Imagine the Queen is your grandmother. She is unflappable, formal and elegant; an icon. People who don’t know her may find her a little intimidating. But to you, she is comfort and safety; a friend. This is how I feel as I walk into the Noble Restaurant at the Prince of Wales Hotel. It is a crisp, gorgeous dining room, impeccably dressed, and just waiting to begin our conversation. When a room is this beautiful, it speaks to you. It draws you in... and enchants you. If you had any nervousness about

eating in such a spectacular room, it melts away. While this dining room is undeniably luxurious, it is also inviting, warm, and friendly. This is a room that brings out the childlike wonder in me as I walk in. As I sit down with my companion, I already know what I am going to order; the steak. Not just any steak, the steak - the signature dish that has remained the cornerstone of the Vintage Hotel’s menu for more years than anyone can remember. With such recordholding power, it must be ordered.
As we settle in, my thoughts turn to my meal. Signature Vintage Hotels Rib Steak, Twenty Ounces of Canadian Prime Rib, Signature Country Dry Rub, Duck Fat Roasted Potatoes. I order a tannin heavy wine and we dine. The steak is generous. There is no way I will eat it all, but will try. At first glance, I see that it is cooked to perfection. I order medium rare and indeed, it is medium rare. Perfectly seared on the outside,

Culinary Experience lovely, and red in the middle. The best of both worlds. When I cut into the steak, the first thing I notice is that it is wonderfully tender. The knife is sharp, but it doesn’t need to be because the meat is beautifully aged and nicely supple. My first bite is a combination of meaty heaven and velvety bliss. A good steak is one that you do not have to gnaw but can simply chew. Again, perfection! The rub is complex, creating flavour in every area of my mouth, with a wonderful aroma that
comes through as I eat each bite. It is what the English call “moorish”, in that with every bite I want more. Although the rub is complex in design, it is not overpowering. It is interesting without cloying and I enjoy the last bite as much as the first. The potatoes were cooked beautifully tender and the vegetables were surprisingly rich and satisfying. The mussels we shared before our meal were rich and creamy with a sauce of fennel, leeks, chorizo, sorrel, chardonnay,
and cream. I could have eaten a barrel of them. The amusebouches were a delight and got us excited to embark on our meal. The service was impeccable. Our waiter was friendly and cordial, neither too intimate nor too aloof; he was perfect. As far as dining experiences go, this will remain at the top of my list and leaves me contemplating my next trip to Niagara-on-the-Lake!

Oh My Dear... Cork Boy! By Alex Kazam
Halfway through the bottle, I had my emperor’s new clothes moment. I’d come to my aunt’s home for dinner. There were four of us there. We were enjoying a deeply coloured and lightly earthy red while my aunt put the finishing touches on dinner. You know how everything always tastes better at somebody else’s place? Enjoying meals provided by any of the women in my family epitomizes this truism. My aunt’s friend, named Shelly, started to hold court on some esoteric aspect of equestrianism. Being one of the only people in my family who hasn’t really spent much time on the back of a horse, I started to drift-off. Around me, various visual cues guided me and I started remembering all the wonderful moments I’d had in this space. Here was where I sat when I found out this amazing family would take me in. Call me their own. The home was
built by my grandfather in the early 70’s. A really comfortable place, furnished with natural materials, warm colours, and soft textiles. A place that exudes a ski-vacation feel. The atmosphere is elegant, yet cozy. The interior is as calming as the nearby apple orchards and lakeside view of the sunset. All the rooms speak to the home’s past while creating a comfortable setting for today. An antique French tole chandelier hangs over the breakfast table, which is covered in a tablecloth in a Provençal-style fabric. In the sitting room, a Dayak blowgun and some darts expertly hang over the mantelpiece. The latter is lined with albums and almanacs layered in between varying sizes of framed and unframed art. My aunt insists it’s her little ode to Potsdam. “Every room is different! No two the same!” But really, she’s being a bit deceitful.

A thread of crisp style and serenity runs through every space. “Oh ****!” Shelly exclaimed, moments before her jaw dropped, her eyes like saucers. She began apologizing profusely to my aunt. Our long-time family friend had managed to empty a full glass of that delicious nectar of the gods onto a pristine, hand knotted, metalbeige rug that had lain innocently underneath us. I leapt to my feet trying my best to quickly right this wrong. I grabbed the glass, somehow believing that if I upturned an already empty glass with great speed, it would somehow slow the rug’s rapid rate of absorption. Of course, nothing could be further from the truth. Before I could even think about the next correct course of action, I notice my partner quickly jolt up from her chair. Did some wine spill on her? Was she just being melodramatic because I scared her when I leapt to my feet? No. Somehow, I moved the impossibly heavy oak table we were sat at when I was trying to play hero. So much so, that the poorly placed bottle of red we’d all been enjoying also tumbled onto the rug. Are you kidding me? Now Shelly’s embarrassment and surprise increase tenfold. Mine hits me like a ton of bricks. The delicious smell of the food seemed to disappear completely.
The nostalgic daydreaming journey I had began came to a screeching halt. This beautiful rug now covered in an array of spurts and sprays that joined two nice big stains. It looked like a crime scene, except the only crime committed was that of wasted alcohol. Soon, all of us had paper towels and clean cloths in hand, desperately trying to remove any wine that had not been absorbed yet. A few cups of warm water, a couple tablespoons of vinegar and dishwashing liquid later, we all sat down and just looked at one another. “Should’ve brought the screw capped bottle!” I sighed. We all laughed. My aunt wasn’t upset or distraught for even a second. Between raising a couple of kids, balancing her work, personal life and hobbies - some spilled Dionysus sap wasn’t about to ruin her evening. “No, I’m happy you brought a corked bottle Alex,” she said as she passed me the plate of perfectly cooked roast, “there is just something about it.” This single statement sent me spiralling on a mental journey of selfdiscovery and a final eureka. With this in mind, my first instinct then was to heed to the same one that I have now; to appear clever, in the loop, and a real connoisseur. I wanted to correct my aunt because she somewhat misused a term
that is already often misunderstood. For the sake of clarity, I did not bring corked wine to our casual soiree. My aunt was simply referring to the fact that the bottle was sealed with a cork. I remember the first time I thought I encountered a corked wine, I was sitting in a restaurant in Niagara-On-TheLake, Ontario. I was having a nice dinner with some fellow cast members, following a technical rehearsal. I was reaching the end of a glass of Gamay when I noticed little particles of cork bobbing around like little stowaways, getting a tariff-free ride to salvation. Though in this particular instance, salvation took the form of digestion. Given that I was just nineteen years old, desperately in need of approval and tending to take myself a little too seriously - I shifted my mood from jovial to serious, looked at the server and said: “Excuse me, this wine is corked, I’d like another bottle!” Somehow, as it tends to happen in those moments, everyone went quiet just as I said it. The entire group, composed of at least twelve other people, most of whom were at least double if not triple my age, burst out laughing. In particular, I remember Yvonne: A fifty something dialect coach, who was witty as heck, extremely intelligent and took nobody’s twaddle. She had piercing eyes, amazing brown hair, and a collarbone you could cut yourself on just

looking at it. She wasted no time in telling me just how wrong I was. “Alex, corked wine means that the cork has absorbed a chemical called TSA (trichloranisole); and that’s a true chemical flaw that lives in a cork. So if it picks up just the tiniest particle of that compound - it’s going to leech into your wine. It smells like musty cardboard, it completely kills the wine. You won’t get any fruit, the flavours are a bit bitter. Most people don’t know how to detect that, but they know that what they’re drinking, is bad. You, my dear, just have some small, harmless particles of cork that fell into your wine. You don’t need a new bottle - what you need is a spoon.” For the rest of that night, I was teased gallantly and referred to as Cork Boy. I went home that night and learned as much as I possibly could about wine, winemaking, viticulture as well as popular myths and facts with which to disarm them. For example, when your server finishes opening that bottle in front of you ever so ceremoniously, she places the cork in front

of you. Look at it. Don’t smell it. There is a very tiny percent of the population that might be able to discern the smell of cork taint from the smell of a perfectly ordinary cork. No matter how much of a wine expert you think you are, your chances of recognizing trouble is far better if you study the cork visually. By all means, you can still smell it after you’ve looked at it if you want to. Looking at the cork, notice whether the wine is towards the top of the cork. If there are very few encroachments into the cork, you’re usually in for a nice treat. Alternatively, if you can see the wine has gone about half way down the cork, you can decide. If you’ve had that particular wine before, you can taste it and deal with it. If you’ve never had the wine, then you can choose to send it back. Conversely, if the cork appears cracked or otherwise unusual, for example, if it’s coloured almost completely by the wine, it usually means the wine is cooked. Ask for a different bottle. Also, the notion of legs (the streaks that trickle down the side of any wine glass after you swirl it) came up as a term at some point. (By the way, the French refer to this same phenomenon as tears.) Nobody really knows when or why this idea came up. What many do know, is just how little wine legs really tell us. They are caused by alcohol. So it’s thought that the more legs, the higher the alcohol content. But most wines are within a few
percentages of one another, and reading the actual alcohol percentage on the label will be way far more useful. Eventually, I realized how divisive and intense the wine culture community could be. People trying to convince others that wine doesn’t pair with chocolate... Or that red should never be served with seafood. Still others trying to proselytize the ideal amount you can quaff before exceeding that elusive place known as moderation. Here I was, sitting with some of the women I love most, reaching for the second bottle and my wine key, when suddenly it dawned on me. I don’t think I’d ever actually enjoyed drinking a glass of wine since that day in the restaurant in NiagaraOn-The-Lake. Obviously I’d enjoyed a lot more than a glass since then. What I mean is I’d not actually fully taken pleasure in the experience. I’d not relished the experience of finding my own personal taste when it came to wine. Whereas, I could tell you my favourite way to make a proper whiskey sour, or wax poetic about how a daiquiri is supposed to look and taste. Working as a bartender I had some of the best mentors when it came to the craft of the cocktail and everything beer. Those mentors would laugh with me. Somewhere in between poking fun at each other and serving guests, I’d learn
something. They remembered not to take life too seriously. This wasn’t open heart surgery, it was cocktails and cohorts. I was relaxed. I was engaged. Thus, I absorbed their ideas, lessons, and wisdom with ease. Even though it took spilling a bunch of wine on a nice rug, in a beautiful home I felt relaxed and comfortable in for me to be able to find the true oenophile within myself. I’m so glad Shelly spilled that wine. I’m so glad I added to the mess and confusion by tipping the bottle. Before, it was like every glass was a new romance, I’d get the same kind of nerves and jitters. I wasn’t sure how to approach the novelty. Every bit of minutia over-analyzed, every moment under scrutiny. Exciting at first, but exhausting after prolonged exposure. Now I can speak freely and openly about my relationship with wine. Am I a sommelier? No. Do I know a thing or two about wine? Absolutely. Do I pair my wine with chocolate? You can bet on it!

So, if anyone dares to convince you of how, why, or when to drink your wine... - remember to ask yourself this question: “Has this person spilled wine on a rug?”

Niagara Wine Festival is host to three of our most popular festivals, inviting you for return visits to experience each one.
