 2, 2021.


legIslAtIve updAte Meanwhile, on the Hill, President Joe Biden’s administration is busy rewinding the previous administration’s work, issuing numerous Executive Orders. In his first 100 days, Biden is focused on the fight against COVID-19 and restoring the economy. As Biden declares climate change as the overarching priority for all cabinet members, U.S. Secretary of Agriculture Tom Vilsack’s first project is figuring out how to get farmers involved in adopting climate-friendly farm practices.

OSHA Responds to Executive Order In response to President Biden’s January 21 executive order on protecting worker health and safety, the Occupational Safety and Health Administration (OSHA) has launched a National Emphasis Program (NEP) focusing enforcement efforts on companies that put the largest number of workers at serious risk of contracting the coronavirus, including meat plants. In a directive issued March 12 by the federal workplace safety agency, the program also prioritizes employers that retaliate against workers for complaints about unsafe or unhealthy conditions or exercising other rights protected by federal law.

While several OSHA state plans have adopted varying requirements to protect employees from coronavirus and similar enforcement programs, the directive encourages all states to adopt the NEP. State plans must notify federal OSHA of their intention to adopt the NEP within 60 days after its issuance.

Farm Workforce Modernization Act The U.S. House of Representatives passed the Farm Workforce Modernization Act, which would reform the H-2A visa program to address the agricultural labor shortage. Among other provisions, it would amend the H-2A program to allow a capped number of visas for farmworkers to work year-round. H.R. 1603 is co-sponsored by Rep. Zoe Lofgren (D-Calif.) and Dan Newhouse (R-Wash). The vote passed 247-174, with 30 Republicans in favor of the legislation. OPC members will join fellow U.S. pork producers for NPPC’s Spring 2021 Legislative Action Conference, held April 14-16. Labor, trade with Vietnam, additional inspectors at the ports, and Foreign Animal Disease risk from imported rescue animals are among topics members will discuss during virtual legislative visits.

HONEY BAKED HAM

Ingredients • •

Spiral Baked Ham ½ cup honey

Sugar Topping: • • • • • • • •

¾ cup white sugar ¼ cup brown sugar ¼ teaspoon cinnamon ¼ teaspoon nutmeg ¼ teaspoon cloves ¼ teaspoon paprika Dash of ginger Dash of onion powder

Instructions: • • • • • • •

Place ham in the slow cooker. Pour the honey all over the ham. Heat through on low (about 3 hours). Remove the ham and place on a baking sheet. In a small bowl, mix together the sugar and spices. Pat the sugar mixture all over the outside of the ham. Place the ham under the broiler (make sure it is not too close to the top broiler. If it is, move it to a lower oven rack). Set the oven to broil on high for 4-5 minutes. Watch the ham closely! When food is cooking under the broiler it can start to burn very quickly. You’re looking for the sugar to start bubbling and caramelizing.

The sugar will be VERY HOT so let the ham rest for a few minutes so that the sugar cools. Honey Baked Ham is traditionally served cold, but you can serve this ham warm if you’d like.
