In its first edition, the diary created by Olio Officina - with texts written by oleologist Luigi Caricato - was conceived with the declared intention of reaching out to all oil enthusiasts who want to discover how to choose an extra-virgin olive oil, starting by tasting the oil in its purest form, sniffing it and then tasting it in the glass, just like sommeliers do for wine.
