GENERAL MANAGER’S MESSAGE

Sedi Halvorson GENERAL MANAGER September has been a great month here at your club, and has flown by for the team here! We have had a very busy month, despite having some cooler weather toward the end of the month. We had quite a few great member events, as well as five weddings, and two golf tournaments. Even though the main part of the season ends after Labor Day, there was still quite a lot going on at your club. As we transition in to October, we still have some nice golf days in store. We have a couple of fun golf events in October, including the Jack-O-Lantern on October 13th. Also, the team here has created some great non-golf events for all of our members, including my favorite, our Oktoberfest party! Great food and drink specials, live music, and bottomless draft beer make you feel like you are across the globe. I hope everyone received and has had a chance to review the October – December event guide that Alison sent in late September. We have some great events for all members to take part in throughout the fall months. I am especially excited for our Sunday Family activities and dinners here each Sunday through the winter. Some of you may have noticed we added a lot of board games and card games by the fireplace in family dining area. These are for kids, parents, and grandparents to use any time to spend some quality time together while at your club. Additionally, Alison has planned great weekly activities each Sunday, and Chef Scott will be preparing a different family style meal each week. We will send these specials out each week to you via email. Speaking of meals, Chef and the rest of the food and beverage team are beginning the menu change process as we speak. Chef and Jake will be meeting with the house committee to introduce new ideas, both in the food and beverage. As always, some of your fall and winter favorites will be there, and I’m sure Chef has some great new selections to share with all of you as well. Sedi HalvorsoN (continued) Not that we want to start thinking about it, but the end of the golf season is approaching. Hopefully we will have a better fall than last year, and will be open well in to November. As always, we will begin watching the weather forecasts and patterns toward the end of October to see what the first part of November is shaping up to look like temperature wise, and begin to plan from there. We will keep you updated as we get to that time. Until then, I encourage our golfing members to take advantage of any above average temperature days in October and November, before the snow begins to fly. The golf season is beginning to wind down, but there are still many golfing days left this year. On top of that, we have many fun events and activities planned for everyone! Please read all about what we have in store for you in the pages to follow, as well as your October – December membership guide. We have a great October in store for you, at your club! Sedi

Hollie grande Catering event coordinator With Princess Eugenie’s wedding on October 12 and the world still abuzz from Prince Harry and Meghan Markle’s wedding just a few months ago, some may wonder about the differences in a British wedding versus an American wedding. If you were watching Meghan (or even Kate before her), you may have noticed a gown change in the evening. As it turns out, the British know how to party all day long! They start the day off with a morning ceremony and a long social hour to take photos with family. Then they move into the wedding breakfast, though that is just what they call it. It is really more of a brunch or lunch. Bring on the Mimosas! After lunch comes toasts and cake cutting just like any American wedding would, but then it’s time for a break. In the afternoon, the couple may take their photos together while the guests go back to the hotel and take a nap to get ready for an all night dance party. The mid-day break is also a great time for a dress change—maybe into something more comfortable to dance in. In Britain, the ceremony and lunch are reserved for close friends and family (so you wouldn’t need a rehearsal dinner!), but the evening reception could be a whole town affair. Typically starting after dinner, the evening dance party would likely serve more casual snacks like pizza and/or nachos and the focus of the evening would be on partying. Little cousins and Grandma may want to stay at the hotel for the evening. However, it may be a great opportunity to invite those friends or co-workers who would have otherwise not made the cut.

Alison molony Director of membership & events SUNDAY FAMILY DAYS—Starting in October, we are rolling out a new concept on Sundays at your club—Sunday Family Days! Each Sunday, we are offering an activity or event that families can participate in together, ranging from crafts, to Bingo, to big parties! With the addition of many young families as members within the past few years, we are excited to provide this opportunity as another way for families to enjoy Oxbow together. To complement our Sunday Family Day Schedule, Chef Scott is offering family-style meal specials in the restaurant from 4 PM—8 PM. You can find a full October Family Day schedule on Page 13 of this newsletter. My favorite event is the OxBOO Halloween Party on Sunday, October 28th! This is my fourth time planning this event, and I love making it bigger and better every year! Here’s just a sample of what we have in store: a live DJ, face painting, Mrs. Hicks’ Haunted House, hayrides, and an interactive Zombie Blaster game!

ONLINE EVENT REGISTRATION—Thank you to everyone who has been using the website or Oxbow app to register for events! This is a wonderful, easy tool for you to get event details, as well as sign up for everything we have going on. I always say, “RSVP early and often!” Accurate event counts give us an opportunity to prepare and staff accordingly. It also enhances your member experience! If you need help getting logged in to the app or website, please let me know. I am happy to help! OCTOBER—DECEMBER EVENT GUIDE—I recently emailed out an Event Guide with a comprehensive Oxbow event schedule through the end of the year. Please take a little time to read about what’s coming up at your club! An electronic version can be found at www.issuu.com—simply search for Oxbow Country Club and browse our publications in order to find the event guide. Printed copies are at the Clubhouse as well! JAKE HUGHES ASSISTANT GENERAL MANAGER Sam Adam’s Oktoberfest is now on tap! In 1810, the Oktoberfest tradition was born when Munich celebrated the crown prince’s wedding with a special beer and a 16 day party. Though we will not be having a 16 day party at the Club (because Oxbow is always a party!), we will be featuring Oktoberfest for the month of October. Our Oktoberfest party will be on October 4th featuring live music by Mick Klein, German food specials, Oktoberfest games, and $20 unlimited draft beer with a collectible Oxbow beer mug that you get to keep! The Men’s Day Back Breaker will also be on October 4th. David is going to set up the course the hardest he can. It will have impossible pin placements, super-fast greens, and long shots. Find a group of three and scramble your way through the course—then stick around for the party afterwards! The Oktoberfest Party isn’t the only German event we our having this month. Chef Scott will be putting together a German inspired specialty dinner on Wednesday, October 24th. This 5-course meal will have only the best German food alongside beverage pairings from hefeweizen beer to gewürztraminer wine. Tickets are only $80 per person for the dinner. We limit the dinners to 30 people so sign up early! If you haven’t attended one of our wine/specialty dinners you are missing out. We will be doing one per month in the off season, with the exception of December.

scott motschenbacher EXECUTIVE CHEF Hello, Oxbow! Another month has passed and the weather has grown colder. Just because golf is almost over with doesn’t mean the fun has to stop! We will have plenty to offer from the culinary department in the coming months. One new thing we have started is our football menus. There is a separate menu for both Vikings and Bison games. If you haven’t seen them yet, it might be time to come to the club and catch a game! We have our Oktoberfest party where we will be featuring some German food specials (the good stuff). Then toward the end of the month we will start up our wine dinners again. This month is all about German food. There isn’t much in the way of wine from Germany so we will be adding some beer or bier pairings. I have started work on the fall/winter menu. I will be expanding our lists of pastas to include a couple house made raviolis. I think the menu in its entirety is going to get a bit bigger. After being with Oxbow for two years, I know our strengths and weaknesses. I will be keeping all of the favorites and adding some new more adventurous dishes. This will all be brought before the house committee early in October. Speaking of the house committee, we could always use more committee members. We have a great cross section of member volunteers currently, but we could always use some more opinions. This month, I want to share a pesto recipe. This isn’t just any pesto! This is a pesto I made for Oxbow member Marie Talley. Marie so graciously let me harvest all of her herbs from her garden, so I promised a parsley pesto in return. Ingredients: 2 bunches flat leaf parsley 3 cloves of garlic ½ cup Bellavitano cheese ½ cup parmesan cheese 1 cup toasted slivered almonds 1 teaspoon salt 1 tablespoon fresh cracked pepper 1 ½ cups olive oil

Procedure: Add almonds to a sauté pan on medium high heat. This needs to be a dry pan (meaning no oil or fats). Nuts have enough naturally occurring oils. You want to keep a close eye on these, as they can go from perfectly toasted to perfectly burnt. Once they are toasted and fragrant, dump them onto a plate for cooling. In a food processor, add all of your ingredients except the olive oil. Turn on the processor and begin pureeing everything. Once all of it is blended, slowly add your olive oil. Once the oil is incorporated, let the processor go for about another minute to ensure full emulsification. Boom! You have a pesto! This is great for sandwich spreads, pastas or even a salad dressing. GOLF shop

September was another busy month at Oxbow. Weather changes have made life interesting. Women’s Ringer Board Results are in. Our most improved was Wendy Frappier with a 33% improvement. Low gross score was Wendy Frappier with a 60. Low net score was Marie Talley with a 44. Thank you for your participation, ladies! We held the Ladies’ Invitational on September 5th and a total of 20 ladies played in the best ball. Jenny Erickson and Annette Ingulsrud won the gross division with a 76. LeeAnne Townsend and Susan Kenney finished 2nd place with a 77. Net winners were Deb Schneibel and Mae Tonsfeldt with a 60. The second event for the month was the Hot Ball. Eight teams played on Saturday, the 8th. Winners with a score of 121.4 were Britton Mattson, Jon Vikander, Brian Seeley, and Jon Altoff. We had the Glow Ball on September 14th. The weather was a little wet, but everyone had fun! Winners were: Brian and Emily Potter, Matt and Sarah Mueller, and Tyler and Lindsey Nelson. This is always a great night. Be sure to mark it down for next year and plan to play! Men’s Day Shoot Out was held September 27th. The top 10 money winners started on Hole #8, then proceeded with a hole-by-hole elimination. Taylor Cavanagh was our winner! Bryce Mattson took second place and Mike Bindas took third place.

On October 4th we have the Back Breaker for Men’s Day. This 3-person scramble will feature fast greens, tough pins, and long shots.

If you haven’t spent your Golf Shop credit, please stop in Taylor Cavanagh soon. We still have quite a few shirts and pullovers Men’s Day Shootout Winner available. Please come out and help us thin out our inventory!

On October 13th, we have the Jack-O-Lantern 2 Person Alternate Drive Scramble. It’s a 10 AM Shotgun and the Bison play out of town at 6 pm, so we expect a good showing!

NEWS FROM THE FAIRWAY

DAVID WOOD SUPERINTENDENT This is the time of year when the rate of growth of the grass slows down, and it is extremely important to remember several etiquette rules. Replace divots and firmly step them down; grass seed will soon stop germinating due to cold temperatures. If the divot is not in one piece, then fill with sand/seed. Please alter your cart traffic patterns or stay on the cart paths, if possible. Always ride two to a golf cart. The grasses recuperative ability goes down with its rate of vertical growth. In October, we will begin to mow down the native grasses on the south golf holes. This is done to keep the seasonal die back material from smothering out the new grow in the spring and to minimize damage from disease in the winter. Mowing the tops off the fescues will also help with weed management in the spring and early summer.

With the potential for frost on the grass in the mornings, I would like to remind everyone to keep their golf carts off the course if temperatures are in the 30s. Please check into the Golf Shop before going out to play or to the practice facilities. Frost can form on the grass even if the air temperature is above 32 degrees. Thank you to everyone who came out for the tour of the new golf holes in September. These tours are always enjoyable for us so we can show off everything that has been accomplished. EMPLOYEE SPOTLIGHT 1975

Randy gresh, assistant professional Our October spotlight is Randy Gresh, Oxbow’s Assistant Golf Professional. Randy has been playing golf since he received his first set of clubs at six years old. “My grandfather was a golf course superintendent and my Dad was an avid golfer. I grew up with the sport.” Originally from Britton, SD, Randy attended UND for Recreation and Tourism Management. He also played golf for UND. After college, he decided to pursue the PGA Class A Professional Certification. “I have always loved golf. Golf has given me experiences that I might not have had otherwise, and given me a chance to meet people I would not have ordinarily met. Being a PGA Professional will allow me to pass on my love for golf.” Randy is currently in Level 3 of the PGA Associate Program. Once he passes the Level 3 exam, his certification will be complete.

Prior to working at Oxbow, Randy was the Assistant Professional at Chardonnay Golf Club in Napa, CA for five years. He and his wife moved to the Fargo area in 2016 to be closer to family, and he has worked at Oxbow since the beginning of 2018. At Oxbow, Randy is getting a well-rounded experience working in all areas of the golf business, from merchandising to junior golf instruction. His favorite part about working at Oxbow? “The people! We have awesome members. I am very fortunate to be working here.” When Randy isn’t at work, he enjoys going to the gym, playing hockey, cheering on the Packers, and spending time with his family. He lives in Fargo with his wife, Kristy, and two boys, Colin (5) and Corbin (3). Randy has some exciting news to share—he and his wife are also expecting TWINS in March. Make sure to congratulate him the next time you see him!
