Staff Focus: Yesenia Carrasco
Y
esenia was born and raised in New London and Margate, CT. She moved to Florida in 2001 where she began her family. Yesenia and her husband are raising three wonderful children: David (10), Mya (7), and Israel (3). Yesenia enjoys family time trailing, biking, and barbecuing at local parks. After she moved to Port St Lucie, her in-laws
also decided to move close by so they could be a part of their grandchildren’s lives. Like Bette, she is able to raise her children surrounded by loving grandparents that can’t go two whole days without seeing them. Yesenia recently added a new edition to their family, a four-legged silly boy named Nano who brings so much joy to their family outings. Yesenia and her family are firm believers in following the “Golden Rule.” Since joining our Lifestyles Team a few months ago, Yesenia has added a certain eagerness for accomplishing tasks that benefits our entire team!
News from the Sunset Beach Tiki Bar Group
T
he Sunset Beach Tiki Bar Group meets every Sunday at the Sunset Beach Pool at 1pm. The group is open to all Vitalia residents. It’s a weekly party that has become a Vitalia tradition; it’s a great way to spend a Sunday afternoon meeting up with old friends and neighbors as well as welcoming and meeting our new neighbors. On Sunday, December 7th, the Tiki Bar Group held its first annual holiday get together. In keeping with our theme of donating and our motto of giving, the Tiki Bar Group donated over $100 worth of toys to the Toys for Tots Foundation. There was also a Gingerbread House Building Contest with seven teams showing off their creativity and building skills. The winning team received a prize of $50. We also had a visit from Santa Claus (Ruby Larkin) and Mrs. Santa Claus (Sally Molica), which made the afternoon very festive with holiday music playing in the background.

March Lifestyles Event Tickets go on sale Monday, February 2nd. All residents will need to present their resident ID badges in order to purchase a ticket. The first month a Lifestyles event goes on sale, tickets are for residents only (unless otherwise specified). After this, if the event is not sold out, adult guests are welcome and residents may purchase any remaining tickets. The Leah Williamson Chapter will start the day off visiting the homes of Nan Rothschild and then Arlene Klein in Vitalia to learn all about their gardens. The Martin County Chapter will start at the home of Ruth Ziffer and then continue to Ballantrae to the home of Joanne Caras. A buffet lunch will be served at the beautiful Santa Lucia River Club (at Ballantrae Gold Club in Port St. Lucie). After lunch the chapters will switch tours. MALKA'S MAHJONG CORNER ASK THE EXPERT Q1: I was taught to pick and rack very quickly, but my friends complain that I don't give them enough time to claim a discard. Do I have to change this? A: Some fast players immediately rack a tile after picking it (I call this practice "pickandrack"). I have two theories about why people do this: because the player wants the game to move quickly, as a way of making herself a competitive player; or because the player is being defensive, hoping that the taken tile is a joker. If you've ever picked a tile, seen that it was a joker, but had to put it back because somebody else called the most recent discard, you know what I'm talking about. Whatever the reason for engaging in pickandrack, if it's done very quickly after the previous

I recommend that players pause a beat before picking in order to give others a chance to call for the current discard. Then you can pickandrack if you wish. Q2: Does tapping the tile on the top of the rack count as racking? A: Does "racking" mean "bringing the tile behind the rack" or "tapping the tile on the rack"? No. "Racking" a tile means placing it on the sloping front of the rack. This tapping idea probably resulted from a desire to make the game move quickly. Maybe someone who picked a tile, saw it was a joker, but had to put it back because somebody else called the most recent discard, wanted a faster way to "rack" the tile. Racking a tile closes the window of opportunity for another player to claim the current discard - tapping the tile on the rack is not racking it. Standing the tile on one's card is not racking it.

Having gone through my own physical transformation (which inspired me to become a personal trainer), I’ve made it my personal mission to help improve the health and well being of all my clients. In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least one hour (or overnight). 2. Preheat oven to 400 degrees. Roll out dough on floured surface (1/4 to 1/2 inch thick). Cut into shapes with any cookie cutter. Place cookies 1 inch apart on ungreased cookie sheets. 3. Bake 6 to 8 minutes in preheated oven. Cool completely. 4. Decorate! Ice and/or dust with sugar as desired.
Chicken Marsala for Two Ingredients 2 ounces pancetta (about a 1/4 inch thick slice), cut into a 1/4 inch dice 1/2 cup flour for dredging 4 thin chicken breast cutlets, about 1/2 pound total

Coat a large skillet lightly with olive oil and set it over medium-high heat. Add the pancetta and cook until just crisp and lightly browned. Remove with a slotted spoon, leaving the fat in the pan, and set aside. 2. Put the flour on a plate. Pat the cutlets dry. Season them on both sides lightly with salt and amply with pepper. Heat the skillet with the pancetta fat over medium high. Add more olive oil, if needed, to get about 2 tablespoons fat in the pan. 3. When the fat is hot, dredge a cutlet through the flour on both sides. Shake off the excess flour and immediately put the cutlet in the pan. Do the same with as many cutlets as will fit in the pan without touching. Sauté the cutlets, turning once, until browned on both sides; if thin, they should cook through in just a few minutes total. Transfer the cooked cutlets to a plate and continue sautéing the rest, adding more oil if necessary. Transfer these to the plate as well. 4. Pour off the excess fat. With the pan over medium heat, add the mushrooms and cook for 5 minutes. Next add the Marsala and scrape up any browned bits from the bottom of the pan. Cook until the Marsala is reduced by about a quarter. Stir in the cream and boil until you get a nicely thickened sauce. Return the chicken and pancetta to the pan and turn the cutlets over to coat. Let them reheat for 30 seconds to 1 minute. Serve with the sauce, mushrooms, and a sprinkling of parsley with either rice or pasta on the side. 18 Vitalia Voice | February 2015
