There’s something about food that connects families and creates community through its stories, through the memories locked in smells, the history in the flavors, the tales of the hunt, and the culture of the catch. We followed a handful of Hawai‘i’s most influential chefs to the secluded Ala Kukui retreat in the windward town of Hāna, Maui—a rustic place where the local community lives sustainably off the sea and land. It’s also where families, rooted in their culture, live simply, yet richly. At a special event known as Hāna Kū, these chefs came together with Hāna’s local native practitioners—the traditional hunters, fishermen, farmers, and gatherers—to learn from them, to share stories, to perpetuate generational recipes, and, of course, to dine together, Hāna style. In the end, this collaboration, like a meal with ‘ohana, was simply delicious.

AT HĀNA KŪ, YOU OFTEN HEAR THE CHEFS EXPRESSING “COOK WHAT GET.” Instead of coming armed with recipes and plans, they come with open hearts and open minds about the bounty that nature provides. Born and raised on Maui, Chef Isaac Bancaco’s connection to the ‘āina and his relationships with local growers and fishermen runs deep. Bancaco has worked in kitchens at renowned restaurants from Los Angeles to Boston, but is at his happiest when cooking in the make shift kitchen in the back of Ala Kukui. Back to his roots, Isaac has since become chef de cuisine at Ka‘ana Kitchen, at the Andaz Maui Resort at Wailea on Maui. Cooking for local families during Hāna Kū is worlds apart from the type of pre-planned, menu based cooking Chef Isaac does on a daily basis. Hāna Kū is a spontaneous experience, no recipes needed. The essence of the event is to use what is available from the land and the sea on any given day, and then create a special dish with the fresh and local ingredients, sharing stories about the food and tradition as the meal comes together. An organic expression of cultural collaboration combined with culinary creativity. “A lot of the dishes that we create are inspired by the families in Hāna, things they’ve been making for generations with sustainably sourced ingredients, when you pass something down it’s usually damn good,” Bancaco says.

Mahele Farm is not your average community garden. A collaboration between Kahanu Garden, Ka Hāna Ka ‘Ike (Hāna School’s program helping at-risk youth), and Hāna School’s agricultural program, the farm is an allinclusive community farm for area residents. Mahele Farm engages the community, from keiki (kids) to kupuna (elders), to farm together through a volunteer honor system, which perpetuates the Hawaiian tradition of mahele with abundant harvests. It also positively impacts the eating patterns of the community by putting healthy food on their tables.

LĀWALU is the
traditional Hawaiian method of wrapping whole fish in ti leaf, then burying it under coals. As the ti leaf chars, it hyper steams the fish and imparts a unique smoky flavor at the same time. I conceptualized getting a fire ripping hot, then placing the fish on oiled ti leaf. It’s not exactly like burying it under coals, but it’s close, I paired it with fresh tortillas from Masa, HI and the catch of the day from our Hāna fishermen. Limu Manauea and Lepelepe were gathered, pickled and served raw with onion, chili and avocado.

Get a grill ripping hot, score and season fish with salt and pepper. Drop a double layer of ti leaf on a cookie sheet and oil one side *not on the grill, the dripping oil will ignite. Place scored fish on double layer ti leaf and transfer onto a grill. Let ti leaf char and begin to burn, after 3-4 minutes, carefully flip fish and finish cooking, another 3-4 minutes. Transfer to a pan to stay warm, and lightly oil corn tortilla. Grill tortillas on both sides. Place 1-2 slices on a hot tortilla and flake fish on top. Garnish with avocado, limu salsa, & raw limu.
