How to Select Look for small to medium zucchini. It should be bright green & firm.

Avoid zucchini that has scrapes or cuts.

How to Store Refrigerate unwashed, uncut zucchini in a paper or plastic bag with one end open up to 1-2 weeks. Blanch sliced zucchini in boiling water for 1 minute. Freeze in airtight container up to 3 months. Refrigerate in airtight container up to 3-5 days.

Add grated zucchini to sauces & baked goods for extra fiber, vitamins & minerals.
