Preheat the grill to hot and line the grill pan with foil. Arrange the sea bass flesh side-up on the foil, sprinkle with the lime rind and juice and season. Turn the fish over, season the skin side and drizzle with olive oil. Grill for 6-8 minutes, until the skin is browned and the fish flakes when pressed with a knife. For the dressing, add the oil and honey to the fruit juice in the jar, season, screw on the lid and shake well. Pour over the salad and toss gently, then divide between four plates. Break each fish fillet into bite-size pieces, then arrange them on top of the salads. Sprinkle with the coriander, spoon over any juices from the grill pan, then serve.

Brain-boosting beetroot The high levels of nitrates may help slow down the progression of dementia. When the pigment betacyanin, which gives beetroot its colour, combines with carotenoids and flavonoids, it may help reduce the oxidation of LDL cholesterol, so protecting artery walls and reducing the risk of heart disease and stroke.

Greasing and lining cupcake tins • •

Always follow the recipe instructions about preparing tins.

If, however, you are not using paper cupcake cases (perhaps you would like smoothsided cupcakes instead of pleated ones, for a change), grease bun/mufÅn tins with melted or softened butter (preferably unsalted) or a Æavourless vegetable oil. Spray vegetable oils are also useful for greasing tins. Alternatively, a bun/mufÅn tin can be greased and Æoured before use.

Chapter 2: Let’s Get It Started!

With most cupcake recipes, you will line the bun/mufÅn tins with paper cupcake cases, so there is no need to grease the tins before use.

Basic recipe for vanilla cupcakes Makes 12

Preparation time: 10 minutes Cooking time: 15–20 minutes

Using a piece of kitchen paper, you can wipe a thin Ålm of sunÆower or vegetable oil over the top of the bun/mufÅn tin, before lining the holes with paper cases, if you like. If the cupcakes then rise above their cases during baking, the greased surface will help to prevent the tops of the cupcakes sticking to the tin.

115 g/4 oz butter, softened, or soft margarine 115 g/4 oz caster sugar 2 eggs, lightly beaten 1 tsp vanilla extract 115 g/4 oz self-raising Æour 1 tbsp milk

1.

Preheat the oven to 180°C/350°F/Gas Mark 4. Line a 12-hole cupcake or bun tin with paper cases.

2.

Put the butter and caster sugar in a large bowl. Using a wooden spoon or an electric mixer, beat together until the mixture is pale, light and Æuffy.

3.

Gradually beat in the eggs. Add about 1 tablespoonful at a time and beat thoroughly after each addition. Beat in the vanilla extract.

4.

Using a large metal sieve, sift the Æour into the bowl. Using a metal spoon, gently fold the Æour into the mixture until thoroughly incorporated.

5.

Add the milk and fold gently into the batter. The cupcake batter should have a smooth consistency and drop easily from the spoon if tapped on the side of the bowl.

6.

Carefully spoon the batter into the paper cases, dividing it evenly and taking care not to over-Åll them.

3/07/13 3:59 4:01 PM 4:06

Sugars, syrups and honey – Caster sugar is ideal for baking as its Åne grains dissolve easily, making it ideal to cream smoothly with softened butter or margarine.

S33506 TIPS FOR TOP CUPCAKE SPREADS MTR.indd 17 3

Other sugars, such as soft light and dark brown sugars, have more depth of Æavour than white sugars and add richness and colour to your cupcakes. If possible, choose unreÅned or muscovado brown sugars which have an excellent Æavour.

3/07/13 3:59 4:01 PM 4:06

Flour – Cupcake recipes either use self-raising Æour or a combination of plain Æour

and baking powder or bicarbonate of soda. Always check that self-raising Æour has not passed its best before date, as the raising agent will be less effective. To make your own self-raising Æour, add 2 level teaspoons of baking powder to each 225 g/ 8 oz of plain white Æour.

To incorporate as much air and lightness into the cupcake batter as possible, sift the Æour before using. If using wholemeal Æour, remember to tip any bran left in the sieve into the mixing bowl, as this is the most nutritious and Æavoursome part.

• Demerara sugar has large golden crystals, which add crunch and texture when sprinkled over the tops of cupcakes before baking. Icing sugar has a Åne powdery texture that dissolves easily, making it perfect for buttercream, royal and glacé icings and frostings.

Only buy these raising agents in small quantities and check the best before date before using as they have a limited shelf-life.

Golden syrup, maple syrup and honey are all useful sweet syrups to keep in the storecupboard. They can be used in place of sugar in some cupcake recipes or for frostings and glazes.

Eggs – For the best baking results, always use fresh eggs at room temperature. If eggs are too cold, they will curdle the creamed butter and sugar mixture. Be sure to use the correct egg size for the recipe – the recipe or cookbook should give guidance on the size of eggs required.

Raising agents – Both baking powder and bicarbonate of soda are used as raising agents to produce light and airy cupcakes. Baking powder is a mixture of cream of tartar and bicarbonate of soda.

Flavouring extracts – Vanilla and almond extracts, when used sparingly, can add a

wealth of Æavour to a simple cupcake batter and other natural extracts, such as lemon, orange and peppermint, are also available. Be sure to buy natural extracts, not synthetic Æavourings (essences). For delicately scented cupcakes, invest in a small bottle of rosewater and orange Æower water.

Cocoa powder – Cocoa powder is a Åne, reddy-brown powder that has a bitter but

intense chocolate Æavour. Unsweetened cocoa powder is widely used as a Æavouring in cupcakes, other cakes, bakes and desserts. It can also be lightly sifted over baked cupcakes as a decoration.

HISTORY AN ILLUSTRATED GLOBAL SURVEY OF WARFARE W WARFAR E FROM ANTIQUITY TO THE PRESENT DAY

Atlas of Military History provides a fascinating, in-depth look at the world of warfare and reveals how the face of war has changed dramatically over the millenn with the emergence of new technology and tactical innovations that so often prove decisive in conflicts. It charts the appearance of such innovations througho the ages: from the humble bow and arrow to warhorses and chariots; from gunpowd and firearms to tanks and heavy artillery; through to the modern world of submarine fighter jets, drones and devastating weapons of mass destruction, culminating in the ultimate deterrent – the nuclear bom However, Atlas of Military History is not just a story of ever more devastating weaponry. It is also the story of human psychology and religious faith or fervour, o politics and diplomacy, of human savager and civilization. This magnificent book tak the reader on a journey through time and tells the dramatic stories of the rise and fall of some of the greatest empires the world has ever seen, along with the militar leaders who built them. The names of man such warriors echo through time: Alexand the Great, the legendary ruler of Macedon Augustus Caesar, founder of the mighty Roman Empire; and Attila, the ruthless leader of the vast Hunnic Empire. Although the nature of war has change the reasons for war remain constant. Wars are still waged in competition over territor and resources; out of hatred, intolerance or the desire for vengeance; or because of the simple greed for glory of individual rulers who, by the very force of their character, rally vast armies to fight for thei cause – however just or unjust. The politic structure of the world today has been shaped by battles fought long ago in farflung corners of the earth. Understanding the wars of the past gives insight into the wars being waged today and those likely t be fought in the future.

Light years and parsecs In order to measure the immense distance between stars, the terms light year (ly) and parsec (pc) are used. A light year is the distance light travels in one year: almost 10 trillion km (6.2 trillion miles). A pc is the distance between a star and Earth, if its parallax angle is one arc-second. One pc equals 3.26 ly, or 31 trillion km (19.3 trillion miles).

THE UNIVERSE

For a long time, stars have been a mystery to humankind. Today, it is known that they are enormous spheres of incandescent gases, mostly hydrogen, with a smaller amount of helium. Based on the light they emit, experts can ascertain their brightness, colour and temperature. Given their huge distance from Earth, they can only be seen as dots of light, even with the most powerful telescopes.

Fog

Saturn has a surface of clouds, which form bands attributable to the rotation of the planet on its axis. Saturn’s clouds are calmer and less colourful than those of Jupiter. Temperatures in the highest (white) clouds reach -140o C (-220o F) and a layer of fog extends over them.

Just like Jupiter, Saturn is a huge ball of gas that encompasses a small solid core. To an onlooker, it would seem like a just another yellow-tinted star; however, with the help of a telescope, its rings can be clearly distinguished. Ten times further from the Sun than Earth, it is the least dense of all the planets, and would even be able to float in the sea.

The special relationship that exists between people and horses has spanned many thousands of years. An inspiration for artists, writers, and travelers of every culture, the horse has shaped human development and thinking more than any other animal. Horses have long been ridden to war, even though their nature is to run from danger. They have pulled plows and hauled carts, even though they are naturally restful creatures. And while, instinctively, they want to flee from predators, they willingly engage with humans who once hunted them for food. Horses have been trained to conquer their natural caution to become our willing work partners, companions, and much loved members of the family.

In the distance, a rumble. Thunder, maybe. But no – it gets closer,

develops a rhythm, remains steady and builds. Then, over the hill, a

herd of horses appears, the gold of a low sun behind them. They surge over the green and yellow pasture like a flock of birds through the sky, sharing one instinct but with many hearts pounding as strongly as the hooves. The wind catches their manes and tails, sweat glistens on their burnished coats as they gallop by, swerving around a stand of woodland then sweeping back over the hill and out of sight. But we stand watching for some time, hoping they might come back.

T

he power of horses running together stirs a sense of freedom and excitement in us – we find the collective power of animals in a group hugely appealing. The thunder of hooves is an evocative sound, raising adrenalin and inspiring us to scramble for a good view – but from a safe position! No one would risk standing in the way of galloping horses and that collective power sums up much of the strength that the herd offers. A horse alone is vulnerable to predators, but as part of a herd it shares the collective eyes, ears and instincts of all its companions for protection. The safety of the herd is central to the way horses perceive the world. When a herd of horses – and to the horse, a herd is any number greater than one – is resting, usually one individual will remain watchful, either 10

’’

standing while others lie down, or lying up on its chest while the others lie out flat. The watchhorse may seem to be dozing too, but it will look up instantly if there is even a slight change in the surroundings. It is a very relaxed group indeed in which one horse does not remain more alert than the others, and this usually only happens when all-round visibility is good. Even domestic horses, raised for generations in countries where there are no large predators, retain this instinctive sense of watchfulness. When horses are grazing, if one raises its head or wanders off, the others will soon follow. If they drift apart as they seek the best grass, it is not long before the group re-forms. The sense of unseen communication is strong and the bonds of the group are reinforced by synchronized behaviour.

The traditional Stange beer glass usually holds between 100ml and 200ml of beer. Beer boots, or Bierstiefel, have over a century of history and culture behind them. It is most commonly believed that a general somewhere promised his troops to drink beer from his boot if they were successful in battle.

germany Beer is a major part of German culture. For many years German beer was brewed in adherence to the Reinheitsgebot order or law which only permitted water, hops and malt as beer ingredients. The order also required that beers not exclusively using barley-malts such as wheat beer must be top-fermented. Since 1993, the production of beer has been governed by the Provisional German Beer Law ingredients. The order also required that beers which allows a greater range of ingredients and additives, that have to be completely removed to the Reinheitsgebot order or law. According to a 2004 report by the World Health Organization, Germany ranked fourth in terms of per-capita beer consumption, behind the Czech Republic, Ireland, and Swaziland. 34

A weizen glass is used to serve wheat beer, it is narrow at the bottom and slightly wider at the top; the width both releasing aroma, and providing room for the often thick, fluffy heads produced by wheat beer. A Beer stein or simply steini is a traditional beer mugs made out of stoneware.

The Reinheitsgebot (“purity decree”), sometimes called the “German Beer Purity Law” or the “Bavarian Purity Law” in English, is a regulation concerning the production of beer in Germany. For top-fermenting beers the use of sugar is the production also permitted. There is a dispute as to where the document Reinheitsgebot originated. Thuringians point to a document which states the ingredients of beer as water, hops, and barley only, and was written in 1434 in Weißensee (Thuringia). It was discovered in the medieval Runneburg near Erfurt in 1999. Before its official repeal in 1987, it was the oldest regulation in the world. Every style of beer has its own balance of characteristics. If one wishes to taste a beer and convey this opinion to others, a common beer terminology must be employed. Although many terms can be substituted, the characteristics of appearance, aroma and taste\finish will do fine. These characteristics can each be controlled and varied according to the ingredients and procedures used in the brewing process. Understanding beer requires a basic understanding of the entire brewing process, including malting, the nature of fermentation.

Audrey Hepburn

Introduction 1951 proved to be a watershed year for Audrey. A chance encounter in a hotel lobby on the French Riviera, inspired French author, Colette, to offer Audrey the lead role in ‘Gigi,’ on the Broadway stage. With characteristic discipline and effort in rehearsal, her performance was a huge success. In 1952, she won a Theatre World Award for her role.

Right: Colette with her perfect Gigi. Audrey’s unusual beauty was her ideal for her creation, the gamin Gigi. Fortunately, Audrey could sing, dance and act too.

A star was born Meanwhile, director William Wyler was ecstatic about her screen test for the lead role of Princess Ann in ‘Roman Holiday’. His confidence was justified, when in 1953, Audrey won the Academy award for Best Actress in her first Hollywood film. A star was born. Left: From chorus girl to lead: Audrey made the role of Gigi her own in Anita Loos’ adaptation of Gigi. Opposite: Established star Gregory Peck’s gracious support, allowed Audrey to ‘steal’ the movie ‘Roman Holiday’.

Marilyn Monroe

Introduction Little Norma Jeane Baker somehow survived her dysfunctional, unstable and disruptive childhood. In 1942, in an attempt to avoid another foster home, sixteen-year-old Norma Jeane married reluctant, sometime boyfriend, Jim Dougher ty, in an arrangement suggested by her then foster parents. Norma Jeane was longing to be a loving wife with a home of her own. Patriotic Jim enlisted in the Merchant Marine in 1943, and Norma Jeane worked in the Radioplane Munitions Factory and became a model with the Blue Book Modeling Agency. Right: Mr. & Mrs. Dougher ty

Goodbye Norma Jeane It was Ben Lyon at 20th Century Fox who ‘discovered’ the newly blonde Norma Jeane, and he and his wife Bebe Daniels helped her to find her new name and persona. She was indefinably beautiful and had something more, which would make both men and women adore her – at last! Left: Marilyn Monroe emerged to walk on in several pictures like ‘Dangerous Years’ for 20th Century Fox, and this bit part in ‘Scudda Hoo, Scudda Hay!’ Opposite: By 1948, Columbia had picked up her contract and she had her first major role in ‘Ladies of the Chorus’. 6

Draw a pirate ship in the ocean, and color in Sam’s adventure.

Buster took a book out of the box. “There’s a big thunderstorm in this story,” said Buster. “It’s all about pirates hunting for buried treasure.” “Buried treasure?” asked Sam.

“Hi Buster!” they said. “Are you coming out to play?”

“You’ve always got your nose in a book!” said his sister Bella.

“Sure,” said Buster with a smile, “when I’ve finished my book. It’s all about pirates!”

“Hopscotch is much more fun!”

One day, Buster’s friends came over.

ong ago in Israel, in a town called Nazareth, there lived a girl

named Mary. Soon she was going to marry a carpenter called Joseph, and she loved daydreaming about their wedding as she went about her chores One day, as she swept the yard, Mary noticed a stranger smiling at her. She knew at once that he was an angel. “My name is Gabriel,” he said. “I have brought you a message from God.” Mary was too amazed to speak. “God has chosen you to do something special for him,” said Gabriel. “Soon, you will have a baby, and you are to call him Jesus. He will be God’s own son.”

here was once an old miller who had three sons. When the miller died, he left the mill to his oldest son. The middle son was given the donkeys. The youngest son, a kind man who had always put his father and brothers before himself, was left nothing but his father’s cat. “What will become of me?” said the young miller’s son with a sigh, looking at his cat. “Buy me a fine pair of boots and I will help you make your fortune, for your father thought you deserved it,” replied the cat. A talking cat! The miller’s son could not believe his ears. So the miller’s son bought the cat a fine pair of boots and the two of them set off to seek their fortune. After a while they came to a grand palace. “Wouldn’t it be wonderful to live so grandly?” said the miller’s son. Later, while the miller’s son was sleeping, the cat went hunting and caught a rabbit. He put it in a sack and took it to the palace.

1

“A gift to the king from my master, the Marquis of Carabas,” said the cat, presenting it to the king’s servant. The cat went back to the miller’s son and told him what he had done. “Now the king will want to know who the Marquis of Carabas is,” laughed the cat. A clever cat! The miller’s son could not believe his ears. Every day for a week, the cat delivered a gift to the king, each time saying it was from the Marquis of Carabas. After a while, the king became very curious and decided he’d like his daughter to meet this mysterious nobleman, whoever he might be.

The Ugly Duckling

O

nce upon a time, there was a proud and happy duck. “I have six beautiful eggs and soon I will have six beautiful ducklings,” she told the other creatures of the riverbank as they passed by. It wasn’t long before she heard a CRACK! And one beautiful duckling popped her little head out of the shell. “Isn’t she a beauty!” Mother Duck exclaimed. Soon there was another… and then another… until she had five beautiful little ducklings, drying their fluffy yellow wings in the spring air.

1 The Ugly Duckling.indd 1-2

“Just one egg left,” quacked Mother Duck, “and it’s a big one!” For quite a while, nothing happened. Mother Duck was starting to worry when, at last, the big egg began to hatch. Tap, tap, tap! Out came a beak. Crack, crack, crack! Out popped a head. Crunch, crunch, crunch! Out came the last duckling. “Oh, my!” said Mother Duck. “Isn’t he… DIFFERENT!” The last duckling did look strange. He was bigger than the other ducklings and didn’t have such lovely yellow feathers. “That’s all right,” said Mother Duck. “You’re my special little duckling. Now come on into the water,” she told her little ones. “You must learn to swim straight away.” One by one, the ducklings hopped into the water, landing with a little plop. But the ugly duckling fell over his big feet and landed in the water with a great big SPLASH! The other ducklings laughed at their clumsy brother. “Now, my little chicks,” said Mother Duck, “stick together and stay behind me!”
