Meera Dureja, Founder and Creative Director of Banjaaran Studio, shares her insights with Business Traveller India on the art of shoe design, entrepreneurship, her inspirations, and the rich tapestry of Indian craftsmanship that weaves through her innovative creations. Can you share more about your initial experiences in the craft cluster and how they influenced your perspective on design, human needs, and ecological balance?

Craft clusters typically consist of small communities engaging in traditional handicrafts that historically served as expressions of identity, reflecting religious beliefs, personal experiences, and community lineage. This junction embodies the intersection of art passed down through generations and the contemporary utilisation of these crafts. My experience with craft clusters revealed the inclusive nature of design which transcends societal classes and is deeply woven into our culture. Formal training isn't a prerequisite for understanding design; it's an inherent part of our being. When an artisan in a remote village selects harmonious traditional colours or creates small drawings and prototypes, their contribution is as significant as designs crafted within large corporate teams. Another pivotal lesson I learned was that traditionally these clusters prioritise environmental impact, historically favouring sustainable materials in our handicraft industry. However, with the advent of urbanisation and commercialisation, there's been a rise in the use of synthetic materials in many processes.

How did your time as a teacher, particularly working with women inmates at Tihar, shape your approach to design and resource utilisation? Working at Tihar is one of my most cherished memories and it revolves around celebrating my birthday there.

Despite the inmates not having access to a functional kitchen, they ingeniously crafted a delightful cake and snacks for me using raw materials on hand, showcasing their resourcefulness within limited means. This experience profoundly impacted me, inadvertently shaping a fundamental design principle: the ability to create meaningfully even in times of scarcity. It highlighted the power of resourcefulness and ingenuity as well as the therapeutic value of creative processes in high-stress environments which add to improving mental health. Teaching basic sketching and illustrating skills to the inmates proved incredibly rewarding, enabling them to channel their energy into something productive.

What inspired the founding of Banjaaran Studio, and how does it reflect your vision for unique, wearable art?

My journey into shoe design and the inception of Banjaaran Studio unfolded organically. Without formal training in footwear design, my passion led me to immerse myself in the world of traditional artisans. I sought guidance from skilled craftsmen in local workshops and factories once I realised my aspiration to pursue this craft. Seven years ago, I wandered the lanes of old Delhi with a shoe sketch in hand, on a quest to find a leather worker who could transform my design into a wearable product. Little did I anticipate the profound experience that awaited me – witnessing my vision materialise in the practised hands of a 55-year-old shoe artisan. This moment marked my true initiation into the euphoria of product design and laid the cornerstone of Banjaaran Studio, marking

a pivotal moment in my personal as well as professional creative journey.

As the sole Indian label featured in the Virtual Shoe Museum, how do you see your role in promoting Indian craftsmanship globally?

Our mission is to redefine Indian footwear design by creating exceptional, handcrafted shoes that encapsulate the pride of India and gain the recognition our craftsmanship deserves. In our culture, feet hold immense symbolic significance, revered for their connection to the divine earth. This goes beyond just making shoes; it's about supporting marginalised artisans and preserving long-standing traditions. Regrettably, the art of crafting handmade footwear is dwindling, overshadowed by the rapid influx of fast fashion and machine-made goods, stripping livelihoods from communities deeply rooted in shoemaking.

How do you balance timeless aesthetics with the everchanging trends in the fashion industry?

By harmonising my foundational principles with contemporary design elements, my final designs exude a sense of self-expression while seamlessly aligning with the ever-evolving outlook.

GLOBAL AIR TRAFFIC REACHED 99 PER CENT OF PRE-PANDEMIC LEVELS IN NOVEMBER

THE INTERNATIONAL AIR TRANSPORT ASSOCIATION (IATA) has published its latest data for global air traffic, showing figures approaching pre-Covid levels. The association said that global air travel in November reached 99.1 per cent of 2019 levels, measured in revenue passenger kilometres. Domestic traffic was 6.7 per cent above pre-pandemic levels, with growth particularly strong in China (up 272 per cent in November 2022) due to restrictions still being in place a year ago. International traffic continues to lag behind domestic demand but has now reached 94.5 per cent of 2019 levels, with the Asia-Pacific region registering the strongest gains (up 63.8 per cent in November 2022).

VISTARA TO LAUNCH SECOND ROUTE FROM INDIA TO PARIS VISTARA, THE SINGAPORE AIRLINES (SIA) joint venture carrier from India,

will launch a five-weekly MumbaiParis CDG route from 28 March. This will be the airline’s second route to Paris, complementing its Delhi-CDG operations, which also currently see five flights a week. This will be Vistara’s third long-haul route from Mumbai following London and Frankfurt. As with its other European routes, Vistara will deploy a Boeing 787-9 Dreamliner on Mumbai-Paris. The airline’s Dreamliners feature 30 lie-fat business class seats in a 1-2-1 configuration, as well as premium economy and economy class seating. airvistara.com

ungary is one of the most popular tourist destinations in Europe and its capital Budapest is regarded as one of the most beautiful cities worldwide. Although it is a moderately small country in size, it is home to numerous World Heritage sites, UNESCO Biosphere Reserves, Lake Hévíz the second largest thermal lake in the world, Lake Balaton the largest lake in Central Europe, is one of the biggest tourist attractions of the country, and Hortobágy the largest natural grassland in Europe. Hungary is landlocked and situated in the Carpathian Basin. Its two longest rivers the Danube and Tisza divide Hungary into three parts: Transdanubia to the west of the Danube, the plain between the Rivers Danube and Tisza, and the Trans-Tisza region to the east of the Tisza. Hungary’s ‘mountains’ are at a maximum elevation of 1,000 metres and two-thirds of the country is less than 200 metres above sea level. The country is rife with national parks and verdant natural beauty; Hortobágy, Kiskunság and Körös-Maros are situated on the Great Plain protecting the wildlife and fragile wetlands, marshes,

and saline grasslands of the open puszta. Some are in the north in the densely wooded Bükk Hills and the Aggtelek region with its extensive system of karst caves. Danube-Ipoly is in Central Hungary, Balaton Uplands is in the West and Danube-Drava National Park is in the southwest, at the Croatian border. Őrség and Fertő-Hanság are at the Austrian border. Hungary is home to more than 2,000 flowering plant species, and a plethora of wildlife such as deer, wild hare, boars, and otters as well as some rare species like wild cats, lake bats and Pannonian lizards. It is also home to a myriad species especially waterfowls, which are attracted by the rivers, lakes, and wetlands. From craft beers, full-bodied Hungarian wines, cool cocktails, and pálinka fruit brandies to herbal liqueurs, Hungary’s vibrancy will keep visitors partying till the wee hours. The best nightlife can be found in bohemian ‘ruin’ pubs, cultured coffee houses, and sleek rooftop bars looking out over the capital city’s skyline. Its multicultural vibe, expansive boulevards, breathtaking architecture, popular thermal baths, UNESCO World Heritage sites, and evolving food scenes are sure to appeal to all travellers whether leisure or business. Budapest’s eclectic nightlife is concentrated in the Seventh District, also known as the Jewish Quarter. Among synagogues and kosher restaurants, there is something for everyone - from street food pods and dive bars to upscale speakeasies, wine bars highlighting local varietals, and secret clubs. Budapest has a large underground cave system formed by geological springs that provide water to the city’s many thermal baths. A trip is incomplete without a visit to the Hungarian Parliament Building, the Castle Quarter, including Buda Castle, Fisherman’s Bastion, the quaint cobbled streets and pastel buildings.

Hungary’s second-largest city is located east of Budapest and is rich in geothermal resources. A mere two-hour drive from the capital via the new motorway, it also boasts one of the country’s few international airports. Modern Debrecen exudes the ambience of a provincial town with colourful piazzas and spacious parks and serves as Eastern Hungary’s commercial, administrative, cultural, and educational centre. Several multinationals, international sporting, and cultural events as well as the university lend a diverse atmosphere to the city. The internationally renowned annual Debrecen Flower Parade has a plethora of cultural and gastronomic festivals. The city is large enough to accommodate travellers who want to find safe havens away from the hustle and bustle. Debrecen’s state-of-the-art metropolitan facilities are close to the peace and serenity of its abundant natural beauty. PÉCS

The history of Pécs dates back over 2000 years. It has now developed into a pleasant, modern town, rich in historical monuments, an administrative, cultural, and educational centre offering a lot to those who wish to visit this city with its quintessential old-world charm. It is the fifth largest city in Hungary, on the slopes of the Mecsek mountains in the country’s southwest, close to its border with Croatia, the town is famous for its museums, galleries, festivals, and cultural events. The downtown of Pécs is a unique mixture of the relics of early Christianity, the arrival of the Hungarians, the Turkish reign and the achievements of modern architecture and arts. The Mecsek hill which surrounds the city is an idyllic place to visit throughout the year. On top of the hill, visitors will find the TV tower, with a restaurant and an amazing view of the city. Lake Malomvölgy or Lake Orfű are the best places to visit especially in summertime. Visitors who do not want to be in loud places can eat a delicious meal at a restaurant or visit the theatre to discover Hungary’s flavour and culture. Those who want to experience partying, however, can head to a bar or a club. Going to the nightspots gives tourists the chance to mingle with locals.

SZEGED

Szeged lies on Hungary’s south-eastern border, just south of the mouth of the Maros River on both banks of the River Tisza. It is the lowestelevation city in the country and is known as the “City of Sunshine” because it has the maximum number of sunny days throughout the year. Szeged is the main city in Csongrád-Csanád county and serves as a commercial and cultural centre of the region. The Open-Air Theatre Festival held in the summer attracts people from all over Europe. Szeged is also famous for its gastronomy; its mouthwatering fish soup is known all over the world. One of the main attractions of Szeged is the River Tisza, which offers several opportunities for different water sports or boat trips. While boasting hundreds of years of history, Szeged has been rebuilt almost entirely after the flood of 1879, which destroyed most of the city. With its modern avenues, ring roads and beautiful palaces, Szeged is one of the most scenic Hungarian cities.

WHAT TO DO

BUDAPEST OPERA HOUSE

The Budapest Opera House was built between 1875 and 1884 by the famous Hungarian architect Miklós Ybl. The structure features various frescos, sculptures, and works of art made by local artists. Located in central Pest it is one of the city’s most elegant places. A spectacular work of architecture in the NeoRenaissance style - a movement that developed in the XIX century along with Neo-Classicism and NeoGothic based on Renaissance Architecture, the opera house is in the city centre. In Hungarian is known as the Magyar Állami Operaház. When the Budapest Opera House officially opened its doors in 1884 it could only seat an audience of 1,310. The building embodies Renaissance and Baroque decorations.

CITY PARK

Városliget or City Park is a public park in Budapest close to the city centre. Its main entrance is Heroes’ Square, also known as Hősök tere, and is one of Hungary’s World Heritage sites. The area was formerly called “Ox meadow”. The first trees and planned walkways were established in 1751 and after the public park was created in the first decades of the 19th century it became the first public park in the world. City Park was the main venue of the 1896 millennium celebrations of Hungary, by which time Andrássy Avenue, Millennium Underground and the Grand Boulevard were built.

SZÉCHENYI CHAIN BRIDGE

The Chain Bridge is the oldest suspension bridge in Budapest and is the Danube’s most renowned, connecting both sides of the city, Buda, and Pest. The Chain Bridge was commissioned mainly because it was extremely difficult for the boats to cross the river during the coldest months and Buda and Pest needed to be more easily connected. It took twenty years to build and was inaugurated in 1849 before Budapest became a single city. The most beautiful view of the bridge is just after nightfall when the iron overpass and the Buda Castle are both illuminated. FEBRUARY 2024

In the 16th century, Piac Street was the proud venue of famous town fairs for three centuries. PÉCS CATHEDRAL

The foundations of the cathedral were laid in the 11th century, and the presentday look of the cathedral was achieved at the end of the 19th century based on Frigyes Schmidt’s design. The building of the third cathedral started at the end of the 11th century and a five-nave subterranean church was built above an early Christian shrine, in the northeast direction of the present-day dome, containing the grave or relics of an early Christian martyr. In 2018 the interiors of the cathedral were renovated with sound and lighting systems, modernised church pews, and district heating that was installed in the cathedral.

FERRARI ENZO (2002-2004) 446 EXAMPLES PRODUCED It’s hard not to be enamoured by Ferrari. Ask any layman what their idea of a supercar is, and chances are they will describe a red, or a Rosso Corsa, Ferrari to you. When a brand is so synonymous with fast cars, and has such a rich history of making them, it needs to deliver a flagship halo product every few years to set a new benchmark for the industry. In 2002, that benchmark came in the form of the Ferrari Enzo. Named after the prestigious brand’s founder, the Enzo was a testament to Ferrari’s relentless pursuit of dominating the racing world, drawing inspiration from Formula 1, and debuting cutting-edge track-derived technology. At its heart, the Enzo was a Formula 1 car for the road, and it is what makes it so special till date. It was powered by a lightweight V12 engine, a product of Ferrari’s

racing expertise, delivering an extraordinary 660 horsepower and 485 lb-ft of torque. AN AMERICAN TIPPLE The popularity and exponential growth of the American whiskey industry

T

he United States of America as we know it today began to take shape somewhere late in the 17th century. Masses of immigrants from mostly Western Europe armed with skills and dreams crossed the Atlantic Ocean on ships to claim their futures in the new and unknown world. Those with the skill of distilling found an abundance of rye and corn to use as raw materials to convert them to whiskeys, different from the barley and grains they were used to distilling within their homeland now far away. They also found out that aside from this new and abundant crop they had access to pure water filtered through limestone rock that added to the whiskey’s quality. These settlers left everything behind to create this new world using innovation and a larger-than-life thought process. Their take on making whiskey in America reflected this mindset. The oak must be charred by lighting it on fire from the inside before putting the spirit into it to age, to get the effects of caramelised wood, big and complex flavours. The Americans like to bottle their whiskeys at high alcohol strengths to give each sip layers and depth. In the case of Tennessee whiskey, they use the Lincoln Country process of passing the spirit through sugar maple charcoal to give the whiskey a smooth, mellow richness the world loves. This is America’s contribution to the global whiskey world.

Bourbon and rye whiskeys can be made anywhere but we mainly see a concentration of whiskeys coming out of Kentucky. The whiskey industry was thriving in the late 17th century but then it suffered many serious setbacks, the first being the application of a Whiskey Tax. This led not only to what is now called the Whiskey Rebellion but also made many distilleries relocate to Kentucky and Tennessee where this tax did not apply. Eventually, the tax was lifted, and whiskey sales started to grow rapidly. Bourbon and Rye distilleries mushroomed across the country. Everything ran smoothly until 1920 when Prohibition was passed. All spirit production came to a grinding halt allowing an infamous gangster like Al Capone to begin illegally distilling and selling alcohol. Many independent distilleries vanished at this time also due to World War II. Eventually, markets improved and the demand for American whiskies boomed globally and a steady increase in production. In 1964, an Act of Congress declared bourbon as, America’s Native Spirit, officially cementing its place in US culture. I take liberty in quoting the American writer William Faulkner who said, “Civilization begins with distillation”. Very few countries can say that the history of the country itself is linked to the culture of distilling spirit. The history of American Whiskey can be traced to the beginning of the colonial period. George Washington, the first President of the United States, was an avid distiller who began producing American Rye Whiskey in 1797 and his recipe is still used at the original site in Virginia. For centuries, American distillers have experimented with a range of grains such as corn, wheat, barley, and rye to create unique American whiskeys that are renowned around the globe. Today, with a global resurgence of cocktail culture, American whiskeys like bourbon and rye are versatile and are integral to the drink. Premium whiskeys are perfect for drinking on their own as well without any mixers.

HOW IS IT MADE

Many American whiskeys use multiple types of grain which gives rise to the term “mash bill” -the whiskey’s recipe. American whiskey could have 100 per cent of one type of grain or a combination of others. While corn provides creamy sweetness, rye exudes a spicy and peppery flavour, and wheat adds a soft mellowness. US distilleries are usually located near natural water sources that they use in the distillation process. Water in states like Kentucky and Tennessee is naturally filtered through limestone rocks and is completely iron-free Barrels provide a vibrant colour and add to the flavour of American Whiskey. The barrels are first toasted, allowing the heat to pull the wood sugars to the surface which are charred. This transforms the surface sugars into a dark caramel. Different degrees of charring may be done based on what the distiller wants. Compared to Scotch and Irish Whiskeys, American Whiskeys are typically aged fewer years in barrel storage facilities known as rick houses because there is a greater fluctuation of temperatures in the United States with hotter summers and colder winters. This increases the interaction between the whiskey and the wood thus enhancing the ageing process. business traveller india

CATEGORIES Bourbon can be made anywhere in the United States and must comprise at least 51 per cent of the mash bill. The remaining 49 per cent can consist of malted barley, rye, or wheat. Bourbons with a higher wheat content or “wheated bourbons” tend to have softer and sweeter profiles. Bourbon that has been aged for at least two years may be further designated as a “straight bourbon” American rye whiskey, as with bourbon, must be aged for some time in new, charred oak barrels with no added colouring, flavouring or other spirits. American rye whiskey that has been aged for at least two years may be further designated as “straight American rye whiskey. This whiskey has a spicier profile compared to other American whiskeys. Like bourbon, rye whiskey too can be made anywhere and the “mash bill” must contain a minimum of 51 per cent rye. Tennessee whiskey is characterized by charcoal filtering called the “Lincoln Country Process.” Like bourbon, it is recognized as a “distinctive product” of the United States. However, unlike bourbon, Tennessee whiskey can only be made in Tennessee and is similar to bourbon except that comes only from Tennessee and must be charcoal-filtered there before it is aged. In the “Lincoln County Process,” the whiskey is filtered through a column of sugar maple charcoal. Like bourbon, this too must be aged in new, charred oak barrels and cannot include colouring, flavouring, or other spirits. Each distillery has a distinctive technique in producing and filtering whiskey through sugar maple charcoal giving them similarities and yet being different. America has a fair share of Single malt whiskeys too and over the last decade, their popularity has grown. So, if you’re at a bar in India and looking to drink some great whiskey, try an American. WILD TURKEY

In the early 1900’s the first distillery sprang to life in Lawrenceburg on the banks of the Kentucky River. The Ripy Brothers began bottling on the very site where Wild Turkey’s current facility stands today. The distillery then became the nursery from which Wild Turkey was born, setting the foundation for the proud bourbon tradition. It changed hands and was renamed Anderson County Distillers. A fateful turkey hunt deep in the Kentucky woods introduced a new bourbon, that was so bold and unforgettable that it instantly got its name —Wild Turkey. One member of the hunting party, from the Austin Nichols family, loved the bourbon so much that he forged the first agreement to sell it commercially. Wild Turkey Bourbon is trademarked, and the first bottle was sold by Austin Nichols Fine Wine and Spirits in 1942.

TEMPLETON The roots of whiskey in this town can be traced back along family lines to the bootleggers of Prohibition. To this day, this rebellious and entrepreneurial mindset still holds, where residents of Templeton town in Iowa are united under a shared rallying cry of “A Strong Community Spirit.” MAKER’S MARK

Bill Samuels Senior was an engineer turned craftsman who elevated bourbon with his flavour vision. Margie Samuels created packaging that would honour her husband’s handmade bourbon. The bottle’s shape, the design of the label, the signature red wax and even the trademarked name are Margie’s legacy, who is also credited for inventing bourbon tourism. FEBRUARY 2024

In 1740, the Boehm family came to the 13 colonies, determined to live the colonial dream. 48 years later, they relocated to where Kentucky is now and changed their name to Beam. Hot summers, mild winters and a nearby limestone spring made their new home ideal for growing corn. By the late 1700s, German, Scottish and Irish settlers were making rye whiskey in Western Pennsylvania. Government incentives to move west and grow corn encouraged many to move to the Kentucky region. Among them was Jacob Beam who used his father’s whiskey recipe to distill corn into a new, sweeter kind of whiskey.

Evan Williams was a natural-born leader, innovator, and entrepreneur. He worked in numerous trades as a businessman, politician, and most notably a whiskey distiller. In 1783, he founded Kentucky’s first commercial distillery on the banks of the Ohio River.

In Kentucky, buffalos carved a pathway that was followed by America’s early pioneers. On the spot where the buffalo migration route crossed the Kentucky River, Buffalo Trace has been making bourbon whiskey for over 200 years. It is the oldest, continuously

operating distillery in America. Even during Prohibition, the distillery was permitted to remain operational, to make whiskey for “medicinal purposes”.

SAZERAC RYE

In the 19th century, industrious farmers, and distillers in the heartland of the United States barrelled and shipped their rye whiskeys down the great Mississippi River to the growing city of New Orleans. The Sazerac was born in the French Quarter at a time when saloons, doubling as coffee houses, lined the streets of New Orleans. At the famed Sazerac Coffee House, the drink of choice became a libation of rye whiskey, absinthe, and bitters. B A C K G R O U N D At over 240 feet long, the A350 is nearly the length of a football field and is configured with 331 seats. The state-of-the-art aircraft is one of the most fuel-efficient aircraft operating in the world today and is built from advanced materials. A combination of carbon composites, titanium and modern aluminium alloys delivers environmental benefits such as lower fuel burn and reduced CO2 emissions; nitrogen oxide emissions are nearly a third below the current industry standard and noise levels are also much lower. The Trent XWB engines used on the A350 aircraft have the lowest specific fuel consumption for any turbofan aircraft in service today, contributing to lowering CO2 emissions and is a huge leap forward FEBRUARY 2024

for greener air travel. It was also the first aircraft type to premiere the Club World cabin - Club Suite. This aircraft type is fitted with three classes accommodated across five cabins.

C H E C K - I N I reached Chhatrapati Shivaji Maharaj International Airport in Mumbai at 11.30 pm. My flight A138 was scheduled to depart at 02.10 am from Mumbai to London Heathrow but departed at 0242 am due to slight fog. There was a separate check-in counter for business class which was manned by a very efficient staff who were quick in issuing boarding passes. The whole process was seamless and quick. After clearing the immigration at Mumbai airport, I headed to the East Business business traveller india

and on time. The crew greeting the passengers was friendly and courteous. I was accompanied to my seat by a member of the cabin crew and instantly felt comfortable due to the spacious arrangement of the seats and the privacy they afforded.

The private spaces were cosy, private rooms and all 56 seats offered unobstructed aisle access to minimise disturbances.

Cabin air in the A350 is renewed every two to three minutes to minimise the effects of jet lag and ensure that travellers arrive at their destination refreshed. I asked the cabin crew not to be disturbed or woken up during meals or for drinks and slept comfortably the full length of the flight. The next morning at 05.00 am I woke up rested and was served a delicious breakfast of yoghurt, omelette, croissants, orange juice and Earl Grey tea. While I didn’t order from their expansive food or drinks menu, throughout the flight, the club world members can access the club kitchen which provides unlimited crisps, chocolates, fresh fruits, tea, and coffee.

A R R I V A L I landed at London Heathrow Terminal 5 at 06.46 am. The process of collecting my baggage was quick and seamless even though it was crowded. They took all the details of my hotel bookings and before long, I was headed for the taxi stand.

I was drawn to the spectacular gold-shaded artworks that exhibited traditional and unequivocal Chinese grace. The simple yet stylish furniture evokes a warm and cosy atmosphere.

Additionally, La Dame De Pic a two Michelin stars restaurant offers French cuisine by Chef Anne-Sophie Pic. It seats about 65 people in the restaurant and about 12 people in the private dining room. Mei Ume specialises in Chinese

and Japanese cuisines, based around the concept of shared dining with great emphasis on quality ingredients. 60 people can be seated in the restaurant plus 13 in the private dining room.

The extensive menu offered a delightful selection, and I opted for the à la carte dinner experience. To start, I was treated to a refreshing Kale, Strawberry and Avocado Salad that perfectly balanced the sweetness of strawberries with the creamy texture of avocado. The vibrant colours and fresh ingredients set the tone for a memorable dining experience. For the main course, I chose the panroasted Japanese Seabass, and it was a culinary masterpiece. The fish was flawlessly cooked, with a crispy exterior giving way to a tender and succulent interior. Nestled alongside the picturesque Singapore River, Town Restaurant is a delightful venue that caters to a diverse range of dining experiences. My lunch at this casual yet swanky establishment left a lasting impression. The restaurant’s global buffet and à la carte menus for both lunch and dinner promise a feast for the senses. What stood out during my visit was the personalised touch from the chef who crafted a special menu for my meal according to my preferences. The culinary journey commenced with a delightful Chicken Pomelo Salad. The medley of flavours in this dish was outstanding – the house-made chilli dressing added a perfect kick, while cilantro, crispy shallots, and roasted peanuts provided texture and depth. The addition of a lime wedge added a zesty finish to this refreshing starter. Following this, the Singapore Chicken Satay was a sensory delight, featuring succulent skewers accompanied by Ketupat, cucumber, onion, and a delightful pineapple purée, all enhanced by a spicy FEBRUARY 2024

The marriage of the crispy prawn and the vibrant salad created a memorable palate experience. The Hainanese Chicken Rice, a local favourite, was a comforting and flavoursome rendition, perfectly complemented by some delightful condiments. To conclude the meal on a sweet note, the Pandan Crème Brûlée was a true indulgence. The addition of coconut biscuit and mango passion added tropical notes, elevating this classic dessert to a new level. The thoughtful staff extended their kindness by sending me home with heavenly dal kachoris in charming boxes. Commencing each day with an elegantly presented plate of fresh fruits and a comforting cup of tea elevated my mornings to a refined and satisfying start.
