But there are some people who love food so much, who think about food just in the right way, and they make their thoughts and ideas come to life. If you are wondering who they are, these are the chefs at One&Only Reethi Rah, behind the scenes for 24 hours to bring us the freshest and the tastiest offerings on the island.

Signature offering is the ceviche – a hearty mix of fresh reef fish, Bloody Mary infusion, citrus, coriander leaves and mild chilli. With a hint of fresh coriander scent, the sauce that covers the reef fish is simply delectable.
Having approximately 850 colleagues from 34 different countries working at One&Only Reethi Rah, gives us the opportunity to explore different cultures and cuisines by speciality chefs. Among this multicultural team, there is Chef Memo Vindas, the Executive Sous Chef coming from Costa Rica. With his passion to share his background cuisine from home with the guests, the ‘La Playa’ snack menu at Beach Club was created together with the team of chefs on the island. Their various techniques and inspirations have blended in to complete this simple yet comprehensive afternoon snacks menu.
Also on the menu is Calamari & Pico de Gallo with mojo sauce and tomato salsa. These squid bites may be small pieces of snacks, but when they are drenched in tomato salsa – they become a big pleasure (we have no other words to describe how delicious they are!)
We named this new snack menu as ‘La Playa’, meaning ‘the beach’ in Spanish and needlessly to say it is the perfect name for a menu at Beach Club. The concept lies behind Latin America’s comfort food that you can find
Your ‘La Playa journey’ is incomplete until you have tasted the ‘Lucky Vindas Coco Loco’ – the dessert created by Executive Pastry Chef, Lajos Caki and Chef Memo. It is a harmonious marriage of coconut biscuit, cream of lemon and lime and jalapeño peppers. In line with the theme, our inspired chefs have named the dessert after them – ‘Lucky’, Lajos’ nickname and Vindas, Chef Memo’s surname. First bite and we can tell you already, you will not regret ordering a pack of sugar that may go against your healthy diet.

A CTIVA T O R Highly recommended before the morning workout Recipe for 4 portions INGREDIENTS ¼ cup black quinoa ¼ cup white quinoa 2 large carrots 100g chickpeas 1 large cucumber 100g green or yellow dhal 3 TBS honey ¼ cup kaniwa PREPARATION 1. Soak black & white quinoa and kaniwa in water for 36 hours. Keep chilled afterwards. 2. Dhal and chickpeas should be soaked in water for 72 hours. Change the water after the first 36 hours. Keep chilled afterwards. 3. Peel and cut the carrot into chunks. Boil until it softens. Process with the same boiling water until homogeneous. 4. Peel and seed the cucumber. Cut into small cubes. 5. All products, after being soaked, should be drained and kept in separate containers. 6. In a medium mixing bowl, combine the carrot purée and honey until homogeneous. 7. Mix in the rest of ingredients with a wooden spoon and serve. N U T R I T I ONAL FACTS KANIWA This super grain is a complete protein, boasting all 9 essential amino acids and 7 grams of protein per half-cup serving. It is also an excellent source of antioxidants, the protective compounds that have been linked to lowering the risk for chronic conditions like heart disease. Kaniwa delivers a hearty dose of dietary fibre, vitamins and minerals. It is especially rich in calcium, zinc and iron. IN CRE D I B L E W E L L N E S S Nutrient-packed booster for your wellness Recipe for 4 portions INGREDIENTS 4 small bananas 200g coconut flakes 200g raw oats 4 medium-size granny smith green apples 4 medium-size red apples 8g spirulina 250ml 0% fat yoghurt or 0% fat Greek yoghurt PREPARATION 1. Combine yoghurt and spirulina until homogenous. 2. Wash and slice both apples in half. 3. Each halved apple should be sliced into thin wedges. Cover with water. Reserve in chiller. 4. In a food processor, purée only the red apple. Reserve the purée. 5. Peel the bananas and slice them thinly. Smash them in a bowl until creamy. Combine with the coconut flakes and oats. 6. Combine the spirulina yoghurt cream, along with the banana, oats and coconut flakes. 7. Mix in red apple purée. 8. Combine with the green apple and serve.
N U T R I T I O N AL FACTS SPIRULINA Spirulina is a fantastic source of antioxidants, which can protect against oxidative damage. A tablespoon of spirulina contains a small amount of fat (around 1 gram), including both omega-6 and omega-3 fatty acids in about a 1.5:1 ratio. The quality of the protein in spirulina is considered excellent, comparable to eggs. It contains all the essential amino acids that we need. Fruits and wines for a thought If you ask us what is hot this season (though we have named this as the ‘winter’ edition), these wine slushies have lately emerged as the trendy drinks for beating the summer heat. Many tend to enjoy ice-cold beer or a chilled glass of rosé while relaxing at the beach or by the pool. To add some exciting selection for you to choose from, we have introduced frozé, a frozen wine cocktail, at Beach Club. These frozé glasses are made only with all-time favourites: a good bottle of frozen Pinot Grigio, Pinot Noir, Rosé or Champagne – raspberries, blueberries, strawberries, grapefruits and citrus. Our mixologists have picked the most delicious combinations to be blended and poured into the glasses. So we, as people working on this beautiful island, have very ‘difficult’ jobs and had no other choice, but to taste these refreshers. After the first sip, we all asked each other: “Frozé, why has no one thought of this before?” They were so pretty from outside too, so we are 100% sure that these appealing drinks are Instagram-friendly. One more fact: these are quite easy to make your own when you are back home after your holidays with us, so do not hesitate to ask our mixologists for a recipe. The grapes come from the vineyards situated on the regional appellation area on the Côte de Beaune. The “Cuvée St. Vincent” comes from 45-year-old vines planted to calcareous soils just above Pommard and Volnay. This is a charming Pinot Noir that reveals juicy cherry, raspberry and strawberry in the nose. Red fruits are echoed on the palate, which delicately balanced with silky tannins on the finish. NEW ZEA LAND KONRAD SAUVIGNON BLANC
Marlborough, New Zealand This wine is Konrad’s signature Sauvignon Blanc. It is sourced from organically farmed & BioGro certified grapes in the family owned Waihopai Valley Vineyard, in New Zealand’s Marlborough winegrowing region. The aromatics of this wine are intense yet classically restrained. The primary aromas of nettles, gooseberry and grapefruit are complemented by exotic fruits, subtle spice and the barest hint of flint. The palate is full flavoured and quite punchy for this vineyard, a hallmark of 2013. It is a rich, mouth-filling style of Sauvignon with lovely doughy texture and impressive palate length. The name Mongris comes from the contraction of “mono variety” and the Friulano word for Pinot Grigio; Gris. Pinot Grigio arrived in Friuli-Venezia Giulia over 150 years ago, and is now considered an indigenous grape. Today, it is one of the region’s most widely planted white grapes. Golden yellow in colour, often with copper tones; it has an intense and immediate bouquet with pronounced hints of acacia flowers, broom and apple. In the mouth it is elegantly fruity and becomes full-bodied.

Grew up in Northern Italy, surrounded by beautiful hills of Prosecco vineyards, Morgan used to bottle wines with his father. This is when he started to grow his passion for sparkling wines. A graduate of WSET (Wine & Spirit Eudcation Trust), his passion lies in food, wine and love.
Having worked in the wine industry for more than 10 years, Manik developed his passion since then. Currently studying for his Court Master Sommelier, he is the person in charge for all the wine services together with a team of 5 colleagues, overseeing 700+ labels at One&Only Reethi Rah.
Hassan began his career in a restaurant, where he worked after graduating from his high school. He has worked in various resorts in the Maldives and has earned WSET Level 2. Joined One&Only Reethi Rah as a junior sommelier in 2011 and now is leading the team together with Manik.

A veteran in the hospitality industry for the last 8 years, Nazrul gained a great deal of experience by working in various operational departments of a hotel. He started from the bottom of the pile as a student and a waiter and now is a proud wine sommelier. Nazrul also has great interest in sake; do ask him for recommendations at Tapasake.
Started his career 16 years ago as a waiter and a bartender – Jeevana became a sommelier 8 years ago and since then has fallen in love with wine. As a sommelier at One&Only Reethi Rah, he says that he can proudly walk into any restaurant and share his love and knowledge for wine with the guests.
The newest member of the team, Gandip joined the team as a wine sommelier 6 months ago. He began his wine journey 6 years ago, and still has the best interest and passion in wine and for wine. He says that to learn about wine is like diving into a deep ocean of knowledge and that wine is the perfect drink in this world.

Born in Châtenay-Malabry, France, Chef Emmanuel is the main pillar of the kitchen. He is widely travelled within his career, with more than 29 years of experience spanning across the globe. His international journey started in Brazil, then continued on his path to Morocco, Portugal, Russia and Ukraine prior to joining One&Only Reethi Rah.
Guillermo Vindas – “Chef Memo” – was born in Costa Rica. He has worked in over 7 places including Seychelles, China, New York, Dubai and Spain. Today, he oversees the entire kitchen, together with Chef Emmanuel, ensuring that every dish served here is a culinary work of art.
Hungarian by nationality, Chef Lajos was born and raised in Serbia. Prior to joining One&Only Reethi Rah, Chef Lajos worked as the Corporate Executive Pastry Chef based in Donetsk Donbass Palace and in Kiev Opera Hotel and also Hyatt Hotels in Belgrade, Serbia and Paris, France.

The primary intention of yoga is not the workout most people have come to associate it with – yoga was actually made for controlling the mind’s fluctuations. ABOUT THE TEACHER JOANNE IGNACIO YOGA INSTRUCTOR Born in the Philippines, Joanne began teaching yoga 10 years ago, while juggling careers in brand management and hosting on television. She eventually chose to leave it all behind to pursue yoga full-time, and is now of Experienced Registered Yoga Teacher 500 (ERYT500) status – an accreditation given by Yoga Alliance to teachers who have been teaching for at least 4 years, have undertaken at least 500 hours of training, and have logged at least 2,000 hours of teaching time. She has also served as a faculty member for yoga teacher training programmes in India.

Despite its name, the whale shark (Rhincodon typus) is not a whale; it is the largest fish, and shark, in the world. The largest recorded whale shark was measured at 12.6 metres and with a weight of 15 tonnes, but it is thought that individuals can grow up to as large as 14 metres. Whale sharks are believed to live up to 120 years of age, reaching maturity at around 30 years. Whale sharks have a broad, flattened head with a large mouth reaching up to 1.5 metres wide. Their small eyes are located behind the mount on either side of their head. Three prominent ridges extend down their back, in addition to two dorsal fins; the first dorsal fin being larger than the second. Interestingly, each whale shark has a unique pattern of spots and stripes above their pectoral fins, similar to human fingerprints, which researchers can use to identify and study individuals. Whale sharks are found in warm tropical waters, living in areas where the surface water temperature is between 21°C and 30°C. Whilst they are often found slowly cruising on the ocean’s surface or in shallower waters, they are also capable of undertaking deep dives, with the deepest whale shark dive recorded at a depth of 3,482 metres. Whale sharks are filter feeders, meaning they do not actively hunt for fish or marine mammals like most species of shark. Instead, they feed by sucking large quantities of water in to their mouth before filtering out food. A whale shark can filter approximately 1.5 million litres of water an hour when feeding. Their primary food source is small, microscopic organisms that drift through the oceans, known as plankton. Whilst their food is predominately plankton, whale sharks have been known to also feed on squid and small fish.

Whale sharks are listed as ‘endangered’ on the International Union for Conservation of Nature (IUCN) Red List of Threatened Species. Their status was previously classified as ‘vulnerable’, but this status was upgraded in 2016 to reflect the continued decrease in their population numbers. Whale sharks face a number of threats to their survival with the main issues being human threats such as the shark fin trade and accidental capture in nets meant for other fish species, referred to as ‘bycatch’. A single fin from a whale shark can fetch up to as much as USD 20,000 in a black market. Since 1995, whale sharks have been a protected species in the Maldives, meaning it is illegal to kill or catch them. Despite their size, whale sharks pose no danger to humans. While it is safe to swim with whale sharks, certain rules do exist to ensure the safety of both whale sharks and those swimming with them. Touching whale sharks and obstructing their natural movements is strictly prohibited behaviour. One of the best places to see whale sharks in the Maldives is South Ari Atoll. One&Only Reethi Rah offers a ‘Whale Shark Adventure’ to South Ari Atoll, which is a 40-minute seaplane flight or two and half hour speedboat ride from the resort. It is a fantastic opportunity to see these gentle giants in their natural habitat, while snorkelling or diving alongside them.

Discover your natural underwater potential with freediving; a comfortable, safe and relaxing way to explore the ocean on one breath. Freediving, also known as skin-diving or apnea diving, is a form of underwater diving in which the diver holds their breath rather than relying on scuba gear. Although freediving has been around for centuries, it has surged in popularity in the past few years as a sport and recreational activity. This has been largely due to social media hype and the increase in competitors reaching impressive new limits with this sport. Freediving is a very relaxing and satisfying activity which allows you to learn more about your bodies’ natural capabilities with the right focus and relaxation. One&Only Reethi Rah’s resident Marine Biologist Kylie has been practicing freediving for many years, although she did not really know it had a formal name! From a young age, she was always in the water practicing breath holds and seeing how far she could swim underwater on one breath. Being in the water swimming and snorkelling every day, she became more and more comfortable with breath-hold diving. Kylie completed her initial certified freediving training in May 2015 and recently spent 2 months in Koh Tao, Thailand training to become an Apnea Total Freediving Instructor. Apnea Total, founded by Monica Ganame and Eusebio Saenz de Santamaria in 2003, is an international freediving organisation that promotes the Apnea Total Freediving Education System and provides certifications that are recognised worldwide. Apnea Total upholds the highest standards of freediving safety, instruction and education and is one of the largest certifying freediving organisations in the world. GHOST NETS AND THE OLIVE RIDLEY PROJECT Every year, millions of marine animals are injured or killed by ghost nets. ‘Ghost nets’ are lost, abandoned or discarded fishing nets which float around in ocean currents damaging reefs and entangling animals such as sharks, rays, cetaceans and most commonly sea turtles. Entangled animals may either drown, if they cannot come to the surface to breathe, or they can endure long and painful periods of entanglement suffering from issues such as dehydration, starvation, amputations and infections. While nets are not typically used for fishing in the Maldives, nets often enter Maldivian waters with oceanic currents from nearby countries such as Sri Lanka, India and Pakistan. Of all recorded incidents in Maldives, the most common species found entangled

in ghost nets are the Olive Ridley sea turtles (Lepidochelys olivacea). The Olive Ridley is not commonly found on reefs in the Maldives. It is a migratory species which travels long distances in the open oceans. The issue of ghost nets is something we have experienced first-hand here at One&Only Reethi Rah, Maldives. Since the beginning of 2015, we have rescued six Olive Ridley sea turtles found entangled in nets close to the island of Reethi Rah. While three of the turtles suffered very superficial injuries and could be immediately released after being freed from the net, the other three have a little more detail to their rescues.
Lylah, a female Olive Ridley, was found floating in the lagoon outside Tapasake on 26th June 2015. The lifeguard team quickly removed her and brought her to our Marine Biologist Kylie for assessment. After the net was removed, it was clear that Lylah’s front right flipper had suffered severe damage. She was sent to a Turtle Rehabilitation Centre on a nearby island, where unfortunately her right flipper had to be amputated due to the severity of the injury. After 135 days of rehabilitation to get used to diving, feeding and swimming with only three flippers, Lylah was released back to the ocean on 11th November 2015. Ollie was a small juvenile Olive Ridley found nearby our island on 16th

September 2015. Similarly to Lylah, little Ollie also had substantial damage to the front right flipper and had to be sent off to rehab where this flipper was amputated. After 158 days of rehabilitation, Ollie was released on 21st February 2016 and swam off quickly (and a little awkwardly with just 3 flippers) into the deep blue. One&Only Reethi Rah is a proud supporter of the Olive Ridley Project, a UK-based charity organisation which works to protect the Indian Ocean from ghost nets through research, removal and awareness. All throughout the Maldives, entanglement incidents are reported to the Olive Ridley Project, where they keep track of the details of the animals being found and also all the details of the types of ghost nets found. The Olive Ridley Project has team members working with local fishing communities in countries such as Sri Lanka, India and Pakistan to educate them about the impacts of discarded nets and how to reduce these incidents, and will open a Turtle Rescue Centre in the Maldives in September 2016.
