Calm & Cool Watermelon Gazpacho

Ingredients:

6 Cups Seedless Watermelon (Diced)

1 Cucumber (Peeled & Diced)

1 Red Bell Pepper (Diced)

1 Small Red Onion (Diced)

2 Medium Tomatoes (Diced)

1/4 Cup Fresh Basil (Chopped)

1/4 Cup Fresh Mint (Chopped)

2 Tbsp Red Wine Vinegar

2 Tbsp Olive Oil

1-2 Tsp Cannabis-infused olive oil (Adjust according to your tolerance and desired potency)

Juice of 1 lime

Salt and pepper to taste

Instructions:

In a large mixing bowl, combine the watermelon, cucumber, red bell pepper, red onion, and tomatoes. Then, transfer half of the mixture to a blender. Add the basil, mint, red wine vinegar, olive oil, cannabis-infused olive oil, and lime juice. Blend until smooth.
