AIR MILES Business Traveller India talks to Nitin Vishwas & Rohan Rehani, co-founders of Moonshine Meadery about ethical bee-keeping practices, the honey industry in India and more.

Can you briefly describe the inspiration or story behind the founding of Moonshine Meadery and how it all started as a business?

Nitin and I started making meads at home back in 2014; it was a passion project for the longest time. We noticed that many consumers in India had to start their journey into alcoholic beverages with bitter beers, and there was a gap in the market for a tasty, flavourful, all-natural alcoholic drink. We felt that mead perfectly filled the white space between flavourful, non-alcoholic beverages like Coke and alcoholic, bitter drinks like commercial beer. This idea sparked our journey, and we launched Moonshine.

What were the initial goals and challenges when Moonshine Meadery first started, and how has the business evolved since then?

When we founded Moonshine in 2014, the journey faced a significant hurdle: the mead category didn't exist in India's market. Over nearly two years, we worked on policy changes and regulatory challenges to bring our meads to the public. After the launch, our primary challenge was building brand awareness. With limited marketing resources, we adopted a grassroots approach, engaging directly with consumers through events and meadery tours. Now, we're a team of 50 who are expanding into new markets. We've diversified our mead offerings,

introduced seasonal varieties, and launched the Moonshine Honey Project, sourcing honey for mead production and retail. Our extensive beekeeping practices reflect our commitment to sustainability and introducing more people to the world of mead and honey. India's honey market is projected to grow significantly in the coming years.

India's honey market is projected to grow significantly in the coming years. How does the Moonshine Honey Project plan to contribute to this growth, and what makes your honey and mead products unique in the market? In 2022, India's honey market had a value of INR 23.3 billion. The analyst projects that the market will grow at a CAGR of 8.87 per cent between 2022 and 2028 to reach INR 38.8 billion. In the fiscal year 2022-2023, we utilised approximately 55+ Metric Tons of honey for both mead production and retail honey sales. In FY24, our contribution to the honey production statistics will remain in the first decimal rounding-off error. However, what we will have contributed to and left a mark on is good, pure honey which shines a spotlight on the beekeepers, farmers and tribals associated with clean honey production in India. We also hope that the advocacy on the usage and purity of honey will help push choosing honey over sugar and jaggery.

Moonshine Meadery has a strong commitment to better beekeeping practices. Can you elaborate on

how your consumption of honey for mead production has indirectly contributed to pollinating billions of flowers and why this is important for the environment?

What's fascinating is that it takes around 4 million flower visits by bees to produce just 1 kg of honey. So, with our consumption of 55 Metric Tons of honey, we've essentially played a part in supporting the pollination of a staggering 220 billion flowers. Our goal is to consistently weave a narrative that highlights Moonshine's commitment to actively work towards the preservation of bees and dedicated beekeeping practices. We've taken proactive steps to boost pollination and support the solitary bee population by installing Bee Hotels in various locations in Mumbai and Pune. Bee hotels are purpose-built structures not intended for honey production but designed to offer a secure environment for bees to lay their eggs and establish nests; they are dedicated nesting sites for non-honey-producing pollinators. Bees, while foraging for nectar to create our high-quality honey, inadvertently cross-pollinate numerous flowers. This cross-pollination is crucial for the reproduction of many plant species, many of which are part of our food supply chain.

Pattaya is a popular beach resort on the Gulf of Thailand, just 150 km southeast of Bangkok which is an approximately two-hour drive. Pattaya is especially known for its pulsating nightlife, quality of the beaches, marinas and luxury resorts which offer breathtaking city and water views. Visitors are drawn in hordes each year to Pattaya to windsurf, water ski, swim, sunbathe, snorkel, sail, or take trips to nearby islands. AYUTTHAYA

Phra Nakhon Si Ayutthaya, the ancient prosperous city of Ayutthaya, or Phra Nakhon Si Ayutthaya, the Thai capital for 417 years is 76 km long and was founded in 1350 by King U-Thong when the Thai people were forced southwards by northern neighbours. It is one of Thailand’s major attractions and many ancient ruins and works of art can be found in this city steeped in heritage and culture. When Ayutthaya was the Thai capital, 33 kings of different dynasties ruled the kingdom until 1767. Ayutthaya is 76 kilometres north of Bangkok and boasts numerous magnificent ruins. Phra Nakhon Si Ayutthaya Historical Park, a vast stretch of historical site in the heart of Ayutthaya city, has been included in UNESCO’s list of world heritage since December 13, 1991. Ayutthaya covers 2,556.6 sqm and is conveniently accessible due to good roads and is a short distance from Bangkok.

AYUTTHAYA WAT CHAIWATTHANARAM

Wat Chaiwatthanaram built in 1630 by King Prasat Thong to honour his mother, was conceived by featuring the architectural style influenced by Angkor temple in Cambodia. One of the most visited historical sites of Ayutthaya, it rests on the bank of the Chao Phraya River, to the west of the city island. The temple’s unique feature is a large, central prang or a Khmer-styled pagoda surrounded by smaller prangs, symbolising Mount Sumeru, the Gods’ mountain according to Hindu belief. WAT PHRA SI SANPHET

In 1491, Wat Phra Si Sanphet was located inside the compound of the Grand Palace and was the largest temple in the city. The temple is now situated in Pratu Chai subdistrict, Phra Nakorn Si Ayutthaya district, Ayutthaya province; it is a significant historical site, and a spiritual centre for Thai people. During the reign of Ramathibodi II, an enormous Buddha, 16 metres tall was cast and its surface was coated with 143 kg of gold. In 1767 when the Burmese invaded Ayutthaya, they melted the gold and damaged the Buddha. Later Field Marshal P. Piboonsongkram assigned a committee to renovate the ruins until the temple regained its former glory. In the centre of the temple, are three adjacent bellshaped pagodas situated on rectangular platforms. Wat Phra Mahathat was one of the oldest and most significant royal temples of the Ayutthaya Kingdom as it housed the Buddha’s holy relics. It was severely damaged by fire and abandoned in 1767 but is now located in the Ayutthaya Historical Park. GRAND TOURERS BMW C-400 GT Despite being the second largest two-wheeler market in the globe, the maxi-scooter segment in India is an extremely small niche. lthough the Internet of Things is not something new and has existed for a while now, however, the dependency on it by guests for convenience and comfort has largely increased. The integration of advanced technology is reshaping how hotels operate and how guests experience their stay. I, however, believe that success in the future of hospitality lies in striking the right balance between technology for efficiency and the cherished personal touch that guests value. The digital age has brought a wave of innovations to the hospitality industry. From AI-driven chatbots to mobile check-ins and smart room controls, hotels can offer convenience and customisation like never before. This will however depend on several factors. Convenience and automated customisation are important for hotels where the experience is also transactional, and the guest is also searching for such an interaction. For the hospitality sector, it will always have to be a blend of both digital as well as human interaction. We need to view technology as a tool to enhance, not replace, human hospitality. The staff should be trained to recognise when to offer personal recommendations, a friendly chat, or a quick digital solution. Creating memorable moments that technology can’t replicate is essential. I love Oriental cuisine so much that whenever I travel to different countries, I always try to make it a point to enjoy one such meal at least! In my opinion, Oriental food is the type that can be adapted to a global palate easily but can retain its authentic and unique flavour. On a recent trip to Doha, I was invited to a special tasting of authentic Cantonese and select provincial dishes from around China at the opulent Liang in Mandarin Oriental, Doha. There I learnt that Liang celebrates the dual connection between Qatari and Chinese traditions and its name in Chinese, translates to the beam of light reflected by the moon. I started my meal with a refreshing pint of Tsingtao Beer, as well as a generous helping of wok-fried succulent tiger prawns served with a simple, yet flavourful minced garlic and supreme soy sauce as an appetiser. The prawns were so fresh that they melted in my mouth! It was my first visit to the stunning capital city Baku in Azerbaijan, and it took only a few moments for me to be smitten by this warm and vivacious country, the hospitality, and its people! I was invited to join my host for an early dinner at Tribeca the delightful all-day dining destination and bar serving a menu inspired by classic New York City fare and contemporary Californian cuisine. The meal did not disappoint, in fact, it was so wholesome and unique that for a minute I forgot that I was not in the US! While the meal was inspired by New York and Californian cuisine, I decided to start it with a glass of Savalan wine which was locally produced and had a bouquet of delicious flavours swirling in my mouth! For the appetizer, I chose a roast beetroot garnished with whipped goat cheese, Jerez vinegar, pickled shallot, spiced nuts, and flax. I have never eaten a combination this unusual, delicious, and eclectic before! The main meal was an exquisite Spice Crusted Salmon with cauliflower cream, a roast onion sauce and a side of potato fries. To say it was superb would be an understatement! NOVEMBER 2023

embodied The Five Elements, an intriguing and innovative concept that explores the unique properties of earth, water, fire, wood, and metal, fusing them into a harmonious culinary universe. The experience began with a kombucha of the day, a refreshing introduction to the meal. The journey continued with an array of dishes, each an artwork on its own. Standouts included “in love,” featuring marinated palm seed with shaoxing wine and cilantro oil, and “reincarnated,” a delightful combination of grated shrimp yolk, yin-yang egg noodle, morel, and caviar. The “beautiful” course was a symphony of flavours, combining blue crab with mud crab roe emulsion and crab butter bread. The menu artfully navigated through a spectrum of tastes, from the delicate “palmmeat bun” with cashew nut pate to the interesting “roasted duck brain” and “duck heart” in the “bold” course. The creativity in the “legacy” course, a remake of ThaiChinese street desserts, was the perfect sweet ending to an exquisite journey. Complementing the culinary artistry was the attentiveness of the service staff, who

guided us through each course, enhancing the overall experience. A delightful surprise was the complimentary glass of welcome wine, perfectly paired with the dishes. Latin Mercado brought not only the exciting flavours of South America to the table, foot-tapping live music but also an exhilarating dining experience and whirlwind gastronomic delights to the palate. I went there for lunch and was enthralled by their scrumptious menu which had the best of seafood delicacies to succulent steaks freshly grilled on the Argentinian barbecue. I started my meal with a delicious and unusual combination of roasted carrot and pumpkin soup which was richly flavoured with toasted pumpkin seeds and avocado oil, followed by their signature Double Ribber Lamp Chops served with Mango chutney, Quinoa & sauteed vegetables- one of the best meals I have ever eaten, which melted in my mouth.
