D S : I s e e a f e w c h a n g e s t a k i n g p l a c e . F o r o n e , t h e r e i s a m a j o r shortage of skilled and qualified labor.
This had been a minor issue until the p a n d e m i c , w h e n d r o v e s o f t r a i n e d c h e f s e x i t e d t h e i n d u s t r y o r t r a n s itioned to noncooking roles. The only solution I see is the death of the classic brigade system and the adoption of more responsible cooking processes to e l i m i n a t e t h o s e t h a t a r e t e d i o u s o r labor-intensive.

The two began partnering after Louis Jr. graduated from college in 1972. By 1980, they were looking beyond Omaha Louis Jr credits his father’s support with Rotella’s success in expanding – first to Lincoln, Nebraska, then to Des Moines, Iowa, and beyond

Artificial intelligence machine learning (AI/ML) researched bag racks to impact customer experience as a business driver fundamental. Table side bag racks are widely used in restaurants, cafes and other businesses across Mexico and Latin America, but developing in the United States. Given the developing utilization of bag racks and the need to improve customer experience and business driver fundamentals, bag racks were used as a base in restaurants and measured across other customer segments using a normative database approach from Analytics for Living (www.analyticsforliving.org) augmented from Taschenbaum (www.taschenbaum.de ) and BAG-UP (www bag-up us )
The research measures customer experience fundamentals: satisfaction, loyalty, advocacy, quality, and employee engagement These customer experience themes are the goal; however, the new research identified important sub-features within the core themes to better understand how and where to make an impact The advanced analytics AI/ML approach was employed to identify the key features to measure and understand The machine learning approach employed statistical methods to indicate the degree each feature contributes to predicting or impacting the customer experience score
As in prior research, satisfaction features were found to be most impacted by a customer citing the feeling of them and their belongings to be secure, safe and hygienic Loyalty included a combination of intent to repeat and spend more; loyal customers quartile spent 67 percent more on repeat dining Loyalty and repeat were further stratified by the number of persons in the experience (i e 1 solo, 2, 3+ est ) The stratification is an important contributing factor for revenue models, since solo customers typi-
cally represent 35 percent on average and a repeat top tier solo customer long term value would eclipse the 3+ onetime customers representing even a higher percent. Advocacy by customers was described as a customer who was willing to submit a review, share a post or which could be an influencer. Quality, of course, included the quality of the experience and services but also found quality of service and staff, which included waiting time, capacity to wait and the combination of the satisfaction and loyalty fundamentals as important. Lastly, employee engagement measured by employees and customers of the employees was found to be a synergistic metric when customer experience was highest, and the employee had opportunities where they were empowered to drive or impact the customer’s experience
Considering these customer experience learnings, the bag rack use case was perfect to better understand the impact using Customer Experience as a measurement The approach enrolled current customers, guests and previous customers who used bag racks during the customer experience survey which included the core fundamentals, experience features and sub-features to weight customer frequency and customer purchase value The customer response evaluated the new experience with the bag rack to understand the increase in customer experience score and future purchase intent or otherwise called a net promoter score
T h e m a c h i n e l e a r n i n g r e s e a r c h findings showed customer’s customer experience score doubled when having an experience, (i e dining, hotel, service, etc ), in the presence of a bag rack The doubling of customer experience translated into increased repeat and purchase volume which resulted in revenue growth for the business
