Rosé: it alone accounts for 80% of all wine production in Provence. Rosé wine is one of the oldest in the world. It’s also the most difficult to succeed, because it needs careful attention, like milk on the hob… Rosé is made with red grapes. When the fruit is pressed, the skin soaks in the juice. But rosé only takes a few hours to obtain its colour, structure and aroma. Vigilance, rigor and subtle sensitivity are the watchwords which guarantee quality.

The ruins of the temple of Apollo are the only visible remains of antiquity in Ortigia. Legend says that its name, meaning “quail” in Greek, comes from hundreds of these birds which fell from the sky thanks to Santa Lucia, in 1646. The Saint thus saved the local residents from starvation.
