Maui Cattle Company

Born & Grazed in Hawaii

M

aui Cattle Company consists of six independent family-owned cattle operations spanning over 60,000 acres. The current partners include the Haleakala Ranch, Ulupalakua Ranch, Nobriga Ranch, Kaupo Ranch, and Hana Ranch Agriculture. On Kauai Olumau Angus + is also a partner. Rooted in an island-wide heritage, culture, and environment of ranching that traces back to 1793, these operations are committed to keeping a broad legacy alive while staying true to the unique traditions of their families. All Maui Cattle Company beef comes from cattle with superior Angus genetics. Seed stock is derived from partner Olumau Angus Plus LLC on Kauai, where Bobby Ferreira had long been working on a breed that thrived on tropical grazing. Maui Cattle Company cattle are grass fed in a clean, stress-free environment. In addition to being 100% grass-fed, the cattle are not given any growth hormones, antibiotics, or artificial ingredients. The beef is dry-

aged and completely compliant with the strictest of industry standards. Vitamins E and A, Linoleic and Omega 3 fatty acids are present in higher amounts than in mainland-raised beef. I have been told that even the fat is good for you! Alex Franco, the general manager of the Maui Cattle Company, takes great pride in the company's products. “Our goal is to bring tender, tasty, all natural Hawaiian grass-fed beef to island tables. In working together, we have been able to succeed,” says Franco. His over 35 years of experience and education as a cattleman and ranch manager has made this possible. We have created a conglomerate of ranches to provide the beef necessary to supply restaurants and grocery stores island wide with a sufficient supply of Maui Cattle Company products.

Kaupo Ranch is situated on the southern slopes of Haleakala and remains inspired by the vastness of open space and by the memories of paniolo

(Hawaiian cowboys) whose grandparents swam cattle to awaiting boats from a small shoreline landing through rough seas. The Nobriga family at Nobriga Ranch in Kahakuloa graze a small 73 animal herd however, they are responsible for theinitial sugar cane and pineapple feeding program that the Nobriga family provided during the start-up of Maui Cattle Company. As of November 2011, Maui Cattle Company has transitioned to a 100% grass-fed product, born and grazed on each of its partnering operations.

ENTERTAINMENT MAUI STYLE

A

typical Hawaiian celebration is the lu¯‘au feast. For the outsider, it means a grand hula production with dinner. Did you know that the word lu‘au means to be filled full, but also refers to the tender green leaf of the taro plant? These leaves were used as cooking vessels. ‘Aha‘aina was the original Hawaiian word for feast, which literally means “a gathering of the land.” At one time, the people of Hawai‘i had to find an excuse not to hold a lu¯‘au. Just mentioning it would start everyone gathering the needs for a successful feast. From the mountain would come a pua‘a (pig) which was baked in the ground. From the ocean limu (seaweed) was gathered; it was believed to release someone from wrongdoing. And from the cultivated land would come kalo (taro) root pounded into poi and ti leaves to cover a table (or mat) to elicit protection. But the essential ingredient for a truly successful lu‘au is sharing Aloha. Visitors to these islands soon find that the feast accompanied by music and dance is one of the best ways to celebrate Hawai‘i.

T

he Wailele Polynesian Luau at The Westin Maui Resort & Spa is held outdoors alongside the legendary Ka’anapali Beach with a stunning oceanfront backdrop. The dinner show utilizes the elements of earth, fire and water to reflect the rich Polynesian culture through superb performances with vibrant costumes. The newly-revitalized Aloha Pavilion with cascading waterfalls, tropical gardens and tiki torches presents the perfect setting for guests to embark on an exciting journey to the Polynesian Islands where dance was considered not just as a form of enter­tainment, but as means of telling stories. Highlights iclude the story of Pele, Goddess of Fire and a new performance dedicated to Wailele (meaning waterfalls). The show also features dances from Hawaii, Fiji, Tahiti, New Zealand and Samoa. The breath taking finale is none other than Maui’s only extreme fire-knife dance performance. he Westin Ka’anapali Ocean Resort Villas partnered with California Cart Builders to craft the first full-service food truck exclusively owned and operated by a Maui hotel or resort. The food truck is the centerpiece of Pailolo Bar & Grill, the resort’s open air, oceanfront sports bar that features live sports and pay per view events year round on multiple high definition, large format TVs, and will offer an eclectic menu of local, contemporary twists on classic food truck favorites that highlight the farmers, growers and products of Maui.

The new menu features specials of food truck inspired fare that blends local ingredients with creative and unique preparations to showcase the breadth of island-style cuisine. Some examples are the Duck, Duck, Goose (dish below) and Pailolo Ceviche: fresh-caught fish, shrimp, pico de gallo, Moloka’i sweet potato, Kula corn, yuzu coconut (dish above).

“We are very pleased to be the first resort in Maui to have our very own food truck” states Brandon Maeda, Director of Food & Beverage for The Westin Ka’anapali Ocean Resort Villas. “Food trucks are known for being fun, energetic and unpredictable, yet with a touch of comfort and approachability. We are excited to capture this feeling and atmosphere at Pailolo Bar & Gril, and have the opportunity to create this experience for our guests without them having to seek it out,” continues Maeda. In addition to the introduction of the food truck to Pailolo Bar & Grill, the resort recently completed construction of a seating extension to the venue that is centered around a fire pit that is lit nightly. This affords guests views of the oceanfront and boardwalk fronting the resort, an ideal location for people-watching and enjoying the venue’s daily happy hour from 4pm to 6pm.

INGREDIENTS: Goose Meatballs: 16 ounces ground goose meat 2 large eggs 4 ounces day old bread 8 ounces milk 5-spice mix Kosher salt White pepper REMAINDER OF THE DISH: 4 ounces tater tots 3 each goose meatball 1 ounce foie gras torchon, sliced 3 ounces duck demi-glace .1 ounce green onion, chopped Kosher salt

PREPARATION METHOD: For Goose Meatballs (prepare first): Soak day old bread in milk for 1 hour, strain excess milk. Mix eggs with 5-spice mix. Add ground goose meat to egg mixture, mix well, add day old bread. Form meatball with an ice cream scooper. Place meatball on an oiled sheet pan. Bake in oven for 10 minutes at 350ºF. Finish cooking in sauce. FINI: Cook tater tots in a deep fryer at 375ºF for 4 minutes, or until golden brown.Toss with kosher salt. Place on a serving dish, add goose meatballs, foie gras and duck demi-glace. Garnish with green onions. Makes 1 serving.

“in ancient times Kã‘anapali was the site of a thriving fishing village.”

N

orth of the landmark Pu‘u Keka‘a and around the necklace of bays of Chief Pi‘ilani (Na Hono-api‘ilani) is Kapalua Resort. In old Hawai‘i, the area was identified by the names of its principal bays, Honokahua and Honolua, which saw the comings and goings of voyaging canoes and fleets of war canoes. In the 1890s, one of Maui’s first missionary sons inherited this land and purchased thousands of acres more to found what would become one of Hawai‘i’s largest corporations, Alexander & Baldwin.As the pineapple crops flourished, Baldwin’s Honolua Ranch grew, importing laborers from Asia and the Azores and building homes in camps, a company store and offices. Some buildings can still be seen around the resort today, including the landmark Honolua Store, built in 1929, is still in operation. Perhaps Kapalua Resort’s most significant legacy is that of environmental conservation. When the resort was conceived in the late 1970s, owners Maui Land & Pineapple Company instituted conservation programs for a majority of their priceless landholdings: Honolua Bay and Mokulē‘ia Bay were designated a Marine Life Conservation District. On the mountainside, the Pu‘u Kukui Watershed Preserve is the largest privately owned nature preserve in the state and home to plant and animal species that exist nowhere else in the world.

Through the centuries, Ka‘anapali has been revered in legend and is an attractive landscape of natural beauty. This area, which encompasses Hanakao‘o (Canoe) Beach at the south end to Kahekili (Keka‘a) Beach in the north, has always beckoned people to explore long stretches of golden sand, cultivate fertile plains, and wonder at the peaks of Mauna Kahalawai. In ancient times Ka‘anapali (then known as Keka‘a) was the site of a thriving fishing village, lush fields of taro, warrior training grounds and a fierce battle between two royal brothers. The resort area was steeped in legends, such as the feats of Maui, the demi-god and Pueo, the guardian owl.The lore from a 15th century high chief who ruled the community at Keka‘a and banished his mischievous son to the neighboring island of Lana‘i to tame its ghosts, to the feats of Kahekili, the Thunderer, a chief who excelled in the sport of cliff diving and was fearless. In modern times, before the development of Hawai‘i’s first master-planned resort, the area boasted a horse race track, and railroad tracks that led to a pier for shipping sugar cane. The early years of Ka‘anapali Resort saw the establishment of a convenient airstrip, which guided visitors in prop planes right to their hotel’s front desk.

A local inspired menu offers a variety of selections from tapas and share plates to main plates and desserts. Tasting your way through the menu is a discovery of islands – from mauka (land) to makai (sea). “The perfect dining experience should be one that culminates not only the flavors of the food, but the showmanship of the chef, and the creativity of the plated presentations” explains Sheraton Maui Resort & Spa’s Executive Chef Greg Gaspar. As Sheraton Maui Resort & Spa’s signature restaurant, Black Rock Kitchen highlights the best of Maui and Hawaii’s farmers, fishermen, and ranchers in its cuisine. In December 2014, the resort launched the Table to Farm dining series as an opportunity to highlight the relationship between the resort’s chefs and local farmers. The Table to Farm event begins with a farm-inspired wine paired dinner at the oceanfront resort’s Black Rock Kitchen.

Led by the Executive Chef Greg Gaspar, guests enjoy a five course dinner featuring Maui grown ingredients along with handselected wine pairings. The winemaker and farmer join the chef to engage in a talk story session with the dinner guests. The following morning guests take a private tour to a local farm to see firsthand how the farm operates. The farm tour continues with a cooking demonstration and gourmet lunch in the field. “This interactive dining experience enables guests to get a deeper look at what they are eating, the farms in which their food is being grown, and the people behind all of it” explains Brian Hunnings, Executive Assistant Manager of the Sheraton Maui Resort & Spa. In December the resort partnered with the Maui Dragon Fruit farm and Franciscan winery for the event. “It’s not your typical experience,” continues Hunnings. “People walk away with their perspectives completely changed. They see what passion these farmers have for their crops and the chefs have for the ingredients they work with and serve. It’s a labor of love and creativity.”

In March 2015 Sheraton Maui Resort & Spa’s Table to Farm event takes guests to Island Fresh Herbs farm in Kula to see the green houses of micro greens, fields of herbs and root plants, edible flowers, citrus trees and more. From the farm the group will travel to the vineyard of Maui Wines in Ulupalakua – an area not open to the public. “Tasting dishes paired with wines right in the location they are grown and talking story with the chef and winemaker is really special. An experience not easily forgotten,” explains Hunnings. Table to farm events are scheduled throughout the year, with upcoming dates in March, May and October 2015. “Leading the way to sustainability!”

A

s the largest resort on Maui, The Westin Ka‘anapali Ocean Resort Villas (Westin KOR) may appear to have a big footprint on the island but in fact, it is one of Maui’s most environmentally conscious businesses and has been steadily reducing its energy consumption for the past five years. The resort garnered a 2013 Hawai‘i Green Business Award and Maui ‘Aipono Award for Excellence in Sustainability. Acknowledging that the resort takes its responsibilities seriously, General Manager Angela Nolan said, “Many of our guests are environmentally conscious and want to experience the culture of sustainability wherever they go. A philosophy that we try to practice year-round is ‘the small steps each of us take can make a big difference together.’ By using sustainable practices, we’ve reduced our carbon footprint about 22 percent from 2008.” Resort restaurants have been working diligently to reduce their environmental impact. They recycle cooking oil, which stays on Maui to be converted into diesel fuel, donate edible waste to local pig farms, serve takeout meals and beverages in containers made from cornstarch that quickly deconstruct in the field, and buy 90 percent of their produce from island farmers. “Our objective is to really grow and help support local farmers by purchasing Maui grown produce, serving local beef and farm fresh eggs, and utilizing fresh fish in all our venues,” remarked Francois Milliet, Executive Chef of Westin KOR. Chef Milliet, continually works on his menus to maintain the farm-to-table focus and do his part in keeping Hawai‘i

sustainable,” he explains, “We want to support our farmers because the local produce tastes better; it’s picked when ripe and brought fresh to the restaurants. The farmers raise their families here and we help encourage the next generation to stay here by sharing culinary skills and supporting educational programs.” One of the student initiatives that Chef Francois leads is the Super Chef Program, which was conceived by Starwood Hotels & Resorts. Students pick fresh ingredients from a local farm and join the chefs in the resort’s restaurant to learn how to cook what they’ve harvested into a healthy meal. The Westin KOR reinforces its commitment to environmental and community sustainability by participating in special events. A first in Hawaii, Relish Burger Bistro was introduced at The Westin Maui Resort & Spa by Starwood Hotels & Resorts. Banana Coconut Cream Pie compliments of Tomoko Nohina, Pastry Chef

Ingredients: 2 - 9" pies method : 1 - 9" pie Pastry Crème: 3 Cups Heavy Cream 5 Egg Yolks 2 Cup Sugar 1/4 Cup Cornstarch 1 Vanilla Bean Pie Crust: 8 oz. Macadamia Nut 1 Cup AP Flour 4 1/2 oz. Butter 1 Egg Yolk 1/2 tsp. Salt Filling: 4 Cups of Heavy Cream 2 Cups of Pastry Crème 4 Bananas 2 1/2 Cups Toasted Coconut Filling Method: Heat up 2½ cups of heavy cream and scrape 1 vanilla bean in a medium to large size pot. In a mixing bowl, mix 1 cup sugar and ¼ cornstarch and whisk in 5 egg yolks and ½ cup heavy cream. As cream starts to boil, temper/pour the yolk mixture from the mixing bowl into the pot. Reduce the heat and pour yolk mixture and stir constantly until the mixture is thick. Pie Crust (best to prep the day before) – AP flour, macadamia nut, salt, butter, sugar, yolk.

Pie Crust & Assembly Method:

Combine 8oz of macadamia nut and 1 cup AP flour in a food processor until finely ground. Cream the 4 ½ oz. butter with ½ cup sugar into a mixing bowl. Add 1 yolk and mix thoroughly Add nut mixture and ½ tsp salt and mix until smooth. Chill in the refrigerator for 1 hour. Remove from refrigerator and roll out onto a 9” pie shell to create the crust. Put pie crust into freezer until it is hardened (optional to leave in freezer for one day). Bake the pie crust with pie weights for 15 minutes at 350 degrees F. Remove the pie weights and continue to bake until the crust is golden brown. Fill – heavy cream, sugar, chilled 2 cups pastry cream, toasted coconut. Whip the 4 cups of heavy cream, ½ cup sugar into a mixing bowl. Add the pastry cream and whip until soft peaks. Then add the coconut and whisk mixture by hand until very stiff. Line the bottom of the pie shell with sliced bananas and spoon the filling on top of the bananas - smooth the top. Sprinkle with toasted coconut. Tip: Use apple bananas, they are much tangier. hen the first Polynesian settlers arrived on Maui’s shores well over a thousand years ago, Lahaina offered them abundant freshwater streams, verdant valleys with fertile volcanic soil, a bountiful pristine sea and warm, sunny days. Steeped in a history which documents its progress from one era to another, Lahaina has retained a flavor of each to this day. Once the Hawaiians were settled in Lahaina they established Moku‘ula, the sacred island within a fishpond, which was a royal residence for ali‘i of Maui since the 16th century. After the decisive battle of ‘Iao Valley in 1790, which resulted in unifying the Hawaiian Islands, Kamehameha I made a political move to unite himself with the women of Maui’s royal line. It is with this marriage of powerful royal lines that Lahaina became the first Capital of the Kingdom of Hawai‘i. 1819 was a pivotal year for Lahaina and the Hawaiian Kingdom. Kamehameha the Great died and was succeeded by his son, Liholiho (Kamehameha II). The first whaling ships as well as the first French warship visited Lahaina, marking a sea change in the traditions of old Hawai‘i. By 1823, Christian missionaries arrived in Lahaina, and Keopuolani (Kamehameha I’s sacred first wife) became an early convert. Kauikeaouli (Kamehameha III)

succeeded to the throne as a child and was left under the care of Regent Ka‘ahumanu (Kamehameha the Great’s second wife). The first half of the 19th century is filled with “firsts” for Hawai‘i: the peak of the whaling industry impacted Lahaina; a cornerstone was laid for the first church; Lahainaluna Mission School opened; and the first printing press was started there. Hawai‘i’s first Constitution was adopted at Lahaina and a legislative session was held in 1840. But by 1845, the Royal Court left Lahaina and moved the capital to Honolulu. In 1873, Sheriff Smith planted Lahaina’s Banyan Tree, now the largest in the US. And in 1877, the first telephone and telegraph lines in all of Hawai‘i were installed on Maui. The 20th century rooted the plantation era in Hawai‘i. In 1901, Pioneer Hotel opened and remained Lahaina’s only hotel until the early 1960s. By the 1950s, family-owned fish markets, stores and noodle shops were thriving, supplying plantation workers and visitors alike. As Hawai‘i became the 50th State, Hollywood became fascinated with Lahaina and several movies and TV shows were filmed in town. Celebrity musicians, film and TV stars are still frequently attracted to Lahaina today.

13 Limes (some juice saved for the pico de gallo) 2 Pounds of fresh fish either Mahi or Ono (preferably Ono) 2 Tomatoes 2 Cups shredded Cabbage 1/2 Red Onion 1/2 Yellow Onion 3 Serrano Chilies (1 for garnish) 1 small bunch of Cilantro 2 Avocados 4 TBSP olive oil salt pepper Tortilla Chips

Method:

Juice all 13 Limes, preserve the juice in a container. Chop Fish into small pieces until they are all roughly the same size.

Put fish in a metal or glass bowl, cover completely with lime juice, saving about 1/3 cup for the pico de gallo. Wrap bowl in Saran Wrap and refrigerate for 3-4 hours, Chop tomatoes, onions, and Serrano's (saving 1 for garnish) as small as you can (especially the Serrano's). Mince cilantro and put all the veggies into container, add remaining lime juice. Season with salt and pepper to taste (should be quite a bit as we're going to drain the juice from the pico). Chill in the refrigerator while the fish is finishing. When the fish is ready put into a mesh strainer and strain the fish from the lime juice, put fish into a bowl. Season to taste with salt and pepper Slice remaining Serrano and avocado into small slices. Put cabbage into bottom of serving bowl(s), top with the ceviche Juice and all. Top the Ceviche with the sliced avocados and Serrano Chiles. Serve with Tortilla Chips.

arm to Table is not a new concept, however it is something society has gotten away from and is something we are finally seeing a return to. People have always grown their own food and bought or traded from nearby farmers. They did this knowing the food they put on their plates and into their bodies was fresh, local, and for the most part, organic. This same food can be in transit for weeks now. With the rise of the Industrial Revolution, refrigeration and the general populous moving into more urbanized areas, food is now being transported thousands of miles and is no longer picked from the farm and served within a day or so. This has a huge impact on Hawaii. Bringing quality locally sourced ingredients back to the table proves challenging at times, conversely Pacific’O thrives on doing just that. Ocean front on a white sandy beach in Lahaina, Pacific’O was the first restaurant on Maui to endeavor operating its own farm, O’o Farm, with exclusive use for the restaurant. Our Chef is continuously inspired; poised to make original and exotic dishes, not only delicious, but nutritious. Nutrients and flavor dissipate quickly. So the longer the time between harvest and your fork, the more quality is

lost. It’s not uncommon to have our produced delivered the day it is harvested and on your plate within hours. At O’o Farm you we offer guided foot tours of our orchards and gardens, through rows of beets, heirloom carrots, radishes, pole beans, coffee trees etc… In addition to educating our guests on these tours, we often invite them to help gather or harvest our fresh produce and incorporate it into our gourmet lunch. It’s not uncommon for the aromas of our Maui grown coffee beans being freshly roasted, to make their way across the farm. We are proud to showcase our new coffee roasting facility and are now offering a “seed to cup” tour as well. In addition to farm to table fare, Pacific’O has long held a reputation for having the freshest fish around. We maintain outstanding relationships with several sports fishing boats and daily the fisherman bring in their freshly caught Mahi Mahi, Ono, Opakapaka and the occasional 200lb Tuna, in through our front doors. LOCAL CHICKS FREE RANGE, LOCAL & LOVED EGG FARM TOUR & GOURMET LUNCH IN LAHAINA In a unique to Maui experience, visit a working egg farm and meet our chicks on the beautiful plateau of Launiupoko with outstanding views of the ocean expanse. First, you will delve into a sense of place, learning about the history of the region beginning with the arrival of Polynesians and Hawaiian ways of life, the era of sugar production, and now, to a modern day agricultural zone. Discover where eggs come from and experience healthy, happy chickens firsthand as a fun learning experience, or for inspiration in creating your own chicken coop at home. In a “managed free range” system, our chickens behave just like chickens naturally do, roosting, brooding, and munching on fresh bugs and grass amidst fruit tress and diverse vegetation such as mangoes, papayas, bananas, acerola cherry trees, grapefruits, and starfruits. You will even use an antique machine from the plantation era to grind up buffalo grass and feed the chickens! Children are most welcome and we often have baby chicks that are a delight to cuddle! The tour will be followed by a gourmet lunch featuring these delicious and local eggs, at the seaside restaurant of Pacific’O in Lahaina. Taste eggs like you have never tasted them before! aleakalā, “House of the Sun”, is a dormant volcano and the tallest peak is 10,023 feet. Haleakala holds a sacred place in Hawaiian history and became part of the Hawaii National Park in 1916, branching into it's own park in 1961. The Hawaiian people sought the isolation of Haleakalā for ceremonial purposes, instruction and personal reasons. There is a wide spectrum of native island ecosystems which is protected and preserved by the national park system. The park includes Kipahulu Valley on the south east and Ohe‘o Gulch. There are two main trails leading into Haleakala: Sliding Sands Trail and Halemau‘u Trail.

Ocean Vodka Organic Farm and Distillery’s grounds feature a visitor center, organic farm and craft distillery and was established in 2013 however the vodka has been on the market since 2005. Your guide will escort you through carefully tended sugar cane fields, pointing out the colorful varieties of Hawaiian cane, and manicured gardens around the distillery, while delving into the topics of land and water conservation, biodynamic farming and green manufacturing. 1/2 Tbl. Micro Herbs 1 Pinch Salt Peel mango cut in half around pit. Take half and slice it into approximately 10-12 very thin slices Curl inside a 3 inch ring mold forming a pinwheel. Place a spatula below it and place in in the center of a plate. Take lobster, haricot verts,hearts of palm, maui onions, tomatoes, avacado and passion fruit vinaigrette place in a stainless steel bowl. Season with salt and fresh ground pepper, gently toss. Place half of salad in the center of each pinwheel, gently press to compact the salad between the mango ring. Remove the ring molds from the outside of your mango, should stand on their own. Fry Molokai potato shreds till they stop bubbling remove from fryer. Season w/ salt. Drain & place on top of the lobster salad, top with micro greens. Drizzle with passion vinaigrette, vanilla oil and the Asian green oil. ENJOY!!

“You can hear past echos of Hawaiian fishing villages from the shores of Ma‘a‘lea Bay to the beaches of Makena......”

ost of south Maui’s history lies along its coastline. From the shores of Ma‘a‘laea Bay to the beaches of Makena are heard past echoes of Hawaiian fishing villages, busy harbors, sugar plantations, WWII military exercises and cattle ranching Captain George Vancouver set anchor in Ma‘alaea in 1793 and is best known for his numerous, but unsuccessful attempts to bring peace between Kings Kamehameha of Hawaii and Ka‘hekili of Maui. On the way to Kihei, is the Kealia National Wildlife Refuge boardwalk on North Kihei road, Hwy. 310. Large sea turtles use the area to cross the road to the pond to lay their eggs. At the Kihei Memorial Beach is the historic Kihei Landing, where a 200 foot wharf, used for many years by interisland boats shipping freight and produce. Due to increases in sand accumulation, it became impossible for the larger sea vessels to reach the wharf, usage stopped around 1915. As early as the 1800’s, before the southern slopes of Haleakala became farm and ranch land, the southern coast of Maui is said to have been lush rainforest, with coconut and Kou trees, taro and ‘ape, clear water pools found at the end of freshwater streams. The continued deforestation, erosion and atmospheric changes in rainfall averaging only 13 inches annual, led to the

dry landscapes of Kihei, Wailea and Makena. Kama‘ole I, II and III Beaches are great picnic areas. You can still see remnants of concrete bunkers, left when the beaches and land parcels on the coastline were confiscated by the government during WWII for military training exercises. Charley Young Beach, aka The Cover, was named after a military reporter named Charley Young who purchased property in the Kama’ole area just before WWII. The “Cove” is a favorite spot for novice surfers and when tide is out, it is wonderfully shallow for kids and adults! The original Kihei Boat ramp was located here but closed in 1983. Kama‘ole I, II and III Beaches are great picnic areas. You can still see remnants of concrete bunkers, left when the beaches and land parcels on the coastline were confiscated by the government during WWII for military training exercises. The beaches of Ma‘a‘laea, Kihei, Wailea and Makena became mock "enemy beachheads", complete with demolition and reconnaissance. South of the Boat Ramp, Keawekapu Beach begins. MAUI THAI BISTRO “Paradise-Inspired Thai Cuisine”

Few would argue that the singlemost important event in the history of food is the discovery of America. What followed that has come to be known as the Columbian Exchange (CE). Prior to CE, there was no tomato in Spanish or Italian cuisine, no beef or banana in the New World, no pineapple in Hawaii, and no chili pepper in the Thai cuisine. Since spiciness is a point of pride among many Thai food aficionados, we asked Chit Tharnthong, co-owner of the popular new South Maui hotspot, Maui Thai Bistro, to provide the context for the growing popularity of Thai cuisine. by Chit Tharnthong

y implication, a gauntlet has been thrown down to all Thai restaurant owners to be more true to their roots and, by extension, a similar challenge is being proffered to all the pad Thai aficionados out there to venture beyond their gastronomic comfort zone! What makes all this amazing is that, 500 years after Vasco da Gama brought home the first tropical spices, there is so much "ethnic" food that remains undiscovered that it takes pioneers like Andy Ricker (James Beard winner) and David Thompson (highest-rated Thai restaurant in the world) to take our hands and guide us through it all. The bicoastal success of Pok Pok is astounding and, at the same time, well-deserved. It is a sign of supreme confidence and sure-handedness that, in his best-selling book - Pok Pok : food and stories from the streets, homes, and roadside restaurants of Thailand - he talks about the concepts of authenticity and (cooking) tradition as absurd ideas in the context of Thai food; like him, we find ourselves on the receiving end of some misguided indignation that the food at our restaurant - Maui Thai Bistro - is not authentic simply because it isn't spicy enough. Allow me to make the following points: Nearly 100% of Thai cuisine is derivative! There is India which exerts its influence through both Burma to the west as well as Malacca, the erstwhile Portuguese outpost, to the South and China, or more specifically Yunnan to the north, and then there is also the long entanglement between the Siamese Empire and its progenitor state, the Khmer Empire. All influences to the good! But, as with the culture that contains it,

the Thai cuisine is a living, and breathing, thing - more evolved and evolving than a few of our customers appear to be! This last point is particularly relevant for us here in Maui, where Chef Prakong's unending innovation rules the day (a culture that Barcelonian foodies call "innovación sin fin"). The two major innovation milestones in Thai cuisine are: one, the advent of chili peppers in the late 18th century (from the New World, courtesy of the Portuguese), and two, the invention and subsequent proliferation of high BTU (>100,000) gas stoves (as children we were pressed into kitchen duty, invariably with the task of regulating the heat from the charcoal stoves - what a pain that used to be!). For those of you who are intimately involved in the preparation of Thai food, you will instantly recognize the truth of the next statement - Texture - the Final Frontier in Thai Cuisine! Dramatics aside, centuries of fighting epidemics of one kind or another has left its mark on one of the world's most interesting cuisines: the habitual overcooking of all proteins! At our restaurant today, Chef Prakong is busily adapting her heirloom and island recipes to work with modernist cooking methods. By July of this year, it is expected that a full two-thirds of her kitchen's protein output will be based on the Sous Vide method of cooking. “So, come and visit us in July. Happy Birthday 2015 for 5 Palms

“Chef George is back and creating more delectable dishes with 5 Palms new Maui Coastal Cuisine......”

T

he 5 Palms was named for the original five partners, not trees. Many people count the many palm trees and wonder... Owner Simon Vojdani has been the quiet, continuing force in tight management improvements and expansion since 1995. Before purchasing 5 Palms, he worked his way from a dishwasher to President of the Specialty Restaurant Corporation, based in Orange County, CA. During his reign (1969-1995), he operated 92 restaurants nationwide. Vojdani put himself through college as an ESL immigrant, achieving his Master's in Engineering at UC Berkeley. Over his 45 years in the restaurant industry, he has worked in every single position in a fine dining restaurant. Simon and his wife Victoria met at the former Castaway Restaurant in Oakland, CA in 1977. He was the manager, she was the bartender... a restaurant family from the start. Their early family history includes Stephanie, 14 years old when they first took over Five Palms Beach Grill. Zack was too young to be employed, he was only 10, but he had the noble duty of lighting the candles on all the tables, always complaining that he was never compensated for his strenuous job. Stephanie recalls her mother asking him what he wanted to be when he grew up. He replied sarcastically, "Paid!” Stephanie worked as a hostess while attending high school at Seabury Hall. Back then, they used to do their homework in the back office and usually have a family dinner together once the guests were gone. Mother Victoria is the one getting updated restaurant information out to the community with personal visits to all the hotels and condos. She is part Hawaiian on her Grandmother's side (who was born on Molokai). Her great, great uncle was Bishop Stephen Alencastre of Hawaii from 1924-1940 (last Vicar Apostolic of the Hawaiian Islands). Daughter Stephanie is the Marketing Director and in charge of advertising, PR and media. She handles all of the restaurant's email, website and online customer service. She is also one of the Managers of 5 Palms. She graduated from UH Manoa with a BA in Psychology before

attending Gros Bonnet Culinary Academy where she became a Pastry Chef. While in Honolulu, Stephanie was stagiaire to Chef Cainan Sabey of Stage restaurant and managed large catering events. The deli at the Mana Kai is Zack's namesake. He is also the Front of House Supervisor for 5 Palms and is now happily being paid. He achieved a Bachelor's in Film from UNLV before returning to Maui. He still partakes in screenwriting on the side where he receives yearly awards from various film festivals across the country. Zack and Stephanie both went off-island to attend college but ended up right back home where they started in this family business, the 5 Palms Restaurant. Award-winning Chef and local culinary legend, George Gomes, Jr. has returned to Maui as the new Corporate Chef for 5 Palms. He is taking the restaurant's cuisine to a whole new level, working his culinary magic yet again with the birth of his exclusive "Maui Coastal Cuisine", which highlights a plethora of fresh, local farm-to-table and ocean-totable ingredients. His passion and creativity in the kitchen is positively invigorating as well as inspirational. The family considers George the new “heart and soul” of the 5 Palms restaurant Ohana and couldn't be happier to have him. George Gomes was Corporate Chef of the former “A Pacific Café” as well as the Tri-Star Group known for Sarento’s on the Beach, Nick’s Fishmarket and SON’Z at Swan Court. “You can hear past echos of Hawaiian fishing villages from the shores of Ma‘a‘lea Bay to the beaches of Makena....”

efore there was water, there was nothing but kiawe trees, shrubs and cactus where Wailea now stands. But there were beaches! South Kihei Road merged into Makena Road, all a part of the original King’s Highway, or Alaloa, built in the 1500’s to encircle the entire island of Maui. Alexander and Baldwin purchased the 1,500 acres of former Ulupalakua grazing land in the late 1960’s. With water on its way from Central Maui, The Wailea Development Co., created in 1971, began to turn this desert land back into the lush, tropical paradise of yester-year with first-class luxury vacation resorts. South Kihei to Makena Road was cut short and removed to accommodate the development resuming further down the coastline. The first Wailea Resort to open its doors was the Maui Intercontinental Wailea Resort in 1976. With the development of Wailea came the Wailea Shopping Village, completed in the mid 70’s. This quaint little shopping center was home to about 27 merchants and eventually sold to Japanese investors, torn down in 1998 and replaced with the Shops of Wailea, which reopened in 2000.

Wailea is home to a two-mile stretch of shoreline starting with Mokapu Beach, fronting what used to be Stouffers Resort. Ulua Beach Park, a nice little snorkeling spot fronts the Wailea Beach Marriott. Over the years, all of the large resort hotels have changed ownership and names. Separated by Wailea Point is Polo Beach,. This where Wailea ends and Makena begins. South of Polo Beach lies Palauea Beach accessible only by walking or north of Po’olenalena Beach. Built in the 1800’s, Makena Landing was one of the busiest ports on Maui and serviced the Makee sugar plantation. After prolonged draught closed the plantation in 1879, it became Ulupalakua Ranch and Makena Landing gained prominence, transporting cattle on interisland steamers. Makena village had a thriving population, but the mid-1920’s brought an end to interisland steamers and caused a steep decline in the population. Oneloa Beach, known as Big Beach or Makena Beach, is a very long and wide stretch of beach and is great for swimming and snorkeling, Please be careful of it's rough shorebreak.

hristine Halton’s eclectic and finely tuned style of expression has found a home in Maui. Uncontained, her work has evolved from wood burned oils on local hardwood veneers to layers of paper, oils and gouache on canvas. Joelle C. Gallery oëlle C. Gallery opened in 2003, but the artist whose paintings are showcased in this gallery remembers her interest in art since childhood.

Born in Paris, Joëlle Chicheportiche Perz acquired her Fine Art and Art History education at the University of Aix-en Provence. She left France to study mural painting in Mexico where she won her first major award: First price at the International Year of the Woman in 1975. She went on to study printmaking in San Francisco learning the techniques of lithography, aquatints and etchings. It was on a vacation to Maui in 1982 that she finally settled for a place to live and create art. "What I am looking for is simplicity," she says, "the balance and the peace of mind that enable me to do my art, express my passion for life, and create a little more happiness in the world. I love when people tell me they find healing in my work." 90 MENU | MENU-MAGAZINE.COM

Since then, living close to the nature she loves, her paintings reflect an intimate joy for light and a poetic approach to reality. On her journey to deepen her knowledge of visual literacy, she has acquired an exceptional ability to use colors and developed her own and unique technique: painting on carved wood, achieving artwork of incomparable beauty and distinction.

Joëlle C. Gallery several years ago and her husband, Oliver Perz gave up mechanical engineering to manage her career and transform the two acres of their Kula home into gardens from which she draws a lot of her inspiration.

As a result, this is what the Maui News had to say about her work: "When it comes to style, labels and categorizations simply slide off her shoulders and a unique blend of tradition and creativity comes to mind. She is free to produce the most expressive, refined statement with the delicate touch of a master, giving the viewer a fundamental feeling of peace"

Joëlle C. Gallery has recently moved to an elegant space, completely remodeled and designed by the artist. Along with a large collection of Joëlle's original work and reproductions, when strolling through the gallery you will enjoy the quality of fine handmade craft by local artists. Everything is carefully selected by the artist and her sister, Monique, the gallery director, a personable and petite Parisian with a strong French accent who has many stories to tell about her sister's art.

he regions of Earth that lie within approximately 1,600 miles north and south of the Equator are known as “the tropics.” In the northern hemisphere, we have the Tropic of Cancer to define the northernmost boundary, while the Tropic of Capricorn delineates the southern hemisphere’s boundary. The Hawaiian Islands lie just south of the northern edge of the Tropic of Cancer at an average of 21º north latitude. Since the sun shines directly overhead in the tropics and is particularly strong in the summer, producing higher temperatures with its direct rays, your skin is more prone to sunburn. Although humans come with a built-in sun protection, melanocyte cells, which produce the skin darkening substance called melanin, it’s usually not enough armor to combat prolonged exposure to the sun’s rays.

Over exposure to UV rays can hurry along premature aging of the skin. These rays penetrate deep into the skin, dehydrating it and damaging tissues. These days, with global warming coming into play, the best thing you can do for your skin is to always wear sunblock making sure that they have UVA and UVB protection. Don’t be deceived by clouds overhead as they let UV rays come through to the earth, although not felt as heat. These rays can penetrate water down to three feet. And don‘t forget about water! Drinking water throughout the day not only replenishes moisture lost from heat and perspiration, but also helps to flush toxins out of the body and keep skin glowing.

In this article I want to share my top 6 favorite “Hawaiian Canoe Plants”, their health benefits, how you can find them not only as favorite ingredients for upscale local chefs’ meal recipes or health food stores shelves but also in Maui spa’s beauty and wellness therapies. ‘AWA (Kava) is used as a sacred plant for prayer, as well as appreciated for pleasure in the south Pacific Islands. `Awa is used principally as a sedative to induce relaxation and sleep, especially when combined with lomi lomi massage. It has calming, soothing properties and can be used to treat headaches, muscle pains and to relieve insomnia. `AWAPUHI (Ginger) the most common use of `awapuhi kuahiwi is as a shampoo and conditioner for the hair. The clear slimy and sudsy juice present in the mature flower heads is excellent for softening and brings shine to the hair. The sudsy juice is excellent for massage, too. KALO (Taro) is believed to have the greatest life force of all foods. Kalo and poi (pounded kalo) are a means of survival for the Hawai`i people. The single most important plant in Hawaiian culture, taro leaves are used to treat asthma, pain and swelling from insect bites, relieve indigestion, and help stop bleeding. You can find Taro Skin Soother after-sun and vitamin-boosting ritual in Maui spas. NIU (Coconut) is probably the most easily recognized and best tropical fruit in the world. I am told that the most pure water on earth is from this nut. Medicinally, coconut can help with ingestion, improve cholesterol, reduce appetite and other

therapeutic benefits. Coconut oil is used in almost every Maui spa as a skin moisturizer and can protect against hair damage. It can also be used as a mild form of sunscreen and as mouthwash. NONI (Indian Mulberry). The leaves of the noni plant are known to relieve gout pain and act as a tonic and as a healer of wounds. And from the fruit you can find amazing healing sunburn spa treatments. I will warn you to be prepared for a pungent scent and taste but what a miracle plant! A blend of Hawaiian noni fruit nectar with aloe vera gel; apply it gently to the body with ti leaves making it the best spa treatment to soothe and relieve sunburned skin. KUKUI (candlenut) Originally it was most valued for its use in stone lamps and in ti leaf sheath torches. The nuts are widely used as a traditional lei, both the hard shells of the polished black, tan or brown, and immature white, which are more rare. The parts of this tree are used as a laxative, while the leaves are used to relieve swelling from bruises. The kukui nut oil penetrates the skin and hair, replacing lost moisture, while smoothing, protecting and adding incredible shine! These and many other plants were used for centuries of self-sufficiency. The 6 Healing "Canoe Plants" that I wrote about today were those that interested me most. r. Stolley, what do you recommend your patients do while they are on Maui so they can look the most rejuvenated by the time they return home? That's a great question Jo Anne. In my experience, the fastest way for my patients to look their best with little to no downtime is to use a combination of BOTOX and fillers such as Juvederm. With these two treatments we can relax away and fill-in years of lines and wrinkles, all in approximately 30 minutes. It is quite amazing. But for those who want to maximize their skin rejuvenation and youthful appearance, we recommend combining BOTOX and fillers with Light and Laser treatments. The Ulthera Treatment is a perfect option as it tightens 104

Well, every patient is offered a complimentary cosmetic consultation to determine what is best for their specific needs. That way we can customize a cosmetic treatment package best suited for them. Can you give me some examples of how you might use specific treatments or products to help your patients look their best? Sure Jo Anne, for example, if someone has action lines such as squint lines, frown lines (The Elevens), horizontal forehead lines, etc, we most often use BOTOX to relax away the wrinkles. If our patient needs a lift but does not want the risk, cost or downtime associated with surgery, they may be a good candidate for a Liquid Lift. This is a technique I do regularly in which I use fillers such as Artefill, Juvederm, Radiesse, Restylane and Perlane to lift and re-volumize the face as well as fill in individual lines and wrinkles. Juvederm can also be used

to re-volumize and enhance the lips. If our patients need to rejuvenate entire areas such as the face, neck, chest and/or hands, we often perform light and laser treatments. Our most popular treatments include Ultherapy to tighten and lift, IPL (Photofacial) to treat brown spots and blood vessels, the Palomar 1540 to improve texture with limited downtime, and of course the Lumenis FX fractional CO2 laser to improve texture, tone and tightening all with one treatment. The FX can take 5-10 years off of your appearance in less than 1 hour, but you will need a little time for the skin to heal. Wow, that makes a lot of sense. So Dr. Stolley, is there anything new that we should know about? Absolutely, coolsculpting by zeltiq is a novel way to reduce stubborn areas of fat using controlled cooling. After an hour treatment, on average, our patients will see a 20-25% reduction in fat in the treated area. And then there is thermirf or thermitight. This device uses a small probe we place under the skin to create controlled heating to dramatically tighten the skin. We use it often in the lower face and neck regions, but it can also be used in other body areas to achieve impressive skin tightening. This procedure produces more skin tightening then any other treatment that i've seen in my years in this field of medicine.
