How was it shifting base from Japan to India?

Moving to a di erent country is always a combination of excitement, new discoveries, di erent challenges, and meeting amazing people. In short, it is exhilarating. Of course, there is quite a lot that one needs to adjust to, but that is also the amazing thing about moving somewhere- I say adaptability perhaps has been one of my strengths. But there are some comfort foods you need; and for me, it was sushi which did not exist in India back then, so my team and I, we built Sushi and More from scratch. I cannot survive without sushi! This being said, overall, it has been amazing. Now I consider India home and when I go back to Japan, I’m looking forward to coming back to India, as soon as possible!

Do you see a shift in the culinary habits of people in India?

Change is the norm, everywhere. More Indians are travelling and exploring the world which means they are eating and experimenting with diverse cuisines. People are dining out more, and on some

days even staying in and ordering sushi or other continental dishes, which was not possible a few years ago. There is so much choice now! Since good quality has become progressively important, consistency is now paramount.

What’s next for Sushi and More?

We take it day by day, one sushi roll at a time. This has always been the brand attitude and philosophy. Concentrate on the now and here. We may expand into Bangalore, other metro cities, or open more branches in Gurgaon, Bangalore, and Mumbai bases. We could even look at starting the brand in Kyrgyzstan, Hong Kong, London, or Singapore; it could be anywhere, we just don’t know yet.

What are a few things that we would always find in your carry-on luggage?

So, I only use traditional travel luggage from London, which I take with me wherever I go in the world. Inside the carry-on, there will be my aeroplane neck cushion and a new air-relax cushion!

What’s your go-to travel destination and why?

I love Bangkok where I used to live and work with my partner and now my wife in the 90s, and Europe for the culture, food and nature. But recently I have spent more time travelling within India and I love visiting Leh and Ladakh, but I especially adore Rishikesh!

How important is travel to you and how does it influence your professional endeavours?

Travel is fundamental to my existence because unless you travel, you don’t know what is out there. There are over 190 countries on Earth. I’ve been to more than 40 but that’s nothing, really. Travel helps you increase your knowledge and experience. Travel also teaches you that there is a lot to learn and which is a humbling feeling since travelling gives me so much positive energy. It influences my thinking, keeps me on my toes, and helps me to realise how amazing life is.

AKASA AIR ADDS DELHI AS ITS SIXTH DESTINATION

INDIA’S NEWEST AIRLINE AKASA AIR announced Delhi as the sixth destination on its network, adding to its existing network of Ahmedabad, Bengaluru, Kochi, Chennai and Mumbai. e newly commenced ights on the Delhi-Bengaluru and Delhi-Ahmedabad routes will start on October 7, 2022. e airline has also announced additional daily ights on the Ahmedabad-Bengaluru route which will commence from October 7, 2022. Akasa Air is expected to cross 250 ights per week by October 10, 2022, along a total of nine routes. e airline said that one new aircra is added every 15 days, and very soon the h aircra will be put into operation. akasaair.com

QATAR MUSEUMS ANNOUNCED recently that the iconic Museum of Islamic Art (MIA) will reopen to the public on October 5, 2022 following a facilities enhancement project and the re-imagination and reinstallation of its permanent collection galleries. One of the world’s premier institutions of Islamic art and the rst world-class museum in the region, MIA will re-open in time for the in ux of visitors to Doha for the FIFA World Cup Qatar 2022 and provide a more accessible, engaging, and educational experience for guests. More than 1,000 objects – many newly conserved or acquired

– will be displayed in the Museum’s permanent galleries for the rst time, alongside the masterpieces for which the MIA has long been recognised. AIR INDIA TO OFFER LONG-HAUL PREMIUM ECONOMY CABIN

AIR INDIA HAS outlined plans to increase its eet by over 25 per cent in the next 15 months, with the delivery of 30 narrow and wide-body aircra . e carrier has signed lease agreements for 25 Airbus A320 and A321 neos, as well as ve Boeing B777-200LRs. e airline said that the move, along with the recent return to service of 16 short and long-haul aircra marks Air India’s rst major eet expansion since it was acquired by the Tata Group earlier this year. e B777-200LRs will join the carrier’s eet between December 2022 and March 2023 and will operate on routes to the US. It’s not clear exactly how the aircra will be con gured, but the airline con rmed that the planes will feature premium economy seating. WTTC: UNITED STATES REMAINS WORLD'S BIGGEST TRAVEL AND TOURISM MARKET THE US HAS HELD onto its spot as the world’s biggest and most powerful travel and tourism market. e ndings were released in the World Travel and Tourism Council (WTTC)’s Economic Trends Report, researched by Oxford Economics. e US travel and tourism sector’s contribution to the nation’s economy reached just under US$1.3 trillion last year, though this marked a decrease of US$700 billion compared to 2019. China and Germany remained in second and third places respectively, contributing US$814 billion and US$251 billion to GDP respectively. e UK, however, dropped from h place in 2019 to ninth in 2021, with a contribution of just over US$157 billion. wttc.org

UDAN SCHEME OF MINISTRY OF CIVIL AVIATION COMPLETES FIVE YEARS OF SUCCESS

THE MINISTRY OF CIVIL AVIATION’S agship program Regional Connectivity Scheme UDAN (Ude Desh ka Aam Nagrik) has completed ve years of success since the launch of its rst ight by Prime Minister Narendra Modi on April 27, 2017. e scheme was initiated on October 21, 2016 with the objective to ful l the aspirations of the common citizen by following the vision of ‘Ude Desh ka Aam Nagrik’, with an enhanced aviation infrastructure and air connectivity in tier one and tier two cities. In the last ve years, UDAN has signi cantly increased the regional air-connectivity in the country. ere were 74 operational airports in 2014. Due to the UDAN scheme, this number has increased to 141 now. 68 underserved/unserved destinations which include 58 airports, eight heliports and two water aerodromes have been connected under UDAN scheme. UK-INDIA CARRIER HANS AIRWAYS PERFORMS PROVING AND FAMILIARISATION FLIGHTS

START-UP CARRIER HANS AIRWAYS has moved closer to the launch of ights between the UK and India, with the completion of route proving and familiarisation ights. e airline’s A330-200 (registration G-KJAS) operated a two-hour ight to and from Birmingham airport with 100 guests on board, as part of route proving requirements for the UK Civil Aviation Authority. In addition Hans Airways has completed a familiarisation test ight replicating a fullservice o ering with 55 guests, taking o from Birmingham and landing at Glasgow Prestwick, Doncaster, back to Prestwick, before nally returning to Birmingham. e carrier now awaits the granting of its UK Air Operator’s Certi cate, at which point it will apply to India’s Directorate General of Civil Aviation for its licence to y from India. QANTAS LAUNCHES A NEW ROUTE FROM BENGALURU TO SYDNEY

AUSTRALIA’S NATIONAL AIRLINE QANTAS has launched a new route from Bengaluru to Sydney, providing the rst direct connection between southern India and Australia by any airline. QF68 will cut nearly three hours o the current fastest travel time between the two cities and signi cantly boost connectivity between India and New South Wales. Since the announcement of the new service earlier this year, the route has seen strong demand, with both the outbound and inbound inaugural ights sold out in all cabins. Whisky or gin?” was the rst question that bartenders would ask me when I frequented food and beverage outlets in Mumbai. O late, they have started serving either a Paloma in a highball glass or a classic Tequila Sunrise. One can even order from a dedicated tequila menu at ne-dine establishments. I have observed recently that consumers are now enjoying tequila and mezcal, a er a long spell of loyalty to vodka and gin which were their favoured drinks for a long time.

Experts in the industry have con rmed that tequila and mezcal are now being appreciated in all kinds of ways - on the rocks, with a splash of water or in innovative cocktails. Tequila in the past was treated with negative connotations but has come full circle in India. Today, we have the pleasure of indulging in some extraordinary quality agave spirits in our country.

WHAT BROUGHT ABOUT THE CHANGE

A host of factors from celebrity endorsements in the West to purported health bene ts and the overall premiumisation of the liquor industry have all played a major role in making tequila and now mezcal, as the spirit of choice for most alcohol drinkers.

A IS FOR AGAVE

Both tequila and mezcal are made from agave plants. Spirits made using Mexico’s agave plants are the only ones that can be called tequila and mezcal, thanks to their GI status. Agave is grown in other countries too and even in India along the Deccan plateau with a di erent plant called Agave Americana and alcohol made from these are called agave spirits.

Mexicans have been right in the knowledge and belief that tequila is as good as any other alcohol. As it is with grapes for wines and grains for whisky, so it is with agave plants for tequila; the quality of agave determines the quality of the spirits.

DIFFERENT TYPES OF TEQUILA

ere are di erent types of tequilas in the market, based on how long they’ve been allowed to age. Freshly distilled tequila is called Blanco Tequila or Silver Tequila which is a clear and light spirit that is meant for mixing into cocktails.

When it is kept in oak barrels for two to twelve months, it is called Reposado (rested) Tequila. ese are the slightly more nuanced tequilas which are used when you need the spirit to shine through in the cocktail.

If the tequila is rested for a year to three years, it is called Añejo Tequila, and if it is rested for over three years, it is called Extra Añejo Tequila. Both types of tequilas are meant to be sipped like single malts, to relish their complex avours.

A lot of the credit for popularising tequila goes to bartenders across the country; from mezcal Negronis to

Picantes and so many others, bartenders have pushed far beyond margaritas when it comes to tequila cocktails.

Justin Tan, Director of Código 1530, predicts that sales of tequila are likely to overtake vodka in the US within two years a er it became popular in the US four years ago and the same trends are now being seen in other parts of Asia and India.

THE CELEBRITY FACTOR

Tequila came to the attention of the world when George Clooney’s company Casamigos was bought over by spirit giant Diageo for a billion dollars in 2013. Several celebrities followed suit, including Dwayne Johnson who launched a small batch of Teremana Tequila in India. Last year, Elon Musk launched Tesla Tequila a er tweeting about it on April Fool’s Day in 2018 and letting everyone assume it was a joke—priced he ily, the lightning boltshaped bottles placed on a futuristic stand were sold out

no sooner than they were on the shelves. Tequila has become so popular with international celebrities that a lot of them have invested personal stakes in the agave business.

However, this has led to a severe shortage of quality and premium tequila in emerging markets like India because, unlike gin or vodka, making tequila is an intensive process spanning over years. e agave plant takes about seven long years to mature, following which the distilled alcohol is further ‘rested’ in barrels for premium Añejo and extra Añejo expressions. Consumers and bartenders are impatient and are not willing to wait that long to sample the hot new spirit, so they will move on and trade loyalties with the next readily available alcohol.

Much to industry experts’ amazement, tequila became one of the best spirits to consume for a post-pandemic generation looking for healthier options. Furthermore,

in bars and homes alike, people seem to prefer mixers that can be used in accordance with tequila. In fact, most bars now have a signature tequila cocktail.

An insight into the gaining popularity of ferries becoming an important mode of transport

Successful waterfront developments in places like London combine public spaces and culture with residential and commercial development to ensure economic sustainability

With over 7,500 kilometres of coastline and almost 20,000 kilometres of navigable inland waters, water transport is the key to economic and tourism development. India’s waterfront landscape is fast evolving and transforming itself in ways unimagined. Water-borne transport is a cleaner form of transport, often cutting travel time with a direct route compared to roadways. M2M Ferries is a classic case of a strong private/ public partnership exhibiting all the above advantages. Earlier the Raigad belt was only accessible by vehicular movement, and by water for only eight months of the year. The positive impact of this year-round operation includes cutting down road travel time by 75 per cent for both locals and tourists.

As of today, water transport represents only 6 per cent of India’s modal split. So by comparison, coastal and inland water transportation contribute to 47 per cent of China’s freight modal mix, while in Japan and the US, this share is 34 per cent and 12.4 per cent respectively. Alongside cargo movement, passenger movement has also begun to find its niche in the country. The waterfront development is at an inflection point in the country and the next decade should see massive growth.

With respect to passenger movement, ferries are like buses and trains - a mass commuter facility which will lead the new wave of the viability of waterfront developments and transport.

The ferry model offers strong advantages.

Both passengers and luggage can be conveniently transported with minimum to negligible hassle. Additionally, they avoid traffic snarls. These ferries offer comfort and space with the ability to move around rather than be stuck in an uncomfortable chair for long periods. To sum it up, it is the most cost-effective form of travel that can provide all three: swift travel, pocket-friendliness, and a comfortable journey. Lastly, one should also keep in mind that water travel cuts down on carbon emissions which aligns with the climate goals of India in working towards a cleaner mode of travel.

There are some challenges that will prove critical in developing this industry. Firstly, this is a highly technical industry - both at the infrastructure development level and at the operator level and thus getting the right

technology is the key to its success. The next vital challenge is getting single window clearances and long concessions. Infrastructure projects need long gestation periods, master planning and support from government agencies and an adequate time to recoup for investments to roll in. Waterways provide the most beneficial mode of transport for stakeholders, from creating local employment to assisting in the achievement of audacious climate goals; its potential is yet untapped in India

Some key success stories and examples of waterfront development can be drawn from our own country like the Brahmaputra river cruises which range from day cruises along the river to a ten-night cruise which includes wildlife safaris as well as experiencing the culture and archaeology along the riverfront.

We have personally witnessed with the development of the port at Mandwa by introducing restaurants, retail shops and open spaces, the footfalls increased from an average of 2,000 people a day to 10,000. It is a fact that connectivity and development will bring economic growth which leads to employment opportunities, an influx of tourism and contributes to the nation’s GDP. It is important to understand that in India, all the metro cities are struggling with traffic congestion, emissions from vehicles, and air pollution. The air quality issue is being addressed by introducing greener vehicles, but waterways which have been ignored, have now gained importance and have begun to form an integral part of our infrastructural network.

Stand-alone food and beverage concepts have set the benchmark quite high and are constantly challenging the status quo. Hotels are realising this, and a lot of attention is being given to food and beverage concepts within a hotel to elevate the overall guest experience and retain guests within the hotel. Existing outlets are being renovated, new conceptbased outlets are being opened and dining is being made more affordable and comparable to non-hotel restaurants. Furthermore, the addition of curated private dining experiences is proving to be popular with an intimate setting coupled with a menu

inspired by local produce and hyper-local beverages within an intimate setting in the resort.

Another event that is progressively gaining popularity is bar takeovers with visiting bartenders from within and outside the country. Pop-up restaurant concepts in under-utilised spaces at hotels are also being executed to keep the offering more dynamic and exciting. There is a considerable level of innovation within event spaces too. One such example is Udeta, approximately 1672 sqm of concept event space, recently opened at Alila Diwa Goa. The grand space is one of its kind in Goa with about 780 sqm of pillar-less indoor space, that opens to a theatre kitchen to offer a visual treat of chefs preparing and serving fresh gourmet delights.

Guest satisfaction is not only limited to the food and beverage offerings of the outlet but also extends itself to the design concept as well. Every new outlet is trying to create a distinct character for itself that synergises with the food & beverage concept to offer an immersive experience to guests. Old outlets are also undergoing an up-gradation for a new, refreshed look and change of atmosphere.

To sum it up, in my humble opinion this is just the beginning and in times to come food and beverage options in hotels will keep evolving and innovating to stay ahead in the game of hospitality.

BACKGROUND Situated in close proximity to the Ambience Mall, the luxury property is located on the fringe of Gurugram and Delhi NCR. Furthermore, the hotel houses an impressive collection of art by renowned artist- Raghu Rai. A large part of the artwork that can be found across the five star property signifies how the landscape in Gurugram has evolved from agricultural land to its new avatar of high-rise buildings and multiplexes. WHAT’S IT LIKE As soon as I entered, I was in awe of the grand spiral staircase on either side of the lobby. Each nook and corner of the hotel was covered in some form of eye-catching art. The interiors exude a sense of comfort and warmth as they prove to be a successful mélange of modern amenities and traditional design.

WHERE IS IT Situated on the fringes of Gurugram, the hotel is conveniently close to the airport, and is a stone’s throw from Ambience Mall. The hotel is strategically sandwiched between the business centre and the capital city, making it an ideal getaway for the business traveller.

ROOMS The hotel o ers 322 rooms and suites that have been tastefully designed with a combination of contemporary and

traditional Indian influences. Guests can choose from the 129 Deluxe Rooms, 75 Premier Rooms, 90 Royal Club Rooms, and the 22 Executive, 6 Panorama Suites, and the Presidential Suite. I stayed in the Panorama Suit. The 180-degree view of the peaceful Rajokri Greens through the floorto-ceiling windows provided an extremely soothing backdrop to my hotel stay. This spacious room sprawled over 104 sq m and provided access to the Royal Club Lounge. I greatly appreciated the complimentary airport pick-up and drop that the hotel provided, which captured their dedication to meet the needs of their guests. The ergonomic mattress and soft pillows made for a very comfortable night’s sleep.

FOOD AND DRINK The hotel has a variety of cuisines for guests to go on a gastronomical adventure. At Spectra, I breakfasted on a flu y white egg omelette paired with a lightly browned sourdough toast. I washed that down with a cup of espresso. I sipped on some wine at the Royal club Lounge and proceeded for dinner. At Diya, I dove into the true essence of India with tastefully designed interiors that captured the country’s dynamic nature. The menu o ered a culinary tour through the country, right from the mustard flavoured fish of Bengal to the coconutinfused dishes of the South. On the second day, I dined on Italian fare at Zanotta. interactive kitchen and exquisite views of the millennium city set the mood for a sophisticated dinner, with authentic dishes like Rucola, Pere alla griglia, and Polenta.
