GREGORY KELSEY GENERAL MANAGER

Oxbow Membership, The Board of Directors is excited to announce that we have hired a new General Manager. Gregory Kelsey will be joining our leadership team after managing the Yellowstone Country Club in Billings Montana for the last 18 years. The Yellowstone Country Club is a private, upscale club designed by Robert Trent Jones Sr. At Yellowstone CC, Greg was held accountable to a membership in excess of 700, with a number of unique amenities. Greg has exactly the experience we need to take our facility to the next level. Greg will be starting around the 10th of March. Greg's leadership style is growth focused and he is well aware of the goals we have laid out that will be used to measure his success. I would also like to thank the BOD and the search committee for all the time and effort they displayed to make this a reality.

Sincerely, Scott Differding President of Oxbow Country Club

month of February was a good month for everyone but I am glad we are starting to get into warmer months and the snow is melting! This month has kept me busy with wedding tasting and meetings. It is so much fun to get to meet all the couples I will be working with along with their family and friends. The coordination of all the weddings is a lot of fun for me and is something I enjoy most about working events,

We have gotten very booked up for 2020 weddings, which is awesome! We are now marketing for 2021 weddings, so if you or anyone you know is looking for space for a 2021 wedding please reach out and we would love to host the special day! Also, with summer approaching means school season is coming to

an end and that means graduation season! If you need space to hold a graduation party please reach out and I would be happy to coordinate a great graduation party for your family and friends!

life and I love to see the smiles on people’s faces. We kicked off the wedding season with our first wedding the last weekend in February! We have a few weddings the next couple of months and then we start to get really busy for summer weddings! We have 25 weddings on the books for this summer and fall so it will be a very busy wedding season for 5

all had a great February! March is shaping up to be a great month! We have one more wine dinner before golf season begins. Our annual Daddy Daughter dance is in March. We will also have our Masters party coming up. We will be offering a taste of the Masters. All the pimento cheese you can handle! It seems as though we finally got over the winter hump. That means less snow, warmer weather, and hopefully green grass. As you all may know, along with the

With March being at our doorstep brining warmer weather I have already started to think about spring/summer menus. I know… I might be getting ahead of myself here. But with the slower winter schedule this is the perfect time to work on it! I want to do almost an entire strip down of the menu and start from

For this month’s recipe I want to share my guacamole recipe. This is one of the recipes we will be making for the Mexican cooking class!

Ingredients: 3 ripe avocados 2 cloves garlic 2 tablespoons fresh cilantro Juice of 2 limes 2 teaspoons cumin seed 1 Roma tomato 1 fresh jalapeno 1 teaspoon dried oregano

1 tablespoon kosher salt

Procedure: Mince your garlic, chop the cilantro, dice your tomato and jalapeno. If you like it to be a bit milder be sure to remove the seeds from the jalapeno. In a dry sautÊ pan add your cumin seed and oregano. Place on medium heat for approx. 5 minutes or until they have become very aromatic. Remove from heat and grind in either a mortar and pestle or a coffee grinder. Remove the flesh from the avocado and place everything in a mixing bowl. Now you just gotta get in there with your hands and start mashing. You can use a potato masher if you have and aversion for dirty fingers. Mash until you’ve reached your desired texture. Squeeze the limes and mix one final time. Enjoy with some chips or as a taco topping!
