Letter From the Lifestyle Team KAITLYN ALDRIDGE YOUR LIFESTYLE MANAGER
Goodbye April showers, hello May flowers! Halfway through 2022 already! How did this happen, you ask? The good old cliché, “time flies when you’re having fun,” that’s how! If you’re still waiting to close on your new home, we encourage you to take the opportunity to enjoy our Lifestyle programming and meet your new neighbors before moving in. For those already living the Lake Club Lifestyle, we love seeing you at all the events and activities!
Mother’s and Father’s day but we also get to celebrate Cinco de Mayo, Memorial Day and the start of summer! We will also make time to give back in the month of June with our first ever community blood drive. Be sure to come out and help save a life if you can.
I am pleased to announce we are seeing more and more participation in our clubs and interest groups! If you would like to be a part of poker, mah jongg, canasta, hand & foot and more, be sure to reach out to be added to our lists! If you would like to start a club or interest group, please reach out to me for further assistance!
I'd like to kindly remind everyone of the importance of both registering for activities and cancelling your registrations if you are no longer able to attend, in a timely manner. This allows us to accurately anticipate total attendance and ensure the most enjoyable Lifestyle programming for our Members! Sometimes activities require a participation minimum, so we also want to make sure we are meeting certain guidelines to host these activities.
May and June are filled with so many things to celebrate. At Lake Club we not only say thank you to our moms and dads this

Katelynn Carlson NATIONAL DIRECTOR OF MARKETING & COMMUNICATIONS
W
e are pleased to introduce your National Director of Marketing and Communications, Katelynn Carlson. Katelynn works hand in hand with Taylor Morrison Marketing to provide communications and marketing support to Esplanade communities nationwide. Out of all of the projects from last year, one of her favorites was the rebranding of the very publication you are enjoying right now, the Esplanade Lifestyle Magazine! She works closely with each local Lifestyle Manager to ensure that their Lifestyle experiences, Members, beloved community pets and the wonderful work they do to produce your Lifestyle programming is shared in a fun and engaging way. You have heard this sentiment throughout last year, but as Esplanade continues to span the nation, Katelynn looks forward to even more ways to spotlight the amazing things our local teams are doing at each community to bring the Esplanade Lifestyle experience to life each day. Katelynn earned her Bachelor of Arts Degree in the field of Communications and Marketing from The University of Central Florida. After graduating, she spent her first year as an intern at the Ronald McDonald House Charities of Central Florida, working as a social media and content coordinator helping to tell the amazing family stories and acts of kindness of local volunteers. In 2012, she was thrilled to join The Walt Disney Company as a Communications and Marketing professional at the Walt Disney World Resort, and spent the next decade growing her skills and knowledge and making magic in a variety of marketing roles. Prior to joining the Evergreen Team, she spent 6 years of her Disney career working to establish, execute and sustain a communications and marketing foundation for the Members of Disney’s one-of-a-kind resort residential community, Golden Oak. She partnered closely with their neighbors, the Four Seasons Resort Orlando to stay engaged with the structure of their exclusive, luxury homeowner experience, The Four Seasons Private Residences. With this knowledge and expertise, the transition to support the growing Esplanade brand seemed like the perfect fit! When she’s not busy finding ways to innovate and create in the world of Esplanade marketing and communications, Katelynn loves to spend time at her home in Orlando, Florida with her two rescue kitties, Lincoln and Harper or out around town with her friends. As a native to Orlando, she is blessed to have sustained friendships as far back as kindergarten, with many of those friends still living in the area. “My family and friends are everything to me,” she shares. “I have a wonderful, close relationship with my parents who actually live 10 minutes up the road, and it’s such a blessing.” She loves to stay active and tries to start each morning with exercise and movement, usually at her F45 gym in Central Florida. She is also passionate about storytelling through images and began her own wedding photography business 6 years ago! When we asked her to explain something she’s most thankful for so far in 2022, she shares: “To be honest, I’m just tremendously thankful to wake up every day and work with a team of people who I truly care about and enjoy being around. Our Esplanade national team, and the team members that make up our local teams, are so passionate, creative, and driven. It’s a privilege to work alongside them. On a personal note, I’d like to get on an international flight again, for leisure travel! I’m not sure where I want to head to next but Switzerland has always been high on the list!”

1 cup fresh key lime juice (approx. 8 key limes) 1 small-medium red onion thinly sliced 1 1/2 teaspoons peeled and grated fresh ginger (tip: use a spoon to remove skin) 1 garlic clove, peeled and chopped 1-pound ¾" cubes mahi-mahi or tilapia fillet 2 tablespoons chopped fresh cilantro A pinch of salt (use kosher salt if possible), add more to taste A pinch of pepper (try to use fresh ground on the finest setting), add more to taste 1 tablespoon of aji amarillo cream (cream recipe is below and if you like it spicy add 2 teaspoons of minced red aji limo which is a pepper that you can often find at south American stores) 2 tablespoons of olive oil or canola oil 2 cups of ice 1 tablespoon of evaporated milk (optional and use to make it a creamy style of ceviche) Sweet potato (yam) peeled, cut crosswise into 1/4-inch-thick rounds, boiled 5 minutes, drained, cooled (optional)

In March we had a wonderful presentation from our National Director of Food, Beverage & Culinary Experience, Patrick Scully. A few of our Members got front row seats to learn how to properly make a tasty pisco sour and a delicious ceviche in under an hour! Try your chef skills at home with the Ceviche recipe below and let us know how your meal tastes!
DIRECTIONS 1. Wash and dry fish. Cut into cubes of approximately ¾ inch. Remove any remaining skin, scales or bones. It is important that you only have cubes of lean meat similar in size for even cooking. Place prepared fish in a bowl in the fridge to be used later. 2. Wash key limes. Squeeze them into a large bowl. Strain the fresh juice to remove any seeds. This lime juice will be used to cook the fish through an acidic marinade. 3. Remove fish from the refrigerator and combine with key lime juice. Make sure that all the fish is covered by the juice. Cover the container and return to the refrigerator for 10 minutes. While fish is in the refrigerator check every two minutes to ensure all fish is submersed and properly cooking in the lime juice. You may need to stir fish mixture periodically to ensure all areas come in contact with the lime juice. 4. Cut the aji amarillo peppers in half, remove the seeds and ribs and boil for about 15 minutes. Remove the aji amarillo from the water and shock in an ice bath. When cooled (usually within a minute) remove and discard the skins. 5. At this time combine the aji amarillo, and olive oil and blend into a sauce or use mortar and pestle. 6. Peel and julienne your onion into thin slices, chop the cilantro. Peel and chop the garlic and grate the ginger. 7. Now is time to mix the rest of the ingredients – the fish should already be cooked through the process of the acidic marinate when the fish was combined with the key lime juice (the flesh should be opaque and about to fall apart). Add ice, onions, aji amarillo, cilantro, ginger, garlic, a pinch of salt and pepper to the fish and lime juice mixture, add evaporated milk (you can omit the milk if you have a lactose allergy). Stir to combine all ingredients and you are ready to serve.

ational Fitness Day gives us an opportunity to be inspired and try new ways of becoming fit and healthy. This day is dedicated to everyone, not just health enthusiasts. Take some time for yourself and try a new fitness class this week or perhaps you only want to get outside for a walk and fresh air! This day is a great reminder to focus on ourselves a bit more and shake up your routine!

Take the dog for a walk. Try a new, healthy recipe. Replace the fries with a salad at lunch. Take the stairs instead of the elevator. Walk or jog a different route than you usually do. Set your alarm for 20 minutes earlier and do some yoga, stretch, or just go for a walk. Do you get enough sleep? Make a goal of going to bed at the same time and waking the same time every day.
Captains for Clean Water
T
his past March we had a wonderful virtual lecture from the Captains for Clean Water organization where Captain Chris told us all about what is happening right here in Florida. Since we have partnered with the National Wildlife Federation we also want to share what they are doing to also help restore our beautiful water. The Gulf of Mexico is an incredible haven for wildlife—home to approximately 15,000 unique species of wildlife, including 28 types of dolphins and whales, 49 species of sharks, and five different sea turtles. The National Wildlife Federation has long worked to improve the health of the Gulf of Mexico for people and wildlife, and to protect the way of life of the 50 million people who live near the Gulf. Over the decades, we have championed the restoration of Louisiana’s rapidlyeroding Mississippi River Delta, advocated for the restoration of the Everglades, and protected freshwater flowing to the Texas coast.
