Business Traveller India speaks to Atul Sikand a multifaceted individual, animal lover, conservationist and Founder of Sikandalous Cuisine, India’s largest recipe exchange community on Facebook with over 43,000 followers. An avid world traveller, he has explored cuisines from India to Brazil and Africa. Through Sikandalous Cuisine, Atul shares his culinary expertise and tested recipes, fostering a loyal community of food enthusiasts across the world.

What inspired Sikandalous Cuisine?

It all began as a fun way to share my cooking, posting pictures and recipes on my Facebook page. Friends would comment, and some even tried the recipes. Encouraged by a dear friend 15 years ago to create a food group for our friends and family, led to the birth of Sikandalous Cuisine. Gradually, members overcame their shyness and started sharing their home-cooked dishes, and we never looked back. Our growth was slow but organic; we surged from 500 members to 10,000, and now we proudly boast 43,000 members from around the globe. We maintain a few strict rules: only home-cooked dishes with detailed recipes are shared and featured.

How has caring for animals influenced your personal growth and worldview?

I have a shelter for 38 abandoned cows, no milking and profits. I have rescued 21 community and homeless dogs who lived with me in my home over the years. Wildlife safaris are my fascination and I have explored far and wide - from Jaguars in Brazil to their species in Africa. In India we are blessed with an abundance of wildlife, unfortunately, that sector isn’t as well organised as it should be. Working with and adopting animals works wonders on the soul and has taught me to respect and honour their world.

Pre-pandemic, Delhi was a hub for food festivals. I noticed that the prices were steep, and the selection of participating restaurants lacked consideration, quality and focus. I recognised that Asian cuisine was a favourite in India, and we had incredible restaurants to showcase. My vision was to gather the best, offering hawker style pricing so that for just ₹250400, attendees could sample dishes from top restaurants under one roof. Keeping the culinary options 100 per cent Asian proved

to be a winning formula, drawing between 45,000 and 55,000 visitors over three days!

How do your travels shape your culinary style and spark ideas for new recipes?

I have a deep passion for food, ranging from street eats to fine dining. Whenever I travel, I make it a point to sample different local cuisines. I love collecting cookbooks and then trying my best to replicate those recipes at home.

What are your most memorable food travel experiences?

That’s a tough choice because I love good food! However, if I had to narrow it down, I’d say I discovered many unique and exciting dishes in Peru, Burma, Italy, France, Thailand, and Spain.

What would be your dream culinary journey?

I would love to re-discover the entire southern part of India, Japan, and China— this time with more knowledge and, hopefully, more discerning taste buds!

What's next in store for Sikandalous Cuisine?

In 2025, I plan to release a cookbook titled ‘The Best of Sikandalous Cuisine.' Choosing the best ones will be a massive undertaking, as we currently have over 5,000 recipes in our archive, and the numbers keep growing daily.

CATHAY PACIFIC EXTENDS FREE INFLIGHT WIFI TO BUSINESS CLASS CUSTOMERS

CATHAY PACIFIC HAS introduced free inflight wifi for business class customers travelling on all connected aircraft. The benefit has been offered to first class customers since 2022, and the carrier has extended the free wifi provision following successful trials on selected flights.

In addition, the airline said that Cathay Diamond members travelling in all classes will also benefit from free wifi starting in November.

Cathay’s plans to extend its free inflight wifi service were confirmed by the group CEO Ronald Lam who stated that the benefit would be introduced to business class passengers and Cathay Diamond members by mid-2024.

The free service mirrors Cathay’s paid-for wifi offering, allowing customers to check emails, browse the internet, stream audio, use social media and messaging apps, and access cloud storage services and other professional applications.

Passengers can connect one device at a time and switch between devices during their flight.

Cathay has equipped more than 90 per cent of its aircraft with wifi connectivity, including all long-haul planes, and intends to complete the rollout across its entire fleet by mid-2025.

MERCEDES-BENZ EQS SUV: ELECTRIC, ELEGANT, EXCLUSIVE

I grew up in a home, where my morning greetings were a Westminster chime, the clicking and clacking of gears powered by the pendulum giving us company in silence, and the lullaby of a St. Michael’s chime at night. I was enchanted by how these guardians

of time came together day and night to have the same function of keeping time going.

Today we can probably talk about ‘iconic’ watches as those that broke records and pushed the boundaries of mechanical and product design - the cognoscenti’s choice and those built for ‘metro-boulot-dodo’.

Transitioning from the table to the pocket to the wrist and back in our pockets. To elaborate on an iconic watch, we must understand the history of time itself. In this feature are a few of the iconic watch brands that have rede ned and revolutionised the art of horology.

BRÉGUET

The Reine de Naples Collection

e Reine de Naples collection traces its heritage to a timepiece commissioned by Caroline Murat from Abraham-Louis Breguet in 1810, with delivery occurring in 1812. However, since 1855, all physical evidence of this original watch has been lost with only written records remaining. As a result, the contemporary Reine de Naples collection was cra ed based on the scant details documented in historical registers. According to these records, on June 8, 1810, the Queen of Naples ordered two timepieces from Breguet - a grand complication carriage watch and a bracelet watch with a minute repeater. She acquired 34 clocks and watches from Breguet between 1808 and 1814. Breguet commenced the creation of what would become the precursor to the Reine de Naples collection, initially described as a repeater in oblong form for a bracelet, recorded under number 2639. e original Reine de Naples was artistically and mechanically groundbreaking.

It boasted a free lever escapement and a thermometer. 17 artisans were involved in its creation, necessitating 34 distinct processes. e earlier gold dial with guilloché was later replaced by a silver dial with guilloché and Arabic numerals. On December 21, 1812, Breguet documented it as a very thin repeater watch N° 2639, with a silver dial, Arabic numerals, a thermometer, and a fast-slow indicator positioned outside the dial. It was mounted in a bracelet cra ed from hair interwoven with gold thread, accompanied by a simple gold key and an additional gold-trimmed bracelet, all enclosed in a red calfskin case. The Calatrava

Calatrava is a name inspired by a symbol associated with the Castilian knights of the 1100s, which Patek Philippe had registered 45 years prior but never utilised. e myth is that it was David Penney, the British antique watch dealer who designed the Calatrava. However, Penney came on board only in the ‘80s to create illustrations for a book on the brand’s history. Some journalists erroneously attributed his signature to the ref. 96 drawings to the original designer. Moreover, the gentleman was born much a er 1932.

Patek Philippe & Cie was grappling with nancial woes and so in 1932, the company was acquired by the Stern family, which continues to helm the brand today. Understanding the need for a straightforward, easily marketable watch to secure the company’s future, they introduced the rst Calatrava, the reference 96, that same year. is design adhered to Bauhaus design principles. e speci cs of its origin are few and far between, and the designer remains anonymous. Jiggs Kalra, a renowned food columnist and consultant has been a pioneering force in promoting Indian cuisine globally for nearly five decades. Reviving lost cooking styles makes Masala Library at Fairmont Doha, a favourite among food connoisseurs. Trailblazers in molecular gastronomy, the restaurant uses natural ingredients and minimal additives to craft unique and visually stunning dishes. I had the pleasure of enjoying a sumptuous dinner, starting with a trio of appetisers - Vannamei Garlic Prawns, Chandi Murgh Kikka, and Lavent Lamb Seekh that set the tone for a truly exceptional meal. The succulent prawns were infused with the pungency of garlic and flavourful lamb skewers were charred to perfection.

The main course was a gastronomic adventure, with each bite of the Lamb Biryani, Lobster Moilee, and Hand-Pulled

Butter Chicken more delicious than the last, accompanied by a curated selection of freshly baked Indian breads. Fresh lobster cooked in a creamy, coconutbased curry was paired with a bold, full-bodied wine to complement the rich flavours of the meal.

The grand finale was the Jalebi caviar, a sublime ending making for a truly unforgettable dining experience. Crunchy, sweet, and indulgent, the delicate pop of caviar releases a cascade of tangy notes, in the fermented batter soaked in sweet syrup. A revolutionary dessert that marries the crispy, fermented goodness of traditional Indian jalebis with the luxuriousness of caviar.

VERDICT This culinary gem o ers a truly unique and unforgettable dining experience for those seeking it.
