Located in Saint-Antonin-du-Var, Château Mentone is among the oldest estates in the Côtes de Provence, dating back to the 11th century. The estate extends over 170 hectares, of which 32 are dedicated to winegrowing. Over ten years, Marie-Pierre Caille restored the Château staying true to its architecture and the site’s natural importance. Nicolas Turounet grows vines and produces wine while maintaining great respect for the terroir. His Château Mentone, Cuvée Excellence, AOC Côtes de Provence 2006 is a delight!

The outlook for Bordeaux is looking good for the 2015 vintage. At Château de Sours, Martin Krajewski reports making considerably less rosé wines in 2015 partly due to reduced yields, but also because of the greater focus on red wines given the quality of the vintage. The Bordelais are generally very pleased throughout the region and as I write this cellar offering I am already starting to taste the first samples of 2015 red for the main Bordeaux cellar offering.

Réserve de Sours Sparkling Rosé, Brut, Méthode Traditionnelle Produced from a blend of 50% Merlot and 50% Cabernet Sauvignon, the Réserve de Sours Sparkling Rosé is a great way to start any evening. Medium pink in colour, with a fine stream of bubbles rising to the surface, it has delicious herbal fruits and rosehip aromas. The palate is crisp and very moreish with flavours of red berries and tangy acidity.

I tasted this towards the end of the day and we couldn’t help finishing off the bottle while cooking dinner. I would always recommend drinking this while fresh and young, over the next two years, although I have had much older bottles that age impressively well. Bottle fermented, it was aged 24 months on lees prior to release.

Château de Sours, AOC Bordeaux Rosé, 2015 Pretty coral pink in colour, the Château de Sours rosé 2015 has fresh fruit aromas with redcurrants, strawberries and pink grapefruit. Produced from 75% Merlot and 20% Cabernet Franc with a splash of Cabernet Sauvignon, it is well-balanced with crisp acidity leading to an herbal cranberry finish. The grapes were harvested in early September, pressed and the juice slowly fermented at 14°C for 28 days. This is a great summer wine made for drinking early. Order now and it will be perfect timing for summer 2016.

Source du Château de Sours, AOC 8423 La Bordeaux Rosé, 2014 This is a more complex rosé, pale in colour with a restrained vinous aroma. It is structured and more expressive on the palate with flavours of vanilla, $37.83 nutmeg, banana and strawberries. Produced from the best blocks on the Château de Sours estate, it is a blend of 70% Merlot and 30% Cabernet Franc. $227.00 Everything was harvested by hand on September 17th and 19th, 2014. After gentle pressing, the clear juice was part-fermented in French oak barrels, with approximately 30% new, and was subsequently matured for nine months on lees.

Chablis & Burgundy Lamblin Fils Maligny-par-Chablis

Lamblin Fils’ manual harvest at the Chablis Grand Cru Les Clos vineyards

The family firm of Lamblin Fils can trace its origins in the Chablis region back to 1690. Based on the outskirts of the village of Maligny, the winery is run by Michel and Didier, representing the 11th generation of vignerons, and their sons Alexandre and Clément.

The Chablis region, at the northern end of the Burgundy region, is in fact closer to the Champagne region than to the rest of Burgundy. The appellation fans out from the town of Chablis at its heart with vines cultivated on Kimmeridgian limestone soils, producing white wines from the Chardonnay grape with a distinctive mineral characteristic and some with the potential to age many years.

The main challenges in growing grapes in this northern region are the risk of spring frost and inclement conditions at flowering and harvest which can seriously reduce crop levels; so it was with great relief that the 2014 vintage broke a series of small vintages and at the same time produced high quality wines. A mild winter was followed by above average temperatures in March and April so that the vines sprang to life two weeks earlier than the norm. While August was a little gloomy, the sun returned producing a warm and sunny September, allowing full-ripening of the grapes. Harvest started September 18th 2014.

The Chablis region has four distinct appellations and quality levels. Petit Chablis lies on the outer areas of the region on the higher slopes where soils tend to be a little more loam and sand. The Chablis appellation sits on true Kimmeridgian clay soils, dating back 150 million years. Deposits of tiny oysters are found in the bedrock left behind by the $36.17 warm shallow sea that was once there. Vines were probably first-planted in Chablis in the first century AD, but viticulture was really developed by Cistercian monks from the Abbey of Pontigny in the 12th century. Pale in $217.00 colour, the 2014 has a complex aroma combining honey and spice with a hint of gunflint. The palate is supple with good weight and depth. Drinking nicely already, it will continue to open up in bottle. Fermented in stainless steel tanks with no use of oak, it is a pure expression of the terroir and grape.

Pale bright yellow in colour, delicious honeycomb aromas combine with spices, lemon and vanilla. The wine was fermented and matured in two and three year old French oak barrels. On the palate spicy flavours mingle with fresh apples. The mid-palate is quite light, but with a long spicy finish. This wine will benefit from further time in bottle and can be cellared for an additional five to eight years.

The Chablis appellation is traversed by the gentle Serein River which flows north, north-west into the Yonne River. Chablis’ finest vineyards are to be found on either side of its banks. The Premier Cru Vaillon sits on the left bank producing more concentrated ripe grapes that require more time before they reach their optimum for drinking. It has aromas of fresh green apples with a hint of honey. The palate is tight, deserving more time in bottle. It has a nice mid-palate with flavours of white fruits and steely, mineral acidity; it fully deserves the silver medal awarded at Mâcon. It is drinking nicely now, but personally I would hold on to it for a couple of years more before drinking, if you can avoid the temptation!

The richest, most complex wines are produced from the Grand Crus vineyards, of which there are seven. All lie on the right bank of the Serein River, on a south-west facing slope. Les Clos, directly facing the town of Chablis from across the river, is considered to be one of the richest and finest. Spring frosts in 2012 dramatically reduced crop levels, especially on the right bank, by up to 40%. The spring frosts were followed by poor weather at flowering, which reduced yields still further and produced uneven ripening of the grapes.

Despite these challenges, the 2012 wines are generous and well-balanced.

Chablis Grand Cru Les Clos 2012 displays delightful subtle aromas of white fruits, flowers, stone fruits and white peaches. Soft on the palate, it has poise and great potential to cellar with a long apple and honey finish. The wine was fermented in two and three year old barrels, then racked off lees with the wine’s focus coming from its noble terroir.

The town of Nuits-Saint-Georges in Burgundy’s Côte d’Or marks the southern boundary of the Côte de Nuits and is home to many traditional wine merchants with offices sitting above some remarkable hidden underground cellars. This is red wine territory and the Pinot Noir grape is king. Lamblin’s 2014 Nuits-Saint-Georges has spicy vanilla and cedary oak with cherry aromas. Medium-bodied with good concentration, it needs cellaring to mellow, but has fresh dark fruits and spicy flavours.

Produced by an artisan company based in the centre of Dijon in Burgundy, located in the original vaulted cellars beneath the city, these fruit liqueurs are produced using only fresh fruits of old and wild varieties sourced from the best regions of France. After a light crushing, the fruits are left to macerate in pure alcohol, absorbing the full flavours and colours from the fruits. They are perfect for making cocktails and for spicing up flavours in your favourite recipes and sauces; for instance, simply drizzle some over pan-seared duck breast.

Southern France Maison Jean Loron La Chapelle-de-Guinchay The négociant house of Jean Loron, based at Pontanevaux, specializes in Burgundy and Beaujolais wines. It was established in 1711, first as a winegrower then as merchant in 1821. The Loron family owns several domaines farming a total of 90 hectares of vines. They also have contracts with over 50 small winegrowers focusing meticulously on grape selection. The wines are made by Jean-Pierre Rodet, son of a winegrower originally from the Jura region.

Vibrant ruby in colour with ripe red fruit aromas and a hint of pepper, Duc de Belmont is a blend of Gamay and Pinot Noir. Soft and velvety on the palate with good balance, it is ready for drinking and will keep for several years. The grapes were de-stemmed and slowly fermented. The wine was matured in Jean Loron’s chais at Pontanevaux, part in oak. Coteaux Bourguignons is a new appellation created in 2011.

Located in the $26.33 Corbières region in Southern France, the estate has old vines of Grenache, Syrah, Carignan and Mourvèdre, up to 100 years in age. The Fontfroide terroir is shale, very stony and shallow. Cuvée Céleste is majority Shiraz $158.00 blended with 20% Carignan and 10% each Grenache and Mourvèdre. Deep in colour, it has an intense, spicy aroma with savoury notes and black olives. Mediumbodied with a firm structure, it will drink nicely for some years.

The vines are cultivated on two parcels in the western Languedoc close to the Pyrenees Mountains on calcareous clay and sandy clay soils. The grapes were hand-picked, $270.00 de-stemmed and fermented in open-top fermenters with punching down of the cap (skins) three times a day.

After pressing, the wine was matured in oak barrels for six months with one third each new, second fill and third fill.

My favourite wine quote is from Lily Bollinger: “I drink it when I’m happy and when I’m sad. Sometimes, I drink it when I’m alone. When I have company I consider it obligatory. I trifle with it if I’m not hungry and drink it if I am; otherwise I never touch it… unless I’m thirsty.” I can completely identify with Madame Bollinger’s sentiment - there is always a reason to crack open a bottle, so having a supply in the cellar and a chilled bottle in the fridge is a must.

Historically, the world of wine has been a predominantly male one, although the Champagne industry has been influenced for centuries by characterful women, be it Veuve Clicquot, who widowed in 1805 at the age of 27, took over her husband’s business and developed the process known as riddling, or Madame Pommery who lived in Chigny-les-Roses where Gardet is based. Another female, Stéphanie Sucheyre, is making her own mark as winemaker at Gardet since 2007, where she produces elegant, well-balanced Champagnes.

Champagne Gardet, Chigny-les-Roses, Brut Reserve Gardet Brut Reserve is classic Champagne produced from an equal blend of Pinot Noir, Pinot Meunier and Chardonnay. It displays classic bready aromas with fresh fruits, a fine creamy mousse with good acidity and honeyed flavours.

The grapes were harvested by hand and gently pressed. A first fermentation was carried out in tank to produce the base wines. In November and December each year, the still base wines are carefully blended and bottled with a small amount of sugar and yeast to carry out a second fermentation in bottle. The bottles are left to slowly ferment in the vast underground cellars beneath Gardet. In doing so, the wine becomes dry and captures its sparkle.

All the grapes come from Premier Cru plots giving good body $74.67 and richness combined with pure mineral notes. This is elegant Champagne with lime, citrus and brioche flavours, and a lingering white fruit finish. After second $448.00 fermentation in bottle, the Champagne matures in the vast cellars carved out of the limestone rock beneath Gardet. This Champagne is ideal for serving as an aperitif or with lighter dishes and white meats.

A fuller, more complex and robust Champagne, it is a blend of two thirds black Pinot Noir and Pinot Meunier $76.00 with one third of the white Chardonnay grape, combined with 25% barrel-matured reserve wines. The whole was matured for a year in barrel prior to bottling and the second fermentation. It has complex bread and earthy $456.00 aromas combined with white fruits. The palate is wellbalanced with a creamy texture and persistent flavour which just makes you want to take another sip. The oak maturation is not obvious, but definitely adds a distinct extra layer to the wine, with some spicy notes and rich mid-palate.

Many rosé Champagnes are too cloying for my palate, but the Gardet Brut Rosé is right up my street. It is made from a combination of 45% Pinot Noir, 45% Pinot Meunier with 10% Chardonnay grapes as a base to which 15% Champagne red wine was added to give the lovely pink colour. It has aromas of red fruits and yeasty notes with spicy citrus flavours. Champagne with weight that works well with spicy food, my favourite pairing is spicy lamb tagine.

Here is soft approachable Champagne with just a touch of extra sweetness which reduces acidity rather than tasting sweet. Aromas of white fruits, peaches and melons are enhanced by the soft fresh palate; $77.83 well-balanced, it finishes on pear and citrus notes that linger on the tongue. Byzantine was created by Gardet to be drunk with ice, as is currently the trend in the hip $467.00 bars of Paris where it’s known as a Piscine. I can see the appeal, but I also like this without the ice. Oh! The bottle glows in the dark, just in case you put it down somewhere and have trouble finding it!

The Arrivé family own the magnificent Château Bellevue, and Domaine Elisabeth was established in 1767 around the time that the art of double-distilling in copper pot stills and barrel maturation was being refined. While there are many growers across the region supplying to large Cognac houses, few single estates distil and mature their own.

The Cognac region is divided into five crus in the departments of the $128.83 Charente and Charente Maritime. Elisabeth VSOP was produced from the Fins $773.00 Bois region characterized by its floral aromas and fruity softness. Produced from Colombard and Ugni Blanc grapes, it was matured for over six years in oak barrels coming from the Limousin forest. Golden amber in colour, it has nice complexity with mellow orange peel and vanilla flavours.

VSOP stands for “Very Superior Old Pale” and must be aged for a minimum of four and a half years.

XO stands for “Extra Old” and, as the name suggests, must be matured longer; a $163.17 minimum of six and a half years. In this instance it was matured for ten years. $979.00 Elisabeth XO is deeper in colour, becoming golden amber with mahogany notes.

As the Cognac matures in barrel, it slowly evaporates, releasing what is known as the “Angels’ Share” into the atmosphere so that a wonderful fragrance pervades the barrel cellars. Over the years, the Cognac gains in colour and takes on mature vanilla and spicy aromas. Elizabeth XO is elegant with grapey aromas overlaid with caramel and vanilla. It is smooth with a long, lingering finish.

It is produced using single distillation in a continuous still, giving more earthy rustic characterisics to the spirit produced. The region is subdivided with Bas-Armagnac, where Les Vignobles de Mandelaëre is located, producing the finest, most highly prized Armagnacs.

Hors d’Age, Bas-Armagnac, AOC, Vieilli 8468 Sauvis en Fût de Chêne Sauvis Hors d’Age has an altogether more rich and mellow fragrance. Slightly darker in colour, it is also produced from 100% Folle Blanche grapes. The vines $190.50 are cultivated on marine sediments, clay and sandy soils.

Pays d’Auge

The Pays d’Auge region in Normandy has a particular association with apples. Noble cider has been produced here since the 7th century and alongside it Calvados. There are more than 200 varieties of apples; from sweet and bittersweet to more acidic, grown across the region. Cider is fermented over a six-week period and the best producers, like Marquis de Saint-Loup, then age the cider in oak barrels for several months before distilling.

Christian Drouin started this family company in the 1960s following his love for good food and wine. Christian purchased a 17th century farmhouse and estate at Gonneville and decided to use the orchard apples to produce Calvados. Today, Drouin is recognized as one of the top producers of Calvados.

Marquis de Saint-Loup Sélection is pale yellow in colour and its originality comes from a percentage of pears, as well as cider apples, used to produce it. A blend of 30% pear with 70% apple cider is distilled once to give a clean, fresh spirit that reaches maturity earlier.

The fruit orchards are on schist and granite soils which also define its characteristics. This is a soft, lighter style of Calvados with sweet fruit aromas and apple flavours, which can also be used to flambée, add flavour to apple granita, mixed cocktails or tonic.

de Saint-Loup Calvados, Pays 8470 Marquis d’Auge, Age Inconnu, AOC Deep amber in colour, the complex bouquet has aromas of smoke, spices and vanilla over a fruity, apple background. The apples are pressed once $252.67 and the first juice fermented to produce highquality cider. This was then matured for several months in oak casks before double-distilling in $1,516.00 a traditional copper alembic still. The resulting spirit was matured for 15 years in oak barrels and their development carefully monitored. They were tasted every year by Christian Drouin and blended to produce the Age Inconnu. It is round and smooth on the palate with rich apples and mellow oaky flavours.

Calvados, MSL, Pomme Prisonnière, Marquis de Saint-Loup A magnificently presented decanter containing a fully grown apple inside, not only is this great to quaff, it looks amazing, is a great talking point at the table, and makes a wonderful gift. The Calvados is a bright yellow colour and has delicious cider and fresh apple as well as baked apple aromas with hints of gingerbread, vanilla and cinnamon. The palate is supple and fresh with a crisp fruit finish and lingering apple flavours.

Oh, and if you are wondering how they got the great big apple into the decanter...

The secret is to introduce the apple into the bottle when it is still on the tree and small enough, at the precise moment so the apple will continue to grow through the summer until the end of September when the carafe is taken off the tree, cleaned and filled with Calvados. The long months of maceration enhance the apple taste of the resulting Calvados.

Rum is said to be the “next big thing” in the drinks sector. Unlike many industrial types of rums, Montebello in Guadeloupe produces rums from freshly crushed sugar cane juice.

The sugar cane is selected for the quality of its juice which is immediately fermented over 36 hours and then distilled.

There were hundreds of distilleries in Guadeloupe in the early 1900s. Today, just seven family distilleries remain. The Marsolle family settled in Guadeloupe when the first French arrived on the island. Coming from the Charente region, they had a worthy appreciation of fine Cognacs and distillation.

The current cellar master Grégory Marsolle continues to produce high-quality rums.

The sugar cane season at Montebello starts in December. The canes are cut by hand and the stalks de-fibred before being crushed. The juice, known as “vesou”, is filled directly into fermentation vats producing a liquid with 4% to 6% alcohol. Fermentation is followed by a complex three column fractional distillation process. The clear white rum produced is matured in 180-litre Canadian and American oak casks previously used for Bourbon.

On reading this offering up to this point one could be forgiven for thinking that the French have a monopoly on all things “spiritual”; this is clearly not the case. To give some context, more scotch is sold in one month in France than Cognac in a year!

Based on the Isle of Skye, Pràban Na Linne is one of very few independent Scotch Whisky companies.

The company sources Single Malt Whiskies from distilleries in the Highlands and Islands of Scotland and uses traditional production methods so that all their Whiskies are bottled unfiltered. Whisky is made from fermented grain mash, in this case barley. The fermented wash is distilled in copper pot stills, the shapes of which influence the flavour of the Whisky produced. Factors such as the level of malting, burning of peat and the oak maturation all contribute to the flavour of the Whisky, so that each distillery produces its own style. The master blender at Pràban Na Linne combines sweet Speyside Whiskies from the Highlands of Scotland with the peatier Islay characteristic.
