Croissant machines 530 Avant and 3000 Classic
The 530 Avant machine: the strength of innovation Designed to combine high production with high quality of the finished product, the 530 Avant machine represents the best solution for the production of croissants in a significantly limited space. Special attention has been paid to the cutter with orientator, the heart of the machine, where the dough triangles are cut by the guillotine, spaced in regular rows by a motorized belt and rotated by an intelligent orientating system without any risk of overturning. The control panel on the 530 Avant can be used to program different triangle base measurements. Thanks to this computerized optimization, the croissant processing can be performed with 2 to 6 rows for an hourly production of 2000 to 6000 croissants.

The cutting device with orientator: the beating heart of the machine! This is the true strength of the 530 Avant Croissant Machine, the part that transforms the dough into rows of triangles orientated and perfectly arranged, ready to be rolled. The cutting device is composed of a rotating disk mould that cuts the strips of dough and a vertically moving mould that completes the cut. The stainless steel mould can be changed easily to adapt the machine to the desired croissant dimensions. The timed separator belt easily spaces the rows of triangles from one another without any risk of breaking. An operator can manually fill all the rows of croissants before entering the rolling machine. Thus it is possible to produce croissants for appetizers with cheese, salami, ham, etc. In the 530 Avant machine, thanks to the rotating orientator table, the flour always remains on the top part of the dough for perfect rolling.
By means of the innovative rotating table, all the dough triangles arrive to the rolling machine properly orientated, keeping the flour-dusted part always on the top side of the dough.

The 3000 Classic machine: croissants by tradition
With over 50 years of experience in the croissant-making business, the 3000 Classic offers the best guarantee of quality and efficiency with its compact size and limited operating costs. The 3000 Classic produces from 2 to 5 rows of dough triangles, for a production capacity that varies from 1500 to 3750 croissants per hour. The triangle cutting operation occurs by means of the classic rotating mould located on the cutter - orientator unit.
In the Classic version the conveyor belt automatically recognizes the orientation of the triangle and reverses its movement to feed the rolling machine correctly.

CONVENIENCE AND FUNCTIONALITY ON A HUMAN SCALE! Meticulous innovations have been introduced over the years in order to enhance optimization of the machine’s dimensions as well as its user-friendliness, cleaning and safety.
The space inside the machine is fully optimized. The structure of the rolling machine, in fact, provides a practical storage compartment.
The minimum footprint of the machine is guaranteed by the possibility to recline the belts of the cutters after use. Once reclined, the belts “disappear” next to the body of the machine, thereby minimizing the overall dimensions. In the Classic machine, an additional compartment is also available underneath the cutter in order to store the rotating moulds and cutting disks.
In the rolling machine, in addition to the exit belt which can be closed easily, it is also possible to disassemble the entry belt and house it conveniently above the machine.

DETAILS THAT MAKE THE DIFFERENCE Scrupulous attention has been paid to the details that can enhance the convenience of using the machine, from the rolling pin holders to the scrap cutter, from the flour collection tray to the hinges for opening the casing.
In the 3000 Classic machine, the ergonomic stainless steel rolling pin support allows the rolling pin to be hooked in several positions. When not in use, it can be perfectly integrated in the body of the machine.
In the 530 Avant machine, the rolling pin support remains solidly fixed to the structure for improved relaxation of the dough. Both models are supplied complete with two stainless steel rolling pins.
The ergonomic configuration of the rotating stainless steel knife ensures safe and functional use.
The easy-to-adjust stainless steel scrap deflector makes it possible to feed the guillotine a dough sheet having a constant suitable width. The excess dough is collected in the stainless steel scrap collector located underneath the entry of the guillotine.

CLASSIC COMPUTER The computerized control panel makes it possible to personalize the machine s operating settings and thus produce croissants with different weights and shapes to meet every type of need. This function allows automation of the production, optimizing time and cost. Using the innovative scroller knob, the Classic computer allows the operator to: - Optimize the operating cycle according to the length of the triangle base - Adjust the hourly production of the machine in order to allow the operator to manually collect the croissants By pressing a single key, it is also possible to: - Select operation of the rolling machine only - Select the automatic operating cycle for production of the croissants - Select the automatic operating cycle for production of various forms (round, rectangular, etc.), cut only. In the version for the 530 Avant Croissant Machine, the computer also allows the operator to: - Select the length of the dough triangle base using the six preset measurements - Customize the measurement of the dough triangle base by setting the desired length of the mould being used Using an appropriate key, it is also possible to exclude operation of the guillotine in order to cut the dough with rotating moulds.
EASY CLEANING The wheels, reclinable or removable belts and open construction on the bottom demonstrate the particular effort Polin has made to facilitate the cleaning of the machine. The moulds and cutting disks are especially easy to access and can be disassembled quickly.
WORKING IN SAFETY Another important element is the focus on safe use of the machinery. Each individual component is designed to allow the operator to work in complete safety.

ACCESSORIES In order to maximize versatility, Polin offers a wide range of accessories including the calibrator and working table for finishing special products. The modular structure of the Croissant machine also allows the supply of the rolling machine only.
Knives and moulds
Calibrator
The calibrator has the fundamental function of guaranteeing a constant thickness of the dough sheet and thus a constant weight of the croissant, allowing continuous machine operation. The calibrator is equipped with a self-supporting structure and an independent control panel.
The cutting disks and the moulds, which can be disassembled and cleaned easily, ensure perfect cutting of the dough.
Working table
The working table is used to collect all the products, even those with forms different from the croissants such as round, oval, square, rectangle, diamond, etc. It is composed of a conveyor belt that is easily assembled at the exit of the cutter for the processing, filling and manual rolling of the various products.
