Last week, Seaway was again in the local news regarding the imminent planning application that must be submitted by Turnstone, the contracted developer. Cllr Martin Terry (Independent) has given a brief account of the Seaway issue and why he still has concerns. This month sees the launch of the new online directory for Southend, called Southend Oracle. New service for Southend! Oracle’s latest service and biggest project since the launch of the magazines’ 14 years ago, is the new Southend Oracle Directory launching this month, on the 1st October. Designed and built by our sister company, Oracle Creative Media Ltd (OCM). This new state of the art directory has been months in the making. It initially came about because we heard how many local businesses were unhappy with the amount they currently have to pay for their websites to be found online. We listened and, knowing the growing vulnerability of many businesses in the town, felt that there was a necessity for a trusted, reliable, and local, online directory offering affordable costs for all to use. Phase 1, is now live and is primarily aimed at companies who wish to increase their online presence and showcase their business cost effectively; safe in the knowledge that Oracle Creative Media, our sister company, is working hard behind the scenes to help with the visibility of their business. Each business member registers with their own unique login and will be able to amend their listing as often as they wish. Apple Streusel Cake This lovely moist apple cake freezes really well. It makes a large cake so I cut it into portions wrap in baking parchment and then foil and then just take one or two out and defrost at room temperature when needed.

Ingredients for the topping:
Method
Heat the oven to 180/fan 160/gas 4. Line a 20cm/8in round tin with baking parchment, leaving a 1in collar above the tin. Place the topping ingredients in a food processor and blitz to a crumbly texture. Transfer to a bowl and set aside. To make the cake, beat the butter and sugar with an electric whisk until light and fluffy, then gradually add the eggs one at a time, continuing to beat until fully combined.
50g/2oz pecans 50g/2oz plain flour 25g/1oz soft dark brown sugar
Sift in the flour, baking powder and mixed spice, followed by the milk and apples, then fold everything together. Spoon into the prepared tin and sprinkle over the streusel topping.

Ingredients for the cake: 140g/5oz unsalted butter, softened 140g/5oz light brown muscovado sugar
1tsp baking powder
Bake for 1 hr 10 mins but check a skewer comes out clean from the middle. Remove and cool in the tin for 15 mins then remove to a wire rack to cool completely.

3tbsp milk 500g/1lb 2oz eating apples, peeled cored and diced
