What inspired you to foray into the world of wellness?

My late mother paved this path for me. She suffered from skin problems for more than a decade and it was her wish for me to create safe and natural skincare products.

How has Vilvah's popularity as a brand grown over the years?

It was word of mouth initially and we didn't spend any money in the first few years. People genuinely loved our products and social media helped us to spread information about what our brand really is. As a result, we garnered

a good audience organically. Now, we have a loyal customer base and that is our power.

What are a few things that we would always find in your carryon luggage?

I am a light traveller and prefer to keep it simple. For me a few travel essentials are body wash, shampoo, hair serum and body yoghurt.

Could you share with us a few skincare tips that are easy to follow whilst travelling?

Hydrate well, hydration is key for good,

clear skin. Also, don't forget to carry your sunscreen and cleanse your face at night.

What's next for Vilvah?

We want to be known as a milkbased skin and hair care brand. So, based on that we are expanding our milk range series.

SIKKIM'S PAKYONG AIRPORT RESUMES FLIGHT SERVICES

FLIGHT SERVICES AT the Pakyong airport in Sikkim resumed on Tuesday 14 March 2023 as a Spicejet plane took off for Delhi, officials said. e flight services at the airport were suspended in October 2022 due to operational difficulties, they said. e suspension of services inconvenienced people of the state, besides adversely affecting the tourism industry of Sikkim, they added. e Spicejet flight landed at the Pakyong airport with 12 passengers and then took off for Delhi with 43 passengers. Regular flight services started on March 26, 2023, with a daily flight to Delhi for now.

AIR INDIA RE-LAUNCHES NON-STOP FLIGHT SERVICE BETWEEN DELHI AND COPENHAGEN

SPREADING WINGS TO further expand its global reach, Air India resumed its non-stop service on the Delhi-Copenhagen-Delhi sector from March 1, 2023. Air India Flight AI157 now operates on Wednesdays, Fridays, and Sundays from Delhi, taking o at 1330 Hrs and arriving in Copenhagen at 1750 Hrs (local time). e CPH-DEL flight AI158 will depart at 1950 Hrs (local time) and arrive in Delhi at 0740 Hrs, the next day (local time). e flight will be operated by Air India’s state-of-the-art Boeing 787-8 Dreamliner aircra , featuring a two-class cabin configuration, comprising 18 business class and 236 economy class seats. Sustainability, a word so small but with an impact so large. Our increasing and inefficient use of our resources is leading to major concerns, many of which are still le unaccounted for. Across industries, we are consuming and depleting resources on a scale larger than what we can afford. For maintaining a high quality of life and a healthy ecosystem, sustainable measures have to be implemented in every sector. Small steps taken timely will lead to bigger and better achievements. Sustainable measures are two important keywords used across sectors. In order to sustain, there needs to be an effective control on wastage. While wastage can be divided into various verticals, the food industry in particular leads the chart. For the past two decades, the food and beverage industry has witnessed a healthy growth and is expected to grow further by an exponential percentage. Food trends, out-of-home dining culture, tourism growth are a few factors which are aiding the growth of the sector. e rapid growth has also brought

tonnes of waste each year, impacting the entire cycle. e total cost of wastage that the industry accounts for is irreversible. Minimising wastage along with its impact on the environment is what sustainability is all about. Many hotel chains and standalone restaurants have started adopting sustainable practices. e action plan focuses on a system of avoidance, reduction, reuse, recycling and disposal or treatment. While it may seem like a piece of cake, in actuality it is an arduous ordeal. e restaurant industry has great potential for saving however, inadequate estimation of diners and volume control are major contributors to derailing any kind of advancement towards wastage control. Wasted food means loss of revenue. High losses are a threat to jobs. It is a vicious

cycle, interlinked with each other, yet if the right systems are implemented, the restaurant industry can be the flag bearers of the zero waste movement.

Food wastage is not only limited to the scraps off the plate, or the remaining food le unconsumed. It all starts from the packaging in which the raw produce is shipped, the vegetable peels that are thrown away without a second thought and the resources used till the dish is plated and served. More and more chefs are changing the ethos of how restaurants function and how food is prepared. From raw produce to the distance between the restaurant and the farm, green initiatives are being implemented for a better tomorrow. Many restaurants along with chefs prefer to work directly with the farmers. is leads to better produce, no middlemen, support of local farmers and better control in reducing the carbon footprint.

Concepts like farm-to-fork, hydroponics etc are a lead-up to sustainable practices. Many restaurants and hotels which have the advantage of space prefer to have their own vegetable gardens. is serves not only as a positive story to highlight amongst their guests and loyal customers but is also a great step in the right direction. Many restaurants across the world are completely moving to sustainable measures. Sourcing their own produce, reusing kitchen waste in various ways, dehydrating produce for later usage, avoiding processed meat and using highquality organic ingredients are a few factors these restaurants are operating on.

While it’s not easy to operate on such levels and maintain the consistency of their offerings day a er day, customers are welcoming such concepts with an open mind. Many customers don’t mind paying a higher percentage for sustainable measures.

e restaurant industry is primarily working on three principles- reduce, reuse and recycle. Ordering of raw produce is limited to the number of diners expected. Existing inventory is organised keeping in mind existing stocks while labelling as per shelf life. Kitchen waste is reused or composted which in turn is outsourced to NGOs for gardening purposes or is used directly on location for sustaining in-house vegetable gardens. Many chefs have taken a creative approach towards reusing vegetable peels, stalks etc. ese are used in stocks for added flavour, used as a garnish, converted into essence, pickled or fermented for later usage.

More and more chefs are riding the wave of social media trends and innovation while showcasing their culinary strengths and also highlighting similar causes.

glass bottles and jars are reused as storage containers etc. More and more hotels and restaurants are discarding single-use items and switching to alternate solutions. All plastic straws, paper cups, take away containers are huge contributors to plastic waste. For takeaways, many restaurants offer takeaway food in Styrofoam boxes. ese containers are a hazard to the environment since the material can’t be recycled and takes years to break down. ere are many biodegradable options which serve as a good solution to such concerns. Chefs are incorporating sustainable cooking in their day-to-day operations while some are actively promoting via pop-ups and strategic promotions. is is a great way of amplifying the message to consumers while also educating them about the changes we as individuals need to incorporate into our daily lives. In restaurants, there might not be any effective measure to control the quantity of food to be prepared but many restaurants offer food to their staff or encourage diners to pack their le over meals. Many have audits in place with wastage quantities being monitored daily. Restaurants and hotels with employee cafeterias also have the huge task of controlling wastage. Employees are encouraged to avoid discarding food and exercise portion control. In a world which has moved away from hardbound menus to touchless menus, has served as a boon as far as the environment is concerned. Restaurants change their menus at least twice a year which can also increase depending on special promotions and offers. Menus are generally presented in plastic and acrylic sheets which are contributors to restaurant waste. Today, touchless menus not only bring down the impact on the

produce and giving a chance to local farmers to sustain and thrive. If all such measures continue to grow in the right direction, the environment will have a significant impact. With the right kind of resources as well as using renewable energy resources, the industry will help promote a sustainable food system. Added to that, these measures will directly enhance cost savings. With such practices, restaurants will firstly attract goodwill and secondly, an increase in the consumer base who will be willing to pay a higher amount in return for the sustainable options being promoted. Not to mention, the reduced costs of energy and wastage. While there is much to be done and a long way ahead, with the kind of practices being incorporated and more and more consumers becoming aware, the restaurant industry has the potential to become more sustainable. On the brighter side, the advancements in technology have made it easier for restaurants to incorporate sustainable measures and also measure the impact they are making in daily operations.

Franciacorta: e Italian wine that should be on your radar and in your glass

It was a beautiful April evening in Hong Kong and we were on the 32nd floor, surrounded by glitzy skyscrapers, replete with gleaming lights. A few of us friends had gathered to celebrate the momentous occasion of our 40-something friend going back to university soon. It was a bittersweet moment, as every farewell tends to be. Toasts were said and as I took my first sip, and tipped my head a little backwards to glance at a luminous sky spangled with tiny stars, I could feel the same sky burst ceremoniously into my mouth. Silky smooth and luscious, with the finest of bubbles, it filled me with aromas of peach, lemon and apricot with a lingering whisper of freshly baked brioche.

We were drinking Ca’ del Bosco’s Franciacorta Satèn - a very special Italian wine for a very special occasion. at evening, the setting and essentially that wine stayed with me for a long, long time. But what is a Satèn? And most importantly, Franciacorta? And, why don’t we hear of it that o en, if it happens to be that good?

FRANCIACORTA - THE WINE AND THE PLACE

One of Italy’s best-kept secrets and its answer to Champagne, are the sparkling wines from Lombardy in northern Italy, nestled in the picturesque foothills of the Alps. is small DOCG wine area is where some of the most revered bubblies are made. Franciacorta, pronounced ‘francha-corta’ is made in this region in the traditional or metodo classico method using Chardonnay, Pinot Nero, and Pinot Bianco grapes. Exports make up a small percentage of nearly 10 per cent of Franciacorta’s sales, hence the element of mystery still hangs on, adding a certain allure to these wines. Franciacorta is known and appreciated in certain markets like the UK, Japan, USA and northern Europe and the sparkling wines from Bellavista are available in India, courtesy of the Brindco Group.

VISITING FRANCIACORTA

Franciacorta, in the province of Brescia, not far from Milan, stretches for over 200 kilometres and is characterised by gently rolling hills covered in vineyards. Holidays there could be ideal as a slow travel base with winery visits, biking and culinary experiences. Founded in 2000, the Strada del Franciacorta Association aims to promote the tourist potential of Franciacorta, in particular those related to food and wine.

A LITTLE DEEP DIVE

e grapes of Franciacorta, essentially Chardonnay, Pinot Bianco, Pinot Nero and Erbamat (since 2019) thrive in the mineral-rich, glacially served soils. But what makes them truly unique is the proximity to Lake Iseo whose waters provide a microclimate that is excellent for these grapes to retain their bright acidity. e Franciacorta Consorzio (the regional wine organisation) and several leading producers have been extolling the virtues of the native grape, Erbamat. is late-ripening variety delivers higher acidity levels and is still being decoded by wine gurus. Franciacorta Satèn is one of the best expressions of Franciacorta DOCG wine and is only made from white grapes, namely chardonnay and pinot bianco. Comparatively, it has a lower pressure in the bottle (4.5 atmospheric pressure instead of the standard 6), and hence is smoother and silkier like its name.

CORTE FUSIA

glorious Royal Parkland and the buzz of central Knightsbridge, Mandarin Oriental Hyde Park, London was re-imagined and re-invented as part of the hotel’s largest renovation in its 120-year history back in 2019. Internationally-renowned designer Joyce Wang, oversaw the new design of all the rooms, suites and public areas, inspired by the natural beauty of neighbouring Hyde Park and the glamour of the 20th century Golden Age of travel.

cocktails. I enjoyed a hearty breakfast consisting of waffles with maple syrup, fresh cut fruits and a cup of comforting hot chocolate.

MEETINGS There are five versatile meeting and event rooms at the hotel, all boasting natural daylight for up to 650 guests. The Ballroom has its own terrace, 24-carat gilding and floor-to-ceiling windows offering views over Hyde Park. For those looking to host their wedding at the dreamy property, the hotel offers a dedicated wedding coordinator.

IT LIKE

Upon entering the property I was taken aback by the grandeur and intricacies of the building's architecture. There was an aura of tranquility that enveloped me during my stay at the property due to the spectacular views of the iconic Hyde Park. The luxury property features 141 spacious guest rooms and 40 luxurious suites.

WHERE IS IT The hotel is located in the heart of Knightsbridge and on the edge of Hyde Park. With over 120-years of exciting history, the main entrance of the hotel had to be moved from the park side to the Knightsbridge side His Majesty, King George V refused to allow any advertising, including the large gilt lettering of the hotel’s name, overlooking the park.

ROOMS All guest rooms and suites

either look onto Knightsbridge, the hotel's beautiful indoor courtyard, or directly on to the verdant Hyde Park. I had the pleasure of staying in the Mandarin Oriental Penthouse. The beautiful penthouse features luxurious silk wall coverings, bespoke furnishings and hand-made nature-inspired artwork, accommodation includes two salons, both with chandeliers and dining tables for eight, and two fully equipped kitchens. Unfortunately, I couldn't step out onto my private terrace since the weather was extremely cold. However, I thoroughly enjoyed the panoramic views of Hyde Park and the sophisticated full-height libraries that allowed me the chance to unwind after a long day of meetings with one the hotel's hand-selected books .

FOOD AND DRINK The hotel is home to three impressive restaurants, one of them being Dinner by renowned chef Heston Blumenthal. The restaurant is one of the world’s most celebrated restaurants and holder of two Michelin stars. For those who wish to experience a quintessential English Afternoon Tea, I would recommend a visit to The Rosebery, which is also popular for its all-day dining options and champagne

LEISURE The Spa at Mandarin Oriental, London was redesigned back in 2018, by New York designer Adam D. Tihany. There are 13 treatment rooms including an Oriental Suite for couples with a Rasul water temple are offered. Heat and Water Oasis includes a Sauna, Amethyst Crystal Steam Room, Vitality Pool and Zen Colour Therapy Relaxation Area. For those who wish to not miss their workouts whilst travelling the hotel features a 24-hour stateof-the-art fitness centre.

VERDICT During my stay it became very evident how and why the Mandarin Oriental Hyde Park, London is renowned globally for being one the top luxury hotels. A delightful amalgamation of history, contemporary design, luxurious amenities make a stay at the property a highly memorable one.

I am reminded of a recent letter that I received from one of our regular guests who had made a reservation for his parents to be able to celebrate their 50th wedding anniversary with us at our hotel. The usual expectation of a welcome by a butler with flowers and champagne was obviously met but to my utter surprise, the letter captured the experiences our three butlers had put together for this special day. They created a treasure hunt in the room with memory cards of the couple from their journey over the last 50 years. This was then topped by bringing in live Indian instrumental music the next evening for them at sunset and in the final evening: the team curated an internet video-based celebration as a surprise for the elderly couple with their children and grandchildren joining in from Toronto. Yes, the technology is available and so are the printers and paper but unless the team is led with a passion to curate such moments and is empowered to make such decisions and spend reasonable money: no incredible feat may ever be achieved. I summarise my 20 years of leadership by saying “A motivated and empowered team will always perform better than just a well-trained and clinical team. BTI
