A

fter four and a half years of Off the Grid being in existence, I remain incredibly impressed by the quality and diversity of food that can be found throughout the Street Food community in the Bay Area. As you’ll find in this fall guide, the vendors we work with have shown an knack for invention, style and (most of all) creativity. I hope that you’ll find that OtG has contributed to those qualities with this Fall Guide. In it you’ll find new and interesting ways to explore our markets, stories about new and old vendors, and information about things you may not know about OtG; like our Artist in Residence program. Most of all, I look forward to these guides being a great tribute to the thousands of people who contribute to make OtG happen on a weekly basis; from owners, to chefs, to the people who clean the trucks, to the OtG staff, and most of all to our customers. So enjoy your final tastes of San Francisco’s Indian summer and we hope that you discover something new!

HOMECOOKING OR GROCERY SHOPPING?

WHAT TO BUY THIS FALL according to Christian from EUROBISTROS BRUSSELS SPROUTS?! Eurobistos comes through with a classic seasonal dish with a twist; Caramelized Brussels Sprouts. The twist? Added pancetta and chile, tossed with quinoa pasta. Did we happen to metion it’s Gluten Free? This dish has got it all. Warm, hearty, rustic, & comforting. Can’t find what you need in your neighborhood grocery store? The good folks at Eurobistros say that going to your local famers market will make all the difference! (And not just for the Brussels sprouts).

according to Zak from DOC’S OF THE BAY CH-CH-CH-CHILES! Looking for something that packs heat this autumn? The fellas at Doc’s of the Bay highly recommend you buy some Hatch chiles. It’s the perfect compliment for your next pork dish. Grab some on your next grocery run. Roast them over an open flame, chop them up, and make chile verde! Chef tip on choosing the best Hatch chiles: Get them when they’re bright green, rather than pale.

according to Sun from HIYAAA IT’S ALL ABOUT KNOWING YOUR ROOTS… OH, I GET IT. In the fall, we are most excited about root vegetables! As we enjoy one bowl meals, we often make stews. One of our favorite stews is galbi tang, Korean beef short rib stew. This dish is traditionally made with a Korean radish, moo and it adds a wonderful sweetness to the stew. In the fall, the radishes are super sweet. Be careful though, some are super spicy when eaten raw. We also change it up by using other root vegetables like rutabaga or turnip. These bring in a different dimension to the dish but they all taste wonderful!

according to Dennis from JEEPNEY GUY HOW MANY COLORS? ALL THE COLORS! All throughout the “eating season” I cook and serve a lot of meat, so it shouldn’t come as a surprise that one of my favorite Fall ingredients is fresh chard. Red, white, yellow or even rainbow chard, doesn’t matter. Make sure you choose nice bright leaves that are firm and not torn. I love the hearty crunch you get from it when you lightly cook it. My favorite way to prepare it is to braise it in a rich mushroom stock with heavily sautéed garlic and onions (which means I intentionally burn it in the pan!). Throw a little salt, pepper and vinegar and you have a vegetarian adobo dish!


LITTLE GREEN CYCLO SPRING ROLLS INGREDIENTS:

Tiger prawns Bacon Rice vermicelli Rice paper Romaine lettuce Cucumbers Pickled daikons & carrots Bean sprouts Mint Peanut sauce

COOKING DIRECTION: Place a sheet of rice paper on a flat surface, wipe over with a wet cloth or dip in lukewarm water. Place a handful of mixed herbs and vermicelli at the edge of the paper closest to you, then 1 slice of bacon and 3 slices of prawns.

Roll over from the edge until you reach the prawns, fold in the sides then roll up. Serve with peanut sauce. Estimated time to make the dish: 5 minutes

NOTE FROM LGC: We use free range, never frozen Pork Belly from Masami Farm in Corning, California. House curing results in a far more flavorful bacon than the store-bought kind. We don’t use pink salt or sodium nitrite for the curing.

BACON BACON THE BACON BURGER HOT DIGITY DOG: INGREDIENTS: 4 Dogs - Your favorite Frank 1lb of ground beef - 80/20 5 Strips of thick cut bacon 1 Jar of bacon jam 8 ounces of sauerkraut 1 yellow onion 1 ounce olive oil 4 slices of Tilamook cheddar Hotdog bun Brown deli mustard

COOKING DIRECTION: Boil water in a medium pot & cook Dogs for 4 min. Heat pan to medium, & add oil. Add sliced onions & cook for 15-18 min stirring occasionally until golden brown & caramelized. While onions are cooking combine your ground beef with diced bacon

Meet Craig Blum, the owner of Johnny Doughnuts. He’s been in the food business for 30 years, starting on the opening team for the first U.S. Hard Rock Café in Los Angeles, managed several high profile LA restaurants, & eventually opened his own place on Maui. In 2013, Craig launched Johnny Doughnuts & has been selling delicious doughnuts to the Bay Area ever since, both from his truck & in his storefront located in downtown San Rafael.

Meet Raj, Singh & Simi. Raj and Singh’s bromance goes back to 1980s and continues today as they serve authentic Indian food in local communities. Simi (Raj’s daughter) joined the team this year to bring the old-timers up to speed with what the cool kids are doing. From the beginning until now, the original mission to spread community, integrity, consistency, simplicity and love through their food has stayed the same.

A LITTLE HUMOR: Taking inspiration from the classic Burrito, Raj

“When I moved to the Bay Area, I began test marketing pizza crusts to local venues for a restaurant I was creating. Through that process, I sort of accidentally created my next venture, John Dough, an artisan pizza crust. I began selling John Dough to local & national hotel chains, the U.S. Navy, etc. I then created a line of pizza crusts (under the same name) & sold them in supermarkets throughout the U.S.”

“Expect to be greeted with a friendly smile! And, expect to eat a doughnut that was inspired from recipes from the 1920’s. Bringing back the love & respect for this amazing American art-form that has been lost over the years. Everything we offer is made from scratch & locally sourced wherever possible. We also use fresh potato in the dough which gives the doughnut a different bite. I believe the Johnny Doughnuts experience is fun, holistic & accessible to everyone.”

and Singh created what used to be called a Naan Burrito under the infamous banner, “When is a burrito not a burrito? When it’s a naanburrito!” (Excuse the bad pun!)

comfort food the Raj & Singh way. Always made with love, integrity, passion and the best possible ingredients sourced from local farmers. Our menu is centered around our 6 signature curries - Mr. Singh’s Chicken Tikka Masala, Mr. Raj’s Lamb Curry, eggplant, spinach, a creamy seasonal mixed vegetable korma, and garbanzo beans. Start with the curry of your choice, then wrap it up in freshly baked naan or pour it over rice.” Raj and Singh is at OtG: Fort Mason Center every Friday night, making freshly baked naan from 5-10pm. It’s a delicious option for vegan, vegetarian, and non-vegetarian customers.

Meet the faces behind The Chairman Truck, co-founders Kevin Kiwata, Curtis Lam (not pictured) and account/catering manager, Ashley Lee, spreading The Chairman concept through delicious steamed and baked buns everyday.

Akash and Rana Kapoor started Curry Up Now with a mission to bring the Indian street foods from their childhood to the Bay Area. With no formal training and a huge appetite, they were able to turn one food truck into three restaurant locations. Our food is a unique take on Indian street favorites, with flavors Akash and Rana love from around the world. We make the flavors and dishes they grew up with.

FUN FACT: How many buns in The Chairman Truck everyday? After

doing the math, on average The Chairman Truck can serve up to 3,000 steamed buns a day!

Negahara, former restaurateur at Bar Charlie in Las Vegas, started the Chairman Truck concept in 2009 with Mobi Munch. With the idea of “pushing street food using techniques from high-end restaurants”, The Chairman concept was born.

Golden, Cologne-style German ale - light, crisp and refreshing with a mildly spicy hop character. An effervescent and thirst-quenching beer.

On stove top warm: 1 Sliced Apple 1 Thinly Sliced Orange 4 Quarts of Apple Cider 1 Teaspoon of Whole All Spice 1 Teaspoon of Whole Cloves 5 Cinnamon Sticks 2.5 Cups of Dark Rum

ALEMBIC’S “1-2 PUNCH” An ideal drink for a fall evening. It’s a slight twist on the classic “French 75” with the edition of St. George’s Pear Brandy. This cocktail is refreshing with the added aroma of fresh pears. 1.5 oz. Aviation Gin .5 oz. Fresh Lemon Juice .5 oz. Simple Syrup .25 oz. St. George Pear Brandy 1 oz. Dry Sparkling Wine (we use Varichon and Clerc.) Combine gin, lemon, simple syrup and pear brandy in a shaker with ice. Shake until your cocktail is nice and cold. Pour into a coupe or martini glass. Top with 1 oz. Sparkling wine. Garnish with a lemon twist. Enjoy!

Warm until a steam begins to rise. Makes 10 Servings. Garnish with a honey stick or cinnamon stick.
