Wow! Time flies when you’re having fun and at Ohlala there has been absolutely no rest for the wicked as we’ve reflected over these past 12 months with a sense of honoured humility. Ringing in the New Year is cause for celebration, for spending time with friends and family, and for looking back. A lot can happen in a year and between the good, the bad and the ugly, this may seem like an understatement for most. As glasses are raised and fireworks explode into the sky, it’s important to recognise the special symbolism this holiday brings with it. A time of new beginnings and fresh starts also comes with a time of reflection - yes, we’re talking about THAT fashion faux-pas. Whether your resolutions consist of keeping your hands out of the cookie jar or giving your heartfelt word to work on relationships with loved ones, it can take work. And it can make all the difference to put these hopes into words and warm wishes. Seeing is believing. Wishing you 12 months of success, 52 weeks of laughter, 365 days of fun, 8760 hours of joy, 525600 minutes of good luck and 31536000 seconds of happiness in 2019.

NATURAL SOLUTIONS We speak to DR LAMEES HAMDAN a medical doctor by training whose interest in dermatology led her to forming Shiffa in 2002, a luxury skin and body care company that combines the latest advances in science and dermatology using premium grade organic natural products. T
ell about Shiffa and how it all began? I am a doctor by profession, and I was pregnant when I was in the midst of my dermatology specialisation. Being pregnant was really the catalyst for my involvement in organic skincare. All of a sudden, I was very careful about what I was eating, what I was using to clean my home, what I was using on my face and body, etc. That’s when I discovered that we can have great skin using natural products, and we can even reverse aging using natural products. The reason why so many people didn’t see results with natural products is because no company had yet produced a natural and organic product and really spent time and effort on formulation, understanding ingredients, etc. Ours is an organic and natural brand that delivers results, which is the brand’s competitive advantage. The market includes either natural brands which are good for the body but do 34

not deliver anti-aging results, or brands which have harmful chemicals but give the end consumer results. What are some of your most popular products and why? Shiffa Rose Elixir. It is 96% natural and contains 4% (a high amount) of retinol. This is the closest we have to the fountain of youth. Retinol is one of the only ingredients that can actually reverse UV damage and aging in skin cells. The caffeine infused plant cells in my Rose Elixir also help your skin regenerate during the night, so you wake up to really fresh looking skin every day. Emerald Facial Oil - Because I am a doctor, I look beyond what’s trending now. I look at the skin as a macro and micro environment. For instance, people who are acne-prone tend to have a low percentage of linoleic acid, and a high percentage of oleic acid in their sebum. It is thought that these low levels of linoleic acid are one of the causes of acne. Shiffa Emerald Oil utilises oils which are highest in linoleic acid to nourish oily skin and help prevent any breakouts. Hence, Emerald Facial Oil is made specifically for those with oily skins, because it is a stimulating facial oil, perfect to purify and balance, as well as attain a standard glow on the skin. How did you come up with the product ideas and what is the process? Being a doctor, I know skin inside out, I know it from a cellular level, I know its interactions with topical products and so I set out to make the best organic skincare that would give you the best results. Skincare that was easy to use and effectively treated skin pigmentation, uneven skin tone, wrinkles, loss of elasticity, loss of the glow; all of the signs of aging in one product – which became what Shiffa is today. How important is it to have natural products? Organic ingredients are better absorbed and assimilated by the body. The word ‘organic’ has been given a negative connotation in terms of its effectiveness, because industries were focused on using it for marketing purposes. At Shiffa, I use organic ingredients in therapeutic concentrations, and that means that the results you get are amazing as there is a

supplementary amount of organic ingredients in the skincare product. The market includes either natural brands which are good for the body but do not deliver anti-aging results, or brands which have harmful chemicals but give the end consumer results. All Shiffa products are at least 80% or more organic. Shiffa can effectively erase 5 years’ worth of aging on your skin. I don’t think that even a chemical product can do that! What is your advice for looking after your skin in this region, particularly with the dry air and harsh environmental factors? Frankincense features in so many of my Shiffa products, namely the White Tea Moisturiser and Tamanu Moisturiser. It is an incredible ingredient for both dry and oily skins and is superb for antiaging. Shiffa’s Floral facial toner contains rosewater as the main ingredient (I think every middle eastern woman has seen her mother spray her face with rose water). Rose water is full of anti-inflammatory ingredients that protect and soften the skin. What were some of the challenges you faced setting up Shiffa? 15 years ago, we launched Shiffa back when going organic was not a trend. This made it difficult for us to communicate the value of the brand, as people did not believe that organic products can generate results. Shiffa was always ahead in this context and our customers who dared to try our products started seeing how beneficial that are. It is also important to note that back then it was difficult to source organic ingredients and wild crafted products. Tell us about your own beauty regime? Removing my makeup signals that my day has officially come to an end. 36

With that being said, my last ritual of the day is cleansing my face twice! I use Shiffa aromatic Cleanser and Organic Muslin Cloth to double cleanse my face and neck at night. Lush eyebrows are always enviable but this year say goodbye to eyebrow stencils and harsh pencils. Eyebrow tinting and microblading have become very popular in the last few years but be sure to not go too overboard with it. A natural and slightly untamed brow frames your face beautifully and doesn’t attract all the attention to your brows but rather puts the attention on your whole complexion. All you need is some clear brow gel and an eyebrow brush, adding a little brow pencil into any gaps and you’re ready to go. You should always be able to see the hairs of your eyebrow, especially on the ends.

The Jumeirah Royal Saray Bahrain, designed by world-class architect Floris Smith, sits resplendently next to its very own private beach and marina in one of Manama’s most vibrant locations, Al Seef district. OHLALA discovers the labyrinth of luxury… The hotel’s décor and architectural features draw inspiration from the homes of Arabian Royalty and luxury from around the globe. The Khalifa Heritage House proved to be a massive influence and is incorporated in many elements including the wood carvings, mirrors and flooring. The public areas within the hotel are elegant and ornate. Marble floors with tessellated Arabic patterns and archways complete with white fretwork lead guests from one beautiful space to another. The choice of fabrics, textures and injections of colour throughout take the hotel interior to new levels of luxuriance. Ochres, greys and marine blues are used to great effect. The methods of illuminating spaces are by far the most outstanding element of the décor within the Jumeirah Royal Saray. Chandeliers on a grand scale created from varying sized droplets of glass reflecting light in a mesmerising fashion and beyond this layers of light descending from the ceiling like a glowing wasps’ nest. As we arrived we were escorted to the beach front area which was the epitome of tranquility. Waves lapped onto the sand and sea birds strolled along the sand as the sun began to set. The Hadiqa Pool Bar provides an
inspired choice of food and drinks and the Cobb salad and Crispy Calamari which was delivered in a bamboo tray with an array of condiments suited the setting perfectly. The hotel boasts 174 rooms, 10 exclusive summer houses and 4 Royal Residences enjoying garden or sea views. Dark woods contrast with delicate shades of grey, oyster and silver. Marble is used to great effect in the bathroom area reflecting light and adding a further layer of luxury. The expansive bed with an equally inviting sofa at its foot enjoyed views over the private beach and gulf beyond. The egg shaped in-room bath was both a design feature and an indulgent addition to any stay. You may feel that the room facilities and décor can’t be bettered but venture onto the balcony and you will discover the most inviting daybed perfect for relaxation at sunrise and sunset. The Palm Lounge was our dinner destination and is the most brilliantly unique example of sophisticated classic elegance and contemporary design. Whites, greys and wickerwork blend Arabian elegance and colonial chic. Colour is injected in the form of green tumblers and woven place settings. The luxuriant metallic bar stools sit below irregular glass prism suspended from the ceiling providing what can only be described as a sense of curiosity. REGIONAL Escapes biscotti absorbed the unctuous liquid poured by diners themselves at the table. Cold mezze staples such as hummus, tabbouleh and baba ganoush could be combined with lamb sambousek, falafel and spinach fatayer to provide a mezze to rival any other. If burgers, sandwiches and pasta were not enough to tempt you then the Chef ’s Selection featuring Salmon with Labneh and Walnut Salad, Wagyu Short Rib and Goats Cheese and Spinach Quiche would certainly hit the spot. There are very few restaurants of this standard where dessert actually seems to steal the show but the Palm Lounge delivers both in terms of quantity and quality. They offer both Signature Pastries and Seasonal Treats ranging from the aptly named Velvet Sphere, Exotic Pave and Black Forest Stone. I feel it would be unfair but totally necessary for me to divulge that alongside this the restaurant offers Eclairs, Mille Feuille and a series of signature tarts. The hot chocolate was another showstopper as I was provided with a dark, decadent lollipop to plunge into steaming creamy milk. Sensational. After waking from a rejuvenating sleep we headed back to the Palm Lounge to investigate what the breakfast experience would entail. I would challenge anyone not to feel completely satisfied by the selection of pastries, fruit and cooked dishes. Waffles, buttermilk pancakes, eggs benedict and full cooked western breakfasts would cater to any palate and appetite. The poached eggs with avocado loaded onto a toasted ‘boat’ of crusty bread was possibly the most thoughtfully presented breakfast dish I had ever been presented with. Spanish Cortado and Turkish Coffee provided refreshment alongside delicate lemongrass and ginger tea. The Jumeirah Royal Saray Bahrain is a revelation. It employs elegance, contemporary and traditional influence and the very finest dining experiences to further enhance the Al Seef district. WINTER PEAKS The village of courchevel 1850 high up in the French Alps is a picture postcard of the likes seen on festive cards. David Tapley discovers the Les Grandes Alpes private hotel and tells you why this iconic skiing location needs to be on your seasonal bucket list.

TRAVEL Escapes A festive charm engulfs this small mountain enclave with its
narrow winding streets piled high with freshly fallen snow, fir trees strung with twinkling fairy lights and the vast peaks and pistes of the Alpes all around, with Mont Blanc the highest peak in Europe front and centre on the horizon. Named after the elevation at which it sits, Courchevel 1850 forms part of the world’s largest ski resort, encompassing three valleys, 600 km of ski runs and over 160 ski lifts. A haven for winter sports enthusiasts and luxury jet setters, the focus of this quaint mountain retreat is the Les Grandes Alpes Private Hotel; a property which over the years has taken on many roles, beginning as a post office, before transitioning into a bank and ski school, and then opening as the very first hotel in Courchevel back in 1948, the same year as the resort’s first ever ski lift. Located in the very heart of upmarket Courchevel 1850, the Les Grandes Alpes is an upscale mountain property benefiting from a prime position on the piste and making for one of the only ski in/ski out hotels in town. Sitting alongside the likes of luxury brands such as Bulgari, Louis Vuitton and Chanel, the stone facade of the building makes for the stereotypical representation of a luxury alpine retreat, complete with wooden balconies and rooftops heaving under the weight of freshly fallen snow. As if stuck in a state of eternal Christmas, Les Grand Alpes is the perfect marriage of chalet and luxury hotel that leans heavily into the high-end market. A whimsical winter wonderland awaits guests from the moment they arrive at the property, with a festive staircase aligned with foliage and wicker creations. Suite Life The property, which was remodeled in 2012 comprises of nine apartments and a total of 30 bedrooms and suites, with the unique layout of Les Grandes Alpes allowing for complete customisation when it comes to room configuration. The four-bedroom Emerald Suite occupies the entire fourth floor of the property and clocks in at an impressive 300m2, offering remarkable views over the tree-lined slopes and numerous ski lifts. South facing dining and living rooms represent the ultimate in comfort, with a circular glass fireplace representing the heart of this particular penthouse. Curled up on the sofas with a mug of hot chocolate and fur blankets while watching the falling snow makes for a truly memorable evening and one of the (many) highlights of a stay at Les Grand Alpes. These spacious suites have more to offer than the view. A professional kitchen, where private chefs can create culinary marvels is just the tip of the iceberg. Similarly, the children’s play room is not necessarily what you might expect, but offers the perfect solution/excuse for adults to venture into the suite’s very own miniature spa, complete with massage and steam rooms that complement the luxury values of a property where it would appear nothing is too much trouble! Les Grand Alpes offers an undeniably luxury experience wrapped up in a contemporary and quirky charm thanks to French interior designer Jean-Marc Mouchet, where Arctic and Antarctic animals are utilised in both artworks and decorative touches throughout - from bold polar bear prints to the plastic penguins that line the lobby. Much like the property and its facilities, service is premium, taking the notion of five-star luxury and raising the bar that bit further. Each suite comes with a personal butler (ask for Gael), who is on hand to ensure a personalised guest experience at all times, one where no request is too much or too little, resulting in Les Grand Alpes feeling like a genuine home away from home (with lots of snow!). The bedrooms are particularly impressive, with their wooden cladding helping to create a feeling of alpine adventure. Insanely comfortable beds are laden with pillows and fur blankets and skylights cleverly positioned above, ensure guests can marvel at a star-filled sky through a funnel of snow as they drift off to sleep. Luxury touches are noted and appreciated from the fur-lined slippers and bathrobes through to the heated toilet seats and Hermes toiletries.
Luxury Dining Catering to the elite clientele of Courchevel 1850, the dining destinations at Les Grandes Alpes are expectedly high-end. For the après-ski experience, many guests will flock to Bellini’s, a lounge bar situated adjacent to the hotel’s reception area. As the namesake suggests, the peach Bellini reigns supreme at this late night establishment and comes served in ornate crystal glassware using freshly imported peaches representative of French decadence at its finest. There’s also Le Bizan a small sushi restaurant situated at the rear of the bar, with minimal seating. A sushi spot is perhaps the last thing diners might expect high in the Alps but the new style cuisine which fuses together both Japanese and Mediterranean elements, astounds in both flavour and presentation, headed up by the Executive Chef of Zuma in Rome. Ski And Spa When it comes to recreation, guests have the opportunity to ski or spa. Zooming down the mountainside certainly offers a thrill and even beginners are catered for via the in-house team of friendly and encouraging ski instructors. Getting kitted up while sat upon Hermes leather upholstery and slotting our feet into pre-heated ski boots has got to be the ultimate way to start an alpine adventure and we fear that there is no going back now we know just how opulent a ski experience can be. By comparison, the Bellefontaine Spa offers a more subdued experience via a variety of bespoke treatments undertaken by expert therapists, utilising ingredients from the Alps including glacial water. While our suite had a mini spa, it doesn’t quite compare to what the Bellefontaine offers guests at Les Grand Alpes. An indoor heated swimming pool takes on the appearance of a luxury boathouse offering views of the ski lifts and snow-capped peaks from the comfort of regal chaise longues, while solace from the cold can be found in the sauna and steam bath. Though the resort is a 2.5 hour drive from Geneva along precarious mountain roads hugging close to the limestone mountainside, the demand for luxury prevails. With this specific clientele in mind and a money-is-no-object attitude, private helicopter charters can transport guests over the Alps to Switzerland and Lake Geneva in less than half an hour. A breathtaking experience on its own! Winter sports enthusiasts flock to Courchevel for the skiing, mountains and mesmerising natural beauty. With the crisp mountain air providing a brisk revitalisation, it’s the cold that is most noticeable and at minus 18 degrees it feels as though your heart is being grasped by jack frost, or perhaps it’s just the magnificent views that leave us in a state of perpetual awe. But the beauty is that you don’t have to ski or snowboard, for the wealth of activities available in this compact mountain village is quite remarkable. ISTANBUL CALLING Just mere hours away, Istanbul is the ideal destination for a quick weekend break or a longer escape that doesn’t involve too much flying time! Onboard Turkish Airlines is the best way to reach the bustling shores of this exhilarating city, as Melek Yildirimtekin finds out… I have flown with Turkish airlines a few times going to Europe via Istanbul and have always found the staff to be exceptionally friendly and warm. This trip was no exception. I was greeted with a lovely smile and shown to my Business Class seat - right away offered something to drink, an extra blanket and my little onboard flight bag which contained a much required eye mask, toothbrush and earplugs. Before the flight took off, I was out like a light. Having rested comfortably, Istanbul Ataturk airport is the next thing that I see. Upon arrival, I headed straight to the Business Class arrivals lounge, to meet with our Turkish Airlines Host, Kemal. Whilst waiting, I scoffed my face with a fresh Turkish breakfast, containing different types of cheese, fresh fruit, eggs and freshly baked bread - topped off with endless cups of Turkish Tea. After breakfast at the arrivals lounge – we make our way to the Vialand Palace Hotel to rest and freshen up. Day 1: Our first stop exploring is Ortaköy, where we head for the Bosphorus tour. But first, we fuel up on the famous Kumpir - which is a wood-fired baked potato. The waiter hands me a two-page list of toppings, I tick all the boxes and opt for all of the trimmings. After our quick lunch we head off on the boat; even though there was heavy rain for several hours, Istanbul carries a different kind of beauty with the dark clouds and historical backdrop. We have tea on board and take in the sites of this enthralling city. Once the tour is over, we have some free time, so I go hunting through the Ortaköy markets to see what goods I can buy and end up purchasing some fresh honey and sundried tomatoes. Once our bus arrives, we head straight to Nisantasi for dinner! We are greeted with the most magnificent view of Istanbul and take a seat for our grand supper. Our host has ordered for us all, so we know this is going to be huge. And, luckily, I have a big appetite! Our table was filled with mezzes, fresh breads, salads and grills. Lots of it. Day 2: We awake early for a tour of the hotel and then swiftly head into town for a tour of the Sultanahmet Camii (also known as the Blue Mosque). It is one of the most magnificent buildings in Turkey. Its interior filled with Arabic calligraphy, giant antique lights and the most luxurious Turkish rugs. From here, we make our way to Topkapi Palace. A visit to the palace’s opulent pavilions, jewel-filled treasury and sprawling harem gives a fascinating glimpse into their Ottoman lives. Filled with ottoman armour, swords and

artifacts, this palace maintains an extensive collection of books and manuscripts in its library. The Topkapı Palace is notable not only for its architecture and collections but also for preserving the history and culture of the Ottoman Empire. Next up is the lively Kapalı çarşı (Grand Bazaar) in the Sultanahmet area where I haggled for some lovely handcrafted ceramics and prints of whirling dervish to take back home. You can also find lots of gold, fresh Turkish tea, antiques, rugs, ornaments and even furniture! After stopping for a much-needed Turkish coffee and baklava for a pick-me-up, we headed to The Basilica Cister, not more than a 10 minute walk away. This is the largest of several hundred ancient cisterns that lie beneath the city of Istanbul and once stored the city’s water. The cistern has the capacity to store 100,000 tons of water. It is virtually empty today with only a few feet of water lining the bottom and tourists admiring in awe. We then head over to Galata area, and have free time to wander the streets of Galata and Istiklal Avenue and up towards Taksim Square. Galata has an array of quirky shops and independent boutiques, filled with local upcoming artists and designers. I didn’t get time to visit Galata Tower - but this is a must if you’re in the area. Istiklal Avenue is the most famous shopping street and district in Istanbul, hundreds of locals and tourists line the streets, and have all the latest fashion, tech and food to choose from. I get lost in a sea of people and the smell of chestnuts from the vendors lined up along the street – this is my sort of place! Day 3: After breakfast we check out and make our way to the Turkish Airlines training centre where we have a tour around the facilities and get to go on a few new simulators of their new aircrafts. We then head to Ataturk airport and say bon voyage - but not before checking into the Turkish Airlines business class lounge. This place is like a shopping centre, it is in a world of its own and I guarantee no other lounge is like it. As I had some time to spare, I booked in for a shower in their shower rooms - marble flooring, toiletries, towels and hair dryer are all provided - it was definitely worth the 45-minute wait! I felt invigorated and relaxed so I headed to the cinema room, layed in the huge recliner and had my popcorn - I must have dozed off before I awoke to some amazing smells. I followed my nose over to the pide counter and filled a mountain of pide onto my plate followed by a mixed grill, which was situated right next to it. Drool factor was over the charts. The Lounge also offers massage rooms, children’s play and gaming areas and whatever you want to drink, from ayran to black label - it’s all readily available and never empty. When my flight was announced I didn’t want to leave, this lounge is a holiday after your holiday. I felt full, relaxed and revived for my flight back home – all thanks to Turkish Airlines for hosting and showcasing a magnificent city, their friendly and warm staff, and for opening my eyes to history and culture. THE MIDDLE EAST STOLE MY FRIENDS... AND MY HEART. HELEN HOUGHTON provides us with a refreshingly honest, yet amusing account of her misconceptions of the Middle East and how she swiftly embraced the expat life.
I
can only describe the feeling of total desolation that confronted me on that dank, overcast day in November as heart break. I had been blindsighted, clueless to the plans which were afoot and which the beaming faces seemed so happy to share with me. Just as any self- respecting 40 year old woman would I handled their disclosure with the utmost resilience and dignity; spending the next eight months sporadically bursting into tears, sometimes with my daughter and sometimes alone, usually ironing… It wasn’t the only thing letting off steam. This is when my vendetta began. It was against the sinister spectre which was stealing my, our, best friends. I fantasised for hours about their misery at the hands of an authoritarian government and imposing culture which had no scope to bend for the sake of tolerance. The heat, the unbearable heat which would imprison them for months at a time, stripping the girls of their carefree outdoor lifestyles. They would be forced to ‘cover up’ stifling any sense of individuality or femininity and accept a temporary destiny which would label them as inferior due to their gender. The images they showed me of villas with pools and bustling communal areas taunted me and further fuelled my resentment. They wouldn’t be part of anything anymore, surely, it would be faceless and impersonal, this transient existence as an expatriate? No more cricket teas or impromptu get togethers. The girls would never be able to play freely in the street and run and giggle until they couldn’t any longer for lack of breath and excitement. Life would be sensible and stayed and dour. As for premium beverages and fry-up sandwiches slathered in tomato sauce … Well, I was quite frankly distraught at their loss. We made it through the painful “Goodbyes” and I admired their courage to be able to maintain such a positive ‘front’ in the face of such adversity during our frequent Skype calls. It must be so difficult for them I mused, seeing us living our lives to the full whilst they ‘make do’ amidst repression and intolerance and the embarrassing ostentatiousness of their hosts. A ‘tiny’ voice beside me (which I later learned was the closest thing I had to a voice of reason at the time) would repeat “When we come to see you…” during every call and the inevitability of having to make the trek into the unknown became more and more apparent and imminent. Packing for trips is generally classed as a source of discontent and angst amongst most families and due to the ‘nature’ of the country we were visiting it made the task infinitely more thankless. My daughter is a tomboy and has not worn a dress since she was physically able to remove one. Would she be arrested? Stoned? I felt it was my duty as a mother to prepare her for the horrors that might await her . She may have to accept the need to wear, a skirt or at very least the colour pink - you can tell my ignorance wasn’t bliss but merely ignorant at the point. I had created two distinct wardrobes. The respectful, conservative ankle grazing, wrist length gowns which I would wear when we left their home. I packed full bathing suits and just one bikini to wear around the pool. Shorts and vest tops were kept to a minimum

TRAVEL Spotlight so as not to offend. As our arrival in The Middle East approached friends started to comment upon how brave I was travelling ‘there’, ‘alone’ … and a ‘woman!’ The look of genuine admiration at my selflessness and courage was afforded by men and women alike. The months of yearning for their company, their warm laughter, hugs and voracious appetite for Maoam candy was over. My daughter and I departed from England on our journey. This was the first time my daughter had flown ‘non-budget airlines.’ The movies, video games and bottomless soft drinks delivered to her made her final hours of ‘civilisation’ as we knew it absolutely delightful. Our airline delivered us in the balmy early evening refreshed if somewhat apprehensive. This is where things took a surprising turn. We rounded a corner to find a Duty Free shop where new arrivals could ‘stock – up’ on gifts for friends or simply for themselves to enjoy whilst on holiday. ‘A trick……. A test which must be passed! ‘ I thought. When I learned that it was a courtesy for visitors the furrow of suspicion on my brow softened a little - this place doesn’t seem as draconian as I initially thought. How lovely. I bought my friends an industrial size pack of mini Daim bars on offer that would complement the haul of Maoams we had carted here very nicely. As our luggage ambled its way towards us on the rubber conveyor belts a wave of panic overcame me. Public displays of affection… a married man and two children were greeting us. How would I prevent myself from being cautioned or worse arrested? Forewarned is forearmed I told myself and approached a tall, well groomed security guard. After listening intently to my predicament he smiled warmly and said that everything would be fine, “Give hugs and kisses, it has clearly been a long time.” How odd? I hope that it is becoming increasingly clear that one-by-one every fear, myth, untruth and exaggeration was totally erased within the first few hours of our arrival. My friends had ice cold bottles of matured apple waiting for us - just as we would have back home. Following a very sound sleep and a lavish breakfast I left for the water park dressed exactly as I had done in Spain the previous year. No sinister looks or disapproval from locals. Everyone respected the choices made by others whether that was complete coverage or neon bikinis and I felt more comfortable than I ever had in any foreign country. And so it continued. Impeccable service and cleanliness. An array of cuisines which would rival any capital city in the West. A ‘rainbow’ of races and cultures from whom my daughter gleaned a wealth of phrases and information which will stay firmly in her heart and soul, moreover moulding her into adulthood and beyond. The beauty of the women in traditional dress which can not be quantified in western terms or by western standards. The intoxicating perfumes and vivid décor. This land that stripped me of my friends and shattered my heart was now stealing mine. I feel honoured to have experienced Islam at its purest and most intense. The fractious version so richly publicised by the media in the west bears no resemblance to the piety, humility and adoration of all living things I experienced here. The Mosque rendered me speechless for almost an hour … had we not been in this exquisitely divine building my friends may have feared the worst. I had never imagined seeing such unrivalled architectural beauty which was shared generously with everyone who wished to visit. As a teacher at the time I would have loved to take every one of my incredible students, with brains like sponges, to absorb this experience, this life changing experience.The place I felt scornful towards and loathed for its wrongly perceived repression, misogyny and barbaric heat had simply been a figment of my imagination. I had allowed hurt and propaganda to shape me. I’ll be forever thankful that our friends were ‘stolen’ so that I had to seek them out and unveil the truth about this incredible place.

Cooking is my passion and the love of my life. What inspires me is that I get to combine my passion and career all in one. I am the first Jordanian Executive Chef to hold this position at Four Seasons Hotel Amman. It’s a great achievement that contributes to my daily inspiration. Why join Four Seasons Amman? I am loyal to the Four Seasons brand. I started my first Four Seasons assignment as the Sous Chef at Four Seasons Resort Lanai in Hawaii and then I moved around to various Four Seasons properties around the world, until I landed in my hometown, Amman!

What’s your signature dish? My signature dish is the traditional Jordanian dish called Mansaf that is made with lamb, rice and cooked yoghurt. If you want to feel like a Bedouin, we recommend you eat it with your hands. Where did you begin your culinary journey? I would say my culinary journey started at the age of 8. I used to watch my father cook because he was a chef in the army and I wanted to be exactly like him. If your menu was a story book, what kind of story would it be telling? It would be telling the story of the world with a location pin on Jordan! With close to 20 years of culinary experience, I’m fascinated by many cuisines including French, American, Italian, Mediterranean, Asian and Indian; and let’s not forget the most important of all, authentic Jordanian cuisine. What’s your favourite dish on the menu? My favourite dish of all time is a steak with mushroom and spinach ragu. However, my favourite dish at Four Seasons Hotel Amman would have to be Chef Arthur’s Endive Salad at La Capitale. It comes with baby endives, Roquefort cheese, walnuts, green apple, mustard dressing. Has cooking always been your passion? Always. Since as long as I can remember I have always loved cooking and wanted to be the best chef that I could be. That was my ultimate goal. Your advice to the aspiring chefs out there. My first piece of advice is... To achieve your goals you have to start somewhere, even if you think it’s a small starting point. It will get you places. I started my career as an intern at a hotel in Amman and now I am proud to be the Executive Chef of Four Seasons Hotel Amman. My second piece of advice is to take ownership of your actions. Everyone makes mistakes, understand how to correct them as you move forward.

Here, Necla reveals the DNA behind this quintessentially Turkish culinary abode.

ello Necla! Tell us about Mama Istanbul and how it conceptualised in Bahrain. Mama Istanbul Cafe came about after I relocated to Bahrain to be with my daughter and my grandchildren - family always comes first! I’ve had Turkish Businesses in the past, and soon realised that there was a gap in the market for a simple yet affordable Turkish cafe - and so Mama Istanbul Cafe was born. I come from a country where franchises are not really common place as people care more about familiarity and the feeling of being welcomed like a family member when they go to a cafe - a place where all families can afford to dine at. Bahrain needed that. My cafe is local and I’ve always supported local businesses, so, I’m truly appreciative that Bahrain has opened its arms and enjoyed having a family friendly turkish cafe that they can keep coming back to. Why did you decide to pursue a career in the restaurant business? My entire life I have either had my own Turkish Cafe & Restaurants in Sydney, Australia or managed other Turkish dining outlets. It wasn’t a career that I decided to pursue, it was just what I naturally fell into when I immigrated to Sydney at such a young age. Luckily I was also an amazing cook thanks to my mother who taught me everything I know. Talent passed down throughout the generations is important to me as the love is authentic and clear to see - which now shows through every dimension of Mama Istanbul. Tell us about your career path. How did you get your start? How and why did you open Mama Istanbul? Basically my career began in Sydney, when I first immigrated from Turkey after getting married. My first job was at a Turkish

Kebab shop and this initiated my thirst for exploring other areas within the hospitality sector. Later I opened my Turkish Cafe in Sydney, and a few years later I found myself expanding and purchasing a Turkish Restaurant that I also used to manage. After years of long hours I made the decision to semi-retire, and once my daughter and her husband started a family in Bahrain, I decided to move here. I am very passionate about my work so once my path changed and I began my new life in Bahrain Well, I couldn’t sit still and I needed another business venture. With my daughters assistance we opened Mama Istanbul Cafe. We work as a great team together, and without her help I couldn’t have put my vision to life. Again, family is key. What’s your secret to keeping customers coming in? You cannot beat kindness and a smile. People like to feel like family and have familiarity when they eat out - it makes them feel at home. If you can’t give this to customers, it’s hard for them to remember your cafe and have a memorable dining experience. We are insatiably in love with your homemade Baklava served with Ice Cream amongst others. What have been some of your most successful dishes, and where did they originate? My homemade Baklava served with Ice Cream is a huge success with my customers! My mother actually taught this to me from a very young age and without her I wouldn’t have the dedication and love that I have now that goes into making my turkish dishes. The simplicity of Simit with a freshly brewed Turkish Tea or Turkish Coffee is also a favourite with my clientele. It’s just the perfect homely treat and fills the spot after a long day of shopping. What inspired this particular aesthetic? Mediterranean Magic It’s been some time since we actually stopped in my tracks and looked around with absolute wonderment and delight as we entered a restaurant, but this was exactly the effect that FLORENCE - LA MAISON MÉDITERRANÉENNE had upon us. Designed to mimic a Mediterranean country house with terracotta render and brilliant white shutters, Florence is beautiful in the truest sense of the word.
T
he philosophy behind the menu at Florence and the venue itself is based around the ancient Greek Agora or meeting place where families, friends, and merchants would gather. This idea of a place to mix, mingle and meet within the heart of Adliya is the driving force behind Florence. Although the mouth-watering menu should not be neglected, it seems fitting to set the scene and explain why the ambient features within the restaurant alone are worth visiting. The internal dining areas will fool your brain into thinking that you are in a rural French village in a chic bistro along the Azur coastline. The white-painted wooden furniture, the vivid floral wallpaper used to accentuate the bar area and the vintage pieces of décor such as old suitcases crafted into shelving give a French bistro chic feeling. You should spend some time on the Terrace or in the Florence Garden enjoying the al fresco dining opportunity. The terrace overlooks the main street complete with wrought iron furniture and railings. The Florence Garden designed around a calming tranquil stone fountain boasts climbing shrubs and greenery, olive trees and expansive parasols offering shade during the day. In the evening subdued lighting and woven fairy lights create the hue of dusk in the Mediterranean. Filigree bird cages and pin striped canopies also add an element of authenticity which tantalises the senses as you begin to eat. The food draws inspiration from Italy, France, Lebanon and Bahrain amongst others. It would be wrong to suggest that this was fusion food, too simplistic as description - but rather that it simply draws the best of each regional style and combines them to offer a stunning range of dishes. The perfect location for two of the mocktails which exemplify Florence. The Colors of Florence and the Passion Fruit Mojito were both as vibrant as the shades of the Mediterranean at sunset and were brimming with fruit juices and sweet syrups. The Pasta Brie with decadent, unctuous balls of brie served on top of spinach pasta garnished with edible flowers almost looked too good to eat. 74

A cube of Gorgeous Eggplant was another choice. Layers of eggplant and tomato with a fragrant spiced tahini yoghurt blended the construction of a traditional lasagne with the flavours of the Middle East. For those of you wishing to convert a friend or loved one into eating salads, look no further than the Black Lemon Steak Salad. Strips of Tenderloin with Arugula and roasted nuts bound together in a chilli oregano vinaigrette – it’s incredibly delicious. Traditional Italian fare such as Osso Bucco, veal shank served with Saffron Risotto sits side by side with Arabian staples such as Dajaj Warak Enab. Grilled Chicken with vine leaves, pomegranate and pine nuts seated on a bed of creamed potatoes. Decadent and delightful. Not really wanting this gastronomic experience to end we eagerly ordered dessert in order to prolong our visit. The Florence French Toast infused with cardamom and saffron and served with softened vanilla ice cream was balanced and fragrant. A truly magnifique finale. ercedes Benz has been producing vehicles for over a hundred years and in that time has managed to create some truly impressive offerings, including delightful models within the SUV segment. When we were invited by Al Haddad Motors to test drive the new GLS 400, we were most excited to thoroughly inspect Mercedes’s latest creation as well as to put it through its paces. Upon our initial exterior inspection of the GLS, we noticed that the front end has been redesigned, emphasising the dynamic character of the SUV. The rear too has been modernised with special attention given to the bumper and taillight features. With a length of just over five meters and both a width and height of almost two meters, the dimensions of the GLS ensure the best possible basis for providing seven passengers with ample space. Attractive highlights on the vehicle include the chrome roof rails and under guard that finish off the exterior with a touch of class. Inside the vehicle, the revised interior emphasises the first-class standards of the GLS. Attention-grabbing features include the newly 80

designed instrument panel with semi-integrated 8” media display, a modified centre console with touchpad, as well as the new 3-spoke multifunction steering wheel that felt extremely comfortable in hand. Newly employed colours and trim elements add to the extravagant nature of this premium SUV. All three rows of seats allow for sufficient head, shoulder, elbow and leg room, ensuring a comfortable experience for all vehicle occupants. The diverse adjustment options allow for a high degree of interior flexibility, including a position especially for optimum usage of the luggage compartment. The volume of this compartment

can be increased from 680 litres to 2300 litres, outdoing any and all of its European competitors. Luggage space will certainly not be an issue with this model. Thoroughly impressed with the aesthetics, fabulous features and attention to detail of the vehicle’s general design, we turned our attention to power and performance. The sound of the V6 biturbo engine is enough to excite even the most seasoned of test drivers and as we pulled off onto the roads, a small amount of pressure on the accelerator revealed the direct injection feature of the engine. This beauty has a beast under the hood that can produce 333hp (245 kW) and 480 N-m of torque from 1600 rpm. At the same time, the GLS 400 4MATIC boasts an environmentally conscious design, producing only 8.9 1/100 km (206 g CO₂/km) and features an ECO start/stop function. In current times it’s important to know your car is producing the lowest amount of emissions as possible. The GLS comes complete with a nine-speed 9G-TRONIC automatic transmission, allowing for a smooth and efficient driving experience. With six transmission modes namely Comfort, Slippery, Sport, Individual and two Off-road modes, this SUV is more than equipped to handle

any weather or terrain. This experience is further enhanced by the AIRMATIC air suspension with enhanced ADS damping characteristics that guarantee stable driving. We were truly impressed at just how responsive this vehicle was as well as the crisp nature of its steering, breaking and corner handling. There was never a moment that we didn’t feel in complete control. It is however, the safety features that make one feel completely comfortable in any vehicle. Mercedes-Benz has ensured that all of the latest features have been included in the GLS. The driver assistance systems that have been fitted as standard include Collision Prevention Assist Plus, Crosswind Assist and Attention Assist. Other safety features include the Pre-Safe System, Brake Assist, an electronic all-wheel drive traction system with Curve Dynamic Assist, Cruise Control and Steer Control. The designers of this magnificent vehicle have gone to extra lengths to ensure safe travels for you and your family. After what can only be described as a wonderful day on the roads, we reluctantly returned the GLS to its rightful owners. H A P P I N E S S Miss Ohlala looks forward into 2019 with a reflective aura.
As the New Year chimes ring out and fireworks illuminate the night sky at midnight, along with the sense of unbridled hope and expectation for the year ahead comes the opportunity for change and new beginnings. This could be changing something physical, spiritual, emotional or even geographical. Typically the temptation is to set oneself up for failure, to take on a resolution which is not just unattainable but also a sentence to weeks if not months of misery. Instead, this year make a positive choice not to deprive yourself of anything but to focus on achieving something positive which will not just enhance your life but also those closest to you. It should be about positive choices not personal deprivation. Why not resolve to embrace every opportunity placed before you or choose to do one selfless thing every week or perhaps spend more time moving than being sedentary, a much nicer prospect than dragging yourself to the gym every day. Reluctantly. Someone taught me a valuable life lesson this year and that was to take the positive elements from any situation and focus on this rather than dwell on things which that can’t be changed and ultimately don’t matter in any real sense. Life is about choices and every action is linked 98

to a choice we have made in some way. 2019 should be about choices. Choices which we should see as opportunities as opposed to obligations. Don’t saddle yourself with a millstone around your neck as the New Year dawns. Make a choice which will amplify the good, intensify the joy and magnify the reasons you feel grateful for the life you have built or are indeed building. This same wise owl also gifted me with the following definition which both intrigues and delights me, “Happiness is the distance between Expectation and Reality…….. our expectations and aspirations should not be stifled or censored but rather tailored to meet our capabilities and actuality.” Embracing this nugget of knowledge will guarantee a year of success and fulfilment, not just for yourself but hopefully it will filter through to those you influence and love. However, the final element of this formula - reality is ultimately controlled by you. The impetus, motivation and resilience you employ when upholding your resolution will dictate ‘reality’. Ultimately the key to happiness is in your hands. You dictate the expectation (your resolution) and choose to behave in a way that makes this a reality. Also, embrace those chocolates - they release positive pheromones in your brain!
