C
hef Geno oversees all four of Tri-Star Group’s restaurants on Maui: Nick’s Fishmarket Maui, Sarento’s on the Beach, Son’z Steakhouse and Manoli’s Pizza Company. Chef Sarmiento handpicks all of the restaurants’ chefs and is the mastermind behind the menus. Not only does Chef Sarmiento bring his culinary expertise and creativity to the restaurants, he also exudes compassion and sincerity. President and CEO Aaron Placourakis says “Geno’s knowledge, experience, professionalism and zest for life are key ingredients in our restaurants’ philosophies. He fits in perfectly with our family.” Chef Geno started with the company twenty two years ago in the pantry at Aaron’s Atop the Ala Moana. Since then, he’s learned
all aspects of the culinary field, not only cooking but managing the kitchen as well. He opened two of the Maui restaurants as Executive Chef: Sarento’s on the Beach and Son’z Steakhouse. While spearheading the culinary efforts at Son’z Steakhouse, they won numerous accolades and awards from top 10 restaurants in Maui to peoples choice awards. The latest venture of Chef Geno’s career is the opening of a family focused restaurant called Manoli’s Pizza Company. Manoli’s features organically grown produce, gluten free menu items and sustainable products. Chef Sarmiento’s philosophy is straight forward: support the small farmers and agriculture in the islands when creating exciting, innovative menu items for our guests. It can’t get any simpler than that. (see ad page 7 )
CHEF GENO'S OPAKAPAKA PICATTA compliments of: TRI-STAR RESTAURANTS RECIPE:
1/2 oz Lemon Juice
6 oz Opakapaka
4 Tbsp White Wine
4 oz Butter
Salt & Pepper to taste
1 oz Capers
Preparation: Mix both potatoes, egg and some butter together and season with salt & pepper to make the hash browns. Form into patties and brown in pan unto golden brown. Saute the fish in butter to medium and deglaze with white wine. Add lemon juice, capers to the butter to make the picatta sauce. Saute vegetables in butter, salt & pepper

A
typical Hawaiian celebration is the lu¯‘au feast. For the out-sider, it means a grand hula production with dinner. Did you know that the word lu‘au means to be filled full, but also refers to the tender green leaf of the taro plant? These leaves were used as cooking vessels. ‘Aha‘aina was the original Hawaiian word for feast, which literally means “a gathering of the land.” At one time, the people of Hawai‘i had to find an excuse not to hold a lu¯‘au. Just mentioning it would start everyone gathering
the needs for a successful feast. From the mountain would come a pua‘a (pig) which was baked in the ground. From the ocean limu (seaweed) was gathered; it was believed to release someone from wrongdoing. And from the cultivated land would come kalo (taro) root pounded into poi and ti leaves to cover a table (or mat) to elicit protection. But the essential ingredient for a truly successful lu‘au is sharing Aloha. Visitors to these islands soon find that the feast accompanied by music and dance is one of the best ways to celebrate Hawai‘i.

he Westin Kā‘anapali Ocean Resort Villas partnered with California Cart Builders to craft the first full-service food truck exclusively owned and operated by a Maui hotel or resort, which it introduced to the local food scene in February 2015. The food truck is the centerpiece of Pailolo Bar & Grill, the resort’s open-air, oceanfront sports bar that features live sports and pay-per-view events year round on multiple high-definition, large format TVs and offers an eclectic menu of local, contemporary twists on classic food truck favorites that highlight the local farmers, growers and products of Maui. Since its introduction, Pailolo Bar & Grill’s food truck menu has continued to evolve under the guidance and expertise of The Westin Kā‘anapali Ocean Resort Villas’ executive sous chef, Matt Skaletsky. In this role, Skaletsky works closely with the resort’s executive chef, Francois Milliet, on overseeing menu design and culinary concept development for the resort’s three restaurants while maintaining the highest levels of quality. This responsibility includes Pailolo Bar & Grill, where Skaletsky has been instrumental in creating a menu that showcases gourmet food truck fare in a way that is creative, fun and accessible. Kapalua to Kã‘anapali “in ancient times Kã‘anapali was the site of a thriving fishing village.”
N
orth of the landmark Pu‘u Keka‘a and around the necklace of bays of Chief Pi‘ilani (Na Honoa-pi‘ilani) is Kapalua Resort. In old Hawai‘i, the area was identified by the names of its principal bays, Honokahua and Honolua, which saw the comings and goings of voyaging canoes and fleets of war canoes. In the 1890s, one of Maui’s first missionary sons inherited this land and purchased thousands of acres more to found what would become one of Hawai‘i’s largest corporations, Alexander & Baldwin. As the pineapple crops flourished, Baldwin’s Honolua Ranch grew, importing laborers from Asia and the Azores and building homes in camps, a company store and offices. Some buildings can still be seen around the resort today, including the landmark Honolua Store, built in 1929, which is still in operation. Perhaps Kapalua Resort’s most significant legacy is that of environmental conservation. When the resort was conceived in the late 1970s, owners Maui Land & Pineapple Company instituted conservation programs for a majority of their priceless landholdings: Honolua Bay and Mokulē‘ia Bay were designated a Marine Life Conservation District. On the mountainside, the Pu‘u Kukui Watershed Preserve is the largest privately owned nature preserve in the state and home to plant and animal species that exist nowhere else in the world.
Through the centuries, Ka‘anapali has been revered in legend and is an attractive landscape of natural beauty. This area, which encompasses Hanakao‘o (Canoe) Beach at the south end to Kahekili (Keka‘a) Beach in the north, has always beckoned people to explore long stretches of golden sand, cultivate fertile plains, and wonder at the peaks of Mauna Kahalawai. In ancient times Ka‘anapali (then known as Keka‘a) was the site of a thriving fishing village, lush fields of taro, warrior training grounds and a fierce battle between two royal brothers. The resort area was steeped in legends, such as the feats of Maui, the demigod and Pueo, the guardian owl. The lore from a 15th century high chief who ruled the community at Keka‘a and banished his mischievous son to the neighboring island of Lana‘i to tame its ghosts, to the feats of Kahekili, the Thunderer, a chief who excelled in the sport of cliff diving and was fearless. In modern times, before the development of Hawai‘i’s first master-planned resort, the area boasted a horse race track, and railroad tracks that led to a pier for shipping sugar cane. The early years of Ka‘anapali Resort saw the establishment of a convenient airstrip, which guided visitors in prop planes right to their hotel’s front desk.

heraton Maui Resort & Spa’s Cliff Dive Grill, named for its prime location at Black Rock, on beautiful Kaanapali Beach, is the perfect spot to relax while watching the resort’s iconic nightly cliff dive ceremony. Guests will taste delicious pupus, craft beers and tropical cocktails with an awe-inspiring Kaanapali sunset as the backdrop. Live music plays in the background as a hula dancer performs for guests, and it’s impossible not to unwind as the sun dips into the Pacific Ocean, signaling the end of another magical Maui day. Sheraton Maui Resort & Spa has been honoring the legend of the last chief of Maui, Kahekili, since opening its doors in 1963 through its nightly cliff diving ceremony at Pu‘u Keka‘a (Black Rock). In Hawaiian tradition Pu‘u Keka‘a, “hill of rolling stones”, is a sacred site with a history dating back hundreds of years. Hawaiians believe that Pu‘u Keka‘a is one of three “‘uhane lele”, a place where souls of the dead

leap from earth into their ancestral spirit land. It is believed that only a person with great spiritual strength can enter that world and return. Chief Kahekili, known by his people as “The Thunderer,” lived in Ka‘anapali and ruled over Maui and O‘ahu between 1749 and 1794. One of his many legendary athletic feats was the ancient Hawaiian sport of “lele kawa,” leaping feet first from heights as high as 300 to 400 feet and plunging into the ocean or fresh water pools below. Although there were many ideal spots on the island to perform this breathtaking sport, the uhane lele – Pu‘u Keka‘a – was not one of them. Chief Kahekili proved his bravery and spiritual strength by jumping from Pu‘u Keka‘a and returning to shore unscathed, and he gained much respect and admiration by his people and warriors. On January 23, 1963, Sheraton Maui Resort & Spa opened its doors to the world. In honor of Hawaii’s royalty that once called Ka‘anapali home, the nightly tradition of torch lighting and cliff diving began. Just
before sunset each evening, a young warrior dressed in the traditional “malo” (loincloth) sets torches aflame shedding light upon the lush lawns of Sheraton Maui Resort & Spa. The story of Chief Kahekili and Pu‘u Keka‘a is retold at Cliff Dive Grill as the warrior journeys across the white sands of Ka‘anapali Beach, lighting the torches set on the crest of Black Rock. He traces an ancient path to the summit of Pu‘u Keka‘a, utters a blessing to his ancestors, offers his torch to the ocean below, and finishes with a courageous dive into the rolling surf of the Pacific. Grab a seat at Cliff Dive Grill, and experience an ancient era come to life as a young cliff diver dives from atop Black Rock and honors the legendary leap of Chief Kahekili. Lãhainã “Hawai‘i’s first Constitution was adopted at Lahaina”
W
hen the first Polynesian settlers arrived on Maui’s shores well over a thousand years ago, Lahaina offered them abundant freshwater streams, verdant valleys with fertile volcanic soil, a bountiful pristine sea and warm, sunny days. Steeped in a history which documents its progress from one era to another, Lahaina has retained a flavor of each to this day. Once the Hawaiians were settled in Lahaina they established Moku‘ula, the sacred island within a fishpond, which was a royal residence for ali‘i of Maui since the 16th century. After the decisive battle of ‘Iao Valley in 1790, which resulted in unifying the Hawaiian Islands, Kamehameha I made a political move to unite himself with the women of Maui’s royal line. It is with this marriage of powerful royal lines that Lahaina became the first Capital of the Kingdom of Hawai‘i. 1819 was a pivotal year for Lahaina and the Hawaiian Kingdom. Kamehameha the Great died and was succeeded by his son, Liholiho (Kamehameha II). The first whaling ships as well as the first French warship visited Lahaina, marking a sea change in the traditions of old Hawai‘i. By 1823, Christian missionaries

arrived in Lahaina, and Keopuolani (Kamehameha I’s sacred first wife) became an early convert. Kauikeaouli (Kamehameha III) succeeded to the throne as a child and was left under the care of Regent Ka‘ahumanu (Kamehameha the Great’s second wife). The first half of the 19th century is filled with “firsts” for Hawai‘i: the peak of the whaling industry impacted Lahaina; a cornerstone was laid for the first church; Lahainaluna Mission School opened; and the first printing press was started there. Hawai‘i’s first Constitution was adopted at Lahaina and a legislative session was held in 1840. But by 1845, the Royal Court left Lahaina and moved the capital to Honolulu. In 1873, Sheriff Smith planted Lahaina’s Banyan Tree, now the largest in the US. And in 1877, the first telephone and telegraph lines in all of Hawai‘i were installed on Maui. The 20th century rooted the plantation era in Hawai‘i. In 1901, Pioneer Hotel opened and remained Lahaina’s only hotel until the early 1960s. By the 1950s, family-owned fish markets, stores and noodle shops were thriving, supplying plantation workers and visitors alike. As Hawai‘i became the 50th State, Hollywood became fascinated with Lahaina and several movies and TV shows were filmed in town. Celebrity musicians, film and TV stars are still frequently attracted to Lahaina today.

arm to Table is not a new concept, however it is something society has gotten away from and is something we are finally seeing a return to. People have always grown their own food and bought or traded from nearby farmers. They did this knowing the food they put on their plates and into their bodies was fresh, local, and for the most part, organic. This same food can be in transit for weeks now. With the rise of the Industrial Revolution, refrigeration and the general populous moving into more urbanized areas, food is now being transported thousands of miles and is no longer picked from the farm and served within a day or so. This has a huge impact on Hawaii. Bringing quality locally sourced ingredients back to the table proves challenging at times, conversely Pacific’O thrives on doing just that. Ocean front on a white sandy beach in Lahaina, Pacific’O was the first restaurant on Maui to endeavor operating its own farm, O’o Farm, with exclusive use for the restaurant. Our Chef is continuously inspired; poised to make original and exotic dishes, not only delicious, but nutritious. Nutrients and flavor dissipate quickly. So the longer the
time between harvest and your fork, the more quality is lost. It’s not uncommon to have our produced delivered the day it is harvested and on your plate within hours. At O’o Farm we offer guided foot tours of our orchards and gardens, through rows of beets, heirloom carrots, radishes, pole beans, coffee trees etc… In addition to educating our guests on these tours, we often invite them to help gather or harvest our fresh produce and incorporate it into our gourmet lunch. It’s not uncommon for the aromas of our Maui grown coffee beans being freshly roasted, to make their way across the farm. We are proud to showcase our new coffee roasting facility and are now offering a “seed to cup” tour as well. In addition to farm to table fare, Pacific’O has long held a reputation for having the freshest fish around. We maintain outstanding relationships with several sports fishing boats and daily the fisherman bring in their freshly caught Mahi Mahi, Ono, Opakapaka and the occasional 200lb Tuna, in through our front doors. here are a number of types of Japanese restaurants and Maui's KOBE JAPANESE STEAK HOUSE in Lahaina, has been voted #1 Japanese Restaurant by Maui News Readers and is now celebrating their 30th anniversary. Located just off Front Street, the teppanyaki-style steakhouse is an anchor Maui treasure. ROD GARDINER originally started Kobe on Maui in 1986 and MARTHA HALEAKALA came on board as his office manager in October of 1993. Martha bought KOBE JAPANESE STEAK HOUSE from Rod in 2002 and has enjoyed running this fabulous and entertaining restaurant for for 13 years now! Martha's Head Chef Felamor Simon, has been with Kobe since 2002 and has been a teppan chef for 34 years now. Martha's second chef, Silver Agbayani started working with her bussing tables while in high school and has worked his way up to # 2 teppan chef. Perseverance furthers! Many of her employees, Eileen Hirouji, Richard Acosta, Manuel Sanchez, Scot Nakamura, Guadalupe Ilar have been with Kobe for over 20 years.. Guada has been with Kobe since Day One! Oku of Oku's Sushi Bar moved to Maui's Kobe in 1996 after having worked for Rod in the Waikiki Kobe for many years. He prides himself in having the freshest fish for your sushi and sashimi dishes! Teppan means “steel grill” and yaki means “grilled” simply making it “grilling on a grill”. In 1945 a restaurant in Japan first introduced the show concept which was as much about the performance skills of the chefs with their fast, clinking, shiny, and very sharp knives and their sense of humor as it was about food. It soon became very popular with the visitors to Japan as an entertaining Japanese dining experience. Teppanyaki-style or “Japanese steakhouses" as they came to be popularly known came to the United States in 1964 with the first opening in New York. “Japanese steakhouses” really took off after a well known food critic with the New York Tribune gave it a rave review. It became the place to go to see and be seen for all the celebreties of the time. Kobe Japanese Steak House in Lahaina continues with the tradition to place an emphasis on the talents of the chef performing a show for the diners, continuing to introduce new variations and tricks. Besides being master chefs, each Teppanyaki Chef is an entertainer. Each Chef has his own table-side manner and unique sense of humor making every trip an experience.
The talented chef might juggle utensils, flip a shrimp tail into his/her shirt pocket, catch an egg in their hat, toss an egg up in the air and split it with a spatula or flip flattened shrimp pieces into the diners' mouths. The Kobe Japanese Steak House & Oku's Sushi Bar has nineteen teppans or grills, with ten downstairs and nine in the upstairs dining room as well as the great Oku’s Sushi Bar. There is a full Island cocktail bar featuring many great specialty drinks. These include saké (in English) which in Japanese, saké or o- saké refers to alcoholic drinks in general. The Japanese term for this specific rice wine, which is brewed more like beer than wine, is Nihonshu, meaning “Japanese saké”. At Kobe Japanese Steak House & Oku's Sushi Bar, though the entertainment factor is high, the quality of their food is just as important. You can start with the Spicy Tuna Roll and the Shrimp Tempura Roll from the sushi bar followed by the Nova Scotia Scallop Appetizer and Shabu-Shabu soup. One choice for your main course is the firm-fleshed cold water lobster and steak combo which can be upgraded to the tender aged beef filet. You can opt for the regular white rice or garlic fried rice. The fresh shrimp is delicious and entertaining and the tail provided our chef an extra prop to flip around and finally end up on his head hidden in his chef’s hat or toque. Hopefully he found it later that night. I shared the teppan (grill) with a friendly local Japanese family. They said they had been to Kobe Japanese Steak House before on a karaoke night with the always entertaining Toddy Lilikoi, Friday and Saturday evenings from 9:30 pm until closing. If you have secretly always wanted to be a singer or a Rock Star, Karaoke is a form of interactive entertainment in which amateur singers sing along with recorded music using a microphone. The music is typically a well-known pop song minus the lead vocal with lyrics displayed on a video screen. It is loads of fun to participate or even just watch. If you have not experienced it you should do it at least once and your vacation is as good a time as any. (see pages 48 & 49)

3. Cook bacon in pot till crispy.

Chopped Clams strained and save the juice
1/4 lb.
Butter

Flour

Fresh thyme

Heavy cream

Medium potatoes diced potatoes

Sourdough bread bowls for serving

Chopped parsley for garnish
4. Add onions, celery, bay leaves and thyme to pan season with salt and pepper and cook for an extra 5 minutes. 5. Add the Clam juice and the juice from the strained clams and bring to a boil 6. Add heavy cream and cook for 5 mins 7.
Add the Clams
8. Wisk in roux to thicken (if its not that thick you might need more roux) 9.
Remove from heat and let cool for 10 mins
10. After chowder has cooled a bit add the diced potatoes and mix in good.
Method:
11. Cut tops off Bread bowls and hollow out the center (keep the tops to serve)
2. Dissolve butter and mix with flour until you get a thick roux.
12. Toast bread bowls in oven and use for serving chowder garnish with chopped parsley

aleakalā, “House of the Sun”, is a dormant volcano and the tallest peak is 10,023 feet. Haleakala holds a sacred place in Hawaiian history and became part of the Hawaii National Park in 1916, branching into it's own park in 1961. The Hawaiian people sought the isolation of Haleakalā for ceremonial purposes, instruction and personal reasons. There is a wide spectrum of native island ecosystems which is protected and preserved by the national park system. The park includes Kipahulu Valley on the south east and Ohe‘o Gulch. There are two main trails leading into Haleakala: Sliding Sands Trail and Halemau‘u Trail.

A
long Maui’s northeastern coast, caressed by the trade winds, two acres of historic ruins and lush tropical gardens rise dramatically against a Hawaiian sky. The Haiku Sugar Mill, also known as Pua Le‘a (“blossoming passion” in Hawaiian), blends the stunning natural beauty of Hawaii with the Old World elegance of Europe. In 1858, when the Haiku Sugar Company was chartered, construction began on the Mill. Upon completion three years later in 1861, the Mill processed its very first crop using the leading edge technology of the time: a steam engine to grind the cane. This marked the beginning of nearly 20 years of successful sugar cane production in Haiku. In 1879, after years as a hub of sugar production, the Mill was abandoned, left for over a century to gently decay into ruin. The vines and lush vegetation grew and covered the thick stone walls, turning the Mill into the beautiful structure we see today. 20 years ago an immense restoration effort to revive the true spirit of the Mill began. They transformed the abandoned ruins from a decrepit sugar factory into the blossoming hidden treasure it is today and renamed it the simpler, more poetic “Haiku Mill”.

The Surfing Goat fresh Chevre run the gamut of cheese flavors from “Udderly Delicious” (plain) to exotic varieties like “Mandalay” (apple bananas and curry). The Dairy also produces several soft cheeses, including ones ripened in wax, in olive oil with garlic, or coated with mesquite ash, along with brine-ripened feta cheese. The Kafsacks started out selling their cheeses at local farmers markets, but their product was soon picked up by a variety of retail locations, varying from wine stores to delis to locally owned grocery stores. Quickly thereafter, many of Maui’s gourmet restaurants voiced interest in using the Surfing Goat cheese on their menus, where it can now be found crumbled on salads, on pizzas, stuffed inside ravioli, or simply making an appearance on a dessert cheese platter. At first the Kafsacks found that milking their goats only once a day was more than adequate to cover the demand for their cheese, but as word spread it became apparent that after the next dry period they would have to switch to milking their does at night, as well as in the morning. Over the last few years they have selected several kids to keep to expand their herd by a significant amount. Their herd currently consists of a conglomeration of Saanens, Alpines Perigord (black truffleshavings from Perigord) and La Manchas. In the last few years they have added “Oh My”... goat Cheese Truffles to their product line.

ost of south Maui’s history lies along its coastline. From the shores of Ma‘a‘laea Bay to the beaches of Makena are heard past echoes of Hawaiian fishing villages, busy harbors, sugar plantations, WWII military exercises and cattle ranching Captain George Vancouver set anchor in Ma‘alaea in 1793 and is best known for his numerous, but unsuccessful attempts to bring peace between Kings Kamehameha of Hawaii and Ka‘hekili of Maui. On the way to Kihei, is the Kealia National Wildlife Refuge boardwalk on North Kihei road, Hwy. 310. Large sea turtles use the area to cross the road to the pond to lay their eggs. At the Kihei Memorial Beach is the historic Kihei Landing, where a 200 foot wharf, used for many years by interisland boats shipping freight and produce. Due to increases in sand accumulation, it became impossible for the larger sea vessels to reach the wharf, usage stopped around 1915. As early as the 1800’s, before the southern slopes of Haleakala became farm and ranch land, the southern coast of Maui is said to have been lush rainforest, with coconut and Kou trees, taro and ‘ape, clear water pools found at the end of freshwater streams. The continued deforestation, erosion and atmospheric changes in
rainfall averaging only 13 inches annual, led to the dry landscapes of Kihei, Wailea and Makena. Kama‘ole I, II and III Beaches are great picnic areas. You can still see remnants of concrete bunkers, left when the beaches and land parcels on the coastline were confiscated by the government during WWII for military training exercises. Charley Young Beach, aka The Cover, was named after a military reporter named Charley Young who purchased property in the Kama’ole area just before WWII. The “Cove” is a favorite spot for novice surfers and when tide is out, it is wonderfully shallow for kids and adults! The original Kihei Boat ramp was located here but closed in 1983. Kama‘ole I, II and III Beaches are great picnic areas. You can still see remnants of concrete bunkers, left when the beaches and land parcels on the coastline were confiscated by the government during WWII for military training exercises. The beaches of Ma‘a‘laea, Kihei, Wailea and Makena became mock "enemy beachheads", complete with demolition and reconnaissance. South of the Boat Ramp, Keawekapu Beach begins. MAUI THAI BISTRO & BRASSERIE “Thai Cuisine — A New Orthodoxy?”
Few would argue that the singlemost important event in the history of food is the discovery of America. What followed that has come to be known as the Columbian Exchange (CE). Prior to CE, there was no tomato in Spanish or Italian cuisine, no beef or banana in the New World, no pineapple in Hawaii, and no chili pepper in the Thai cuisine. Spiciness is a point of pride among many Thai food aficionados; we asked Chit Tharnthong, co-owner of the popular South Maui hotspot, Maui Thai Bistro, to provide the context for the growing popularity of Thai cuisine. by Chit Tharnthong When one decides to dine out for some great Thai food, one rarely thinks about the equally great cocktails that will go with it. Everyone loves a good beer with ethnic food, but try switching things up. The Brasserie at Maui Thai Bistro is breaking the boundaries by serving up complex, exotic and delicious cocktails which pair perfectly with its Thai dishes. In this new and popular establishment, one will find excellent cocktail choices created by its innovative bar manager, Cory Wymer. Most people with a love for Thai cuisine are familiar with the Tom Kha and Tom Yum soups. Not only has Maui Thai extended these flavors into their signature Tom Yum Stir-Fry and Tom Yum Fried Rice, they now have a Tom Yum Martini!
Not only are these cocktails delicious, they use the freshest ingredients whenever possible. It is hard to find a bar on Maui that uses a fresh-squeezed sour mix for their margaritas; however, that is exactly what Maui Thai Bistro's Brasserie uses. All ingredients are prepared fresh. They make their own roasted strawberry purée using local Kula strawberries for their Strawberry Basil Mojito. Very delicious. Whether you imbibe or not, there definitely is something for everyone at this vibrant spot. The Brasserie has the Hawaiian tropical favorite Mai Tai (yet have appropriately coined theirs "My Thai") and several non-alcoholic 'mocktails' which are enjoyed by all.
Maui Thai Bistro’s bar extension, The Brasserie, is South Maui’s newest gathering place. The Brasserie's manager, Cory Wymer, creates exotic cocktails for your palate. Seasoned travelers will know that Thai cocktails have become one of Thailand 's most exciting exports in recent years. To celebrate this exciting new addition, Chef Prakong has unveiled several new single-plate dishes, which are very popular with bar-goers and can easily be consumed at our new full-service bar. Starting with an intensely aromatic kaffir lime leaf from the Bistro's garden, the bartender will muddle the kaffir lime leaf with fresh-squeezed lime juice. He then adds vodka, a ginger-lemongrass shochu to the muddled leaves then their house-made Thai chili simple syrup. This is well shaken and then poured into a perfectly chilled martini glass. For a little variation of this cocktail, ask for cream of coconut to be added, thereby making this a Tom Kha Martini for a touch of sweetness.

he 5 Palms was named for the original five partners, not trees. Many people count the many palm trees and wonder... Owner Simon Vojdani has been the quiet, continuing force in tight management improvements and expansion since 1995. Before purchasing 5 Palms, he worked his way from a dishwasher to President of the Specialty Restaurant Corporation, based in Orange County, CA. During his reign (1969-1995), he operated 92 restaurants nationwide. Vojdani put himself through college as an ESL immigrant, achieving his Master's in Engineering at UC Berkeley. Over his 45 years in the restaurant industry, he has worked in every single position in a fine dining restaurant. Simon and his wife Victoria met at the former Castaway Restaurant in Oakland, CA in 1977. He was the manager, she was the bartender... a restaurant family from the start. Their early family history includes Stephanie, 14 years old when they first took over Five Palms Beach Grill. The deli at the Mana Kai is son Zack's namesake. He is also the Front of House Supervisor for 5 Palms.

Stephanie worked as hostess while attending high school at Seabury Hall. Mother Victoria updates the restaurant information when she visits the hotels and condos. Part Hawaiian on her Grandmother's side (who was born on Molokai), her great, great uncle was Bishop Stephen Alencastre of Hawaii from 1924-1940 (last Vicar Apostolic of the Hawaiian Islands). Daughter Stephanie is the Marketing Director and in charge of advertising, PR and media. She handling the restaurant's email, website and online customer service. She attended Gros Bonnet Culinary Academy where she became a Pastry Chef. While in Honolulu, Stephanie was stagiaire to Chef Cainan Sabey of Stage restaurant and managed large catering events. The guest will also be educated on proper dry brushing technique and will receive a complimentary loofah so that he or she may continue to incorporate this beneficial practice into an athome regimen. “We have a strong commitment to both supporting local businesses and providing our guests with a relaxing spa experience that delivers a profound connection to our island home,” said Shawn Hallum, the resort’s spa director. “The addition of dry brushing, with loofahs grown right here in Lahaina, to our Heavenly Signature Massage helps us achieve both of these goals in an invigorating and meaningful way.” The 80-minute Heavenly Signature Massage begins with a full body dry brushing using natural loofahs harvested by farmer James (Kimo) Simpliciano of Simpli-Fresh Produce in Maui.
