The story of the socca of Nice, FRANCE A symbol of gastronomy Niçoise, the Socca is a very large and thin cake made from chickpea flour. Traditionally baked on a round copper plate in a wood oven, it originated in Italy before being introduced in Nice. The story says that Nice fishermen ate it before going to sea ... At that time, it is the meal of the poor (even if at the moment, the price of the share of socca became very "touristic" 2,50 € the bite !!!!! ah now it's 3 € ...) It is generally appreciated at the time of the "aperitif" in the old town of Nice with a glass of rosé wine... It tastes good peppery, it's very hot and a good socca must be both crispy above and soft below. Therefore, when purchased, it is usually consumed "on the spot", or to take away, and eaten as quickly as possible. Today, here is a "house" version without having a wood oven. The trick lies in cooking. We start by a maximal heating of the oven and then change mode to grill position. Honestly, it will never be the socca of the market but we get very close!It's a good socca, not greasy with side crousti /melting.Hard to resist but you must be "nissart" to understand!
Recipe of the socca​ for 4 persons Preparation time: 5 minutes Cooking time: 5 to 7 minutes Ingredients: 250 g chickpea flour 50 cl of water 3 tablespoons of very fruity olive oil 1 teaspoon of salt, pepper
Preparation: Thoroughly mix the flour, salt and olive oil and add the water little by little in order not to form lumps. Pour this paste on a well-oiled plate. The thickness should not exceed 3mm. Cooking: Preheat your oven for 15 minutes at 275 ° C - the maximum you can! Place the dish in the top of the oven, count 2 minutes before changing position in "Grill mode".Leave about 7 minutes of cooking time.
Remove the dish from the oven and serve immediately by cutting portions and sprinkling with pepper. Warning !!! It is necessary to supervise the coloring: the socca must be well browned. It may have blisters that form during cooking, you have to burst them!

Traditional Koum Quat Sweet by the 14th Kindergarten of Corfu, Greece
COMPONENTS Koum-quat (fruit) Water Sugar Lemon IMPLEMENTATION: Put the Koum-quat in water for three days, changing each day the water. Boil them (in water to cover them) for 30 minutes. Drop the boiled water and cook for another 30 minutes. Empty the water again and check if it is so soft that it can be pierced with a toothpick. If the peel is hard, make holes peripherally with the toothpick. Prepare the syrup by putting as much sugar as the koum quat + 250 grams. That is, for half a kilo koum-quat we put 750 g. sugar. Add 1.5 glass of water and boil for 2 minutes and finally add a few drops of lemon. In the prepared syrup, pour the cooked fruits and leave them for a few minutes to boil together. If the syrup is very tight, add a little water and boil for 5-6 minutes.
