Business Traveller India speaks to Rose Pardiwala Founder & CEO and Mishal Pardiwala Partner of Simply Native, a boutique Kombucha brand, about their business, travel plans and more!

Could you please tell us a little about the inception of the brand?

It all began during the Covid-19 pandemic when my work in the film and television industry had to be put on hold due to living with elderly family members. With some unexpected free time on my hands, my mother-in-law and I decided to explore new possibilities and enrolled in a three-week entrepreneurship program with IIM Bangalore. Though I didn't win, that experience led to the creation of Simply Native Kombucha. Our journey with kombucha brewing began, and we were determined to incorporate organic, locally sourced ingredients, often foraged from our property in Alibag. Through trial and error, we crafted a range of unique and captivating flavours that aimed to appeal to diverse palates.

How did you decide on the flavours for your range of Kombuchas?

When it came to selecting the flavours,

I believed in the power of simplicity. Keeping the ingredients minimal and focused was a top priority for me. Our aim was to create a range of kombuchas that would be not only enjoyable but also easily distinguishable and memorable for our customers. We steered away from complex concoctions that might overwhelm the palate and instead focused on delivering a pure and authentic taste experience.

What benefits does Kombucha consumption yield for one’s health?

Kombucha, the fermented tea-based beverage, o ers a host of health benefits that appeal to health-conscious consumers. With under 60 calories per bottle, it serves as a low-calorie option, while its probiotic-rich composition aids in digestion and promotes a healthy gut microbiome. As a natural remedy, kombucha provides relief from hangovers by restoring vital nutrients and combating dehydration. For those seeking an

alternative to traditional soft drinks, kombucha stands out as a healthier choice, o ering fizziness and flavour without excessive sugars. Additionally, kombucha serves as a source of B vitamins, particularly B12, which may be lacking in Indian vegetarian diets. In my carry-on luggage, you would always find a few essentials that make my travels more enjoyable and productive: My Kindle, notebook, pen and my phone!

What’s next on your wish list in terms of travel?

Next on our wish list in terms of travel is an exciting journey to Madagascar. My husband and I are eager to explore this captivating island, especially because he comes from a Bohra Muslim family, and Madagascar boasts a vibrant and sizable community. We look forward to connecting with relatives we have never met before, immersing ourselves in their rich culture, and strengthening our family ties.

PASSENGERS FLYING DOMESTIC from Jaipur airport will not be required to carry the printout of their tickets and boarding pass with the launch of Digiyatra programme. Under the programme, being launched under the Ministry of Civil Aviation, Jaipur Airport will be equipped with Biometric Boarding System (Face Pods) for passengers to scan their details and bypass the cumbersome procedure. e pods will eliminate the need for manual veri cation of tickets and identi cation documents at multiple checkpoints, saving passengers their crucial time. e programme will initially start with only one dedicated entry route for passengers choosing the Digiyatra option, but will later expand, a spokesperson of the airport said. e system will simplify check-in, security, and boarding processes for passengers, making the process faster and smoother, right from the time one enters the terminal building to when they board the aircra .

HYATT HAS REVEALED that the US states of Alabama and California will be home to the rst properties from its extended-stay brand, Hyatt Studios. e company launched the upper midscale brand in April, and signed letters of interest for more than 100 Hyatt Studios hotels in the Americas. e debut property from the brand will open in late 2024 in Mobile, Alabama, thanks to a franchise agreement with 3H Group, Inc. is will make Hyatt’s rst branded hotel in the area and will be located near Mobile Bay’s Gulf Coast, providing guests with access to the port city. e company says that the city will not only attract tourists but also those across industries such as manufacturing, aerospace and retail. is will be followed by a 113-room Hyatt Studios hotel in downtown Marysville, located in Yuba County in California, as part of a franchise agreement with Presidio Hotel Development LLC. COUNCIL has called on governments worldwide to “get serious” on incentivizing Sustainable Aviation Fuel (SAF), warning that there is currently a massive gap between demand and production. The WTTC said that current SAF production only meets 0.1 to 0.15 per cent of the requirement and urged governments to provide “strong incentives to encourage investment in SAF production, including tax credits, grants or other financial incentives”. Dudhasagar Falls are in Sanguem, close to the Bhagwan Mahavir Wildlife Sanctuary. e four-tiered waterfall is one of the most spectacular sights in Goa and gets its name from the milky, foamy water plummeting down from the mountain. Watching the majestic cascade of white water, gushing down is breathtaking and memorable. One can go there by road or take a train to Kulem railway station and then trek to the waterfall or hire a vehicle to get closer. Whichever route is taken there will still be a walk to reach the base of the falls. ere is also a rather bumpy track that is suitable only for fourwheel drive vehicles, but this track still requires visitors to trek about 1 km to reach the base of the falls.

BONDLA WILDLIFE SANCTUARY

It has been a favourite picnic spot for years. When vacationing in Goa with family, make sure to visit this verdant park. BASILICA OF BOM JESUS

e Basilica of Bom Jesus, a World Heritage Monument christened by UNESCO is rich in art, architecture, and history, where the relics of Saint Francis Xavier are enshrined. On the southern side of the transept lies the Chapel of St. Francis Xavier. is chapel has carved and gilded columns and wood-carved oral decorations. is is where the relics of the saint are kept. ere is an exquisite silver statue placed in front of the silver casket where the body of St. Francis Xavier is. e Basilica also contains a modern art gallery, one of the largest of its kind in Asia depicting various Biblical scenes and can be accessed using the stairs near the sacristy. It contains 36 paintings executed between the years 1973 and 1976.

CHURCH OF ST FRANCIS DE ASSISI AND CONVENT

e Church of St Francis lies west of Se Cathedral on the same campus. Architecturally, it blends the PortugueseManueline style from the original structure with the later Tuscan style architecture. e interiors display the Baroque school and Corinthian in uences. e altar is dedicated to St. Francis of Assisi and has above it a huge statue of the saint and another of Jesus. Flanking the altar are distinctive paintings on wood depicting scenes from the life of St. Francis of Assisi and the history of the Seraphic Order. e adjoining convent houses the Museum of Archaeological History. No tour of Old Goa is complete without a visit to this twofold attraction.

CABO DE RAMA

Deriving its name from e Ramayana, a Hindu epic, Cabo De Rama predates the Portuguese rule in Goa, making it one of the oldest forts. ough time and the elements have weathered the outer structure, it still stands guarding the mouth of the Sal River and commanding panoramic views of the ocean and the surrounding countryside. e fort is located in South Goa, about 16 km north of Agonda Beach. ere are still a couple of ancient canons which were le behind when the Portuguese abandoned the place and have been le there ever since. ere is also a narrow, and steep pathway that can be used to travel from the fort down to the beach below.

CHURCH OF ST. CAJETAN

One of the most beautiful churches in Goa, it stands in Old Goa, northeast of the Se Cathedral. e interiors of this church are laid out in the shape of a Grecian cross and have seven altars. ere are eight columns that divide the church into a nave with six vaulted lateral chapels. It shows several design in uences such as Corinthian, Baroque, Rococo and Goan in the intricately carved and gilded work. Although the Church was originally dedicated to Our Lady of Divine Providence, it is more commonly known as the Church of St. Cajetan, who was a contemporary of St. Francis Xavier and the founder of the Order of monks called the eatines. e hemispherical dome is like the Basilica of St. Peter in Rome.

The A380 was initially conceived back in the 90s, when hub-to-hub travel looked to be gaining prominence. Able to carry up to 853 passengers if configured in all-economy, the plane offered attractive economics to airlines looking to maximise limited slots at busy airports. Roomy interiors and a novelty of engineering also made it particularly popular with passengers.

The first A380 aircraft was delivered to Singapore Airlines in 2007, and there have been 14 customers for the double decker superjumbo. Emirates is the biggest operator, having taken delivery of just under half (123) of the 251 superjumbos built.

However, as the aircraft came to market, an industry shift towards lower-capacity, direct routes, coupled with the aircraft’s expensive running costs, meant it quickly fell out of favour. In

February 2019, Airbus began to wind down production of the aircraft, and Emirates took delivery of the final A380 in December 2021.

The Covid-19 pandemic and subsequent global travel slowdown led many A380 operators to either place their superjumbos in storage or retire them completely. It looked like that was it for the giant aircraft.

However, as demand for flights rebounds after the pandemic at the same time as delivery delays of new aircraft, airlines are starting to take another look at the A380, and existing fleets are gradually coming back into service.

Here we round-up the latest situation regarding the A380 fleets across all 14 operators.

How many have been delivered? Ten. The first A380 entered service on October 30, 2009 and made its maiden passenger flight that November with a flight from Paris to New York.

Is the airline currently operating the A380? No. In 2019, Air France announced plans to gradually retire its A380 fleet. This process was accelerated by the Covid-19 crisis, with the carrier confirming in May 2020 that its superjumbos would not return to service.

All Nippon Airways

How many A380s did ANA order? Three.

How many have been delivered? Three between 2019 and 2021, with the first flight operating in May 2019 between Tokyo Narita and Honolulu in Hawaii.

Is the airline currently operating the A380? Yes, ANA is currently flying three A380s.

Where are they flying to? All to Honolulu.

Configuration: 520 seats across four classes – eight in first class, 56 in business class, 73 in premium economy and 383 in economy.

Interesting fact: The livery of ANA’s fleet of A380s depicts the sea turtle, or “Honu” – considered a symbol of good luck and prosperity in Hawaii.

Asiana

How many A380s did Asiana order? Six.

How many have been delivered? Six, with the first flight taking off at the end of 2013 and operating on routes to Los Angeles and New York.

Is the airline currently operating the A380? Yes, Asiana is currently flying three A380s.

Where are they flying to? Los Angeles and Bangkok.

Configuration: 495 seats across three classes – 12 in first class suites, 66 in business class and 417 in economy.

British Airways

How many A380s did British Airways order? 12.

How many have been delivered? 12, with the first entering service in 2013.

Is the airline currently operating the A380? Yes, BA is currently flying 11 of the A380s.

How many have been delivered? Five, in the autumn of 2011. The aircraft made its maiden flight from the Toulouse Airbus base to Hamburg in March of that year.

Is the airline currently operating the A380? No.China

Southern has retired its entire A380 fleet.

Emirates

How many A380s did Emirates order? In total the carrier ordered 162 superjumbo aircraft, although 39 of these were cancelled as part of Airbus’ decision to cease production of the aircraft.

How many have been delivered? 123. The first Emirates A380 entered service on August 1, 2008, with the final superjumbo being delivered to the carrier in December 2021.

Is the airline currently operating the A380? Yes, Emirates is flying around 90 A380s.

Where are they flying to? Routes across the carrier’s network. By summer, the A380 will be reintroduced on services to Glasgow, Casablanca, Beijing, Shanghai, Nice, Birmingham, Kuala Lumpur and Taipei.

Configuration: Emirates has a total of seven different configurations across its A380 fleet. The carrier is currently in the process of retrofitting 67 of its superjumbos with premium economy, as part of what it says is the “largest known fleet retrofit” project.

Utilising high-quality, locally sourced ingredients with an emphasis on sustainability and vegan-friendliness is the core foundation that roots Plural. “In the wake of the pandemic, the need for sustainability in our food system became apparent. Industrial animal agriculture also creates the perfect breeding ground for viruses. Making fresh vegetable produce tasty and desirable is not only a great business opportunity, but also the future of the industry. Besides, as a vegetarian from the onset, I thought I’d be able to do the most justice to a concept that highlights vegetables and puts them at the forefront. e rising popularity of vegetarian/vegan restaurants is a welldocumented trend. As disposable income rises amongst populations, they become more health conscious. is nudges people in the way of eating more unprocessed plant foods. Even abstract concepts such as morality gain more importance as societies get wealthier and for many people, these ideas are directly tied to a cruelty-free and plant-forward diet. We have always envisioned Plural as being on the cutting edge of the celebration of fresh produce. e Indian palate resonates most with big, bold avours, spices and textures characterised by a powerful balance of all avour pro les. Constant research, dialogue with customers and colleagues, and trial and errors are the hallmark of the ideation process for new dishes and cocktails. All our ingredients are very dear to us and it’s very di cult to cherry pick our favourites - that said, fresh herbs, spicy chillies, pickled veggies, medley of mushrooms, lemongrass, soy, ka r lime and nuts are some of our prime ingredients. Yogisattva, is India’s rst fully vegan, gluten-free and plant-based cafe situated in Bandra, Mumbai. Founded by chef Raveena Taurani, the vibrant and health-conscious establishment aims to rede ne the perception of vegan cuisine by making healthy food not only delicious but also easily accessible to all. Yogisattva translates to ‘Yogic Being’ and draws inspiration from the eightfold path towards enlightenment that yoga represents. “I developed severe lactose intolerance in 2015, and since there were no vegan/vegan-friendly restaurants in Mumbai catering to my dietary intolerance, I decided to create one. Vegan and vegetarian restaurants are here to stay. Most restaurants that serve meat also now have a dedicated vegan/vegetarian menu. I think most people in hospitality acknowledge how important it is to cater to everyone’s dietary and lifestyle choices. We are constantly improving our o erings by ensuring we get rst-hand feedback from our regulars and we do food tastings only for meat eaters. Once we know we have pleased their palate, the vegetarian and vegan clientele will de nitely enjoy the food. I curate and execute all menus and also encourage collaborations with di erent chefs across Mumbai who don’t make this type of food. It encourages them to think deeply and take it up with a spirit of exploration. BACKGROUND Guests are enveloped in the contemporary Bavarian charm, flair, and warmth at Steigenberger Hotel München which is the perfect embodiment of a modern and trendy lifestyle, complementing the traditional Bavarian culture.

WHAT’S IT LIKE I entered the stylishly furnished hotel and took a few moments to soak in the ambience and vibe before I approached the professional and courteous sta who helped me to speed up my check-in process.

WHERE IS IT The hotel is very conveniently located and is only four kilometres from the Olympiapark, The BMW World and BMW Museum. The locations can be reached by car, public transport or on foot. The internationally renowned Allianz Arena is a short seven kilometres away and can be easily reached by car or the U6, whose stop is only a few steps away from the hotel.

ROOMS The hotel has 292 stylishly furnished, partially barrier-free rooms. I stayed in a Deluxe Room, which was 31-35

sqm in size, o ering spectacular city and partial Alpine views through floor-to-ceiling windows. The modern air-conditioned room with anti-allergic real wood floors, had a double bed, a complimentary co ee maker, an electric kettle, a smart TV, a safe, free WLAN, and a luxurious, modern bathroom.

FOOD AND DRINK Breakfast is one of my favourite meals of the day; it helps me to plan and ascertain how busy my day will be. I needed nutrition to get me through a day packed with meetings for almost no time for lunch, so I started my day at Lumen with an egg white omelette and toasted sourdough bread, a filling bowl of strawberry yoghurt and oats, washed down with a cup of cappuccino co ee. Additionally, the hotel also has a delightful Valentinum Bar and Terrace that adapts the concept of bowls, beers, and burgers and combines Bavarian cuisine with modern culinary art. Meals can be matched with the fitting beer from a sophisticated beer menu. Whether indoors or in good weather on the spacious terrace, guests can experience and enjoy regional delicacies in a stylish ambience.

MEETINGS The hotel o ers a special service called the Green Meeting concept which aims to minimise the ecological impact of an event from planning and execution to departure. Covering more than 1200 sqm, the 14 conference rooms are equipped with state-of-the-art conference technology, including two board rooms and other small events. All rooms have natural light and air conditioning. Co ee breaks and a diverse culinary menu o er the perfect break. A dedicated event team ensures that all events are a success.

LEISURE For relaxation, guests can enjoy an extraordinary fitness and wellness landscape in the style of a beer factory where a relaxing sauna session can be experienced in one of the barrels made of wood or copper. Additionally, it also has a tranquil relaxation room, sauna, steam bath and an experience shower.

VERDICT Although my visit to Munich was short, my stay was enjoyable, and I got the time to relax and unwind. Steigenberger Hotel München is one of the most ideal luxury hotels for business and leisure travellers. It was a thoroughly memorable stay and I look forward to returning here on my next visit.

I can say without hesitation, that a meal here is hands down one of the best Japanese meals that I have eaten in India!

Adrift Kaya at JW Marriott Hotel New Delhi Aerocity is a modern Japanese restaurant by Michelin star awarded Chef, David Myers, designed by British Designer Timothy Oulton. During my stay at the hotel, I was invited for dinner there and since Japanese cuisine is one of my favourites, I readily agreed. The contemporary décor and vibrancy of the ambience reminded me of an authenticizakaya restaurant which I have often visited during my trips to Japan.

I started the meal with a delicious glass of red wine accompanied by the perfect umami of Edamame tempered with fried curry leaves and sweet chilli. Following that came the most fantastic Salmon and Hamachi sushi platters that I could compliment the red wine to perfection with! The assorted Japanese vegetable tempura, prawn dumplings lettuce were out of this world. The meal was so filling and yet so light, leaving more room for the decadent dessert of chocolate praline with salted caramel ice cream that literally melted in my mouth that I was recommended to try out.

I ended my day completely elated with my meal and choice of cuisine.

VERDICT Although I have eaten several authentic Japanese meals during several visits to Japan, I can say without hesitation, that a meal here is hands down one of the best Japanese meals that I have eaten in India! The ambience and well-informed

The quaint and contemporary Oscar’s Brasserie Moderne is the perfect personification of tradition meeting modernity in the middle of the pulsating financial and cultural metropolis of Frankfurt. I revelled in the lively charm of Art Deco which complimented the international creations of the wellestablished kitchen team to create a unique experience for each guest. It was my first night in Frankfurt and this restaurant was on my bucket list, so as soon as I wrapped up my day, I headed straight there! I began the evening with a glass of cabernet and ordered the delectable Salmon tatar as my starter! The main course was a delicious pan-fried Atlantic cod with a side of crisp French fries sprinkled with tru le salt! To say that the meal was delicious and one of the highlights of my trip, would be an understatement. Although I tried hard, I was unable to resist the sinful Valrhona dark chocolate mousse which was to feel less guilty!

VERDICT Dinner here was truly a transformative culinary experience and one that I look forward to repeating all over again! Both, the food and service were simply excellent and I would urge everyone

In addition to this, they have a selection of wines by the glass and semi-sparkling wines as well as an expansive wine list with a focus on Italy, which is supplemented
