Eat and Live ‘PONO’

Ron Panzo of LuLu’s in Lahaina along with Delvina and Vernon Rosa are bringing Nalu’s to Kihei. Nalu is the Hapa-Hawaiian phrase meaning to “go with the flow.” With that mindset the owners of Nalu’s have made it their focus to source the best that Hawaii has to offer, combining local flavors, and the freshest island ingredients available. Nalu’s mission is to serve “ono” (mouthwatering), food for our guests enjoyment. So come on in to “Nalu’s” and go with the flow.”

CHEF STORY

Chef Geno Sarmiento

Nicks Fishmarket • Sarento's on the Beach • SON'Z Steakhouse • Manoli's Pizza Company

Geno Sarmiento, Corporate Executive Chef Tri-Star Restaurant Group

C

hef Geno oversees all four of Tri-Star Group’s restaurants on Maui: Nick’s Fishmarket Maui, Sarento’s on the Beach, Son’z Steakhouse and Manoli’s Pizza Company. Chef Sarmiento handpicks all of the restaurants’ chefs and is the mastermind behind the menus. Not only does Chef Sarmiento bring his culinary expertise and creativity to the restaurants, he also exudes compassion and sincerity. President and CEO Aaron Placourakis says “Geno’s knowledge, experience, professionalism and zest for life are key ingredients in our restaurants’ philosophies. He fits in perfectly with our family.” Chef Geno started with the company twenty two years ago in the pantry at Aaron’s Atop the Ala Moana. Since then, he’s learned

all aspects of the culinary field, not only cooking but managing the kitchen as well. He opened two of the Maui restaurants as Executive Chef: Sarento’s on the Beach and Son’z Steakhouse. While spearheading the culinary efforts at Son’z Steakhouse, they won numerous accolades and awards from top 10 restaurants in Maui to peoples choice awards. The latest venture of Chef Geno’s career is the opening of a family focused restaurant called Manoli’s Pizza Company. Manoli’s features organically grown produce, gluten free menu items and sustainable products. Chef Sarmiento’s philosophy is straight forward: support the small farmers and agriculture in the islands when creating exciting, innovative menu items for our guests. It can’t get any simpler than that. (see ad page 7 )

Nalu's South Shore Grill

N

in Kihei is the "it" place to be for food and live Hawaiian music.

alu is the Hapa-Hawaiian phase meaning go with the flow. With that in mind the owners of Nalu's South Shore Grill have made it their focus to source the best that Hawaii has to offer, combining local flavors with the freshest ingredients available. The focus is on fresh-Hawaiian Organic and is creatively presented on island wood slabs. Nalu’s concept is great food and value with Hawaiian/Pacific emphasis. Long time Maui residents Ron Panzo of LuLu's, Nicks Fishmarket and Sarento’s on the Beach and Vernon and Delvina Rosa have brought this "Pono" (do what is right in food and behavior) concept to Nalu's in Kihei celebrating island life. The aloha atmosphere is warm and inviting with the wide stairway entrance that opens to a priceless Koa wood Outrigger Canoe hung from the ceiling, and tells a great spiritual story of finding, saving, blessing and restoration. The open glass doors and windows bring the garden feeling inside with friendly colorful custom-made benches and heavy wood tables. Stately tall Ohia wood support beams, front bar and counter that runs the width of the room is made from matched grains of beautiful Mango wood. The owners brought the wood from Big Island and did much of the design and building themselves. The bar features 5 big screen TVs for the sports enthusiasts. The photo gallery features ocean and food, by nature

“I went to Maui to stay a week and remained five. I never spent so pleasant a month before, or bade any place goodbye so regretfully. I have not once thought of business, or care or human toil or trouble or sorrow or weariness, and the memory of it will remain with me always.” — Mark Twain

typical Hawaiian celebration is the lu¯‘au feast. For the out-sider, it means a grand hula production with dinner. Did you know that the word lu‘au means to be filled full, but also refers to the tender green leaf of the taro plant? These leaves were used as cooking vessels. ‘Aha‘aina was the original Hawaiian word for feast, which literally means “a gathering of the land.” At one time, the people of Hawai‘i had to find an excuse not to hold a lu¯‘au. Just mentioning it would start everyone gathering

the needs for a successful feast. From the mountain would come a pua‘a (pig) which was baked in the ground. From the ocean limu (seaweed) was gathered; it was believed to release someone from wrongdoing. And from the cultivated land would come kalo (taro) root pounded into poi and ti leaves to cover a table (or mat) to elicit protection. But the essential ingredient for a truly successful lu‘au is sharing Aloha. Visitors to these islands soon find that the feast accompanied by music and dance is one of the best ways to celebrate Hawai‘i.

The Feast at Lele Wailele Polynesian Luau at The Westin Maui Resort & Spa The Wailele Polynesian Luau at The Westin Maui Resort & Spa is held outdoors alongside the legendary Ka’anapali Beach with a stunning oceanfront backdrop. The dinner show utilizes the elements of earth, fire and water to reflect the rich Polynesian culture through superb performances with vibrant costumes. The newly-revitalized Aloha Pavilion with cascading waterfalls, tropical gardens and tiki torches presents the perfect setting for guests to embark on an exciting journey to the Polynesian Islands where dance was considered not just as a form of entertainment, but as means of telling stories. Highlights iclude the story of Pele, Goddess of Fire and a new performance dedicated to Wailele (meaning waterfalls). The show also features dances from Hawaii, Fiji, Tahiti, New Zealand and Samoa. The breath taking finale is none other than Maui’s only extreme fire-knife dance performance. Enjoy a superb Hawaiian meal served buffet style with tradition- al selections for an authentic experience. The three hour experience includes a free flow of drinks all evening with Mai Tais, signature cocktails, local beers, sodas and fruit juices. Scheduled Tuesday, Thursday and Sunday evenings, additional shows are presented during summer and holiday seasons. Visit westinmaui.com for show dates and details. The Feast at Lele, an elegant pageant of Polynesia, is nestled in an intimate beachfront patio in South Lahaina. Executive Chef Adrian Aina combines fine dining with exciting Polynesian entertainment at The Feast at Lele. Set in an intimate garden setting, private tables are terraced around a raised beachfront platform. As the sun sinks, silhouetting Lana‘i island across the Auau channel, an outrigger canoe paddled by Hawaiian warriors is welcomed ashore with the blowing of the conch. A seamless presentation ensues as the dancers take diners on a tour of Hawai’i, Aotearoa (New Zealand), Tahiti and Samoa. As Polynesia is explored, corresponding cuisine is brought to the table. While the New Zealand Maori frighten their foes with their famous tattooed faces and haka (war dance); an Upcountry Green Duck Salad is served with Fishcakes and Sauteed Sweet Potato and Mushrooms. And when the sweet romance of Tahiti is presented with the exciting hip movements and regal feathered headdresses, there is Fafa-Steamed Chicken and Taro Leaf in Coconut Milk along with Baked Scallops and Poisson Cru. The five-course Polynesian feast orchestrated by Chef Adrian will satiate any appetite and please the gourmet palette immensely. “Island grown fruits and vegetables, many from our own organic farm, are incorporated into traditional Polynesian fare,” Chef Adrian said. “Complete with tableside service, this is a ‘foodie’s’ luau.” A burst of fire signals the grand finale, a stunning exhibition of Samoan fire knife dancing. tepping onto the property at Hawaii Sea Spirits Organic Farm and Craft Distillery, you are serenaded by rustling sugar cane and panoramic views of both the north and south shores of Maui. A friendly tour guide invites you into the fields, sharing information about the farming of organic sugar cane while walking through more than thirty species of cane including a rare collection of Native Polynesian varietals. From seed to finished spirit, your tour passes the sixty-foot twin distillation columns and continues inside the Craft Distillery. Hear about the complete process of manufacturing alcohol from distillation to blending, then bottling and distribution. And finish the tour with a savored sampling of Ocean Vodka and Deep Island Hawaiian Rum at our Sampling Bar. True to the company’s organic and sustainable commitment, Hawaii Sea Spirits Organic Farm and Craft Distillery educates guests on the importance of organic farming for the conservation of land and ocean, green manufacturing, and the production of

spirits. Crafting Ocean Vodka is a family effort and a true labor of love. Three generations of the Smith family have grown up on the beautiful island of Maui. They started Hawaii Sea Spirits, LLC (makers of Ocean Vodka) with the intention of building a business on Maui that presented an agriculturally based, nonperishable consumer product. The business would support the local community, sell product around the world, and be enjoyed by the extensive and ever-growing tourism base. Ten years later, Ocean Vodka is marketed and sold in 37 states and 2 provinces in Canada, expanding throughout North America, South America and Asia. Ocean Vodka has been the exclusive vodka on Hawaiian Airlines since 2007 and is the best-selling spirit from Hawai’i. Ocean Vodka is certified USDA Organic, gluten-free and the only vodka

Pailolo Sports Bar & Grill’s Food Truck

T

“Pailolo is on a Roll!”

he Westin Kā‘anapali Ocean Resort Villas partnered with California Cart Builders to craft the first full-service food truck exclusively owned and operated by a Maui hotel or resort, which it introduced to the local food scene in February 2015. The food truck is the centerpiece of Pailolo Bar & Grill, the resort’s open-air, oceanfront sports bar that features live sports and pay-per-view events year round on multiple high-definition, large format TVs and offers an eclectic menu of local, contemporary twists on classic food truck favorites that highlight the local farmers, growers and products of Maui. Since its introduction, Pailolo Bar & Grill’s food truck menu has continued to evolve under the guidance and expertise of The Westin Kā‘anapali Ocean Resort Villas’ executive sous chef, Matt Skaletsky. In this role, Skaletsky works closely with the resort’s executive chef, Francois Milliet, on overseeing menu design and culinary concept development for the resort’s three restaurants while maintaining the highest levels of quality. This responsibility includes Pailolo Bar & Grill, where Skaletsky has been instrumental in creating a menu that showcases gourmet food truck fare in a way that is creative, fun and accessible. Skaletsky, who before joining The Westin Kā‘anapali Ocean Resort Villas achieved recognition on culinary teams at Montage Deer Valley, Aspen’s Ritz Carlton Club and some of the finest hotels in the Southeast and Caribbean, explains, “I love taking the unique flavors

from my diverse culinary experiences and infusing them with the local Hawaiian food culture and community. The Pailolo food truck has been a great outlet for this because the concept really encourages imagination.” Pailolo Bar & Grill’s food truck menu features food-truck-inspired fare that blends local ingredients with unique preparations to showcase the breadth of island-style cuisine. Some examples are the Confit Lamb Gyro, Hot Honey Sriracha Chicken Wings and Ceviche Lettuce Wraps. “We are very pleased to be the first resort in Maui to have our very own food truck,” states Brandon Maeda, Director of Food & Beverage at The Westin Kā‘anapali Ocean Resort Villas. “Food trucks are known for being fun, energetic and unpredictable, yet with a touch of comfort and approachability. We are excited to capture this feeling and atmosphere at Pailolo Bar & Grill, and have the opportunity to create this experience for our guests without them having to seek it out,” continues Maeda. The food truck is an innovative and engaging way to expand the menu and incorporate fantastic ingredients with items such as Confit Lamb Gyro: Curried Tzatziki, Kula Tomato, Maui onion, Feta, Waipoli Lettuce, Oregano and Naan Flatbread (full recipe below). “in ancient times Kã‘anapali was the site of a thriving fishing village.”

N

orth of the landmark Pu‘u Keka‘a and around the necklace of bays of Chief Pi‘ilani (Na Honoa-pi‘ilani) is Kapalua Resort. In old Hawai‘i, the area was identified by the names of its principal bays, Honokahua and Honolua, which saw the comings and goings of voyaging canoes and fleets of war canoes. In the 1890s, one of Maui’s first missionary sons inherited this land and purchased thousands of acres more to found what would become one of Hawai‘i’s largest corporations, Alexander & Baldwin. As the pineapple crops flourished, Baldwin’s Honolua Ranch grew, importing laborers from Asia and the Azores and building homes in camps, a company store and offices. Some buildings can still be seen around the resort today, including the landmark Honolua Store, built in 1929, is still in operation. Perhaps Kapalua Resort’s most significant legacy is that of environmental conservation. When the resort was conceived in the late 1970s, owners Maui Land & Pineapple Company instituted conservation programs for a majority of their priceless landholdings: Honolua Bay and Mokulē‘ia Bay were designated a Marine Life Conservation District. On the mountainside, the Pu‘u Kukui Watershed Preserve is the largest privately owned nature preserve in the state and home to plant and animal species that exist nowhere else in the world.

Through the centuries, Ka‘anapali has been revered in legend and is an attractive landscape of natural beauty. This area, which encompasses Hanakao‘o (Canoe) Beach at the south end to Kahekili (Keka‘a) Beach in the north, has always beckoned people to explore long stretches of golden sand, cultivate fertile plains, and wonder at the peaks of Mauna Kahalawai. In ancient times Ka‘anapali (then known as Keka‘a) was the site of a thriving fishing village, lush fields of taro, warrior training grounds and a fierce battle between two royal brothers. The resort area was steeped in legends, such as the feats of Maui, the demi-god and Pueo, the guardian owl.The lore from a 15th century high chief who ruled the community at Keka‘a and banished his mischievous son to the neighboring island of Lana‘i to tame its ghosts, to the feats of Kahekili, the Thunderer, a chief who excelled in the sport of cliff diving and was fearless. In modern times, before the development of Hawai‘i’s first master-planned resort, the area boasted a horse race track, and railroad tracks that led to a pier for shipping sugar cane. The early years of Ka‘anapali Resort saw the establishment of a convenient airstrip, which guided visitors in prop planes right to their hotel’s front desk.

The Iconic Cliff Dive Ceremony

The Sheraton Maui Resort & Spa

“Cocktails and culture at Cliff Dive Grill”

S

heraton Maui Resort & Spa’s Cliff Dive Grill, named for its prime location at Black Rock, on beautiful Kaanapali Beach, is the perfect spot to relax while watching the resort’s iconic nightly cliff dive ceremony. Guests will taste delicious pupus, craft beers and tropical cocktails with an awe-inspiring Kaanapali sunset as the backdrop. Live music plays in the background as a hula dancer performs for guests, and it’s impossible not to unwind as the sun dips into the Pacific Ocean, signaling the end of another magical Maui day. Sheraton Maui Resort & Spa has been honoring the legend of the last chief of Maui, Kahekili, since opening its doors in 1963 through its nightly cliff diving ceremony at Pu‘u Keka‘a (Black Rock). In Hawaiian tradition Pu‘u Keka‘a, “hill of rolling stones”, is a sacred site with a history dating back hundreds of years. Hawaiians believe that Pu‘u Keka‘a is one of three “‘uhane lele”, a place where souls of the dead

34

MENU | MENU-MAGAZINE.COM

leap from earth into their ancestral spirit land. It is believed that only a person with great spiritual strength can enter that world and return. Chief Kahekili, known by his people as “The Thunderer,” lived in Ka‘anapali and ruled over Maui and O‘ahu between 1749 and 1794. One of his many legendary athletic feats was the ancient Hawaiian sport of “lele kawa,” leaping feet first from heights as high as 300 to 400 feet and plunging into the ocean or fresh water pools below. Although there were many ideal spots on the island to perform this breathtaking sport, the uhane lele – Pu‘u Keka‘a – was not one of them. Chief Kahekili proved his bravery and spiritual strength by jumping from Pu‘u Keka‘a and returning to shore unscathed, and he gained much respect and admiration by his people and warriors. On January 23, 1963, Sheraton Maui Resort & Spa opened its doors to the world. In honor of Hawaii’s royalty that once called Ka‘anapali home, the nightly tradition of torch lighting and cliff diving began. Just

before sunset each evening, a young warrior dressed in the traditional “malo” (loincloth) sets torches aflame shedding light upon the lush lawns of Sheraton Maui Resort & Spa. The story of Chief Kahekili and Pu‘u Keka‘a is retold at Cliff Dive Grill as the warrior journeys across the white sands of Ka‘anapali Beach, lighting the torches set on the crest of Black Rock. He traces an ancient path to the summit of Pu‘u Keka‘a, utters a blessing to his ancestors, offers his torch to the ocean below, and finishes with a courageous dive into the rolling surf of the Pacific. Grab a seat at Cliff Dive Grill, and experience an ancient era come to life as a young cliff diver dives from atop Black Rock and honors the legendary leap of Chief Kahekili. It’s truly a wonderful cultural experience and celebrates the history of Maui. Cliff Dive Grill is open daily from 11 am to 9 pm, with happy hour from 3 to 5 pm. “Every time I perform the Fijian dance, I represent all my ancestors that have gone before me......” Chief Atu

he elements of earth, fire and water reflect the rich Polynesian culture through superb performances at Wailele Polynesian Luau dinner show. Highlights include the story of Pele, Goddess of Fire and Hi’ilave Hula Awana dedicated to Wailele (meaning waterfalls). Here, guests will embark on a vibrant and exciting journey to the Polynesian Islands where dance was considered not just as a form of entertainment, but as a means of telling stories.

My name is Atunaisa Laqeretabua. I come from a long line of warriors, called the "BATI", the feared warriors, the protector of the clan, the village, the province and the first line of defense. I also come from a long line of chiefs, the "mata ki Bau".

With its unique indoor-outdoor feel, the oceanfront Aloha Pavilion at The Westin Maui Resort & Spa sets the mood and ambience for guests to enjoy an outdoor experience at Wailele Polynesian Luau. Steps away from pristine Ka’anapali Beach, tropical gardens with palm trees and soothing sounds of waterfalls enhance the setting for an unforgettable evening of fun, food, culture and entertainment. Upon arrival, you will be welcomed with a shell lei greeting that makes a memorable keepsake. As you are served tropical drinks, make your way to the luau gardens for a photo with the dancers, visit artisan

crafters with their handmade cultural pieces or ‘talk story’ with the wood carver as he designs and crafts unique pieces. Amidst a spectacular sunset, the show opens with a conch shell blowing ceremony, followed by the traditional torch lighting ritual. Show host Atunaisa Laqeretabua or Chief Atu, as he is reverently called, invites guests to learn about the Polynesian way of life, including the art of husking a coconut and sampling the fresh coconut water. The interactive activity has everyone in much laughter, as Chief Atu invites a guest or two to join him on stage. Dinner is served buffet style with a lavish spread of traditional favorites such as Lomi Lomi Salmon with Kula tomatoes, Maui onion and scallions, Pipi Kaula Poke (peppered-dry beef) with sesame and soy sauce and Island Poi. Fresh salads with papaya seed, kula lavender and coconut ranch dressing accompany the main entrees that include Kalua Pua’a which is a slow-roasted pork dish, Huli Huli Chicken with guava barbeque sauce, Steamed I’a (fish) with ginger and tomato relish, Pa’ia Dry Mein Noodles plantation-style, Upcountry Maui vegetables and Moloka’i Sweet Potatoes. Desserts such as Pineapple Upside Down Cake, Lilikoi Cheesecake, Chocolate Chantilly Cake and Coconut Raspberry Cake are served with coffee and tea. Continued on next page

“What is unique with this show is that you can still enjoy your meal during the performances and return to the buffet spread for more helpings. It is very family-friendly too,” said resort executive sous chef Ikaika Manaku. Drinks and cocktails, locally-brewed beers, sodas, and fruit juices are all inclusive with the meal. The show itself boasts Maui’s most extreme fire knife dance called “Siva Afi”. The spell-bound performance includes agile Samoan dancers spinning and twirling fire knives between one another and from different elevations. If you are lucky, you may even catch a dancer climb a palm tree and perch midway as he begins twirling in thin air. As fire knife dancer

Desmond Sula says, “You will never see a performance like ours anywhere and it will far exceed any of your expectations.” The exciting Polynesian revue also includes dances and songs from Tahiti, Fiji, New Zealand (Maori), Tonga, Samoa and Hawaii. From Kahiko chants symbolizing old Hawaii where dancers perform in traditional Pa’u skirts to the modern interpretation of Hawaii through Hapa Haole Implements dance with a vivacious feel, each dance is truly extraordinary. Another distinctive feature that sets Wailele Polynesian Luau apart is the Fijian Warrior Dance known as “Meke Wesi”. Led by Chief Atu who is a real Fijian chief, the performance

uses clubs and spears depicting scenes where warriors get ready and perform war tactics. The attire including neckpieces were designed by Chief Atu for an authentic appearance. “Hawai‘i’s first Constitution was adopted at Lahaina”

W

hen the first Polynesian settlers arrived on Maui’s shores well over a thousand years ago, Lahaina offered them abundant freshwater streams, verdant valleys with fertile volcanic soil, a bountiful pristine sea and warm, sunny days. Steeped in a history which documents its progress from one era to another, Lahaina has retained a flavor of each to this day. Once the Hawaiians were settled in Lahaina they established Moku‘ula, the sacred island within a fishpond, which was a royal residence for ali‘i of Maui since the 16th century. After the decisive battle of ‘Iao Valley in 1790, which resulted in unifying the Hawaiian Islands, Kamehameha I made a political move to unite himself with the women of Maui’s royal line. It is with this marriage of powerful royal lines that Lahaina became the first Capital of the Kingdom of Hawai‘i. 1819 was a pivotal year for Lahaina and the Hawaiian Kingdom. Kamehameha the Great died and was succeeded by his son, Liholiho (Kamehameha II). The first whaling ships as well as the first French warship visited Lahaina, marking a sea change in the traditions of old Hawai‘i. By 1823, Christian missionaries

arrived in Lahaina, and Keopuolani (Kamehameha I’s sacred first wife) became an early convert. Kauikeaouli (Kamehameha III) succeeded to the throne as a child and was left under the care of Regent Ka‘ahumanu (Kamehameha the Great’s second wife). The first half of the 19th century is filled with “firsts” for Hawai‘i: the peak of the whaling industry impacted Lahaina; a cornerstone was laid for the first church; Lahainaluna Mission School opened; and the first printing press was started there. Hawai‘i’s first Constitution was adopted at Lahaina and a legislative session was held in 1840. But by 1845, the Royal Court left Lahaina and moved the capital to Honolulu. In 1873, Sheriff Smith planted Lahaina’s Banyan Tree, now the largest in the US. And in 1877, the first telephone and telegraph lines in all of Hawai‘i were installed on Maui. The 20th century rooted the plantation era in Hawai‘i. In 1901, Pioneer Hotel opened and remained Lahaina’s only hotel until the early 1960s. By the 1950s, family-owned fish markets, stores and noodle shops were thriving, supplying plantation workers and visitors alike. As Hawai‘i became the 50th State, Hollywood became fascinated with Lahaina and several movies and TV shows were filmed in town. Celebrity musicians, film and TV stars are still frequently attracted to Lahaina today. MENU-MAGAZINE.COM | MENU

FEATURE STORY Kobe Japanese Steak House & Oku’s Sushi Bar

Happy 30th Birthday!

T

here are a number of types of Japanese restaurants and Maui's KOBE JAPANESE STEAK HOUSE in Lahaina, has been voted #1 Japanese Restaurant by Maui News Readers and is now celebrating their 30th anniversary. Located just off Front Street, the teppanyaki-style steakhouse is an anchor Maui treasure. ROD GARDINER originally started Kobe on Maui in 1986 and MARTHA HALEAKALA came on board as his office manager in October of 1993. Martha bought KOBE JAPANESE STEAK HOUSE from Rod in 2002 and has enjoyed running this fabulous and entertaining restaurant for for 13 years now! Martha's Head Chef Felamor Simon, has been with Kobe since 2002 and has been a teppan chef for 34 years now. Martha's second chef, Silver Agbayani started working with her bussing tables while in high school and has worked his way up to # 2 teppan chef. Perseverance furthers! Many of her employees, Eileen Hirouji, Richard Acosta, Manuel Sanchez, Scot Nakamura, Guadalupe Ilar have been with Kobe for over 20 years.. Guada has been with Kobe since Day One! Oku of Oku's Sushi Bar moved to Maui's Kobe in 1996 after having worked for Rod in the Waikiki Kobe for many years. He prides himself in having the freshest fish for your sushi and sashimi dishes! Teppan means “steel grill” and yaki means “grilled” simply making it “grilling on a grill”. In 1945 a restaurant in Japan first introduced the show concept which was as much about the performance skills of the chefs with their fast, clinking, shiny, and very sharp knives and their sense of humor as it was about food. It soon became very popular with the visitors to Japan as an entertaining Japanese dining experience. Teppanyaki-style or “Japanese steakhouses" as they came to be popularly known came to the United States in 1964 with the first opening in New York. “Japanese steakhouses” really took off after a well known food critic with the New York Tribune gave it a rave review. It became the place to go to see and be seen for all the celebreties of the time. Kobe Japanese Steak House in Lahaina continues with the tradition to place an emphasis on the talents of the chef performing a show for the diners, continuing to introduce new variations and tricks. Besides being master chefs, each Teppanyaki Chef is an entertainer. Each Chef has his own table-side manner and unique sense of humor making

every trip an experience. The talented chef might juggle utensils, flip a shrimp tail into his/her shirt pocket, catch an egg in their hat, toss an egg up in the air and split it with a spatula or flip flattened shrimp pieces into the diners' mouths. The Kobe Japanese Steak House & Oku's Sushi Bar has nineteen teppans or grills, with ten downstairs and nine in the upstairs dining room as well as the great Oku’s Sushi Bar. There is a full Island cocktail bar featuring many great specialty drinks. These include saké (in English) which in Japanese, saké or o- saké refers to alcoholic drinks in general. The Japanese term for this specific rice wine, which is brewed more like beer than wine, is Nihonshu, meaning “Japanese saké”. At Kobe Japanese Steak House & Oku's Sushi Bar, though the entertainment factor is high, the quality of their food is just as important. You can start with the Spicy Tuna Roll and the Shrimp Tempura Roll from the sushi bar followed by the Nova Scotia Scallop Appetizer and Shabu-Shabu soup. One choice for your main course is the firm-fleshed cold water lobster and steak combo which can be upgraded to the tender aged beef filet. You can opt for the regular white rice or garlic fried rice. The fresh shrimp is delicious and entertaining and the tail provided our chef an extra prop to flip around and finally end up on his head hidden in his chef’s hat or toque. Hopefully he found it later that night. I shared the teppan (grill) with a friendly local Japanese family. They said they had been to Kobe Japanese Steak House before on a karaoke night with the always entertaining Toddy Lilikoi, Friday and Saturday evenings from 9:30 pm until closing. If you have secretly always wanted to be a singer or a Rock Star, Karaoke is a form of interactive entertainment in which amateur singers sing along with recorded music using a microphone. The music is typically a well-known pop song minus the lead vocal with lyrics displayed on a video screen. It is loads of fun to participate or even just watch. If you have not experienced it you should do it at least once and your vacation is as good a time as any. (see pages 48 and 49)

FEATURE STORY

On the Beach!

“farm to table cuisine with the best view in town”

F

arm to Table is not a new concept, however it is something society has gotten away from and is something we are finally seeing a return to. People have always grown their own food and bought or traded from nearby farmers. They did this knowing the food they put on their plates and into their bodies was fresh, local, and for the most part, organic. This same food can be in transit for weeks now. With the rise of the Industrial Revolution, refrigeration and the general populous moving into more urbanized areas, food is now being transported thousands of miles and is no longer picked from the farm and served within a day or so. This has a huge impact on Hawaii. Bringing quality locally sourced ingredients back to the table proves challenging at times, conversely Pacific’O thrives on doing just that. Ocean front on a white sandy beach in Lahaina, Pacific’O was the first restaurant on Maui to endeavor operating its own farm, O’o Farm, with exclusive use for the restaurant. Our Chef is continuously inspired; poised to make original and exotic dishes, not only delicious, but nutritious. Nutrients and flavor dissipate quickly. So the longer the 54

MENU | MENU-MAGAZINE.COM

time between harvest and your fork, the more quality is lost. It’s not uncommon to have our produced delivered the day it is harvested and on your plate within hours. At O’o Farm we offer guided foot tours of our orchards and gardens, through rows of beets, heirloom carrots, radishes, pole beans, coffee trees etc… In addition to educating our guests on these tours, we often invite them to help gather or harvest our fresh produce and incorporate it into our gourmet lunch. It’s not uncommon for the aromas of our Maui grown coffee beans being freshly roasted, to make their way across the farm. We are proud to showcase our new coffee roasting facility and are now offering a “seed to cup” tour as well. In addition to farm to table fare, Pacific’O has long held a reputation for having the freshest fish around. We maintain outstanding relationships with several sports fishing boats and daily the fisherman bring in their freshly caught Mahi Mahi, Ono, Opakapaka and the occasional 200lb Tuna, in through our front doors. There is never a shortage of exciting seasonably inspired dishes @ pacific’O. We’ll see you soon! (pages 52, 53)

56

MENU | MENU-MAGAZINE.COM

Put fish in a metal or glass bowl, cover completely with lime juice, saving about 1/3 cup for the pico de gallo. Wrap bowl in Saran Wrap and refrigerate for 3-4 hours, Chop tomatoes, onions, and Serrano's (saving 1 for garnish) as small as you can (especially the Serrano's). Mince cilantro and put all the veggies into container, add remaining lime juice. Season with salt and pepper to taste (should be quite a bit as we're going to drain the juice from the pico). Chill in the refrigerator while the fish is finishing. When the fish is ready put into a mesh strainer and strain the fish from the lime juice, put fish into a bowl. Drain most of the juice from the pico de gallo reserving some and add to the bowl with the fish. Mix well and add the olive oil. Season to taste with salt and pepper Slice remaining Serrano and avocado into small slices. Put cabbage into bottom of serving bowl(s), top with the ceviche Juice and all. Top the Ceviche with the sliced avocados and Serrano Chiles. Serve with Tortilla Chips.

aleakalā, “House of the Sun”, is a dormant volcano and the tallest peak is 10,023 feet. Haleakala holds a sacred place in Hawaiian history and became part of the Hawaii National Park in 1916, branching into it's own park in 1961. The Hawaiian people sought the isolation of Haleakalā for ceremonial purposes, instruction and personal reasons. There is a wide spectrum of native island ecosystems which is protected and preserved by the national park system. The park includes Kipahulu Valley on the south east and Ohe‘o Gulch. There are two main trails leading into Haleakala: Sliding Sands Trail and Halemau‘u Trail.

Ocean Vodka Organic Farm and Distillery’s grounds feature a visitor center, organic farm and craft distillery and was established in 2013 however the vodka has been on the market since 2005. Your guide will escort you through carefully tended sugar cane fields, pointing out the colorful varieties of Hawaiian cane, and manicured gardens around the distillery, while delving into the topics of land and water conservation, biodynamic farming and green manufacturing. The tour ends in the Martini Garden by picking fresh garnishes for a martini tasting.

Further up the road is the quaint old time Paniolo town of Makawao. Keeping in with the overall town's look is the Makawao Steak House. Join them for dinner after shopping at Makawao’s many excellent shops. O‘o Farm is located at the 3500 foot elevation on the slopes of

Maui’s Historic

aiku Mill...

"A Slice of History Creating New Memories...

The Courtyard

O

ne of Maui's many hidden and delightful gems, is Maui’s historic Haiku Mill. A bit hard to find, one travels along the country road in Haiku then down a road that you are sure is not the correct way! You pass by the hidden and gorgeous expansive tree surrounded Baldwin estate on your right and just past that on the left behind an unobtrusive gate, is the historical landmark. It is a piece of old Maui as most visitors have never seen. Haiku Mill is an amazing property emanating an old time Hawaiian/European plantation feel. It is still a partial ruin and parts have been renovated while keeping the original structures. Along with the very tasteful decor, many of the furnishings are beautiful rusty original pieces picked up in France from the 1800s. Upon entering the property, one walks up to the open air reception area, yards of white canvas curtains hang from the 30 ft tall beams enhancing the charm of the large sitting, cocktail area which is called The Courtyard. Matching white canvas couches with vintage tables create and old world meets new effect. Simply gorgeous. Walking towards the dining venue, which is the actual old mill, is the banyan tree with hanging lights sparkling from its many branches especially enchanting in the twilight. Just past that sits the The Cane House. Completely redone in white canvas couches and the same furnishings brought over from France complete the old world meets new look. Everything including the walls, fixtures and all the textiles are done in white, enhancing the charming old French furnishings. We walked back down The Cane House stairs and to the right we could see the entrance to the Haiku Mill.

…a vision of beauty, passion and love.” Haunting strains of music fills the air and the mill is alit with many candles, illuminating the vines that intertwine above. A gorgeous crystal chandelier showcases the banquet style table set with vintage wine glasses and artisan ceramic plates. Flowers adorn the tables creating a scene that you will never forget. A truly new experience, even for kama'ainas (old timers). This is a celebration of fine dining venues at it's best. The dishes are fabulous and created by Capische? Chef de Cuisine Chris Kulis, one of the major pioneers of the new foraging cuisine of Hawaii. His passion for finely created dishes with great attention to detail to every course is perfectly showcased in this environ! He forages for organic herbs and vegetables using local fresh ingredients sourced directly from Maui’s fields, ranches and waters. Each dish is paired brilliantly with a different fine wine to bring you a meal you will not forget. A celebration of life at it’s best. Many of Maui’s residents have no idea that Haiku Mill is even in existance, myself included. Along Maui’s northeastern coast, caressed by the trade winds, two acres of historic ruins and lush tropical gardens rise dramatically against a Hawaiian sky. The Haiku Sugar Mill, also known as Pua Le‘a (“blossoming passion” in Hawaiian), blends the stunning natural beauty of Hawaii with the Old World elegance of Europe.

In 1858, when the Haiku Sugar Company was chartered, construction began on the Mill. Upon completion three years later in 1861, the Mill processed its very first crop using the leading edge technology of the time: a steam engine to grind the cane. This marked the beginning of nearly 20 years of successful sugar cane production in Haiku. In 1879, after years as a hub of sugar production, the Mill was abandoned, left for over a century to gently decay into ruin. The vines and lush vegetation grew and covered the thick stone walls, turning the Mill into the beautiful structure we see today. 20 years ago an immense restoration effort to revive the true spirit of the Mill began. They transformed the abandoned ruins from a decrepit sugar factory into the blossoming hidden treasure it is today and renamed it the simpler, more poetic “Haiku Mill”.

Haiku Mill has partnered with renowned Hotel Waileabased restaurant Capische? to offer a high-end dinner experience with Chef de Cuisine Christopher Kulis. Guests can now enjoy the fine dining destination’s award-winning menus in the intimate, tranquil setting of Maui’s historic Haiku Mill. 30 tickets will be available for sale per event. From the shores of Ma‘a‘laea Bay to the beaches of Makena are heard past echoes of Hawaiian fishing villages, busy harbors, sugar plantations, WWII military exercises and cattle ranching Captain George Vancouver set anchor in Ma‘alaea in 1793 and is best known for his numerous, but unsuccessful attempts to bring peace between Kings Kamehameha of Hawaii and Ka‘hekili of Maui. On the way to Kihei, is the Kealia National Wildlife Refuge boardwalk on North Kihei road, Hwy. 310. Large sea turtles use the area to cross the road to the pond to lay their eggs. At the Kihei Memorial Beach is the historic Kihei Landing, where a 200 foot wharf, used for many years by interisland boats shipping freight and produce. Due to increases in sand accumulation, it became impossible for the larger sea vessels to reach the wharf, usage stopped around 1915. As early as the 1800’s, before the southern slopes of Haleakala became farm and ranch land, the southern coast of Maui is said to have been lush rainforest, with coconut and Kou trees, taro and ‘ape, clear water pools found at the end of freshwater streams. FEATURE STORY

MAUI THAI BISTRO & BRASSERIE “Thai Cuisine — A New Orthodoxy?”

Few would argue that the singlemost important event in the history of food is the discovery of America. What followed that has come to be known as the Columbian Exchange (CE). Prior to CE, there was no tomato in Spanish or Italian cuisine, no beef or banana in the New World, no pineapple in Hawaii, and no chili pepper in the Thai cuisine. Since spiciness is a point of pride among many Thai food aficionados, we asked Chit Tharnthong, co-owner of the popular new South Maui hotspot, Maui Thai Bistro, to provide the context for the growing popularity of Thai cuisine. by Chit Tharnthong

A

ndy Ricker, James Beard winner and famed Thai chef of gargantuan proportions, has banned the use of the words "authentic" as well as "traditional" in his Pok Pok restaurants. What follows is an interview (translated from Thai) with Chef Prakong of Maui Thai Bistro. Int: Do you agree with Andy Ricker that authenticity is, essentially, an absurd idea? Chef P: Totally! I think though that Andy is reacting to the equating of spiciness level with authenticity, which I agree is wrong! In fact the chili pepper, which originated from Central America, came to Thailand rather late, certainly less than 200 years ago. I eat spicier food than just about anybody I know,

Chef P: Not traditional certainly, but there are at least two good reasons for that dish. The first reason is that we strive, where we can, to use, indeed to honor, local produce, hence we substitute macnut for the lowly peanut. And the second reason is that it is a far better dish for the substitution! Let me add a point here, which is that, Thai cuisine, like the culture that encloses it, is a living thing so that many foods of our childhood are no longer available! I actually sense rather strongly that Thais are driven to innovate (within the sphere of food), so that our ancestors would be horrified if we were to stand still... Some other non-traditional dishes that make an appearance on the Specials Menu are NZ lamb chops with Thai green peppercorn & holy basil sauce ($24), Alaskan king crab in dry curry sauce ($25), and more...

Maui Thai Bistro is pleased to announce the opening of its bar extension, aka The Brasserie. The Brasserie's manager, Cory Wymer, promises fireworks at this newest South Maui hotspot. Seasoned travelers will know that Thai cocktails have become one of Thailand 's most exciting exports in recent years. To celebrate this exciting new addition, Chef Prakong will unveil several new single-plate dishes, which should prove popular with bar-goers as these can easily be consumed at our new full-service bar. but that is probably due to my upbringing in Isaan, where we didn't even have electricity, let alone refrigeration, in my earlier years. The chili peppers were a real boon, especially among the poorer regions, because of their anti-microbial properties, as well as the ability to cover up short shelf-life foods. Int: But beyond spice, is the concept of authenticity valid? For example, one of your signature dishes is your Macadamia nut panang with short ribs - you'd agree that it isn't everyone's idea of a traditional Thai dish…

MAUI THAI BISTRO & BRASSERIE

Critics and reviewers are already raving about Chef Prakong's new restaurant - “best Thai food outside of Thailand”, ”best Thai (food) in the entire state“, “huge step above the competition”, “the go to ethnic restaurant in Maui”, and much more. Prakong brings her artisan's craft to South Maui: she crafts many ingredients, including her curry pastes, from scratch, using organic and often homegrown products. The result is a fascinating interplay of flavors and an experience in Thai food that is always strived for, but seldom achieved, even in Thailand. Maui Thai Bistro is a kitsch-free establishment, with a contemporary look and feel, set in beautiful South Maui. In addition to its excellent dinner fare, it also specializes in well-known Thai single-plate lunches or what one reviewer calls “the best lunch this side of NYC”

Happy 20th Birthday 5 Palms!

T

he 5 Palms was named for the original five partners, not trees. Many people count the many palm trees and wonder... Owner Simon Vojdani has been the quiet, continuing force in tight management improvements and expansion since 1995. Before purchasing 5 Palms, he worked his way from a dishwasher to President of the Specialty Restaurant Corporation, based in Orange County, CA. During his reign (1969-1995), he operated 92 restaurants nationwide. Vojdani put himself through college as an ESL immigrant, achieving his Master's in Engineering at UC Berkeley. Over his 45 years in the restaurant industry, he has worked in every single position in a fine dining restaurant. Simon and his wife Victoria met at the former Castaway Restaurant in Oakland, CA in 1977. He was the manager, she was the bartender... a restaurant family from the start. Their early family history includes Stephanie, 14 years old when they first took over Five Palms Beach Grill. The deli at the Mana Kai is son Zack's namesake. He is also the Front of House Supervisor for 5 Palms.

“You can hear past echos of Hawaiian fishing villages from the shores of Ma‘a‘lea Bay to the beaches of Makena....”

B

efore there was water, there was nothing but kiawe trees, shrubs and cactus where Wailea now stands. But there were beaches! South Kihei Road merged into Makena Road, all a part of the original King’s Highway, or Alaloa, built in the 1500’s to encircle the entire island of Maui. Alexander and Baldwin purchased the 1,500 acres of former Ulupalakua grazing land in the late 1960’s. With water on its way from Central Maui, The Wailea Development Co., created in 1971, began to turn this desert land back into the lush, tropical paradise of yester-year with first-class luxury vacation resorts. South Kihei to Makena Road was cut short and removed to accommodate the development resuming further down the coastline. The first Wailea Resort to open its doors was the Maui Intercontinental Wailea Resort in 1976. With the development of Wailea came the Wailea Shopping Village, completed in the mid 70’s. This quaint little shopping center was home to about 27 merchants and eventually sold to Japanese investors, torn down in 1998 and replaced with the Shops of Wailea, which reopened in 2000.

Wailea is home to a two-mile stretch of shoreline starting with Mokapu Beach, fronting what used to be Stouffers Resort. Ulua Beach Park, a nice little snorkeling spot fronts the Wailea Beach Marriott. Over the years, all of the large resort hotels have changed ownership and names. Separated by Wailea Point is Polo Beach,. This where Wailea ends and Makena begins. South of Polo Beach lies Palauea Beach accessible only by walking or north of Po’olenalena Beach. Built in the 1800’s, Makena Landing was one of the busiest ports on Maui and serviced the Makee sugar plantation. After prolonged draught closed the plantation in 1879, it became Ulupalakua Ranch and Makena Landing gained prominence, transporting cattle on interisland steamers. Makena village had a thriving population, but the mid-1920’s brought an end to interisland steamers and caused a steep decline in the population. Oneloa Beach, known as Big Beach or Makena Beach, is a very long and wide stretch of beach and is great for swimming and snorkeling, Please be careful of it's rough shorebreak.

he Spa Industry is a wellness movement that does not only educate and enlighten the consumer, but also carefully cradles the balance between ancient and modern healing therapies. In earlier years, the Spa Industry’s focus was about returning to the basics; simple relaxation, and completely letting go. More recently, a noticeable shift in the spa lifestyle has developed, where spa goers want the ability to choose authentic experiences unique to the spa location, and want customized spa treatments that have been perfectly designed to tell a story. These original customized treatments enable you be a part of that story, while honoring the host culture at the same time. Spas on Maui have respectfully replicated treatments local to Hawaii, with products that use popular local ingredients such as alaea clay, raw volcanic salt, virgin coconut oils, and island flower extracts.

you went in. Multiple spas on Maui give Spa goers the flexibility to customize treatments to their needs at the time of the appointment, and are given a way to re-create these experiences in their everyday lives. Other spas offer experiences with advanced relaxation technology, used to enhance your spa journey with a sophisticated, futuristic spin. Some of these luxury advances include color therapy tubs, where colored lights illuminate your therapeutic bath for total relaxation, and rainbow rain showers, where soothing water jets glowing with gentle light can go from a gentle rain-like spray, to a vigorous downpour. No matter what experience you choose, Maui Spas offer escapism from stressful reality, and give us the ability to infuse wellness in our lives by focusing on creating a “Spa Haven” in our own space. Spa living allows us to bridge the gap between our at home care, and our next spa visit.

Most spas on Maui utilize and promote eco-friendly ingredients with real benefits, and exercise genuine ancient practices that will leave you more enlightened coming out, than when

New Technology for Non-Invasive Healing ”ONDAMED® is the most advanced sports injury technology in the 21st century“ Ondamed was invented in Schwanau, Germany by Rolf Binder, electronic engineer. The technology is the result of 25 years of research in biophysical medical testing and therapy that resulted in the development of several well known and sophisticated therapeutic devices. On the basis of this experience, Rolf Binder discovered how to interrogate the body’s communication systems and introduce signals that stimulate the natural healing process. Medical professionals worldwide have been using Ondamed with remarkable success for over a decade. Over 50 years, scientists and engineers have developed various techniques for “looking” inside the body to diagnose disease and trauma. Examples include X-rays, CT scans, MRI, Ultrasound, etc. Likewise treatments are provided by the energy from lasers, the Gamma Knife and so on. Pulsed Electromagnetic Fields (PEMF) are yet another non-invasive breakthrough treatment modality. Ondamed combines PEMF with pulse biofeedback to enable the practitioner to relieve pain, improve cell function and circulation, and promote relaxation.

Compliments of Dr. Ian Cholewa

Ondamed is based on the principle of electromagnetic induction. The device produces a highly focused pulsed electromagnetic field that penetrates deep into the target region of the body to painlessly stimulate tissues and “jump-start” cellular activities. The Ondamed system complements other treatments such as pharmaceuticals, homeopathic medicines, nutritional supplements and other therapeutic modalities; patients respond faster and the effects are longer lasting. A unique feature of Ondamed is to enable the practitioner to monitor patients’ responses to a wide variety of subtle electromagnetic fields introduced through a neck applicator, and select which frequencies or frequency programs are most appropriate. These signals are then introduced with a hand-held applicator and/or larger matrix applicator. A typical treatment lasts about 30 minutes. Patients consistently report leaving a session feeling less pain, more relaxed and refreshed, able to think more clearly and better prepared for life’s challenges.
