obody has a bad word to say about butterflies – except for the ones whose caterpillars chew cabbage leaves to shreds – but moths are rather less popular. Many people find the big, night-flying ones downright creepy, and of course nobody wants to find clothes moths lurking in their wardrobe. Moths, though, are a much larger and more varied group of insects than butterflies. There are around 60 species of butterfly found in the British Isles, as compared with over 2,500 species of moth. Although most moths are tiny – and some are highly destructive – many are extraordinarily beautiful. Along with most kinds of insect, moth populations have plummeted in recent years. But here are half a dozen stunning species that are still relatively common, and that you’ve got a decent chance of seeing between now and autumn. Most can be spotted during daylight hours, often in rural gardens, so there’s no need for any late-night expedition with your torch!

The Hummingbird Hawk Moth True to its name, the hummingbird hawk moth looks and behaves just like a humming bird. It hovers effortlessly in the air, its wings a blur, as it uses its long proboscis to sip nectar from its favourite flowers. Hummingbird hawk moths are summer visitors, migrating from mediterranean Europe during spells of warm weather, often in large numbers. They are commonest in southern England, but can be found as far north as the Shetlands. The adults have grey-brown bodies and forewings, with a wingspan of around 45mm; their hind wings are a soft, rich orange. They are especially attracted to valerian, honeysuckle, lilac, buddleia and tobacco plant. The hummingbird hawk moth’s handsome green caterpillars feed on various native plants, especially bedstraws and wild madder.

PA L E A N D INTERESTING

Whereas the hummingbird hawk moth impresses with its aerobatics, the garden tiger moth is notable for its stunning good looks. From the point of view of a hungry bird, however, the garden tiger’s dramatic colour scheme is bad news. The eye-catching patterns are a warning that the moth is highly toxic to small creatures. The garden tiger’s forewings are creamy white with dark brown blotches, and its hind wings are scarlet with black dots. It’s a fairly large moth, with a wingspan up to 65mm. The garden tiger’s caterpillars are equally distinctive. Popularly known as ‘woolly bears’, they are densely hairy, and can often be seen stomping across country lanes in search of new food sources, which include nettles, docks, foxgloves and plantain.

The smallest of our selection, with a wingspan of just 30mm, the white plume moth is nonetheless one of the most intriguing. It is snow white, and its deeply divided, feathery wings give it an eerie, otherworldly beauty. There are thirty or so species of plume moth in the British Isles, but the others – being brown, and smaller – tend not to attract so much attention. Despite being fairly common, little is known about plume moths. Most of them roll up their wings into tight tubes when they are at rest, giving them a distinctive ‘T’ shape, although the white plume moth seems less liable to do this than some of its cousins. The white plume moth is often seen in gardens in June and July. Its caterpillars feed on one of the gardener’s pet hates, bindweed.

PRETTY IN PINK The Cinnabar Moth

With its dark grey and vibrant pink wings, the cinnabar moth is easy to spot as it flits over the grassland and forest rides that are its favourite habitat. The cinnabar moth’s caterpillars, ringed with yellow and black bands, are equally attentiongrabbing – a sure sign they taste bad to birds. That’s because their favourite food plant is ragwort, whose leaves are full of toxins. The caterpillars aren’t affected by the poison, which they store in their bodies (and pass on to the adults) to deter predators. Ragwort is dangerous to livestock, and control of the weed has caused cinnabar moth numbers to dip sharply. The caterpillars can also feed on related plants such as groundsel, but fewer will survive to become adults.

T H E E Y E S H AV E I T The Elephant Hawk Moth

The handsome gold-and-pink elephant hawk moth is a night-flyer, but it can often be found resting by day amongst the stems of its preferred food plants, notably honeysuckle. It is best known, though, for its spectacular caterpillars, which are amongst the largest found in the UK. In late summer elephant hawk moth caterpillars – which can reach nearly 9cm long and which feed predominantly on rosebay willowherb – can often be found wandering around, looking for a suitable spot to pupate. Each caterpillar has two pairs of vivid, eye-like markings on its ‘shoulders’. When it feels threatened it pulls its head back into its shoulders, puffing up the ‘eyes’ and making them suddenly far more prominent, a move that appears to startle potential predators.

MOORLAND MARVEL The Emperor Moth

If you want to catch a glimpse of the beautifully patterned emperor moth, head for open country – heather moorland, heaths, bogs or sand dunes. Female emperor moths fly only at night, but males are on the wing during the day, covering large distances in search of females, whose scent they detect with their prominent feathery antennae. With a wingspan of 70mm or more, four prominent ‘eye-spots’, and a colour scheme combining white, black, brown, pink and orange, this is one of Britain’s most photogenic moths. The caterpillars, which are bright green with black hoops, feed mainly on moorland plants such as heather, bramble, hawthorn, willow and birch. You’re unlikely to see adults on the wing much later than June, but the caterpillars like to bask in the sunshine well into late summer.

f you’re planning to cook up something special, garnishing your plates of food with edible flowers is a quick and easy way to transform a decent plate of food into a memorable dining experience. Nowadays you can buy edible flowers all year round from specialist suppliers, but if you’ve got a garden or allotment there’s simply no excuse for not growing your own. So where to start? Here are some sure-fire winners, simple to grow and guaranteed to add pep to your presentation.

Brilliant Blues

BORAGE AND ANCHUSA The star-shaped, sapphire blue flowers of borage taste like cucumber and make a stylish garnish for both sweet and savoury dishes. Borage flowers add glamour to salads and desserts, and look great floating in glasses of Pimms or other summery cocktails. Freeze individual flowers in ice cubes and you’ll have a supply of borage blooms to beautify your cold drinks for months to come. Anchusa (Anchusa azurea) is a close relative of borage. It has the same brilliant blue colouring, but its flowers are tubular rather than star-shaped. Both borage and anchusa grow quickly and readily from seed, reaching a height of a metre or more by late summer. Borage is an annual but sets seed readily, so you’re virtually guaranteed to find ‘volunteers’ cropping up throughout your borders the following year. Anchusa is a tough biennial whose individual plants should survive even harsh winters to give a second year’s service. Borage and anchusa perform best in moist, welldrained soil in full sun. They have long, sturdy tap roots so they aren’t suitable for containers or shallow soils. If you’re growing them in an exposed spot, stake them or use plant supports to prevent them flopping. Awesome oranges and winsome whites CALENDULA

Calendula is another remarkably easy flower to grow. And, as its popular nickname of ‘pot marigold’ suggests – the pot in question being a cooking pot, not a flowerpot – it has plenty of uses in the kitchen. The petals have a fresh, bright, peppery taste, but it’s their vibrant orange colour that makes them so popular with chefs. Add a dash of summer sunshine to your food by scattering them on omelettes or salads, stirring them through soups, rice, couscous or quinoa, setting them in jellies, or folding them into homemade ice-creams. For a change of palette, try a new variety of calendula that appeared on the market a couple of years ago. It’s called ‘Snow Princess’ and its petals are creamy white rather than the standard Donald Trump orange. Calendula will grow in pretty much any soil that isn’t waterlogged, and is happy in both sun and partial shade. Pinch out growing tips to keep the plant neat and bushy, and deadhead regularly to encourage repeat flowering.

Sizzling scarlets and gorgeous golds NASTURTIUM

Nasturtium flowers have a strong mustard-cumwatercress flavour, so they tend to work better with savoury dishes than with sweet ones. They’re also relatively large and bold, hence more often used as a garnish than as an ingredient – although if you’ve got the patience you can make colourful amusebouches by stuffing them with soft cheese or other savoury dips. Traditional cottage garden nasturtiums are scarlet, but nowadays they are also available in a range of colours, from pale gold through to deep, brooding crimson. Grow a variety of different varieties for maximum flexibility when it comes to dressing your plates. Nasturtiums grow quickly and reliably from seed, and will flower best in poor soil in full sun – if you grow them in too rich a soil you’ll get lots of leaves but fewer blooms. They are floppy, spreading plants, so allow them plenty of space.

Perky Purples LAVENDER

Dried lavender is readily available for use in cakes, biscuits, sorbets, ice creams, compotes and custards, but fresh lavender is a better bet for two reasons. Firstly, the colour is more intense. Secondly, the taste is milder, making it less likely that you’ll add too much – and lavender is a pungent flavouring that you don’t want to overdo! If you’re growing lavender for culinary use, English lavender (Lavandula angustifolia) is a better choice than French lavender – its flavour is sweeter and less insistent. ‘Hidcote Pink’ and ‘Rosea’ are generally regarded as two of the best cultivars for the kitchen. 30 | SUMMER 2019 | Dales Life

Full sun is crucially important for healthy lavender plants, and even a hint of shade will result in smaller, scrawnier plants. As you would expect from a mediterranean herb, lavender flourishes in poor, well-drained soil, so if you garden on clay then temper your soil with leaf mould, horticultural grit or both. Lavender prefers alkaline soil, so grow it in containers if your soil is acidic.

Captivating Combinations PANSIES AND VIOLAS

Most pansies and violas don’t taste particularly special – vaguely fresh and cress-like – but for colour and charm, you simply can’t beat them. Their vivid colours and cheerful ‘faces’ will give a lift to any plate. Not all member of the Viola family are edible, so choose carefully. The species that are good to decorate your dinner with are cornuta, hybrida, tricolor, x williamsiana and odorata. Garden pansies are basically large-flowered hybrids of Viola tricolor, so they’re fine to eat too. Pansies and violas are hardy, resilient little plants that will grow in pretty much any reasonably fertile soil, and are happy in either sunshine or part shade. Their small size means they’re easy to slot into borders around other plants, and they’re ideal for containers and hanging baskets. Whilst it’s easy enough to grow them from seed (you’ll need to start them off in October), inexpensive trays of pansies are readily available from nurseries and garden centres all year long. Feed your plants regularly and deadhead them assiduously to encourage repeat flowering.

GARDENNOTES SEASONAL SENSATION AGAPANTHUS The big, bold blooms of agapanthus make an eyecatching display during the hottest months of summer. Most come in blues and purples, ranging from palest lilac to dark, brooding violet, but white and white-splashed forms are also available. The flowerheads are carried aloft on stiff, straight stems above a lush rosette of strap-like leaves and, depending on which species you choose, can be anything from 0.5 to 1.5 metres tall. The evergreen types of agapanthus can suffer during cold weather, but fortunately they thrive in containers and can be moved to a frost-free greenhouse in winter. Summer days may be warm – at least we hope so – but summer evenings can sometimes be distinctly chilly, so if you want to sit out after sundown you’ll need some form of heating. CYCLAMEN HEDERIFOLIUM If you’ve ever holidayed in the Med you may have seen carpets of cyclamen growing wild under the olive trees. Fortunately these seemingly delicate little plants are tough enough to survive in the UK, and they’re a great way to add splashes of colour to dappled shade under garden shrubs and hedges. Many species of cyclamen bloom in spring, but Cyclamen hederifolium is an autumn flowerer, so you can plant it now for a lovely end-of-year display. It also has the advantage of richly patterned leaves, which grow anew after flowering and last through until the following summer. Plant en masse for maximum impact. It’s all too easy to neglect your indoor plants during summer. Although they hail from sunnier climes and will appreciate the heat, they won’t necessarily like the dry, parched air that can go with it. PLAN BEE Everyone has heard of honey bees and bumblebees, but there are other species of bee that aren’t nearly so well known. Solitary bees, as the name suggests, don’t live in colonies, but they are nonetheless hugely important as pollinators; many of our garden flowers and vegetables depend on them. Juicy peas, eaten straight from the pod, are a real joy. And if you haven’t sowed any peas yet, don’t worry: there’s still time! You can sow peas as late as mid July – or even the end of July at a push – and still enjoy a decent crop before the first frosts. The key to success when sowing peas in summer is to choose ‘early’ (that’s to say fast-maturing), mildew-resistant varieties. ‘Kelvedon Wonder’ and ‘Hurst Greenshaft’ are ideal.

Dan Shotton Yorebridge House Dan grew up in Richmond and studied catering at Darlington Technical College. He got his first job working in the prestigious Café Roux at The Grand Hotel in Amsterdam. Returning to the UK in 2005 he worked at some of the North’s finest restaurants, including a spell of three years as Head Chef at Rockliffe Hall. Dan was appointed Head Chef at Yorebridge House in 2013, since which time the restaurant has won several accolades, including 3 AA Rosettes.

How would you describe your cooking style?

Where do you like to dine out?

When I started out I worked very much in the classic French style, using lots of butter and cream. Nowadays I prefer to keep things light, bright, simple and honest. Not too many ingredients or extra flavourings.

To be honest I don’t have the time to get out as often as I would like. Possibly the best meal I’ve had recently was at The Devonshire Arms. I also enjoyed eating at Lake Road Kitchen in Ambleside.

What are your favourite local specialities?

What’s the best thing about being a chef ?

Lamb, obviously, is one of them; I’m using Swaledale hogget at the moment. Nidderdale chicken too, and Spilman’s asparagus. We’re very lucky, there’s so much terrific Yorkshire produce to choose from.

As I’m sure all chefs will tell you, it’s more of a passion than a job. You wouldn’t be prepared to work so long and so hard if you didn’t love what you were doing. It’s a career that has given me the chance to travel the world and meet all different kinds of people, and the opportunity to live and work here, with the Dales on my doorstep.

And what are you looking forward to using in the kitchen this summer? English peas, lemon sole, razor clams, strawberries from our kitchen garden, borage flowers… and chalkstream trout, which I’ll be curing with salt, sugar, fennel, coriander and other aromats and serving with a crab mayonnaise, nasturtium leaves and maybe beetroot from the garden.

And the down side? Trying to balance work and family life. My partner and I – we’re getting married this June – have a three-year-old, and time is always in short supply!

Yorkshire Wensleydale Cheese and Onion Bread with Broccoli Soup INGREDIENTS SERVES 8 FOR THE SOUP 4 heads of broccoli Maldon sea salt TO GARNISH Yorkshire Wensleydale cheese nasturtium leaves toasted almonds FOR THE BREAD 250g strong flour 5g salt 2g caster sugar 15g yeast 10g butter 110ml water 2 onions finely sliced, sweated with butter until soft 100g Yorkshire Wensleydale cheese egg wash fresh thyme, leaves carefully picked from stems 1tsp onion seeds 1tsp Maldon sea salt

TO MAKE THE SOUP Finely slice the broccoli. Boil it in salty water for three minutes. Blend in a high-power blender, adding water from the pan to achieve the desired consistency. TO MAKE THE BREAD Put all the ingredients into a food mixer with the hook attachment and mix until a dough develops. Roll out the dough to 1cm thick. Put the sweated onions and Yorkshire Wensleydale cheese on top, as if topping a pizza. Roll the covered dough into a sausage shape. Slice this into 8 to give pin-wheel shaped rounds and place these into Yorkshire pudding tins to retain the shape. Allow to prove until doubled in size. Bake at 210°C/fan 190°C/gas 6½ for 8–10 minutes. Allow to cool. Egg wash and garnish with the black onion seeds, thyme and Maldon sea salt.

ince its multi-million-pound redevelopment, Tennants is more than just the largest auction salesroom in Europe – it’s a modern multi-purpose event space incorporating a restaurant, café and two floors of gallery and exhibition space. With a trading history that covers four generations, and dozens of specialist departments staffed by some of the world’s leading antique experts, nobody could doubt Tennant’s credentials when it comes to selling fine art. But can their restaurant deliver a Sunday lunch that meets the same exacting standards? I went along to find out.

STARTERS ORDERS There are always plenty of fascinating items to marvel over in the auction room’s beautifully lit atrium exhibition space, but if you want to eat you’ll need to tear yourself away from the cabinets and head for The Garden Rooms. Despite the venue’s name, a window seat in the restaurant doesn’t mean you’ll be looking out at a garden. The middle distance is largely occupied by the car park; beyond that you may catch a glimpse of a train chugging along the Wensleydale Railway against a backdrop of lush broadleaf woodland. For flowers and plants – supplemented with a tasteful selection of natural history prints – you’ll need to turn your attention back into the room. The dining area is calm, spacious and uncluttered, and decorated in subtle, muted tones. It feels both smart and comfortable, a place you can relax over a leisurely meal without being cheek-by-jowl with other diners. Front-of-house staff were cheerful and highly professional, and we immediately sensed we would be well looked after. They set us up at a decently proportioned table for two to scrutinise the menu. It offered a modern take on the Sunday lunch: plenty to appeal to traditionalists, but with enough interesting twists to fire the imagination of more adventurous diners.

For the first of our starters we ordered what was described as ‘crispy lamb salad, pea purée, watercress’. This we chose largely on the grounds that we were intrigued by the idea of a crispy lamb salad and keen to find out what it might involve. To be honest, what arrived didn’t match my mental image of a salad. It might have been better to have called it something like ‘lamb croquettes with a pea purée and a tiny watercress garnish’, because that’s exactly what it consisted of. Not a hint of anything salad-like beyond the purée and the watercress already flagged up on the menu. The name might need a rethink, then, but that was our only quibble with this light, bright, easy-eating starter. The croquettes, made with shredded lamb, were light and well flavoured and the purée captured that magical garden freshness that peas are renowned for. So far so good. Our other starter, pea and mint velouté with crispy feta, also consisted of green stuff with something croquette-ish in the middle of it. In the case of this particular green stuff, the refreshing tang of mint was to the fore, and nicely counterbalanced by the salty tang of the feta cheese in its crunchy coating. Personally I like my veloutés a touch lighter – this one was on the sturdy side – but as an opener for lunch on a sunny afternoon it certainly hit the mark.

THE MAINS EVENT Roast beef with all the trimmings is everyone’s idea of a traditional British Sunday lunch, so naturally that was our first choice as a main. The meat, served on the medium side of rare, was first rate – full of flavour, nicely seasoned, impeccably carved. Of course we all know that in this part of the world a Sunday lunch stands or falls by the quality of its Yorkshire pudding. And I am delighted to report that no Yorkshire pud could have been lighter or crisper. The gravy was good and rich, the green beans had been allowed to keep their crunch, the carrots were deftly caramelised and the horseradish sauce was punishingly pungent – just the way I like it. Our other main was pan-fried salmon with saffron and herb mash, samphire, and prawn butter sauce. The salmon was nicely cooked, and the mash was of such stellar lusciousness that it almost eclipsed the fish as star of the show. Samphire isn’t easy to cook; a minute under and it’s too stringy, a minute over and it’s limp and mushy. Here, though, it was spot on. The desserts on offer ranged from crowdpleasing sticky toffee pudding to that retro classic, baked Alaska. To celebrate the sunny weather, though, we opted for two dishes with a more summery vibe. The first was a twolayer panna cotta with raspberry and mint salsa and a chocolate crumb. The second was lime and passionfruit cheesecake with Sicilian lemon sorbet. The panna cotta slipped down very nicely, but it was the cheesecake that especially wowed us. The sharpness of passionfruit was nicely offset by the delicate creaminess of the cheesecake topping and the hints of ginger in the biscuit base. The sorbet, studded with snippets of peel for extra texture and tang, was a little piece of citrus heaven.

On reflection over coffee our conclusion was that the team at The Garden Rooms had done a splendid job. If you want a lunch that’s a cut above the average – cooked, presented and served with thoroughgoing professionalism from start to finish – The Garden Rooms should be high on your list of places to try. BUTTERFLIED PRAWNS WITH AVOCADO, HARISSA & YOGURT A very simple, light dish that packs a hefty punch. You can make your own harissa paste but it is just as delicious straight from the jar. I strongly advise wearing food-safe vinyl gloves when preparing the chillies if you do make your own; no matter how diligently you wash your hands, there will always be some lingering spice on your fingers, which will cause agony if you rub your eyes. Suffice it to say that I learned this the hard way. Preheat a heavy-based grill pan over high heat. Put the tiger prawns on a chopping board and cut them lengthwise with a sharp serrated knife from the tail to just before the head. Open up the tail and season with a little olive oil and salt. Once the pan is smoking hot, add the prawns so that they stand on their opened-up tails. Cook for 3–5 minutes, until the flesh has turned white, then turn off the heat. Mix the avocado, red onion, mint and lettuce and drizzle with a little olive oil and sea salt. Place the prawns on top with a wedge of lemon.

SERVES 2 INGREDIENTS 4 large raw tiger prawns, about 100g each 1 small avocado, sliced ½ small red onion, sliced a small bunch of fresh mint 1 head little gem lettuce olive oil, to serve sea salt, to taste ½ lemon, cut into wedges FOR THE DRESSING 1–2 teaspoons harissa paste 2 tablespoons yogurt

Depending on how fiery you like it, mix 2 teaspoons of harissa paste with the yogurt (the yogurt counteracts the chilli heat) and dress the prawns and avocado salad. Or you could put a dollop of yogurt and a spoonful of harissa on each plate and let your guest manage their own heat.


CHICKEN STUFFED WITH ASPARAGUS, GOATS’ CHEESE & SUN-DRIED TOMATOES Chicken Kiev for the landed gentry, this looks quite incredible when you slice it down the middle and reveal the cross-section of vibrant asparagus and sun-dried tomatoes. All the hard work can be done well in advance, leaving you free to sip a Riesling and lament the decline of the modern broadsheet newspaper. Preheat the oven to 220°C/fan 200°C/gas 7. Bring a pan of salted water to the boil, add the asparagus and cook for 3 minutes. Remove and refresh it under cold running water (or a bowl of iced water if you’re a really dedicated pro). Once cooled, leave to dry. Stuff each butterflied chicken breast with two asparagus stems placed lengthwise, two sun-dried tomatoes and half the goats’ cheese, and season with salt and pepper. Close it up and wrap it in two slices of Parma ham. Secure with a toothpick if necessary. Warm an ovenproof pan over high heat. For anyone who’s

GRILLED MOROCCAN-SPICED SHOULDER OF LAMB This marinade works really well with all cuts of lamb. Shoulder is inexpensive and flavoursome, just be aware that it is quite fatty, so try and trim off as much excess as possible. If you want to play it safe, Barnsley chop or neck fillet are good alternatives. This is so, so easy. Just mix all the herbs and spices together and loosen the mixture with olive oil. Baste it all over your lamb shoulder and leave it for at least 2 hours, or preferably overnight in the fridge. Remove it from the fridge and let it come to room temperature before you start to cook. Get a barbecue seriously hot and place your lamb on the grill to cook. As the fat melts and renders, the barbecue will flare up and char the meat. If it’s beginning to look a bit too black, spray a little water onto the coals to cool them. Cook for approximately 10 minutes on each side, then remove from

SIMPLE STRAWBERRY CHEESECAKE Cheesecake is one of the few desserts that seems to cross all national boundaries. From New York bankers to Tuscan olive pickers, everyone likes a good cheesecake. This recipe sets in the fridge, so it’s about as foolproof as any cake can be. That said, be careful what you leave in there with it: cheesecake absorbs odours like a sponge, as demonstrated by Megan’s not-sopopular onion-scented version. Preheat the oven to 180°C/fan 160°C/gas 4. Start by making the base. Crush the biscuits to a rough powder, by hand or with a food processor. Add the melted butter, stir well and line the base of the pan with the mixture, pressing it down to compact it. Bake for 10 minutes, then remove and allow to cool. Put the gelatine leaves in cold water to soak for 10 minutes, then remove and squeeze out any excess water. Put the now-floppy gelatine leaves in the microwave on high heat for 10 seconds to melt them. Put the cream cheese, yogurt and caster sugar in a large mixing

SPRING PEA, PEA SHOOT, PANCETTA & GOAT’S CHEESE SALAD This has to be the prettiest spring salad! The delicate peppery taste of the pea shoots alongside the crispy smoky pancetta, sweet peas and creamy goat’s cheese is divine – or try using watercress instead. The dressing lightly scented with orange is my favourite with this salad, but if you are fonder of a lemon dressing, then simply replace the orange with a lemon. I recommend doubling up the dressing recipe, as it will last for up to two weeks in the fridge. Place a frying pan over a medium–high heat and add the olive oil, followed by the pancetta. Cook the pancetta for about 8 minutes until crispy. Meanwhile, add all the ingredients for the dressing to a bowl and whisk together well. Season with salt and pepper. Combine all the remaining ingredients for the salad in a large bowl. Pour over the dressing, add the crispy pancetta and gently toss together. Divide the salad between four plates and serve.

SALMON FISHCAKES WITH HORSERADISH CREAM I make these fishcakes when I am having a relaxed supper at home. They are so simple to cook, just combine all the ingredients together and shape into patties. You can make them a day ahead, and they also freeze very well. Fresh horseradish cream is a delicious peppery combo with the salmon and I also love serving the fishcakes with a chilli and tomato salsa or a smoked paprika aioli. Preheat the oven to 180°C/fan 160°C/gas 4. Place all the ingredients for the fishcakes except the butter in a large bowl and season with salt and pepper. Mix until all the ingredients are well combined. Divide the fishcake mixture into four balls and shape each into a patty. Place a frying pan over a medium heat and add the butter. Once the butter has melted, add the fishcakes and brown on both sides. Transfer the fishcakes to a baking tray and bake for 10 minutes. While the fishcakes are baking, mix all the ingredients for the horseradish cream together in a small bowl, and season with salt

BARBECUED RUMP WITH CHIMICHURRI & CHARRED CHICORY I absolutely love the flavours of chimichurri – it adds a massive burst of freshness, heat and saltiness to the beef. You can use it with chicken, meaty fish, lamb or pork or over halloumi. The charred chicory is delicious cooked on the barbecue, I also love radicchio cooked the same way. First make the chimichurri. Add all the ingredients to a foodprocessor and pulse until roughly chopped. Transfer to a bowl and set aside. Prepare a charcoal barbecue or heat a gas barbecue to a high heat, or place a griddle pan over a high heat. Sprinkle the steak with salt and pepper and grill for 3 minutes on each side for medium-rare. Set aside and keep warm. Grill the chicory for 1 minute on each side or until golden. Remove from the barbecue or pan, then drizzle with extra virgin olive oil and season with salt and pepper.

BARBECUED PEACHES WITH ROSEMARY & MAPLE BUTTER The first time I had this dish was about ten years ago at a wedding in Tuscany, when they were served as the dessert. A barbecue was set up under a line of olive trees, and the juicy peaches were perfectly grilled, then passed along for a drizzle of rosemary maple butter and a dollop of mascarpone. They were sensational! I add a crumble of amaretti biscuit on top as it brings great texture. Slice the ripe peaches in half through the middle and remove the stones. Thread the peach halves onto the rosemary stalks or wooden skewers. Prepare a charcoal barbecue or heat a gas barbecue to a high heat, or place a griddle pan over a high heat. Grill the peaches, turning the skewers frequently, for about 10 minutes until they are soft. While the peaches are grilling, place a saucepan over a low heat and add the butter, rosemary and maple syrup. Stir until the butter has melted, then leave to simmer for 5 minutes. Remove the pan from the heat.

GRAVLAX WITH GIN & BEETS Any luxurious picnic party should start with a canapé or two and this scrumptious Scandinavian delicacy is a must for any celebratory feast. The salmon is easy to prepare and can be made well in advance. Serve it with blinis and horseradish cream to keep picnickers happy while you unwrap and assemble the feast. Line a large tray with clingfilm/plastic wrap before laying the salmon skin side down on the tray. Run your hand gently over the flesh and remove any remaining bones with tweezers. Pour over the gin and rub it into the flesh really well. In a pestle and mortar or food processor, crush the seeds, pepper and juniper berries until they are fine. Add the sugar and flaked sea salt and mix well before sprinkling this evenly over the salmon fillet. Next, sprinkle over the grated beets and salt and spice mixture and then grate the zest of 1 lemon evenly over it too. Lastly, layer on the chopped dill. The whole salmon side should be covered. Lay another piece of clingfilm/plastic wrap over the top and wrap

SUMMER TERRINE DRIZZLED WITH MINT OIL Summer is the best time for terrines when one wants something cool and refreshing on the palate that is a sophisticated change to a salad. A terrine is perfect for picnics as it can be prepared in advance and transported easily. Bring 750ml salted water to the boil and cook the beans for 30 seconds. Remove from the water with a slotted spoon, refresh in ice cold water and leave to dry. Retain the boiling water. Remove the stems from the chard and blanch for 30 seconds in the boiling water. Shock in cold water and place in a paper-towel-lined sieve to dry thoroughly. Retain the cooking water. Melt the butter in a large, heavy saucepan over a low heat. Add the fennel, shallot and garlic. Sweat until translucent, but do not brown. Add the star anise, coriander seeds and the boiling water from blanching the vegetables. Top up with extra boiling water to approximately 1.5 litres. Simmer for 45 minutes to reduce. Strain

Don’t be intimidated by the name as it is quite easy to do if you plan in advance and make it the day before. First, make a herb and spice rub. Chop together the thyme, rosemary and sage leaves and put in a mixing bowl along with the fennel seeds, 1 generous tablespoon coarse sea salt and 1 teaspoon ground black pepper. Lay the pork on a board, skin side down and make 10–12 short incisions over the meat. Stuff the cuts with slivers of garlic and then rub in the herbs and salt, making sure you work the mixture well into the slits. Lay the sprigs of rosemary and bay leaves in a roasting pan and place the pork skin side down still, on to this. Cover and pop in the

RASPBERRY & CHOCOLATE GANACHE TART This tart can be made the day before an event and kept in the fridge but make sure you serve it at room temperature to allow the chocolate to relax. To make the pastry, put the flour, sugar and a pinch of salt in a large mixing bowl, stir together, then add the softened cubes of butter. Using your fingers, lightly rub the ingredients together until the mixture resembles breadcrumbs. Now add the egg yolks into the centre of the mix and, using a spatula, work the mixture from the edge of the bowl into the middle until it forms a lovely dough. If the mixture seems too dry, you may need to add a tiny amount of water, ½ tablespoon or so. On a floured surface knead the dough lightly until it is all shiny and smooth, then wrap it in clingfilm and put it in the fridge to chill for at least 30 minutes. Once chilled, roll out the pastry dough on a lightly floured surface

Nice as Pie We meet Anthony and Isabel Sterne of Appleton’s Butchers

ince the end of the Second World War traditional butchers have become increasingly rare on our high streets. But there’s one much-loved North Yorkshire firm that’s bucking the trend. Appleton’s of Ripon recently celebrated their 150th anniversary, and over the course of the last five years the business has been expanding rapidly. In 2014 Appleton’s opened a second shop in Wetherby. Two years later a third branch popped up in York city centre, complete with a specially commissioned stained-glass window featuring a plump pig. Last year a fourth shop opened in Boroughbridge, and by the end of this year shop number five will be opening its doors in Knaresborough. So what’s the secret behind the success of this burgeoning little empire? In a word: pies.

H O M E A N D AWAY Appleton’s is a specialist pork butcher, hence the stained-glass pig. The firm dates back to 1867 when 19-year-old Thomas Appleton began working for Smithson’s butchers in Ripon’s Kirkgate. The business has changed hands several times since then – and moved to the town’s Market Square – but for generations it has been renowned for its handmade pork pies. It’s said that Prince Charles is particularly partial to them.

For the last decade Appleton’s has been owned and run by Anthony and Isabel Sterne, who are determined to build on Appleton’s longstanding success without losing sight of the traditional values that have made it such a favourite. Anthony was born in Harrogate and learned his trade from his father, who was also in the meat business. After working in Australia for a while, followed by a job as development chef at Pret-aManger, he moved back home to Yorkshire to set up his own gourmet pie business. When Isabel spotted that Appleton’s was up for sale, buying it was a no-brainer.

BRINGING HOME THE BAKING “It’s our individual pork pies that we’re most famous for,” Anthony says. “They’re made to a traditional recipe that has remained unchanged for many years. They simply fly out of the door, still warm from the oven, and freshness is key to what makes us special. The pies are made in Ripon and every morning they are delivered to our other shops in tins, in raw pastry, to be baked on the premises. “The same goes for our sausage rolls and our breakfast rolls, which are sausage rolls with ovendried tomatoes and smoked bacon. Also our Scotch eggs, which we cook fresh daily. They’re made with free range eggs and our own sausage meat, deepfried to create a lovely crisp coating.

“We also roast our own hams every day. Customers love the fact that we slice them nice and thick – it’s proper, old-fashioned ham. In summer we sell up to 120 whole hams a week.”

S E RV E YO U R I G H T “Logistics is crucial. We start delivering about half past four every morning, and of course we have to make sure that each of our shops gets precisely what they need for the day. We used to keep track of it all with pen and paper – now we use iPads! “Customer service is very important to us, so we make a point of employing really good people, and we send mystery shoppers round to all our shops to ask awkward questions and make sure our staff are getting things right. Nowadays customers, especially young people, are increasingly appreciative of good counter service and expert advice. In the wake of the horse meat scandal they know they can trust a traditional butcher in a way that they might not trust a big multiple retailer.” And what about the future? Are there more Appleton’s shops on the horizon after Knaresborough? Anthony thinks not. “With five shops in key locations we can keep everything tight, and we’ve got the critical mass that enables us to offer our customers good value. To expand any further would be to risk losing our individuality, and we definitely don’t want to do that.”

AN E A R TO TH E G R O UN D So what does Anthony find the most challenging aspects of running Appleton’s? “For me it’s finding good staff, and keeping them happy. Oh, and social media. Lots of businesses really embrace it, but as far as I’m concerned it’s a necessary evil. I do it but I don’t enjoy it! “On the positive side, what is especially rewarding is getting good customer comments. Appleton’s is much more than a business to us and we take things very personally, so getting positive feedback means a lot.” And what do the couple do in their spare time? “We have a small farm on the outskirts of Ripon, with quite a few pigs and some beef suckler cattle. Wedgwood Fairyland Lustre n the eve of the First World War the Wedgwood pottery, by then 150 years old, was looking for new direction. Thanks to the fanciful creations of a new employee – talented young artist Daisy Makeig-Jones – they were just about to find it. From 1915 until the late 1920s Makeig-Jones drafted out a series of highly elaborate fairytale landscapes inhabited by fairies, elves, imps, goblins and a menagerie of grotesque and fantastical animals, birds and insects. Wedgwood’s technical experts helped her turn her strange visions into a series of remarkable ceramics, decorated in golds, blacks and vibrant iridescent glazes. Wedgwood’s Fairyland 1 Lustre had been born.

Away with the fairies

Makeig-Jones’ magical world struck a chord with a generation looking for an escape from the grim realities of war and its after-effects. “Fairyland Lustre was hugely popular throughout the 1920s,” says Diane Sinnott, 20th Century Design Specialist at Tennants Auctioneers in Leyburn. “It had an enthusiastic following in America, especially in New York. Thanks to its delicate drawing, vivid colours, lustrous finishes and technical sophistication it was – and still is – highly sought after. “Makeig-Jones’ make-believe world, with its combination of whimsical imagination, Eastern exoticism and echoes of Art Nouveau, is typical of

1920s design, and was clearly very much influenced by the fairytale picture books of the period, especially the work of illustrators like Arthur Rackham and Edmund Dulac.” By all accounts Makeig-Jones was a somewhat eccentric lady. It is clear from the detailed explanation that she wrote about her ‘Ghostly Wood’ pattern vase how deeply she immersed herself in her imaginary world. It’s too long to quote in full, but here is a taster: “On this Vase is depicted part of the Land of Illusion which had to be traversed by Mitaine before she reached and conquered the Fortress of Fear. Trees dripped blood as she approached, and shrieked and howled in an eldritch manner… Other trees resembled dried and blasted trunks with demons’ heads in place of leaves…Above in the topmost boughs sat the Owls of Wisdom… Drifting everywhere were the spirits of those who had failed to reach the fortress, doomed with the Fairy of the Desert and the Yellow Dwarf to dwell in the Land of Illusion until 3,000 times 3,000 years shall have passed away… The vase also shows the White Rabbit hurrying across to earth to guide the immortal Alice to Wonderland.” Arguably Makeig-Jones herself spent rather too long in the Land of Illusion, because she seems to have developed into a thoroughly difficult and domineering employee. By the end of the 1920s the Great Depression was looming, but she refused to adapt her designs to the new spirit of austerity. In 1931 Wedgwood asked her to leave. Dales Life | SUMMER 2019 |

It is hardly surprising that sales of Fairyland Lustre plummeted during the economic downturn. “Unlike the work of Clarice Cliff, the other great British ceramics designer of the 1920s and 1930s, Makeig-Jones’ work was very much at the luxury end of the scale,” says Diane. “It was the kind of thing a couple might receive as an expensive wedding present. “Fairyland Lustre was extremely complicated and costly to produce. When you run your hand over a vase or bowl you can feel that the surface is all lumpy and bumpy because it has been through so many firings. Every firing increases the risk of a piece getting damaged, so there was a very high level of wastage. Because of this some articles with firing cracks and blemishes went on to be sold. The pieces that achieve top prices nowadays are the ones in the best condition with the fewest firing flaws. “Fairyland lustre is quite difficult to catalogue. It was made in a range of different shapes – plates, dishes, pots, vases, bowls – and in a variety of colourways. And two bowls with the same design on the outside will often have different designs on the inside. “To give you an indication of prices, last year we sold a ‘Ghostly Wood’ pattern vase with firing cracks and other flaws for £6,000. Fairyland Lustre bowls can easily fetch £1,000 to £2,000. “In addition to Fairyland Lustre, Daisy Makeig-Jones also designed a range of ordinary lustre ceramics for Wedgwood. These involved substantially less pattern and processing, and were therefore much cheaper to make and buy. As you would expect they are correspondingly less expensive to buy nowadays – less than half the price of Fairyland Lustre. “If you want to find out more about Fairyland Lustre the best reference book – which makes a fascinating read – is Wedgwood Fairyland Lustre by Una des Fontaines. Unfortunately it’s out of print at the moment, but do snap up a copy if you see it secondhand!”

f you take the Buttertubs Pass from Hawes over to Swaledale, you’ll pass Simonstone Hall soon after you leave town. It’s nestled up against the hillside, just before the winding road starts to tilt steeply upwards to climb the lower slopes of Great Shunner Fell. With its tall chimneys, ancient gables, mullioned windows and pointy clock tower – not to mention the neat terraced gardens and their resident peacocks – Simonstone comes as a sudden surprise in a landscape of rough pasture, mossy walls, squat barns and weathered farmsteads. It could be the setting for an Agatha Christie mystery, or even a fairytale.

Country Casual Simonstone was originally built as a private dwelling. It was subsequently used as a shooting lodge, and in the 1980s it was turned into a country house hotel. Three years ago the hotel was taken over by Jake Dinsdale. Jake, born in nearby Gayles, was determined to make Simonstone into something really special, and to put it back in touch with its Dales roots. As a teenager Jake worked part-time at Simonstone, pot-washing and housekeeping. He loved the experience, but presumably never imagined he would end up as Managing Director. After training as an architect and spending time working in Africa he decided that he was missing his Yorkshire home comforts, so he started looking for a project that would give him an excuse to return to Wensleydale.

When Simonstone came up for sale three years ago, Jake knew it would be a huge challenge – especially since he was still only 26 at the time – but he was sure he was equal to it. “I knew the area, the buildings, the staff, I had masses of local contacts. It was a bit of a no-brainer,” he says. “I felt that over the years Simonstone had rather lost its direction, and become just another hotel. I wanted to turn it back into a country house, a genuine part of the local community – which is, after all, what it was built for. “I’m very proud to have a place where I can show off everything that’s great about our area. Somewhere to stay that epitomises Yorkshire from the moment guests arrive – beginning, of course, with a proper warm Yorkshire welcome. At the time the sale went through Simonstone was a slightly stiff, formal sort of concern, with an atmosphere that didn’t really suit the building or the area. I wanted it to be a cosy home-from-home where guests could walk their dogs, come back with muddy boots and relax by the fire.”

A Winning Formula “A major part of our appeal is our fantastic Dales location and the amazing views. And then, of course, there’s the actual building itself. Last year we started renovating the bedrooms and bathrooms, and as an architect and designer it has been a great opportunity to make my mark and enhance the facilities whilst also bringing back some of Simonstone’s traditional character. “Good dining, obviously, is another key part of the Yorkshire experience. Nowadays every restaurant pays lip-service to the idea of offering seasonal, local produce, but here at Simonstone it’s something that we actually do. Our lamb is from the farm over the wall, we invest in local cattle herds, our game is from the local game dealer, and last year we created our very own kitchen garden. Cheese, milk and eggs are all local, and in our bar we have local ales and gins made especially for us. “I’m very lucky to have such a fantastic team here, and we’ve worked really hard to transform Simonstone. And now all the hard work has started to pay off. Last year we won the Flavours of Herriot Country award for best afternoon tea, and this year Boutique Hotelier named me as one of the hospitality industry’s Young Trailblazers. Channel 4 has been filming here as part of a TV programme about country house hotels, following us though the renovations and various events. It has all been tremendously exciting.

James Alfred Wight, who wrote under the pseudonym of James Herriot, became one of the most popular writers of the twentieth century. His books, a series of stories based on his experiences as a young veterinary surgeon working among the farming community of North Yorkshire, sold in their millions. Their success led to two feature films in the mid 1970s, followed by a television series, All Creatures Great and Small, which enjoyed global success. Thousands of visitors continue to flock to The World of James Herriot Museum, which was established in 1999 in his hometown of Thirsk.

This special exhibition tells the little-known story of how Britain played its part in the Russian Civil War, using personal archives from the museum’s collection and objects lent by National Galleries Scotland and Royal Armouries to explore the complex positioning of ‘red’ versus ‘white’ at a time of enormous global social and political upheaval in the aftermath of the First World War.
