Dear barbecue enthusiasts, A successful barbecue experience starts with the right ingredients. For over 20 years, OUTDOORCHEF has made barbecuing EASY, VERSATILE and HEALTHY. From the very beginning, our clear vision was to make barbecuing a relaxed, varied experience that brings people together and lets them enjoy an untroubled, enjoyable time with family and friends. With this goal in mind, Mike Lingwood began developing an innovative gas kettle barbecue more than 20 years ago. He named his invention "OUTDOOR CHEF". BARBECUING METHODS

BARBECUE SYSTEMS

DIRECT BARBECUING METHOD As the name says, the food to be grilled is placed directly above the heat source for the direct grilling method. This method is ideal for flash-grilled meat. The high temperature enables a nice crust or the perfect seared pattern on the steak.

INDIRECT BARBECUING METHOD With indirect grilling the heat circulates around the food to be grilled. The closed lid turns the barbecue into a convection oven. This method is ideal for cooking large pieces of meat at low temperatures, gently cooking fish or making crispy pizzas.

THE GAS KETTLE BARBECUE EASY FLIP FUNNEL SYSTEM The EASY FLIP funnel allows you to change the heat distribution from direct to indirect grilling, cooking and baking in one easy movement: simply flip the EASY FLIP funnel. At the same time, it functions as an intelligent protective shield to prevent detrimental flare-ups and unwanted smoking.

THE GRILLING SYSTEM OF OUR GAS BARBECUE STATIONS The grilling system of our gas barbecue stations lets you switch from direct to indirect heat in the blink of an eye. For indirect grilling, cooking and baking, place the food to be grilled in the middle of the grate and only ignite the two outer burners.

A handy tip for charcoal: pour it in at just one side and then use the EASY SLIDE funnel system to work with either direct or indirect heat. When the opening of the funnel is turned away from the coal and the lid is closed, the entire grill surface can be used for indirect grilling.

SWITCHING ON

Make sure the heating element is inserted correctly. Before using the barbecue, inspect the cable, plug and heating element regulator for any signs of damage or wear.

Connect the mains plug to an earthed socket outlet. Set the master switch to "I" and the temperature control to "ON". The green checklamp at setting 1 starts to flash, indicating that the heating element is heating up.

Select the desired temperature level from 1–6 on the temperature regulator using the arrow keys or and allow the barbecue to heat up with the lid closed. Wait until the green checklamp is permanently lit, thereby indicating that the desired temperature has been reached. The heating time is around 10 to 15 minutes, depending on the setting, wind and weather.

The EASY REFLECT foil ensures even heat distribution and permits grilling at high temperatures up to 300 °C if required. At level 7, the barbecue heats continuously. Always grill with the lid open at this setting.

Any dripping fat or marinades evaporate on the aluminium protection foil, giving the food to be grilled that typical barbecue flavour. Replaceable aluminium protection foil protects the EASY REFLECT from dripping barbecue liquid.

AFTER GRILLING

TIP

GRILLING & COOKING Switch the temperature regulator to "OFF" and the master switch to "O". Always unplug the mains plug when not in use. The device is only disconnected from the mains if the mains plug has been disconnected. When unplugging, always grip the plug rather than the cable.

The electric kettle barbecue allows you to grill (with and without the lid) and cook (with the lid). Use the support ring provided for cooking. Remove the barbecue grid, insert the support ring, then place the Gourmet Set or Griddle Plate (for example) directly on top and let the barbecue fun begin!

THE NEXT GENERATION THE CHARCOAL SYSTEM PUTS THE HEAT ON

Easy replenishment of charcoal and briquettes. The chrome barbecue grid is foldable, so topping up the charcoal while grilling is child's play. The barbecue grid is lowered by around 3 cm to minimise temperature loss in windy conditions.

The ventilation gates allow precise and simple ventilation and temperature regulation.

The EASY SLIDE funnel technology allows you to switch from direct to indirect heat with a single action. The porcelain-enamelled funnel allows easy cleaning. For perfect barbecuing pleasure and tender meat, fill the integrated juice tray with water and use herbs or other liquids of your choice for flavouring.

The newly designed stainless steel charcoal basket allows rapid lighting and ensures minimal loss of charcoal or briquettes when filling. Thanks to the unique perforation of the charcoal container, the heat is concentrated and directed upwards to ensure longer grilling enjoyment.

Open the lower ventilation slot. Place 2 or 3 fire starters on the lighter grate and ignite them.

Insert the stainless steel charcoal basket and pile the charcoal or briquettes in the centre. The quantity depends on the size of the kettle. The barbecue fun can start in just 20 minutes — with direct or indirect grilling.

Our EASY SLIDE technology lets you choose between direct or indirect grilling. Indirect grilling makes the entire grill surface available. This is ideal for preparing large pieces of meat, such as chicken, leg of lamb or spare ribs.

With direct grilling, the food to be grilled is placed directly above the heat source and cooked at high temperatures. This creates a beautiful crust and the typical seared pattern.

TOPPING UP THE CHARCOAL

FLAVOURING & SMOKING

The two ventilation gates can be used to regulate the temperature. Fully opening the gates creates a strong current of air which increases the temperature. Moving the ventilation slots towards the closed position progressively reduces the current of air — resulting in a fall in temperature.

FIND OUT MORE P 64 To avoid any fall in temperature when topping up the fuel, you can prepare some burning charcoal in advance. This can be done quickly and easily with our Chimney Starter (see page 62). You can then add the burning charcoal easily and safely thanks to the folding barbecue grid.

Flavouring and smoking made easy. Simply fill the juice tray with flavoured liquid, herbs or smoker chips and give the food to be grilled the desired finish.

Make sure that the gas bottle, hose and regulator are suitable for your country. Place gas bottles weighing 7.5 kg or more beside the barbecue and secure lighter bottles on the lower shelf using the mechanism provided. Connect the gas bottle to the regulator and make sure that the thread is screwed correctly.

Perform a leak test before first use, when changing the gas bottle and after long periods of non-use. Brush a soap solution over all gas-carrying parts and open the gas tap on the bottle without opening the regulator on the barbecue. If no bubbles form, your gas system is free from leaks.

Gas kettle barbecue: the EASY FLIP funnel is located with the large opening facing upwards in the barbecue. A-Line: only the two outer burners are used. This allows you to work with indirect heat to ensure perfect results for large pieces of meat, pizzas or cakes.

Over 20 years ago, Mike Lingwood invented a unique gas kettle barbecue and called it "OUTDOOR CHEF". His aim was to develop a product that would allow people to easily barbecue a wide selection of healthy food, i.e. without flare-ups. His vision was to make barbecuing a relaxed and varied experience that would bring people together to let them share fun and carefree moments. Mr Lingwood, great ideas are often sparked by a need. Was this the case for the gas kettle barbecue? It all started with my youngest daughter's birthday party on 21 June 1992. I wanted to treat guests of all ages to a typical barbecue with sausages, burgers, etc. Since I "only" had a charcoal kettle barbecue at home, shortly before the party I decided to buy a gas barbecue with lava stones in the hope that this would allow me to grill the different foods quickly and easily. But it turned into a bit of a fiasco. Lots of things burned and we had flare-ups and clouds of smoke. I was disappointed that I hadn't been able to cook the food on the new gas barbecue the way I had expected. As a bit of a tinkerer, I kept thinking that there must be a better way of grilling with gas. How did you come up with the idea of transforming a kettle barbecue into a gas barbecue? I need to make a short digression here. In the summer of 1988, I moved from England to Spain with my family. A good friend of mine, who also lived in Spain, was a great barbecue enthusiast and loved to cook tasty dishes on his charcoal kettle barbecue. I didn't have much interest in barbecues at the time, however I took a charcoal

barbecue with me to Spain and soon became familiar with it. I'm a "tinkerer" and after my daughter's birthday party, I realised that it would be possible to combine the shape of the kettle with a paella burner — in other words, to turn a charcoal kettle barbecue into a gas-operated kettle barbecue. How long did it take until you had the first prototypes? It took quite a while. In Spain, most of the ironware shops have a wide range of different paella burners. Finding the right size to fit into my kettle was easy, but I always had the same problem — flare-ups. The real breakthrough came on the day I found an old washing machine drum in the rubbish! I removed the conical centre part and inserted it into the kettle as a funnel, so that the burner was completely covered and flare-ups were prevented. This discovery was followed by several months of development work, during which I tested a wide range of many different funnel shapes and sizes until I found the right one. Then I had the idea of dividing the funnel. The two-part funnel not only protected the burner, it also allowed the upper part to be rotated to concentrate the heat and direct it upwards — the unique "OUTDOORCHEF" funnel system had been invented.

Preparation Season the chicken legs with salt and pepper. Remove the tomato stems, quarter the vegetables, remove the gelatinous parts with the seeds and chop them finely. Cut the tomato quarters into cubes. Boil the chilli peppers in salt water for 10 minutes, quench them under cold water, peel, cut the pods in half, remove the stem and seeds, cut the pod halves into strips.

Preheating 5 minutes at the medium setting with the lid closed. Cooking Heat a Gourmet Pan with some olive oil. Fry the chicken legs until they are cooked all over. Sauté the onions, garlic and tomato pips on a medium heat until the liquid is boiling. Briefly sauté the rice, saffron threads and piri piri, then add the vegetable broth. Close the lid and let the paella cook on a medium heat for 10 minutes. Spread the mussels on the rice, add the white wine, cover and cook for another 5 minutes. Add the tomatoes and chilli peppers, put the prawns and monkfish on the rice and cook for a further 5 minutes at the lowest heat.

Preparation Mix the meat spice and olive oil. Spread over the beef, then wrap in cling film. Marinate in the refrigerator for 12 hours. Take the meat out of the refrigerator approximately 1 hour before grilling to allow it to reach room temperature. Mix the ingredients for the glaze. Preheating 5 minutes at a medium setting with the lid closed. Cooking Grill the beef on the pre-heated barbecue at 180 °C for around 70 minutes until the meat reaches a core temperature of 49 °C. Apply the glaze towards the end of the cooking time. Remove the beef from the barbecue. Cover the meat, then leave it to rest for 10 minutes until it reaches a core temperature of 55 °C.

BRUSH (R)EVOLUTION An interview with Yves Weile & Janos Escher

Ever since Yves Weile (product manager accessories) and Janos Escher (product designer) devoted themselves to the development of OUTDOORCHEF accessories, we have witnessed a veritable new product offensive. Both place high demands on quality and design as well as functionality. True to the motto "Good is not good enough", they have reworked virtually the entire range of accessories and implemented many new developments. In addition to the launch of the new smoking range, 2017 will be dominated by the (r)evolution of our brushes. We asked them to explain what is involved in this process. 44

Why did you decide to develop a completely new brush range? YV E S W E I LE For me, the needs of the end user as well as the longevity and care of our products are central issues. For this reason, it made sense to optimise our existing brush range.

How did you go about this? JAN O S E S C H E R Each product has both a functional and an emotional side. First, we discuss the core benefits of the product. As a result, certain aspects of the product are improved or supplemented, while unnecessary elements are also removed. In addition to these functionrelated technical specifications, there is always room to modify the design. We use this opportunity to make our products as homogeneous as possible, which allows the user to both consciously and unconsciously experience the OUTDOORCHEF values. What aspects of the new range of brushes are you particularly proud of?

YVES WEILE We were able to clearly optimise the products by the increasing the number of bristles, which also significantly extends the life of the brushes. However, we would like to particularly highlight the new funnel brush, which represents a totally new direction in terms of design, materials and application possibilities. The new brush allows efficient and thorough cleaning down to the smallest opening of the funnel. JAN O S E S C H E R The new concept of the funnel brush gave us the opportunity to extend its functionality. For example, the edge areas of our circular barbecue grid can now be easily cleaned with this brush. In addition, the movement and cleaning power of the user is transmitted much more directly because the brush can be gripped directly above the bristles.

WE HAD THE OPPORTUNITY TO LOOK OVER CHRISTINE'S SHOULDER AND VISITED HER IN HER RECIPE WORKSHOP

The perfect barbecue result requires not only great products and high-quality food, but also inspiration. Christine Minder, who is responsible for our events and barbecue cooking classes, has been providing this for over 10 years. She is passionate about the brand and her recipes infuse the OUTDOORCHEF Barbecue Culture into every student — her enthusiasm for grilling is immediately obvious, and it's contagious. An important supplement to our barbecue courses are our barbecue cookbooks, which are created in the OUTDOORCHEF Recipe Workshop. Christine, you are responsible for designing barbecue cooking courses and cookbooks at OUTDOORCHEF. What do you want to teach your students and customers? Barbecue dishes must be easy to prepare, healthy and versatile. Our ultimate goal is that grilling becomes a wonderful experience for everyone and we can pass on our enthusiasm. You inspire others with your barbecue recipes. Where do you get the ideas and how do you put together the recipes for the barbecue cookbooks? Some recipes are created through active dialogue with our well known barbecue chefs around the world, while others are created as part of my daily routine. For example, I stand in front of my fridge and wonder what I should cook or grill today. Often the contents of my fridge determine my menu. This is how many of my recipes are created. 46


RECIPE WORKSHOP

Can you describe the development of your recipes? That is a good question (she grins). My recipes are often created spontaneously — while talking, shopping or reading a cookbook. Then I write down my ideas and try out the newly created recipes. My family serve as the tasters. Recipes aren't always a success the first time and sometimes needs further attempts. Then the "hard graft" begins. The recipe has to be properly designed with additional notes, and the ingredients need to be calculated for 4 people and put in the correct order. In our Recipe Workshop, all the dishes are prepared once again for a testing team. If they like a recipe, it is photographed and recorded in the database. I know you're an absolute fan of the gas kettle barbecue. Why are you so enthusiastic about this barbecue system? Because every dish is a success. Anyone who has ever baked a normal loaf of bread on a gas kettle barbecue will never switch the oven on again. The bread is crispy on the outside and airy inside (see info box). You are often the first to test new barbecues and accessories. What do you look for? I slip into the role of the end customer. When testing a new grill I usually start with the simplest dishes like chops, sausages, barbecued vegetables or baked potatoes. Flash-grilled meat must be juicy, while sausages, barbecued vegetables and potatoes should be well browned and even. The heat regulation is critical here. I test the new accessories on the basis of the product manager's specifications and their potential applications. The flavouring pan, for example, was created for aromatising. However, we now also use it to prepare lasagne, tarte tatin and much more. At present, everything in the recipe workshop revolves around smoking. Which recipe is your favourite and what do you recommend for those who are new to flavouring? My absolute favourite is the salmon fillet with orange, prepared on the wooden plank. It is very easy to prepare and the fish is wonderfully flavoured by the cedar wood of the plank. This gives the dish something special.

Preparation Place the wooden plank in lukewarm water for at least 60 minutes. Mix the honey and spices. Remove the salmon from the refrigerator, rinse with cold water and dab dry with kitchen towel. Lay the salmon with the skin side on the cedar wood and cut into portions as far as the skin. Spread the juice of the orange over the salmon and marinate with the honey mixture. Insert the orange slices into the cuts. Preheating 5 minutes at the medium setting with the lid closed. Cooking Place the plank with the salmon on the pre-heated barbecue grid and grill for 5 minutes at the highest temperature. Then lower the temperature and grill indirectly at about 200 °C for around 15 minutes. Core temperature should be 46 to 48 °C.

1. Before first use Clean the cast-iron grid with water before using it for the first time. Then allow the barbecue grid to burn out on the barbecue for around 10 minutes. 2. HOW TO MAKE IT 1. Mix mincemeat, veal, eggs, breadcrumbs, shallots and herbs, season with meat spices. Knead until the mass is compact and homogeneous. Place in the fridge for 2 hours. Then divide the meat into 8 portions and form into spheres. 2. Mix spinach, ricotta, Parmesan and egg yolk thoroughly, season with salt and pepper. 3. Oil the Burger Press well, place a meat ball inside and press briefly, make an indent with a soup spoon and lay bacon on top. Add a quarter of the spinach/cheese mixture and push the bacon down into the centre. Place a second ball of meat on top and press it down firmly.

PUT THE HEAT ON

CHIMNEY STARTER The OUTDOORCHEF Chimney Starter allows you to easily and safely add burning charcoal or briquettes. The heat shield on the handle protects your fingers from the heat, while the matching Chimney Starter Base helps to prevent burn marks, charcoal residue or ash on the ground.

AND THIS IS HOW IT WORKS Position the Chimney Starter Base on an earth, sand or gravel surface and place 2 or 3 OUTDOORCHEF fire starters on top. Fill the Chimney Starter with the appropriate quantity of OUTDOORCHEF charcoal or briquettes (do not overfill!). Ignite the fire starters and place the filled Chimney Starter on top. After approx. 12 to 15 minutes, carefully lift the OUTDOORCHEF Chimney Starter by both handles (wear barbecue gloves!) and empty the charcoal/briquettes onto the charcoal grate.
