Sedi Halvorson GENERAL MANAGER March is finally here! The two worst months of weather are over, and we can start to look forward to spring time and opening the golf course! This January and February were much colder than last year, but we hope March stops that trend. We are already starting to plan out the opening of the course and practice facility, to make sure we are ready to go when the time comes. In the meantime, come out and enjoy some great events this month, including our South American wine dinner, character brunch, cooking class, and early this year, the Oxbow Easter Egg Hunt on the 31st! Details on all of these events, plus April events can be found in the following pages.

Annual Meeting Our Annual Meeting will take place on Wednesday, April 11 th. The annual meeting is a great time to come out and learn about all that happened in 2017, as well as plans for 2018. We will be offering hors d ’Oeuvres, as well as hosted beer and wine. Items discussed include finance, membership updates, and departmental updates on all that is coming up in 2018. We will also be electing two new members to the Oxbow Board of Directors.

Board of Directors This year we lose two extremely valuable directors, who have both served six years on the board. Britton Mattson and DJ Rieger will both have their terms expire. Britton and DJ both have been through some interesting times while on the board, and we can’t thank them enough for six years of service. With that, if you or any other certificate holding member is interested in being on the board of directors, please contact me at any time, and I can answer any questions you may have. GENERAL MANAGER Membership As we finally get some warmer weather approaching, it is once again that time where we start receiving more membership inquiries, from non-members, and from members who are looking to refer their friends. In this newsletter, we have attached the most current information, so that you can share with your friends, and be knowledgeable about membership options. This information is also available to the public at oxbowcc.com, by clicking the membership tab. As I state each year, we advertise in many publications and mediums, but the far majority of our new members come from referrals from current members. We believe Oxbow to be the best value in club membership, especially with all that is included in your dues. This year we will provide even more programming for our members, especially for our junior members. Please help us get the word out, and refer any friends or colleagues to myself or Alison.
In the meantime, my next article may be talking about how great opening day was! Or, maybe not, you never know. We will be watching the weather here, please keep an eye on your emails and Clubster mobile app as the temperatures get warmer toward the end of March and into early April.

There was an adjustment to the April calendar. We moved the April Specialty dinner to Thursday April 26th from Wednesday April 11th to bring in a wine representative from Flora Springs Winery in Napa! But don’t forget the Annual Meeting on the 11th. Flora Springs Winery was founded in 1978, but the legacy dates back to the late 1800s when wine grapes were first planted on the Napa Valley property. We hope the weather is nice enough and the event outside on one of our patios overlooking our OPEN golf course! Like past wine dinners, this will only be available for the first 30 people.

Scott motschenbacher Executive Chef Hello, Oxbow! Another month has passed which means we’re that much closer to golf! I know I have talked about it in previous newsletters but, I am ready for golf season to be here. Maybe part of it is the weather. Actually… That is the biggest part for me. Although this winter has been pretty fun for me as a chef. With all the wine dinners and cooking classes it definitely has helped to pass the time. This month and April will be the last of our wine dinners and cooking classes. So be sure to sign up if you haven’t already! Some big news from the kitchen this month is bringing on some extra help. I have a sous chef that worked for me in the past coming on to help with banquets. This is great news not just for me, but for you as a member as well. He has a very strong culinary background, him and I both graduated from the same culinary school as well. He has a very impressive eye for detail and cares deeply about what he does and who he does it for. Also, this summer we will be hosting a culinary intern. She is coming from the culinary program at NDSCS in Whapeton. She is young and full of energy. I am excited to see what she will bring to the club. Past that not much news from the culinary department. I am slowly piecing together our spring/summer/pool/grab and go menus. So, like always I would appreciate any and all ideas from you! PIZZA SAUCE RECIPE
For this month’s recipe I want to share one that we will be going over in this month’s cooking class. Pizza sauce! This is a very simple recipe that offers up some complex flavors.
Ingredients 4 tablespoons olive oil ½ yellow onion (diced) 2 cups beef stock ½ cup tomato paste 2 oz fresh basil 1 tablespoon crushed red pepper 2 sprigs fresh oregano
1 tablespoon butter 3 tablespoons fresh garlic 4 cups crushed tomatoes ¼ cup red wine (Merlot or Cabernet) 1 teaspoon fennel seed 1 sprig fresh marjoram 1 cup grated parmesan cheese
Procedure

In a large sauce pan on medium-high heat add your butter and olive oil. After the butter has melted add in your diced yellow onion and cook until translucent. At this point add your garlic and cook until browned. Add your tomato paste and cook for another five minutes constantly stirring. After that add your red wine and beef stock. Cook and reduce this down for about ten minutes. Add in your crushed tomatoes and remaining ingredients. Drop your heat down to medium and simmer for twenty minutes. After that you will want to blend everything together. You can do this a few different ways. You can use a food processor, a blender or an immersion blender (sometimes called a stick blender). After all is pureed you want to put back onto medium heat. When you blend things, you incorporate a lot of air. We do not want air in our pizza sauce. Air is for breathing not eating. Salt and pepper to taste. Enjoy with some cheese and pepperoni!!

Alison molony Director of member engagement and events Hello, Oxbow members! After three months of being at home for maternity leave, it’s great to be back just in time for spring! I love springtime at Oxbow. Some of my favorite member events occur in the spring, and of course, it’s always exciting when we are finally able to open the course after a long winter. We have so many great events for you to look forward to in the next couple months. I honestly could go on for several pages, but have chosen to highlight a few events below. Remember, GUESTS ARE ALWAYS WELCOME. We encourage you to invite your friends and family to your club. CHARACTER BRUNCH This is a first for Oxbow! Bring your kids to meet Thundar, Cinderella, Spiderman, and MORE of their favorite characters. Kids (and adults!) are encouraged to dress up as their favorite character to truly make this a special day. In addition to character meet-and-greets, you’ll be treated to an outstanding buffet and activities to keep the little ones busy.

EASTER EGG HUNT Cross your fingers for nice weather on March 31st for our 2nd Annual Easter Egg Hunt at 1PM sharp! For those of you who attended last year’s hunt, you’ll remember that it was over in about thirty seconds…maybe even shorter. HOWEVER, we are going to improve the experience this year. We plan to hide more eggs and are brainstorming ways to make the hunt last a longer time. Plus, we are adding an appearance by the Easter Bunny himself! CHARITY GALA We are partnering with Matthew’s Voice Project for our 2nd Annual Charity Gala on Saturday, April 21st. You will hear much more about this event in the coming weeks. In the meantime, start shopping for the perfect dress and check out the great work that Matthew’s Voice Project is doing in the Fargo community at matthewsvoiceproject.com. PAGE 8

NEWS FROM THE FAIRWAY
DAVID WOOD SUPERINTENDENT This past month the Board of Directors approved the installation of rock along the lake edges of the north golf holes. Industrial Builders Incorporated, (IBI), has been hired to place 3,500 feet of rock along the water line to prevent the pond wave action from damaging the pond edges. The rock will be placed one foot above the normal water level and extend another 6 feet below the water with a protective fabric underneath to help stabilize the rock. Below the water a key way will be cut into the pond bank to keep the rock from sliding down into the pond. The opportunity to install the rock in the winter is ideal before the phase two construction is finished and seeded. IBI will be able to work on frozen ground, limiting the damage that could be done and not interfering with the golf construction. Work should be completed in about three weeks. This is a great long term investment for the golf course. A new 2017 EZ GO 800 Hauler utility cart has been purchased for picking the driving range golf balls. This cart has a larger motor, heavy duty suspension and a metal cage for daily use on the range. The cart that was previously used to pick the range last fall had some engine issues and was not reliable enough to put to use on a daily basis. This new cart should last Oxbow for about 8-10 years. Please welcome the newest member to our club! Trackman 4! With approval from the finance committee, we have ordered a Trackman 4 Launch Monitor. We did a lot of research on simulators and launch monitors to ensure we made the correct purchase. Trackman 4 was the best choice for our club. Trackman 4 is a launch monitor that utilizes two Doppler radars to track the clubhead and golf ball from before the club hits the ball until the ball lands on the ground. It is trusted by a lot of PGA and LPGA Tour players for their swings as well as manufactures for testing their products. We are very excited to use it. Trackman 4 will be used for lessons, club fitting, and club adjustments outside and inside as well as used as a simulator inside! Having worked with a launch monitor at my previous location, I can tell you it is a game changer. We will provide you with many opportunities to have our Professional Team help you with whatever manner you would like to utilize our Trackman 4. PAGE 18

We will have two PGA Apprentices as our Assistant Golf Professionals. Randy Gresh, as many of you may know from the 2016 golf season, will be returning. He is a level 2 apprentice who will be moving to his final level sometime this golf season. Danny Sam is the other and he is joining us from The Meadows Golf Course where he worked with me for 3 years. Danny is a level 1 apprentice who will be moving to level 2 sometime this golf season. No other club in the area has two apprentices as a part of their team so they are going to be tremendous assets. Our professional team is looking forward to meeting you!
