It is hard to believe it is already September. School has started, football is back, and fall will be here before we know it. While many associate September with the end of summer, it actually provides some of the best golfing weather of the year! We hope you have the opportunity to keep golfing and enjoying the club! Also, we have many of our traditional favorite fall events coming up including League Playoffs, the Club Championship, Couples’ Glow Ball, and the Hot Ball. There are still so many great events for everyone to enjoy! The pool is now closed for the season. I hope everyone enjoyed the new pool complex throughout the summer! We had so many great comments about the facility and services from members and guests alike! Your Oxbow Team This is the time of year when we say goodbye to many of our teammates for the season. Many go back to school, whether it be attending high school, college, or teaching. I want to thank all of our teammates for doing such a tremendous job this summer, and as always, being flexible and adaptable, especially in our new club and course. For those who have departed for the year, we wish them much success and hope to see many again next summer. North 9 Holes I get many questions concerning the construction of the north nine holes. It is great that so many of you are excited to see the progress and eventual outcome of what will be some amazing new golf holes. To update, ring levee work started the last week of August, and the contractor is moving ahead full steam to complete the levy on or ahead of schedule. With this, you will notice a new route transitioning from the front nine holes to the back. You will now use Riverbend Road, just like in the beginning of the season, to access our current north holes. This is to accommodate ring levee construction. Areas will be appropriately marked for cart traffic. PLEASE FOLLOW ALL SIGNAGE AND MARKED PATHWAYS to ensure your safety and others. With the ring levee underway, we will begin to see the final phases of major earthwork completed throughout the next couple of months, as well as cart path work starting early September, and seeding to follow behind. Earthwork and seeding will go well in to the fall, due to the timing of ring levee construction. By next spring and summer of next year, you will be able to see many of the new golf holes come to life! Thank you to all of our members for your continued patience through this very large project. September Hours With the later sunrise and earlier sunsets, our golf course and clubhouse opening times change just a bit during the month of September. The golf course tee sheet now begins at 9 AM during the week (noon on Mondays), and 8 AM on weekends. New Clubhouse and Golf Shop hours are printed on the front of this newsletter. These hours will remain in effect until October. There is still so much time left for golf and fun here at Oxbow in September! It has been a whirlwind three months for all of us here, and we have learned a lot during our first full summer in our new home. Thanks to everyone who has given us feedback through the season, both positive and constructive, as we continue to strive to make your club experience an exceptional one! EVENT UPDATE Alison Molony Director of Member Engagement & EventS Outdoor Movie—After a one-year hiatus, I am happy to announce the return of the Outdoor Movie Night on Friday, September 22nd. We will show The Lego Batman Movie on the Oxbow Patio. Due to the nature of this event, any children under five years of age must be accompanied by either an adult supervisor or an older sibling to help watch them. It is also important that you RSVP for this event so we can staff appropriately. Email me at alison@oxbowcc.com. Check out more details on Page 8! “Off-Season” Event Schedule—The Oxbow management staff is putting the finishing touches on our “off-season” event calendar, which will be released in the coming weeks. Keep an eye on your email to find out about the fall and winter fun to come at your club! Oxbow Wedding Open House—Spread the word! We are hosting a Wedding Open House at Oxbow on Thursday, September 21st. Now that we have spent one wedding season in the new facility, we want to show off our gorgeous space and increase bookings for next year. If you know anyone newly-engaged, this will be an excellent chance for them to learn about what Oxbow has to offer. An invitation with more details can be found below!

Food FOOD & Beverage & BEVERAGE Update UPDATE SCOTT MOTSCHENBACHER Executive chef Hello, Oxbow!! Wow, what a crazy first summer. September 1st marks my one year anniversary as Executive Chef at Oxbow. It seems like I just started—I guess time flies when you’re having fun! Speaking of fun, now that our busy season is over, I finally get to put all my focus back into the restaurant. Over the last month or so, myself and the Sous Chef have been running specials. The response has been overwhelming. I think we know which direction the off-season dining menu is headed. Along with the busy season being over, I am also starting to think about cooking classes and different culinary events such as a wine/ beer dinners. If you have any ideas, please let me know. Until then, I’ll see you around the club! With the fall weather drawing near, that means new flavors: squash, pumpkin, and all the root vegetables you can handle!! For this month’s recipe, I am sharing my Butternut Squash Soup. You can use pretty much any squash or pumpkin in this recipe, but I use Butternut Squash because it’s a crowd pleaser.

BUTTERNUT SQUASH SOUP Cooking procedure:

Ingredients: 1 medium/large butternut squash 2 tblsp olive oil 2 tblsp fresh thyme 1 tblsp salt 1 tblsp pepper 1 stick (1/4lb) butter 1/2 cup all purpose flour 1 medium yellow onion, diced 2 tblsp fresh parsley 1 cup white wine (preferably chardonnay) 2 qts chicken stock 1/2 qt heavy whipping cream

Cut squash lengthwise into quarters. Remove seeds with a large spoon. Toss the quarters with olive oil, thyme, salt, and pepper. Place on a large sheet pan and roast at 350 degrees for 30-40 minutes. Remove and let cool. In a large sauce pan on medium high heat, add butter and onion. Cook the onion until it is translucent. You don’t want any color on the onion because that would impart more sweetness—you will have plenty of sweetness from the squash. Add flour to the onions, stir, and cook for 5-6 minutes. Deglaze with white wine and stir vigorously. Add the chicken stock and the remainder of the ingredients. Bring to a boil and drop down to a simmer. Remove the flesh of the squash with a large spoon and add to your sauce pot. Use a blender or an immersion blender (stick blender) and puree until the soup is smooth and velvety. There you have it! With this soup, I like to garnish with a little sour cream and some crispy fried prosciutto. Jake hughes ASSISTANT GENERAL MANAGER Wow… I can’t believe it is already September. This summer went so fast, but as always, we still have more exciting events to come! Be sure to sign up for Couples’ Glow Ball on September 8th. We will be having a chili bar at 7 PM before the 8 PM shotgun. The Golf Shop staff will light up the course with glow sticks so you can play in the dark! Please bring extra flash lights because the Oxbow cart fleet does not have lights.

Labor Day weekend was the last weekend for our Saturday/Sunday breakfast hours. However, we are continuing Sunday brunch from 11 AM to 2 PM. After church, come out and enjoy great food from our brunch menu and watch Sunday football on one of our eight TVs in the restaurant. 5


Golf News August was a wonderful month for golf at Oxbow. It started with the Oxbow Best Ball on the 5 th & 6th. Rick Kuhn and Jeff Dehne from Bismarck won the Gross Division. Ryan Schulz and Ryan French from Oxbow won the Net Division. The Parent-Child Tournament was on August 20th. Winners of the 12 and under division were Josh and Trey Benson and Roger and Cole Campbell were first in the 13-18 division. Oxbow was host for the El Zagal Shrine/S & L Computer Services, Inc. Pro Am on August 23 rd. This tournament was a Shamble with 148 players. Rick Morris from Oxbow played on the first place team, Scott Differding and Matt Lien were on the 2nd place team, and Britton Mattson, Bryce Mattson, Cliff Mattson, and Jim Huesman were the 3rd place team. It was a beautiful day for golf at Oxbow benefitting Shrine Hospitals.

League play-offs started August 29th and will continue into September. The Ladies Ringer Board winners for the season were: lowest overall net score: Wendy Frappier, and improvement of 30% or more: Marie Talley, Cindy Fisher, Wendy Frappier, and Ronda Menze. Way to go, ladies!! Congratulations on all your hard work! On September 6th we will host the Ladies’ Invitational. This is an open 2-Woman Best Ball Tournament. Call the Golf Shop to get signed up! September 10th is our Club Championship. Qualifying rounds can be played Thursday the 7 th, Friday the 8th, or Saturday the 9th. There are divisions in Men’s Gross and Net, Seniors’, Super Seniors’, and Women’s Gross and Net. September 8th is Couples’ Glow Ball. This is always a fun event, so get your friends together for a 3couple scramble. Social and chili bar is at 7 PM, with tee-off to follow at 8 PM. The Hot Ball will be Saturday, September 16th with a 10 AM shotgun start. This is a 4-person event: one hot ball and 3-person scramble on each hole. Get a team together for a fun day of golf. More details about all of our September Golf Shop events are found below. Stop in the Golf Shop to see Men’s adiPure from Adidas and fall Travis Mathew. Fall is a beautiful time for golf at Oxbow. DAVID WOOD, SUPERINTENDENT Work continues on phase two golf construction. Greens, tees, and bunkers are being fine-tuned and are near completion on Holes 6, 7, and 8. Sand is being placed into the green cavities at a 12 inch depth and tee boxes at 6 inches. Cart path installation will soon follow. The contractor should be Future 8 green able to install about 500 lineal feet in a day, depending on the width. Then, grassing of the holes will begin. Just a reminder: when grassing begins, please keep your golf carts and pets off the course. The soil is very vulnerable to damage at this time. The levee that will border the east of the course has started. Meyer Contracting from Maple Grove, MN will be constructing approximately one mile of levee and moving about 150,000 cubic yards of material this fall. Meyer began stripping the construction corridor through the old golf course the first week of August. Fill material harvested from Future 13 green the west of Highway 81 is being brought in for the levee. Meyer Contracting is scheduled to be done by mid-October. Landscapes Unlimited will be working closely with the levee construction, since golf course features tie directly into the levee. When the levee construction begins on the south side (old seven green area), golf traffic will be routed onto Riverbend Road. There will be construction still happening at this time, but Oxbow will be working with contractors to keep a golf cart route to the north golf holes. Please watch for signage in the Golf Shop and on the streets. Levee construction
