Sedi Halvorson GENERAL MANAGER And just like that, another great golf season in the books at Oxbow! We will officially close the golf course after play on Friday, November 2nd. Starting Saturday, November 3rd, the club will begin winter hours, which I have listed below. Overall, it was a terrific golf season at the club, despite the late start this year, as well as some wintery weather in October. Just a reminder: the golf shop is still open, and we have great season ending sales going on as we speak. We have lots of great holiday gift ideas, as well as a chance to get quality gear at discounted prices. Winter Hours of Operation Starting Saturday, November 3rd, the club will go in to winter hours for the season. Please be aware that the schedule is as follows for the administrative offices and member dining. Monday – Wednesday: Member dining closed; clubhouse administration open 9AM to 5PM Thursday – Saturday: Member dining from 11AM to 9PM Sunday: Member dining from 10AM to 8PM, Brunch served from 10AM to 2PM Additionally, we have many great events and activities for the whole family over the winter months. I hope everyone has reviewed the October – December membership guide that Alison created. Detailed information on November’s event calendar can be found in this newsletter. The golf shop will also be open during the off-season this year on select days.

Golf Course Progress We always get a lot of questions regarding when the full new course will open in 2019. Unfortunately, we don’t have an exact answer at this time. A lot of work has been done, and there will still be more to do in the spring. How the course winters is a large part in how much work will have to go in to the north nine in the spring. Cold winters with not much snow are detrimental to new grass, whereas winters with good snow cover help to insulate the grass from the extreme conditions. Young, immature grasses are especially susceptible to winter damage. We can’t wait to open up the full new course, for many reasons. Our hope is late spring or early summer. However, we won’t know more until we get to spring of 2019. Until then, just hope for a big snow blanket from December – early March. David has more information regarding the north nine in his article this month.

Stag Our annual Stag night party and fundraiser will be taking place on Friday, November 30th of this year. This year promises to be another great time, and members are encouraged to bring guests to experience this great event. This year we are raising funds to finish off the trackman area in the golf shop so that we can have fun games and leagues, as well as have a great fitting facility for our members. As a reminder, we will be drawing for one free 2019 membership, and all guests are eligible for this drawing. A big thank you to our stag committee and everyone who attends for their commitment to Oxbow CC! Please contact me if you are interested in assisting with a donation. We appreciate your support again this year!

Thanksgiving The club will be closed Thanksgiving Day. However, Chef Scott and his team will be preparing Thanksgiving Dinner for you to take home and heat up! This is a great option for members who don’t want all the work that goes in to preparing meals. Meal options are found on Page 8. And of course, Suzy will be baking homemade Thanksgiving pies as well. In closing, I want to thank all of our members for a great golf season at Oxbow! Next year, we will be able to put the final touches on our five year golf construction project that began back in 2014! I hope all of you are as excited as we are for golf in 2019! Hollie grande Catering event coordinator Winter is just around the corner, and once the holiday season comes and goes there isn’t much to look forward to until spring. Unfortunately, in our part of the world that leaves us with a long time to wait for something good to happen. So why not make your own reason to party?

In January, the Sundance Film Festival takes place in Utah, but the occasion could be a great reason for a screening of your favorite movies, or maybe just check out all the crazy fashion the celebrities turn out in. The end of January also boasts Burns Night, and while it is supposed to be a night to enjoy Scottish poetry, it sounds like a great reason to get together with friends at the Club and drink some good Scotch. February brings Valentine’s Day, but if you aren’t romantically involved with someone, or even if you are, it may be a great time for a GAL-entines dinner. Who doesn’t need a great excuse to gather and celebrate with all your girlfriends who have been there for you all year? February 24th is the Academy Awards Ceremony as well! Oxbow could broadcast the Oscars, and even the red carpet coverage on the big screen while you and your friends get glammed up to watch! You may need to take bets on picture of the year.

If you plan to gather in the winter for any of the reasons I mentioned, or if you have your own reason to party, give me a call and I would be happy to book you space in our ballroom to make your next party one to remember!

March is a month made to party, kicking off with Mardi Gras on March 5th. In case you need a better reason to indulge before the season of lent, everyone could get together to reenact the New Orleans French Quarter. Or for a more refined party, you could celebrate like the masked Venetians with Carnival. No March would be complete without a celebration of being Irish (even if you aren’t). Eat some green food and drink green St. Patrick’s Day beer until you sing Danny Boy, or decide to run around pinching anyone not wearing green.

SUNDAY FAMILY DAY—Our Sunday Family Day concept continues this month! Every single Sunday (that’s right, you heard me!), we are offering an activity that families can enjoy at the club together, ranging from bingo, to complimentary crafts, to a bouncy house! To accompany the family day activity, Chef Scott is preparing a family style meal special every Sunday evening starting at 4 PM. We have received rave reviews on everything he has prepared so far! Come out to your Club on Sundays to start a new tradition with your family.

OXBOO HALLOWEEN PARTY–THANK YOU to everyone who attended the OxBOO Halloween Party! This is one of my FAVORITE events of the year. I love all things Halloween, and it was such a pleasure to see so many families having a Spooktacular time at the club! Congratulations to the winners of our costume contest! LADIES WINE & DINE—We are hosting a LADIES ONLY 3-course wine dinner on Friday, November 9th. If you are a victim of “Widow’s Weekend” (also known as Deer Opener), this event is for you! I wanted to make you aware that we are taking a break from having vendors at this ladies event—this event will be all about the food and wine! The best part? You don’t even have to find a babysitter because we’re offering Kids Night the SAME evening. Please RSVP soon because space is limited for each event.

GUESTS ARE ALWAYS WELCOME—Hands down, the most frequently asked question we get regarding our events is, “Can I bring a guest?” The answer is ABSOLUTELY! Guests are always welcome to attend any of our events, provided that they are accompanied by a member. We love when our members share Oxbow with their non-member friends and family! PAGE 5

JAKE HUGHES ASSISTANT GENERAL MANAGER We have two wine dinners in the month of November. The first one is for ladies only on Friday, November 9th, which is also known as widows weekend because the men are in the woods waiting for that big buck to go by. Chef Scott is preparing the specialty three-course dinner at 7 PM and each course will be paired with delicious wines. Tom Thiel, the Fine Wine Specialist from Republic National Distributing Company, will be there to tell the story behind the wines and why they pair to each dish. Can’t find a baby sitter? No problem—Kids’ Night will be going on simultaneously. After the men get back from hunting, Chef Scott will show everyone how to prepare the food. The Wild Game Dinner is on Wednesday, November 14th at 6:30 PM. This is a five-course meal paired with wine. Tom Thiel will also be at this event. If you fall in love with a wine at either event, Tom will be able to take orders and get you an incredible price! Remember that these events are not just for members. Guests are more than welcome to attend. So, grab some friends and attend one of the last specialty dinners of the year! Cheers, Jake Hughes

Hello, Oxbow! Wow! It’s November already. It seems like 4th of July was just a few days ago. November is a great month for me. This means starting a new menu and getting back into our wine dinners and cooking classes. Last month we held a German wine/beer dinner. Usually, all of our wine/specialty dinners sell out quickly; but apparently, German food is a hard sell out here. I don’t understand why… eating pounds and pounds of sauerkraut at a time sounds wonderful! Well, for this dinner we had just a little sauerkraut, and a lot of fun. Because of our low attendance, we were able to host it right in the kitchen. It was a lot of fun for the 6 attendees (you know who you are). In November, however, I think our wine dinner will be more full. This month we are doing a wild game feed! It is sure to be WILD!!! We also have a ladies only Wine and Dine this month. We are bringing in our wine expert Tom to pair each dinner with wine. It should be a blast! PAGE 6

CHEF SCOTT (CONTINUED) In November, we will also be offering Thanksgiving take out. Thanksgiving pies, from my understanding, has been a long-standing tradition here at your club. The full Thanksgiving meals will be celebrating its second birthday this year. We will be offering brined turkeys, ham, prime rib, and all the sides you can think of. If there is something special you are looking for that is not included in the menu, please feel free to email Alison or myself. We will do the best to accommodate you and your family. That is about all that is going on in the culinary department. This monthm, I’d like to share my Butternut Squash Soup recipe. The days are getting colder and shorter...this is a great soup to warm you up like a nice knit afghan from granny. I have run this soup multiple times here at Oxbow, and it has always been a hit.

Ingredients: 1 medium-large butternut squash 2 tablespoons olive oil 2 tablespoons fresh chopped sage 2 tablespoons fresh chopped thyme 1 tablespoon each salt and pepper ¼ cup butter 2 tablespoons olive oil 1 large yellow onion ½ cup all-purpose flour 1 cup white wine (I prefer chardonnay) 4 quarts chicken or turkey stock 2 cups heavy whipping cream

Procedure

Quarter your squash lengthwise (be careful as these squash can be a bit tough to cut through). Remove the seeds with a large spoon. Place the squash onto a baking sheet and drizzle with the olive oil. Season with your herbs, salt, and pepper. Roast for approximately 30-45 minutes, or until the flesh is soft. Let cool and remove the flesh. In a large stock pot, add your butter and olive oil. Dice your onion and add to the pot on medium-high heat. Cook the onions until they are translucent and add your flour. Cook your mixture on a medium heat for 4-6 minutes whilst constantly stirring. Add your white wine to de-glaze, then add your stock. Stir all this together with a wire whisk. Bring to a boil and drop the heat down to medium-low. Add your squash and blend with either an emersion blender or an upright blender. Run it all through a fine strainer to remove all of the squash skin. Return to your stock pot and add the heavy whipping cream. Season to taste. Enjoy this soup with a nice grilled cheese. I suggest cheddar and gruyere or fontina and gouda on a nice hearty bread. If the weather has you down, this will get you right as rain. Enjoy!!! COREY HERLICKSON HEAD GOLF PROFESSIONAL If you see Randy Gresh, Assistant Golf Professional, around the clubhouse congratulate him on winning the Dakota Chapter Championship. The Dakota Chapter is made of golf professionals from all of North Dakota, over half of South Dakota, and a large portion of Northern Minnesota. The event took place on a cold day in October at Fargo CC. He played very well and took home the trophy for Oxbow Country Club! Although the golf course may not be full, we have plenty to do in the Golf Shop. We have taken this slow time as an opportunity to undertake several projects that we have not had the time to do in the past months. One of which is detailing golf carts with a thorough pressure wash. We also applied Armour All to the black plastic areas and tires in order to reduce UV wear and make the carts look like new. I would suggest you do this to your personal cart as well. Also, make sure you empty your ball washer and clean it with soapy water and bleach to minimize the odor that will build up if left untouched over the winter. One member forgot to do so and the smell was so bad, his cart partner would not ride with him last spring! As we move into our off-season soon, please do not forget that the Golf Shop has many things for you to utilize: • Custom Fitting • Golf Instruction • Special Orders • Booking Tee Times for Golf Trips

We have already received the new Titleist drivers and fairway woods. We have new irons in from TaylorMade and Mizuno as well. We expect more clubs to arrive the closer we get to the New Year.

On December 9th from 10 AM— 1PM we will have a clothing line in the Golf Shop for special orders, as well as whatever remaining clothing we have on our sale rack.

NEWS FROM THE FAIRWAY

DAVID WOOD SUPERINTENDENT With the season coming to a close, some of our most important work is still happening this time of the season. Back in September, we began prepping the course for the upcoming dormancy by applying a heavy fertilizer application to the play areas. Our goal with this fertilizer application is to assist in the recovery of any thin areas and build up the plant’s root system for the winter months. In October, we reduced our mowing frequency and raised the heights of cut to better protect the crown of the grass plants during the winter. The end of October and start of November, we will be checking for adequate soil moisture levels before winterizing the sprinkler system. The areas of most concern are greens and tees since they are grown on a sand base. The irrigation system blowout will take three to four days with 27 golf holes. The golf course has approximately 1,800 sprinklers and miles of irrigation piping that need to have the water purged. Plant protectants will be applied to all the greens, tees, and fairways to protect against snow mold issues that can damage the plants. This fall, our weather conditions have been favorable for the plants to transition into dormancy without excessive snow or rain fall.

A heavy application of sand will be applied to the greens to help insulate the plants. We are watching the weather forecast and need to have this task accomplished before the sand and the ground freezes for the year. Then we will install snow fencing around greens and sand bunkers to help capture snow for winter cover on the greens. See you on the course. David Wood

SPOTLIGHT ON JOHN DAHL, PGA 1975

OXBOW COUNTRY CLUB DIRECTOR OF GOLF 2018 marks the end of an era for Oxbow Country Club as John Dahl officially steps back from his position that he began in 1982. John was hired by three of Oxbow’s original owners—Doug Schnell, Bill Swanson, and John McCormick. Through the years, John has seen the Club undergo big changes, including major floods, course reconfigurations, the purchase of Oxbow by its members in 1985, and most recently, the complete course redesign and new Clubhouse. Through it all, John has remained steadfast through good times, as well as more challenging times in the club’s history. As member Rick Hall states, “John made Oxbow what it is, as far as I’m concerned.”

John Dahl, a North Dakota native, graduated from Fargo North and attended NDSU. Prior to working at Oxbow, John was the Assistant Professional at both Fargo Country Club and Moorhead Country Club. He also spent three years at Prairie Winds Golf Club in Watertown, SD as their Head Golf Professional. John was first introduced to the game of golf at the age of 9, when he would spend his weekends caddying for his dad at area golf tournaments. John remembers telling people at an early age, “I can tell a bad shot before it happens.” From there, his love of golf and teaching grew. To date, he has taught over 30,000 lessons, ran 36 junior golf camps, and helped 50 kids earn a combined two million dollars in scholarships. John’s athletic abilities are not limited golf! He grew up as an avid hockey player. He also ran the Oxbow Country Club Ski Team from 1985—2000. John remembers, “At our peak in the mid-90s, we had 24 players and pink uniforms.” A career as expansive as John’s is difficult to wrap up in one short newsletter article. He still plans on teaching private lessons at Oxbow, as well as Quintero Golf Club in Peoria, AZ during the winter months. You can always count on John to help you fix your grip!
