Banquet menus autumn 2015 Thon Hotel Opera Scala Restaurant is situated with a wonderful view of the Opera House in Oslo We also have separate dining rooms with a capacity ranging from 30 to 150 guests

Menu 1 «The Opera Menu» Our signature menu is composed in accordance with the current season Our goal is to use the best products available, balanced in a combination of Norwegian fish, meat, poultry and vegetables.

Starter Confit of Norwegian salmon, served with avocado cream, radish and pickled onions Main course Filet of beef and braised ox cheek, served with pumpkin glazed in sage butter and boiled potatoes Dessert Opera cake á la Opera The cake is made by our pastry chefs using chocolate Ganache and butter cream

Menu 2 «The Edvard Munch Menu» Thon Hotels enjoys an excellent collaboration with the Munch Museum in Oslo. In the near future the new Munch Museum is to be situated here in Bjørvika and we have the pleasure of presenting a menu based on ingredients we know Edvard Munch would appreciate. Through his diaries and notes we have together with the Munch Museum learned that Mr. Munch both was very fond of eating good food, and in culinary arts in general. He enjoyed fresh local products, but was also interested in exciting tastes from Europe, food trends, and ensuring a healthy and varied diet

Starter Cured inland trout served with pickled pumpkin, fresh radish and dill dressing Main course Filet of deer served with broccoli and blue cheese purée, chanterelles, gratinated potatoes and red wine sauce Dessert Norwegian crumble cake with cream and cinnamon, containing ripe Norwegian apples

Menu 3 ÂŤThe Northern Lights MenuÂť Thon Hotels have 9 hotels north of the polar circle. Inspired by our colleagues in the north, we have composed a menu with origins from the northernmost municipals in Norway: Nordland, Troms and Finnmark.

Starter Smoked Arctic charr, served with red beets, herbs and caviar Main course Round part of reindeer, served with brussels sprout, lingonberry sauce and potato gratin Dessert Blueberry mousse with chocolate on fuilletine bun

Menu 4 ÂŤBrewery MenuÂť We have let ourselves become inspired by the increasing popularity of beers in Norway. For this menu we have worked with the aromas deriving from cider, pale ale and stout to show that you can create something exciting from the brew normally served in a glass

Starter Pork rib braised in cider, served with pan fried scallops, celeriac and apple salad Main course Chicken breast poached in pale ale with root vegetables, served with barley risotto with apple sauce Dessert Stout- tart with honey and Guinness ice cream
