JAKE HUGHES
INTERIM GENERAL MANAGER First off, I would like to thank the board for making me the Interim General Manager. I have been with the club over four years now, and couldn’t be more excited to take on this role. Sedi has passed on a wealth of knowledge and I look forward to continuing the positive direction of Oxbow Country Club.

As you know, Alison’s last day at Oxbow will be October 5th. Please thank Alison if you see her. She has been a tremendous person to work with. Her passion alone for the membership will be hard to replace. With that being said, interviews have now started and we should be introducing some new faces to you by next newsletter.

JAKE HUGHES (CONTINUED) Charity Gala aka VIVA LAS OXBOW For the 3rd year in a row, Oxbow Country Club will be raising money for a non-profit. The first year was Ronald McDonald House, the second year was Matthew’s Voice Project, and this year we decided to pair up with Cystic Fibrosis of North Dakota. Cystic fibrosis is a hereditary disease that affects the lungs and digestive system. Treatment can help, but this condition can't be cured. The committee picked this charity because they are doing a holiday home tour featuring houses in Oxbow. Instead of the formal gala format that we have done in the past, we are promoting a fun night out at the Club with a Vegas theme. There will be a silent auction, casino table games, pull tabs, a Vegas board where you could win a trip for 4 to Vegas, and much much more. Tickets are $60 per person. This includes a Vegas style buffet and live entertainment from Jared Sherlock, comic magician and illusionist. This will be such a fun event. Mark your calendars for November 2nd, get your baby sitters lined up, and come enjoy VIVA LAS OXBOW! You can find more information on Page 5.

MEMBERSHIP & EVENTS UPDATE
ALISON MOLONY
DIRECTOR OF MEMBERSHIP & EVENTS FAREWELL! For those of you who haven’t heard yet, my last day at Oxbow will be Saturday, October 5th. It has been a privilege to serve the members of Oxbow the past five and half years. However, the time has come for me to focus on my family. I am stepping away from the work force for the opportunity to spend time at home with my daughters, Clara and Rosalie. As I reflect back on my time here, I can’t help but reminisce about some of my favorite Oxbow memories:
WALL OF MAJOR DONORS AT RONALD MCDONALD HOUSE OF THE RED RIVER VALLEY
LADIES BUS TRIP I am one of the few people who can say that I have been on EVERY Oxbow ladies bus trip! Since 2015, we have traveled to Grand Falls Casino, Chase On The Lake, and twice to Mystic Lake Casino. The bus trip always provides great golf in beautiful locations, the opportunity for rest and relaxation, and lots of laughs! RONALD MCDONALD HOUSE FUNDRAISER Two years ago, the Oxbow membership showed up in a big way for Ronald McDonald House of the Red River Valley by raising almost $50,000 for their new home to be built! A committee of compassionate and caring Oxbow members came together to plan this event, and it was a privilege to work together to support a worthy cause. Oxbow Country Club is even recognized as being a major donor in their new facility!
I will carry these and many other fond memories with me when I leave Oxbow. I only have one regret—I never learned how to golf! THANK YOU from the bottom of my heart for the past five and a half years! PAGE 4
OCTOBER 2019
THE DERBY There is not a particular year that sticks out in my mind, but the Derby is hands down my favorite member event of the summer. To me, the Derby tournament is a perfect representation of what being an Oxbow member is all about—friendly competition on the course and an unbeatable upbeat atmosphere in the Clubhouse. Plus, the Derby is one of our most wellattended events of the year, bringing the entire membership together.

RECIPE OF THE MONTH
SCOTT MOTSCHENBACHER EXECUTIVE CHEF
Hello, Oxbow!! It’s hard to believe it’s October already. Not hard to believe if you check the weather though. There is certainly a chill in the air. With the cold weather brings the fall/winter menu. We are planning on lots of fish and fresh pasta options. I have been running a few specials to see what everyone thinks and to help guide the new menu. If you haven’t heard…. we will be open one extra day a week in the off-season!! Typically, we are closed on Wednesdays in the offseason. With a ton of people requesting menu service to coincide with the simulator hours, we decided to give you what you asked for. We usually have our wine dinners on Wednesdays in the off-season, but this year we are going to try something different. On select Wednesdays, we are going to do a pop-up restaurant. One month we might have a sushi restaurant, and the next an Italian restaurant. Stay tuned for that!! I would personally like to keep it a secret until the night of the event, but we’ll see how that one plays out. Most of the membership is pretty good about getting me to spill the beans.
OCTOBER 2019
So, last month we lost our general manager and this month we lose our Alison. This is going to be a tough loss for everyone. To me, Alison is one of the biggest parts of making our club as great as it is. She worked tirelessly on events for the membership. She always had a bright, new, and fun idea. Every single time we got through an event, I couldn’t have been happier...not because it was over, but because I saw the joy in the member’s faces. That is truly what keeps myself and the rest of the staff going. Losing Alison will be tough, but we will continue to push forward with fun events in her spirit. If you get the chance to see her before she leaves, be sure to thank her for everything she has done. It was a lot more than anyone knows.

RECIPE OF THE MONTH
BY CHEF SCOTT Now that the weather has taken a turn for the worse, we all need a little something to warm us up. This month, I want to share my chicken corn chowder recipe. This is obviously a hearty soup. A bowl or two will fill you up and leave you looking for a couch to nap on. Ingredients: • 1 whole roasted chicken (rotisserie from the store works too) • 1 pound bacon diced • 2 medium russet potatoes medium diced • 1 large carrot peeled and small diced • 2 stocks of celery small diced • 1 small yellow onion small diced • 2 garlic cloves minced • 2 corn cobbs (remove the corn) • 3 tablespoons vegetable oil • ¼ pound unsalted butter • ½ cup AP flour • ½ cup chardonnay (oaked, preferably) • 1.5 quarts chicken stock • 1 quart heavy whipping cream • 4 sprigs fresh thyme • ½ a bunch of parsley • Salt and pepper • A few dashes of tabasco
PAGE 10
OCTOBER 2019
Procedure: In a large stock pot on medium-high heat, add your bacon, butter, and vegetable oil. Cook your bacon until crispy. Remove the bacon and set aside. Return pot to the burner and add your carrots, celery, onions, garlic, and potatoes. Cook these until the carrots are soft. Then you will add your flour to create a roux. Be sure to cook your roux for 3-5 minutes or until it has a slight nutty fragrance. Undercooked roux will make the soup taste like flour. After you have cooked the roux, add the chardonnay to de-glaze the pot. Be sure to rub the little tasty bits off the bottom of the pot at this point. Drop your heat down to medium and add your chicken stock and cream. Bring this to a simmer and add your fresh thyme and parsley. Let it simmer until your potatoes are fork tender. Add the pulled chicken and the corn. Garnish with the crispy bacon, a little shredded sharp cheddar, and fresh chive. Enjoy!!

NEWS FROM THE FAIRWAY
DAVID WOOD SUPERINTENDENT
With the start of the new maintenance facility construction in early October, the decision was made to close the north golf holes for several reasons. On October 14th, Industrial Builders will be on site to begin the demolition of the current buildings. Demolition and site work is scheduled for up to 10 days. Our goal is to have the concrete done before the cold weather affects the schedule and budget. All the equipment, tools, and inventories need to be relocated, plus all the infrastructure disconnected. The golf irrigation system electronics for the north holes are powered and the remote satellites are programmed through our current building also. The north holes irrigation piping will be winterized on October 10th due to the power being disconnected the following week.
NORTH HOLES CLOSING FOR THE SEASON FOLLOWING PLAY ON SUNDAY, OCTOBER 13TH.
Safety of our members, guests, and contractors is a top priority for the project. The driveway intersecting the 8th hole will be very busy during this process and having golfers and golf carts coming through the area could be a problem. Closing the north holes will also protect some of the newer grass by eliminating golf cart traffic, and reducing ball marks on greens and divots.
In October, we will mow down the native grasses for the season. The north side natives will also be thinned and some tall fescue removed to improve the golfer’s chances of finding poorly hit shots. During construction, these areas were planted at a rate higher than recommended. With an abundant amount of rain this year, the plant density became overwhelming.

See you on the course, David Wood

Wow! How great is our new golf course? The feedback from members has been great and guests that have played cannot stop telling us how much they loved the course. We are truly blessed to have this facility and golf course. With the new course comes a learning curve for all of us. We learned that the tee shots on #2 and #13 can pose some danger in regard to golfers not being visible in the parallel fairway. We ask that one member of your group take a look at the parallel fairway for golfers before your group tees off on either of those holes. It is simply as easy as running up the hill.

We are still taking scorecards from all rounds to help us properly evaluate the handicap hole assignments for 2020. Please turn in your scorecard or we can make a photocopy of the card for you. We thank you in advance! Women’s Ringer Board Results are in. Our most improved were Cindy Fisher and Shelley Kappes, with a 33% improvement each. Low gross score with a 60 was Shelley Kappes. Low net score with a 41.4 was Deb Schneibel. Thank you for your participation ladies! The Men’s Day Shoot Out was held September 26th. The top 10 money winners that could be here started on Hole #10 at 5:00. It was cold and we had a little rain but we made it through! Logan Johnson was our winner! Chace Conley and Mark Adams tied for 2nd place.
If you haven’t spent your Golf Shop credit, please stop in soon. We still have quite a few shirts and pullovers available. Please help us thin out our inventory!

The board has also implemented in course out of bounds on hole #2. If you hit the ball to the right of the OB stakes in between holes #2 and #13, you are out of bounds. This does not apply when playing hole #13.
