SEE SWIRL SMELL SIP SAVOUR Wine tasting should be rewarding and memorable. It should excite the senses, and most importantly, it should be fun. Even though many just assume that wine tasting is sipping, swishing, and swallowing – many are amazed to find that it is actually a bit more. So then, how do you taste and evaluate a glass of wine?

“Wine tasting is more of an art, and when done correctly, is quite fun,” says Manik Dhar, One&Only Reethi Rah’s Head Sommelier.
SEE THE COLOUR Observe the colour and clarity of the wine. Hold the glass up to a white background in a well-lighted room. Notice if the wine is clear and brilliant or cloudy and dull. The intensity of colour within each varietal gives the drinker an idea of how the wine will taste.
SWIRL Before taking a sip, the taster tries to determine the order in which the wines should be assessed by appearance and smell alone. Heavy wines will be deeper in colour and generally more intense on the nose. Sweeter wines, being denser will leave thick, viscous streaks (called legs or tears) inside of the glass when swirled.
SMELL Smell is the main sense used in wine tasting, so smelling the wine before the initial step is essential. Consider what you are smelling. What does the aroma remind you of? Fruits or vegetables? Herbs or spices? Let the smell take you to a time and experience.
SIP Take a slightly larger sip than usual and hold the wine in your mouth for 3-5 seconds letting it coat the surface. Thoroughly tasting a wine involves perception of its array of taste and attributes, which involve the combination of textures, flavours, weight, and overall ‘structure’.
SAVOUR The finish is the sensation you get from actually swallowing the wine and it can be very different from the taste you get on your palate. What you want to look for is an alcohol taste (there shouldn’t be one) and the length of time the wine taste stays with you. This length of time is called the finish and some wines can linger for as long as a minute. Also consider the balance of the wine; do any tastes dominate or is this a well-defined bottle.

On the palate the immediate impression is energizing, like morning dew, with bursts of fruity redcurrant note.

Crafted only in remarkable vintages, this wine is the result of a year of nature’s generosity. Spring was blighted by late frosts in April that decimated many Crus across the region, but luckily PerrierJouët’s vineyards escaped unscathed. In June the weather turned much hotter, enabling flowering to take place successfully during the last two weeks of the month.
We source Conundrum in places that are both famed and off the beaten track – in Napa, Monterey, Santa Barbara, San Benito, Solano and Tulare Counties. Its character starts in the vineyard, in small towns where families have been farming for generations and there’s always plenty of good conversation, great grapes and more to explore.

FRESCOBOL CARIOCA The inspiration behind Frescobol Carioca came about several years ago on a friends’ surfing holiday in the South of France. Two friends decided to spend some time playing frescobol, a game they had discovered on the beaches of Rio. The fun beach vibe was catchy and soon everyone around joined in on the Carioca fun. The excitement around the game set off the idea of bringing the laid-back and cool Rio lifestyle to beaches and people all over the world. Over time, the handles were shortened and painted or varnished to better protect them from water and salt. Until 1976 the Frescobol was played with peeled tennis balls; thereafter, imported racketball balls began to be used. This is where he fell in love with Watsu. Training under the guidance of Watsu founder, Harold Dull, and renowned aquatic instructors Minakshi and Theri Thomas, Toru became a certified Watsu practitioner in 2006 and a Watsu Instructor in 2008. COLOURS OF NATURE... The ‘wow’ factor, a point of difference, this is what Christopher Hogan, internationally renowned marine artist brings to the One&Only Reethi Rah guest experience. Christopher offers far more than a painting lesson; “People pick up a paint brush for many reasons,” he observes. “Often it is the first time they’ve managed to find time to tap their ‘inner creativity’ since school, it’s all extremely therapeutic.” Chris also ensures classes are terrific fun and they’re clearly gratifying; after a class there’s a delighted ‘conga’ parading through the lobby with their art work, a stream of dancing colours.

Colour is the key feature to Hogan’s work which is inspired by the marine life of the reef. Of his unique, yet distinctively recognizable style of painting, he jokingly comments, “I was driven to abstraction there were enough artists painting ‘wellbehaved’ landscapes and marine images without me adding to the list. Rather, I feel I contribute to a contemporary slant through my depiction of these macro images. In essence, I reduce simple images to a series of spots and stripes.” The resultant compositions are striking paintings that invite multiple interpretations from the viewer. The classes take place in the beachside studio or in the privacy of a guest’s villa. For inspiration, participants are encouraged to explore the sea life, it’s sufficiently enticing that most can hardly wait to dash down the sand and dive in…. and there it is, an explosion of colour. This is what Hogan wants guests to keep in their mind’s eye; the vibrancy, the impression, not the shape of a fish but the myriad of patterns on these creature

FAMILY DIVING HOLIDAY... One of the most important factors when choosing a family activity is that it has to be memorable! Spending quality time with the family is when those special memories are made and what better way to do that than by taking a trip together to the magical world that waits beneath the surface of the waves. Being underwater truly is like entering a completely different world! Sharing this experience together is going to create some amazing memories that are sure to last a lifetime! Nowadays some parents are feeling disconnected with their children and find it difficult to participate in activities that both they and their children enjoy and are physically able to do. Scuba diving offers such an opportunity for families, to spend more time together and experience twice as much, because they can explore what is beneath the surface in addition to enjoying land-based activities. Many people think that family activity holidays and scuba diving don’t mix well. That’s completely wrong! Most divers are naturally adventurous people with naturally adventurous families and/or partners. CREATING MEMORIES TOGETHER The most important part of scuba diving as a family activity, is the experiences parents and their children will have together underwater that will create lifelong memories. COURSES Discover Scuba is a great afternoon tryout for all who are not certified. Half an hour briefing, then out with the boat to a regular dive site but with calm conditions, a few easy skills in shallow water and then off along a reef with teeming fish life. The full Open Water certification course takes about two and a half days; the academic part is based on self-study which is easily done at the beach or in your villa. TEACH RESPONSIBILITY Scuba diving requires divers to diligently check their equipment before diving and during dives there are also procedures to follow. Through learning to dive, your kids will develop skills including not only being responsible for themselves but also team (‘buddy’) responsibility too. These skills are transferable to everyday life and they’ll be learning them in a fun and practical way. ENCOURAGE TEAM WORK Divers always dive with a “buddy” and during your course you’ll learn how important it is to work as a unit together. You’ll be amazed to see how siblings who are prone to squabbling at home suddenly become supportive, encouraging and start to enjoy working together. Finally, the education that parents and children will gain together through hands-on experience underwater is something that simply can’t be gained only through a text book or from watching videos online. Seeing how a reef system works together or how a predator catches its prey with one’s own eyes can be truly life changing. Families who experience marine life and marine systems first-hand through scuba diving have a deeper connection and understanding of the ocean and its ecosystems than non-divers. The PADI Open Water certification is a lifelong certification. Completing your Open Water Course is a huge achievement and there’s no better way to accomplish this than together with family.
