It’s hard to believe February is here, and we are probably around close to two months from teeing it up again. We had a great January at the club, and a thank you to all who came out to join us for member events and dining. February again offers many opportunities to experience some fun and unique events, only offered to our members. More details are inside this edition of your newsletter. Our Super Bowl party is filling up for this coming weekend, so make your reservations ASAP to ensure you have a table in the main member dining room!

COVID Update It is great to see North Dakota easing restrictions, and COVID cases going down. Also the vaccine rolling out to those who need it most. Most notably, North Dakota has lifted the mask mandate. We still encourage members to wear them while in the clubhouse areas. Masks will still be available in the front entrance, and also in the arcade and game room. Also, all team members at Oxbow will continue to wear masks at least through February. We still know that any outbreak amongst our associates can impact members ability to use the club, as well as for the health and safety of everyone. We hope this continues to make all of our members feel safe while using your club. Stag We have scheduled our annual Stag fundraiser and auction for Friday, March 19th. With the current restrictions, we are able to have the event while complying with recommended restrictions. Based on current trends, it appears safe at this time to schedule this event. However, we will continue to update everyone of any changes. But for now, put it on your calendar to attend one of the most fun nights of the year! Food& Beverage Minimums As we sent out in December, please note that food and beverage minimums for January, February and March are quarterly, not monthly. With the club closure in the beginning of January, as well as the fun of winter weather this time of year, we hope this makes it easier for you to enjoy dining and events at Oxbow without having to come out once per month, if it doesn’t fit in to your family schedule. With a full calendar of events, as well as great food and beverage, we hope that you and your family find many ways to enjoy coming out to the club. However, we also know that schedules can be hectic. Please contact me if you have any questions about this. Membership We are excited to welcome three new member families to Oxbow this month. They are listed on page 7 of the newsletter. Aja and I are currently working on some new membership ideas, so please stay tuned for more information next month. We have had a great January, and hopefully the upcoming Polar Vortex only sticks around for a short time. Until then, I hope you are able to come and enjoy the simulator, member dining, and attend some of the fun events we have planned in February. See you soon, at your club! Sedi

Membership & Marketing Update AJA NYQUIST AJA@OXBOWCC.COM Hello Oxbow! I would like to first start off by saying thanks for being so welcoming my first month here! It has been great getting to meet so many members and I look forward to getting to know everyone in the upcoming months, so please if you see me stop by and say hi! Can you believe January has already come and gone? We will be to spring and golf season in no time! I know I am excited for that, as I am sure many of you are as well. Looking forward into this month, we have some great events planned, kicking off with Oxbow Weekend at the SHAC! We have tickets to giveaway for both NDSU women's and men's basketball games on Friday and Saturday so contact me to get yours! We are also going to be hosting a Superbowl party, a cooking class, kids night, trivia night, family bingo, a wine dinner and the much-loved character brunch! One new event we are starting at the end of the month, that I am very excited about, is "Muscles & Mimosas". We are going to be doing a group fitness class (HIIT Flow) led by Becca Murphy, complete with a celebratory mimosa afterwards! I mean you should be rewarded for working out! This is something that we will continue to do, hopefully a couple times a month, in March and April as well. Spots will be limited, so make sure you reserve your spot early! One other thing to note, keep you eye on your email as we will be sending out a short survey this month that we want your input on. It will be a quick 2 minute survey about social activities that will help us better plan for events in the next coming months. And if you have any suggestions on events you would like to see implemented please send them to me! Also a quick reminder that if you aren't a member of our Oxbow Country Club Members group on Facebook to please request to join as it's a great place to stay in the loop about what's happening at the club. Hello everyone! Happy February! I hope that everyone had a great holiday season with family and friends! I can’t believe it is already 2021! I am looking forward to a very fun year ahead of us and hoping this is a great year for everyone. This past January we hosted the rest of our holiday parties! We also took a few weeks to clean up the club, I think this was a great thing to do and continue to do for the years to come to make sure we are keeping the club clean and safe for all the members! We still have the arcade up in the ballroom. This will be the last full month that the arcade will be up so, if you are looking for a space to hold a celebration, please feel free to reach out to me and we can start planning away! đ&#x;˜Š As summer is getting closer, that means wedding season! I will be starting the process of wedding meetings to plan everyone’s big day! I am very excited to work with all the brides and grooms this year and I am hoping for a very positive wedding season. We still have a few dates open in 2021, so please reach out if you are looking for a wedding venue or know someone that is looking for a venue. Oxbow has so much to offer for brides and grooms and I would love to tour anyone around! New Years Eve was a great night. We were totally booked up! Chef had a delicious New Years Eve menu and the front house staff was on top of their game. Even with all the reservations, it couldn’t have gone smoother. It was easily one of the most fun nights I have had at the club and I hope to have more like that in the future. Hello Oxbow! We are one month closer to being back in season! Before that happens we have a ton of events planned, starting out with a cooking class. With our covid numbers finally in check, I feel comfortable having this one in-person. We will also be hosting a Superbowl party with all you can eat football food and we will have the arcade up and running for the little ones to burn off some energy. Character brunch is back as well. You might even catch Batman or Captain America flipping omelets! Towards the end of the month, we will be hosting another wine dinner. Still working on the theme for this one. If anyone has any ideas for that, I would love to hear them! It’s nice to be back to a somewhat normal for our culinary events. It keeps my staff and I motivated! I’m sure most of you recall us being shut down early January for a deep clean. I appreciate everyone’s patience during that time. It took way more work than I was anticipating. Turns out when you completely dismantle a kitchen it takes a while to put it all back together again. It was all worth it though. Feels like being in a brand-new kitchen again! There’s not a ton of news from the culinary department. I have been getting in samples and literature on some new fun things to offer for grab-n-go items for the season. I know it’s only February but it’s the time of year to start thinking about all of that. If you have any fun ideas for stuff that maybe you’ve seen somewhere else or just something that you enjoy and think would work well at your club, let me know! Warmer weather is on the way!! For this month’s recipe I want to share my hollandaise recipe. This can be a bit intimidating if you have never attempted. I promise it is a very simple recipe it’s all in the technique. 14
Recipe of the Month: Hollandaise Ingredients 2 large egg yolks 1 lemon juiced 1 teaspoon kosher salt ½ pound of unsalted butter 2 dashes hot sauce (Tabasco) Procedure: In a sauce pot add your butter and melt on medium heat. In another sauce pan add about an inch worth of water and place on medium heat. In a large mixing bowl (metal or glass only) add your egg yolks, lemon juice and salt. Once your butter is melted remove from heat and reserve. Place your mixing bowl over the top of the sauce pan with water and begin whisking. As the yolks start to cook you will notice a significant color change from a dull yellow to a bright frothy yellow. If the egg mixture starts to get chunky then you have over cooked the eggs. Cooking the eggs without scrambling them is right where you want to be. The next part can be a bit tricky. Either grab a friend to hold the bowl while you whisk or make a little nest out of a damp kitchen towel. You will need both hands for this process. You will now slowly whisk in the butter. Using one hand to drizzle and the other to whisk. You may need to switch hands as the whisking can be a bit tiring. If the mixture is a bit thick add just a little bit of water to thin it out. After it has all come together season with a couple dashes of hot sauce. This won’t add a ton of flavor it will add some brightness to it with the vinegar and the warmth of the pepper. This is a great sauce for eggs benedict or to complete your steak. Enjoy! 15

GOLF SHOP UPDATE Corey Herlickson Head Golf Professional corey@oxbowcc.com
We are starting to hit the time of year where a lot of members begin to take trips south for golf and to get away from the snow. With that in mind, we want to remind you of a couple of resources that you have to assist you both at the club and when you head south. At the club we have our TrackMan Simulator, which was paid for by our Stag Committee in 2018-2019 with the proceeds of our Stag Party Fundraiser. If you haven’t utilized the simulator it allows you to hit balls on a driving range, play on a golf course and to focus on specific areas that you want to focus on. We can create tests for you specifically to the areas of improvement you may have identified over the summer. Tests such as a short game challenge to working carrying balls to a certain distance are a great benefit to reducing your handicap. The resources for your trip are our partnerships with ClubCorp and the Thompson Golf Group. We know we sound like a broken record about these, but we want to make sure you take full advantage of the benefits your membership offers you while you are on vacation. To review, the ClubCorp partnership allows you to play their golf courses at a reduced fee. You can get the standard rate reduction just for being an Oxbow member and your get an even greater reduction by joining the ClubCorp Signature Gold Unlimited Membership. The Thompson Golf Group is a group based out of Alexandria that is offering discounted rated to our membership to drive traffic to their golf course in Phoenix. We have sent several emails about both so check your email for details on both or call the golf shop for more details. We are in the process of putting together our golf guide, which will inform you of all of the tournaments and programming we have planned for the golf season. This is something we will email out multiple times for you to print out or keep in an email folder so you can refer to it whenever you wish to review. Our plan is to have it ready and distributed on March 1st.

We have had many inquires as to the dates of our biggest golf tournaments. We have added all of our club tournament dates to our Golf Shop Weekly Update as of last week. If you haven’t checked out the update, it has pertinent information about events, sales, etc. so check it out because we add new information each week. We will continue to have those tournament dates remain on the update until the beginning of April. By then we hope that all of you will have reviewed our golf guide and event guide for the summer, which will then be your reference for golf tournaments. NEWS FROM THE FAIRWAY David Wood Superintendant david@oxbowcc.com
During the design and construction of the new maintenance facility our goal was to maximize this investment. With a limited footprint of usable space, this project needed to fulfill an evolving golf maintenance operation plus the City of Oxbow’s needs. The previous building was functional with adequate storage but had limited space for administrative/staff needs, plus insufficient pesticide storage and equipment repair areas. The first area of focus was on the seasonal employee work experience; adding a dedicated locker room and lunchroom for staff and separate restrooms was a requirement. Employee lockers in the old building were in different locations, staff were having lunch while sitting on mowing equipment or stair cases and having staff waiting in line to use facilities was not uncommon. The current maintenance repair shop is large enough to have multiple mowers under repair at the same time. There is space for washing equipment without interfering with other staff. A separate grinding room keeps all the noise and dust confined to one area. Plus, with multiple overhead doors, moving equipment around is easily accomplished. The new pesticide room is a separate area that only trained staff have access to. The lack of storage in the old building forced us to keep product in different locations throughout the building. All fertilizers and plant protectants are kept in one location now. This location has an upgraded water supply to fill tanks and containment protection in case of a spill.

Our department has now worked in the new building for 7 ½ months, during the peak of our summer operation and into winter maintenance, and the facility has exceeded our expectations on every level. Every winter we hope for adequate snow cover to insulate the grass to prevent damage due to exposure of the winds or low temperatures. With 20” of snow fall through January this winter, this is about 10” below average, having approximately 60% of the grass under snow cover, I am happy with where the course is at. The temperatures being above average have been helpful so far and we hope this continues for the next two months. Please keep all snowmobiles or atv’s off the golf course in the winter.
