The establishment of Sandalford Wines in 1840 coincided with both the first European settlement at the Colony of Perth and birth of Western Australia’s world famous wine industry. In 1970, the company was one of three initial pioneers of the Margaret River wine region (275km south of Perth and today considered by many as one of the world’s truly great premium wine growing appellations) when the first vines were planted at its 300 hectare vineyard located there. This year Sandalford celebrates its 175th anniversary since it was first established and of course 40 years since the first vines were planted at the company’s Margaret River vineyard. 10 January 2016 EXCLUSIVE WINE DINNER WITH SPRINGFIELD
As fourth generation wine farmers and ninth generation descendants of the Bruères, French Huguenots who came to South Africa from the Loire in 1688 with bundles of vines under their arms, Jeanette and her brother Abrie share a deep rooted respect for nature and their gifts. The wines from Springfield Estate are known for their authentic expression of the unique terroir from which they grow. And for the Bruwer family, time-honoured practices distinguish their approach to wine making. 7 February 2016 EXCLUSIVE SAKE DINNER WITH SHIRATAKI
Shirataki Sake Brewery is based in Echigo Yuzawa Town, Niigata Prefecture, an area renowned for its heavy snowfall. In spring the snow melts to provide an abundance of clear natural mineral water, which is a prime ingredient for sake. The molten snow passes through a coal seam when running downhill from mountain peaks: thus a natural charcoal filtration process further accentuates the taste and quality of the water. The other main ingredient for sake is rice: the abundance of clear natural water provides irrigation for rice-paddies – creating the best quality ingredients for sake. 22 March 2016

Chef Jean-Luc Rabanel obtained a first Michelin star in 1992 for the restaurant he opened in Tonneins in 1995. The workshop received a Michelin star in spring 2007. The same year, Chef Rabanel was named “Chef of the Year 2008” by Gault Millau Guide and also opened the bistro À Côté, at Arles. In 2009, he received his second Michelin star for his restaurant L’Atelier, and was elevated to the rank of Chevalier of Arts and Letters in October 2009. 20-24 February 2016

Renowned founder and chief-physician of DAO clinic in Moscow, Dr. Igor Roganin holds more than 20 years of practical experience in the field of acupuncture in Russia and China.

Dr. Madelaine Franklin (née Higgs) is a graduate from the Durban University of Technology in South Africa, where she was born and spent 6 years studying Chiropractic and qualified with a Masters Degree in 2009. She is a member of the Chiropractic Association of South Africa.
He has mastered the art of integrating ancient traditional Chinese methods and modern medicine to help in the prevention of stresses, correction of pain syndromes and chronic fatigue, insomnia, detoxification, as well as in health and beauty – improving skin tone and texture, increasing “pleasure and youth hormones” of the face and the body. Dr. Jaffer specialises in treating common spinal related problems such as neck pain, headaches, lower back pain, disc problems and sciatica, as well as treating more complex conditions such as pregnancy related problems, whiplash associated disorders and scoliosis. Dr. Jaffer truly believes that regular chiropractic care can greatly improve health, well-being and quality of one’s life.
Dr. Franklin gained much experience in the industrial sector and treating numerous sporting injuries including much interest in cycling and long distance runners. She brings an integrated approach to health care that combines effectiveness of several disciplines to provide a more rounded approach to musculosketal care. Her specialties include curing lower back pain, sacroiliac pain, sciatica, sports injuries, back pain during pregnancy and spinal decompression therapy to name a few.

Dr. Buathon is a Holistic Practitioner from Thailand with an intensive knowledge in alternative medicine, Taoist practice and Tibetan medicine.
Dominique, one of the rare internationally renowned breathing masters, is the man behind the success of a lot of entertainment personalities.
As her journey is to seek a way to deliver an integration of the body, mind and spirit through a good health backed with her exclusive background in nursing, psychology and health sociology. She gradually created ZenNaTai, a unique approach to holistic healing that allows the body to release the tension, generate chi flow and encourage a peaceful mind.
Having acquired and mastered the Pranayama Yoga technique (the extension and control of the breath) in Pondicherry, South India, Dominique has since been travelling around the world and has taught breathing techniques in many countries.
He has also successfully completed several therapy courses in dry needling, mobilisation with movement, manipulative course therapy and taping and strapping therapies. Munro has a keen interest in many sporting codes including squash, football, athletics to name a few – and has represented Western Province (South African rugby union team) in the national squash tournaments.

HANNAH MOLONEY
Hannah is one of our passionate Marine Biologists. She is a young, energetic and has a great passion for Marine Biology. After her Marine Biology studies in Australia, she has been travelling and working in unique places of the world while pursuing her dream. Hannah’s goal is to inspire people from around the world to see the ocean from a different perspective. “I want to protect the environment by inspiring change. When people see the beauty of the underwater world with their own eyes, they gain a new kind of appreciation for nature.” says Hannah. “Every day I get the opportunity to take people out to the reefs to see the incredible marine life! Some of the animals we see on a daily basis are turtles, sharks, stingrays, dolphins and colourful reef fish. The Maldives really is an underwater paradise.” Hannah started her internship with One&Only Reethi Rah in April 2015. Apart from leading snorkelling and dolphin watching excursions, another main focus of her role is the coral propagation project on the house reef. For the past three years the resident Marine Biologists have been growing coral to increase the coral cover and diversity around the island. The coral frames create homes and food for the marine life that live around the resort. EMMANUEL SOARES – EXECUTIVE CHEF
Born in Châtenay-Malabry, France, Chef Emmanuel Soares moved to attend culinary school in Antony, France from the age of 15, where he later graduated in 1988. In 2013 he also received further education, gaining a certificate in Food & Service Management at Cornell University. Chef Emmanuel is widely travelled within his career, with more than 29 years of experience spanning across the globe, his international journey started in Brazil, then continued on his path to Morocco, Portugal, Russia and Ukraine. In celebration of the tenth anniversary of One&Only Reethi Rah, Chef Emmanuel introduced a new menu to the Beach Club at ClubOne, offering a variety of healthier options, with a new food concept called le burgé. There are plans to design innovative new menus for all the other outlets within the resort, and Chef Emmanuel will play a vital role in this gastronomic transition. “My inspiration is the desire to share my knowledge and passion for food, with as many people as possible,” commented Chef Emmanuel. “It is not enough to just be a good Chef; my food must touch people. People who love to cook are the best chefs.”

Hungarian by nationality, Chef Lajos was born and raised in Serbia. He graduated from high school, focused on pastry, and continued his studies in college majoring in Hotel Management. Prior to joining One&Only Reethi Rah, Chef Lajos worked as the Corporate Executive Pastry Chef based in Donetsk Donbass Palace and in Kiev Opera Hotel and also Hyatt Hotels in Belgrade, Serbia and Paris, France.

RECIPE – COCONUT RASPBERRY
INGREDIENTS 60gr Raspberries 10gr Honey 15gr Lime juice 30gr Coconut yoghurt 25gr Fresh coconut grated METHOD Mix the raspberries with honey and add the lime juice. Put half of the quantity in the glass and top it with grated fresh coconut. Add coconut yoghurt and place the second part of raspberry mix and finish it with grated fresh coconut. Add one fresh raspberry and 24 carat gold leaves as a garnish.

Our genuine Geisha Miracle combines soulful Geisha Blossom tea infused Vodka, cranberry juice, lemon juice and gomme. Carefully muddled and garnished with orange zest peel and shiso leaf, this cocktail has a refreshingly crisp taste and look.
FESTIVE GARDEN
Representing our very own Chef’s Garden, Festive Garden is a great combination of Vodka, apple, cranberry and lemon juice – with a hint of cinnamon and elderflower syrup. Addition of fresh sweet basil leaves gives a vibrant look and feel to this glass, also a refreshing aroma at the first sip.
THE MOROCCAN
This bright, tasty and creative cocktail is sure to impress anyone. A great infusion of Moroccan tea infused Tequila, grapefruit and fresh lime juice and gomme – this cocktail gives a hint of the grapefruit’s bitterness as a finishing tasting note.
BEACH FANTASY
Garnished with dusted icing sugar on thyme leaves and thick cinnamon stick, this innovative cocktail is a mixture of Vodka, cinnamon syrup, cranberry and fresh lime juice – topped with ginger beer. This flashy cocktail is surely to be the talk of the night.

Ships wrecks are interesting to explore and usually teem with aquatic life. Each wreck dive offers a chance for discovery, potentially unlocking a mystery or spying something others have missed. Next to Ibrahim Nasir International Airport, Maldives Victory is a 100 metre long ship wreck with an average depth of 15-35 metres. A MIND FULL IN COLOUR CHRISTOPHER HOGAN: ARTIST, DESIGNER, VISUAL COMMUNICATOR The Australian abstract artist offers far more than a painting lesson; “People pick up a paint brush for many reasons,” he observes, “often it is the first time they’ve managed to find time to tap their inner creativity since school, it’s all extremely therapeutic.” Colour is the key feature of Hogan’s work, which is inspired by marine life. Of his unique, yet distinctively recognisable style of painting, he jokingly comments, “I was driven to abstraction. There were enough artists painting ‘well-behaved’ landscapes and marine images without me adding to the list. Rather, I feel I contribute a contemporary slant through my depiction of these macro images. In essence, I reduce simple images to a series of spots and stripes.” The resultant compositions are striking paintings and sculpture that invite multiple interpretations from the viewer. Christopher has a wealth of knowledge of art and art history. Having graduated from university with the highest mark possible, he has been subsequently invited into the Golden Key Honour Society, an international organisation that recognises exceptional scholastic achievement. He majored in Fine Art, Art History and Sculpture and has redesigned the world of artists in resorts that defines and shapes the guest experience here at One&Only Reethi Rah. Classes take place in the beach side studio or in the privacy of a guest’s villa. For inspiration participants are encouraged to explore the sea, it is sufficiently enticing that most can hardly wait to dash down the sand and dive in – and there

This is what Christopher wants guests to keep in their mind's eye; the vibrancy, the impression, not the shape of a fish, but the myriad of patterns on these creatures and coral. Many guests take underwater cameras with them to record images to work with later. They use acrylics which are user-friendly and have a particularly intense colour. Aquamarine undoubtedly dominates the local scenery but Christopher draws out memories of the countless other
colours that flick across the retina. Seeing colour is both a physiological and psychological response to light waves, certainly there is plenty for the mind in his classes; this is an experience as uplifting as the exultant palette surrounding One&Only Reethi Rah. Christopher has an impressive clientele both private and corporates, many of whom grace the Forbes Global 2000 list and many happy private collectors from around the world. Anna Kosturova’s line of hand-crocheted and silk tie dye apparel is designed by Anna Kosturova in her Vancouver, Canada studio. The collection is then produced overseas by families of generations of crochet and tie dye artisans. As a mechanical engineering graduate, Anna loves pushing the boundaries of crochet and the challenge of recreating patterns and textures found in the world around her. Every piece in a handcrafted affordable couture collection is made with the environment in mind. The garments are made of 100% cotton or silk.
