Taking inspiration from the tropical island setting, Chef Lajos Caki has created a colourful and mouth-watering delicacy with an appearance as beautiful as its taste. With a golden shine, sweet aroma and exotic zingy taste, this passion fruit cheesecake is not only delicious but also a rich source of antioxidants and high in vitamin C; so you can feel good while treating yourself. INGREDIENTS 25g Cream cheese 25g Sour cream 12g Icing sugar 2g Gelatin leaves 25g Whipped cream 10g Passion fruit PREPARATION 1. Mix the cheese and sour cream. 2. Add sugar to the mixture. 3. Melt the gelatin leaves then add to the mixture. 4. Add the passion fruit purée and mix slowly with whipped cream. 5. Pour in the mould and keep refrigerated for a few hours. 6. Remove from the mould and glaze.

Food-Wine Matches: Desserts or foie gras The body is pale yellow in colour with shimmering highlights. The bubbles form a delicate ring of fine foam. The subtle and delicate bouquet reveals the delightful aromas of yellow peaches and dried apricots. The entry is smooth and creamy, yet very crisp. The palate gives way to flavours of raisins and fruits in syrup. The long and smooth finish is distinctively sweet and full of flavour. A mature, rich and round wine, Nocturne is also exceptionally smooth and creamy.

Each grape is sorted during the harvest; worked by gravity to respect the natural flow of the juice within the vinification process. A light pressing is done to preserve the integrity of the fruit. Terroirs are blended: 50% limestone, 30% limestone clay and 20% flint.
Crushed and pressed immediately after destemming, the juice was barrelfermented in traditional 228-litre French oak barrels (92% new and 8% second fill) from selected Burgundian cooperages (Damy, Chassin and Rousseau). The barrels were inoculated with a selection of French yeast. A percentage of the wine went through natural fermentation. The wine was matured ‘sur lie’ for 13 months, with regular barrel-rolling to accentuate the rich, leesy character.
Each terroir is vinified separately in thermo-regulated stainless steel tanks. Limestone brings minerality and finesse. Limestone clay enhances fruit and richness. Flint provides structure and minerality.

This ensures maximum skin contact. Only French Nevers barrels are used for breeding, with the exception of a few experimental barrels each year.
Food-Wine Matches: Roasted chicken or Turkey After night harvesting, the pinot noir arrives at Saintsbury within the hour of pick. The clusters are first sorted before moving to the destemmer. Partially crushed fruit is then transferred into open-top tanks for fermentation. A perfumed nose of rose petals, dark cherry, rhubarb and wild strawberry with white pepper and cinnamon spice notes. Lovely fresh rose, cherry, plum and cola on the palate with hints of five spice and cardamom. Smooth, silky tannins with a long succulent finish.

With over 20 years of experience spanning across the globe, Philippe brings a wealth of international influences and an impeccable standard of service to One&Only Reethi Rah. Before joining One&Only Reethi Rah in May 2018, Philippe previously worked at luxury hotels across Asia, including the Mandarin Oriental Bangkok, Sukhothai Bangkok and the St Regis Bangkok where he held the position of Food and Beverage Director. In addition, he has seven years’ experience working for Hyatt International in Asia, including Saigon, Singapore and Tokyo. Seven of the world’s best mixologist will begin the journey to seven of the world’s most luxurious resorts in September, on a mission to create bespoke cocktails that will interpret and capture the essence of each destination though the art of mixology. KEN SAMUDIO
Born in the Philippines, Ken Samudio is a biologist by profession specializing in marine biodiversity before he became an accessories designer. Without any formal education in fashion, he ventured into accessories design armed only with raw natural talent and determination to succeed. He was selected by Vogue Italia as one of the Vogue Talents for Accessories in 2014 and was featured in their 50th Anniversary Issue. A first for a Filipino. He was also personally handpicked TWICE by the British Fashion Council and Sarah Mower of Vogue US to participate in the IFS 2014 and 2015 at the London Fashion Week respectively. His unique technique explores the natural and organic forms found in nature, mimicking distinct textures by using indigenous and recycled materials. He creates artworks from up-cycled beads made from water plastic bottles, recycled sea glass and other sustainable materials indigenous to his home country. The Kisshoten label was established in 2012 by French-born Londoner, Emilie Boitard. After a trip to Tokyo as a young girl, she became fascinated by Japan and its diverse culture and natural beauty. She was captivated by the intricate and detailed craftsmanship and history of the traditional Japanese Kimono. Karml started his career as a hair stylist in 1997, after completing his training with major brands of the hair industry including LÓreal, Schwarzkopf, Keune and Kérastase. His vast experience in different regions has made him a hair specialist; he has worked in Syria, Lebanon, Jordon, Egypt, Russia, Paris, Italy and Maldives. Competing is a way for him to nurture and hone his knowledge and experience. KARML’S HAIR TIPS 1. Blonde hair doesn’t reflect as much light as dark hair, so it is important to keep the cuticles in great condition – light will reflect off the hair making it look shinier. 2. Remember that a good colour will cleverly enhance a cut. For example, when colouring blonde hair, keep the outline of the haircut a slightly warmer or darker colour to create an illusion of fuller and thicker hair. 3. Take your favourite deep conditioner to the gym and put it on under a shower cap before hitting the steam room. The heat helps the product absorb and after 10 minutes you will have salon standard, soft healthy hair. 4. Make sure you invest in a good quality, professional shampoo and conditioner. It is essential that you look after your new colour. 5. For a straight fringe without using the irons, blow-dry it in lots of different ways. This technique will make it straight. 6. For voluminous hair use a spray leave-in conditioner as they are better at giving the hair a lift and won’t weigh hair down like a normal balm conditioner.

Here at One&Only Reethi Rah, we are very fortunate to have some beautiful reefs very close to our island. A favourite reef among our guests and colleagues is Turtle Reef, located next to Makunudhu Island and just a 25- minute dhoni ride from the Resort. Not only is this reef teeming with a wide diversity of fish and corals, it is also one of the best reefs in the Maldives for snorkelling with the critically endangered Hawksbill turtles. Our marine biologist has been keeping track of turtle sightings at Turtle Reef for the past six years. During this time we have identified 200 different individuals on the reef. Every sea turtle has a unique pattern of scales on the side of their face, like a fingerprint,
which can be used to identify them and helps to gather information on population numbers. Some of the same individuals are regularly sighted at Turtle Reef, suggesting that this reef is an important habitat for a community of Hawksbill turtles. Despite their protection under international agreements and many national laws, Hawksbill turtles (and all other species of sea turtles) are increasingly under threat. Their status as critically endangered is due to a range of human-related threats, including wildlife trade (souvenirs, shell products); habitat loss and degradation; collection of eggs and meat for consumption; incidental capture (bycatch); climate change and pollution.
We need your help to protect our sea turtles and our marine life by: • Not purchasing any souvenirs or products made from sea turtles • Purchasing seafood only sourced from sustainable fishing methods • Reducing your use of plastic, which is littering our oceans and being consumed by a range of marine animals including sea turtles. GONE DIVING THERE IS A STEREOTYPE THAT SCUBA DIVING IS ONLY FOR YOUNG AND ADVENTUROUS MEN. THIS MYTH COULDN’T BE FURTHER FROM THE TRUTH.
In 2014, 36% of all PADI certifications worldwide were female. This is a sharp increase in the initial early days of scuba diving and it is slowly on the increase. The figure for scuba diving in the Maldives is even higher. PADI does have some age restrictions for some of the more difficult scuba-diving courses; however, the entry-level courses such as the PADI Discover Scuba Diving, PADI Open Water Course and PADI Advance Open Water Course can be done by children 10 years and above. This makes scuba diving during your stay at One&Only Reethi Rah a real option for the whole family. Giving your children the opportunity to experience the underwater world can introduce them to a side of nature that cannot be experienced on land. Scuba diving can also feed their natural curiosity about the underwater world. Teaching children how to scuba dive and completing the PADI Open Water Course not only provides an activity for the holiday, but an activity for every family holiday in the future. It also provides a hobby for the whole family to share. As far as top-end age goes, yes there is a medical requirement prior to starting
any PADI courses; however, this is more related to significant illnesses or injuries. If you are reasonably healthy and have some level of fitness, there is no reason someone cannot dive into their 80s and there has been recorded cases of people scuba diving in their 90s. Another misconception is that scuba diving is more difficult than snorkelling. Technically this is not always correct. Snorkelling requires the act of swimming, the technique that humans use to stay above the water. Scuba diving uses a device called a BCD or Buoyancy Control Device. This is designed to make you neither float nor sink, which underwater gives you the feeling of weightlessness; meaning that you only need to move your legs for propulsion not to keep you above the water. Underwater scuba diving requires a lot less energy than snorkelling. The second factor is – when you breath out using a snorkel you fill the snorkel with what is called ‘dead air’. This dead air remains in the snorkel and when you take your next breath the dead air is the first air to enter your lungs. This means when snorkelling you get less fresh air and often this gives you a sense of breathlessness. The scuba diving
breathing apparatus, the regulator, has very minimal dead air space so you get more fresh air. So given the fact that you are not working as hard to stay above the water, breathing less and breathing fresher air, once you have conquered the mental side of scuba diving, it will be a whole lot easier and provides a much more exhilarating experience. HOW IS PLASTIC DESTROYING THE OCEAN? For the last half century, plastic has become an integral part of our daily life. From furniture to grocery bags, from vehicle parts to toys, plastic is an unavoidable element of our lives in a variety of forms. However, from being regarded as a very vital presence in the contemporary world, plastic has now come to be looked upon as a material of immense potential destruction and harm. While a part of the plastic waste in the oceans comes from land, predominantly as a result of mismanaged waste disposal, the ships and offshore oil and gas platforms also contribute to it. Among all the threats to the marine environment, the threat from plastic is one of the most dangerous ones. 1. Garbage in the ocean – namely plastic – threaten the natural ambience of the marine life. It disrupts the entire bio-geo cycle causing unwanted problems to the whole marine eco-system. 2. Consumption of plastic by marine creatures causes severe digestive problems which go mainly untreated. In addition to fish, sea turtles are the other important victims of plastic pollution in the waters. Similar to fish and other marine beings, sea turtles also consume plastic garbage as food, leading to blockage in the gut and ulceration, and eventually to death. 3. Plastic waste in the oceans also threatens the life of birds and other beings that depend on the oceanic life-forms for their food requirements. 4. Plastic pollution in the seas affects human beings in different ways. In addition to the risks from polluted marine waters, ingestion of plastic by fish and other marine beings also in turn causes harm to people who consume marine food. In addition to the ill effects to marine ecosystem, the plastic pollution also creates negative impacts to the economy as it affects sectors including tourism, fisheries and aquaculture, among others. However, there are many efforts under way to reduce plastic pollution in the seas, including the cleaning up of beaches and waterbodies, and preventing the entry of plastic into the ocean in the first place.
S A VE TH E OC EA N One&Only Reethi Rah is proud to partner with international organization Parley for the Oceans, an innovative new programme that sees plastic waste transformed into Adidas sports apparel and shoes, which has provided an immediate solution to put One&Only Reethi Rah’s plastic to good use. Parley focus on improving the environment by interception of recyclable items such as plastic before they become landfill, reducing use of plastic and ultimately replacing it with other, more environmentally sustainable materials. One&Only Reethi Rah aims to completely remove all plastic from the island within the next two years. Each month the amount of plastic brought to the island is reduced, with complete reduction of plastic bottles on the luxury yachts and in the spa already in place, with glass bottles now being used. “Since the start of the initiative and driven by Leon Pink, Resort Manager, in its very first month we sent more than 12,600 plastic bottles and other items for recycling. We will work together with Parley to create a sustainable future and hopefully lead the way for other resorts in the
Maldives to protect this unique part of the world.� commented Jan B. Tibaldi, General Manager, One&Only Reethi Rah. To date, the partnership sees One&Only Reethi Rah colleagues segregate all plastic items on-island. Plastic items are sent to the local refuse island Thilafushi where they are intercepted by Parley. The organization then cleans and processes the plastic items before sending it overseas for recycling. In the recycling process it is transformed into a material known as technical yarn before being made into Adidas shoes, jerseys and other sporting apparel. This year, the resort has chosen World Ocean Day to launch a campaign for its 850 colleagues by organizing sandbank and underwater cleaning operations; highlighting the importance of conserving the ocean primarily as a collective island resort and in turn successfully making a bigger impact on the Maldives.
