She also lectures in literature and creative writing. Her books on horses include Horse (2008), To Amaze the People with Pleasure and Delight—The Horsemanship Manuals of William Cavendish, first Duke of Newcastle (2010), and a novel, The Horses (2010). She has ridden since her fifth birthday and became a convert to Western riding and Appaloosa horses while holidaying in Scotland in 1990. She has ridden Westerntrained spotty horses ever since. 200 g/7 oz unsalted butter, softened 150 g/51/2 oz caster sugar 1 large egg 2 tsp vanilla extract 400 g/14 oz plain flour

1. Line three baking sheets with baking paper and set aside.

2. Follow the basic recipe (see page 6) to make the cookie
dough. Gather it into a ball with your hands, wrap it in clingfilm and chill in the refrigerator for at least 10 minutes. 3. Place the dough between two sheets of baking paper.
Roll out to a thickness of about 8 mm/3/8 inch. Press out 12 cookies using an 8 cm/31/4 inch round cutter, re-rolling the dough as necessary. 4. Transfer the cookies to the prepared baking sheets,

leaving room for the lollipop sticks. Dip one end of a lollipop stick in water and then carefully insert it into the centre of the bottom of a cookie round, pushing it about halfway into the cookie. Repeat with the remaining lollipop sticks and cookies. Chill in the refrigerator for 10 minutes. Meanwhile, preheat the oven to 180°C/350°F/Gas Mark 4. 5. Bake the cookies in the preheated oven for 15–18 minutes or until golden. Remove from the oven and cool the cookies on the baking sheets for a few minutes, then transfer them to wire racks and leave to cool completely.

85 g/3 oz baby spinach 40 g/1½ oz lamb’s lettuce 40 g/1½ oz ruby chard leaves 2 ruby grapefruit, peel removed with a knife, cut into segments, trimmings reserved 1 orange, peel removed with a knife, cut into segments, trimmings reserved 4 sea bass fillets finely grated rind and juice of 1 lime sea salt and pepper 1 tbsp chopped fresh coriander, to garnish
How to make it Put the spinach, lamb’s lettuce and chard leaves in a salad bowl. Scatter on the grapefruit and orange segments. Squeeze the juice from the trimmings into a screw-top jar and reserve. Preheat the grill to hot and line the grill pan with foil. Arrange the sea bass flesh side-up on the foil, sprinkle with the lime rind and juice and season. Turn the fish over, season the skin side and drizzle with olive oil. Grill for 6-8 minutes, until the skin is browned and the fish flakes when pressed with a knife. For the dressing, add the oil and honey to the fruit juice in the jar, season, screw on the lid and shake well. Pour over the salad and toss gently, then divide between four plates. Break each fish fillet into bite-size pieces, then arrange them on top of the salads. Sprinkle with the coriander, spoon over any juices from the grill pan, then serve.

Brain-boosting ruby couscous salad with griddled chicken This salad looks good and does you good too! The beetroot turns everything a deep vibrant red and glistens jewel-like with the pomegranate seeds.
Serves 4
Create your salad
✽ 175 g/6 oz giant wholewheat couscous ✽ 175 g/6 oz ready cooked, peeled beetroot, diced ✽ 1 small red onion, finely chopped ✽ 125 g/4½ oz cherry tomatoes ✽ 1 pomegranate, halved, seeds removed ✽ 2 tbsp chopped fresh mint
Put the couscous in a saucepan of boiling water, bring back to the boil and simmer for 6–8 minutes, until just tender. Drain into a colander, rinse, drain again, then transfer to a salad bowl.

juice of 1 lemon 2 tbsp flaxseed oil 1 tbsp olive oil 2 tsp tomato purée Salt and pepper
Add the beetroot, red onion, cherry tomatoes and pomegranate seeds and toss. For the dressing, put the lemon juice, flaxseed oil and olive oil in a screw-top jar. Add the tomato purée, then season, screw on the lid and shake well. Pour over the salad, then sprinkle on the mint and toss gently. For the griddled chicken, put the lemon juice, olive oil, tomato purée and crushed peppercorns in a clean plastic bag, twist and shake well. Add the chicken slices, seal well, then shake until the chicken is evenly coated in the mixture. Preheat a griddle pan or grill to hot. Cook the chicken, in batches if necessary, for 10 minutes, turning once or twice, until browned and cooked through. Arrange over the top of the salad and serve.

Greasing and lining cupcake tins • •
Always follow the recipe instructions about preparing tins.

If, however, you are not using paper cupcake cases (perhaps you would like smoothsided cupcakes instead of pleated ones, for a change), grease bun/mufÅn tins with melted or softened butter (preferably unsalted) or a Æavourless vegetable oil. Spray vegetable oils are also useful for greasing tins. Alternatively, a bun/mufÅn tin can be greased and Æoured before use.

With most cupcake recipes, you will line the bun/mufÅn tins with paper cupcake cases, so there is no need to grease the tins before use.
Basic recipe for vanilla cupcakes Makes 12
Preparation time: 10 minutes Cooking time: 15–20 minutes
Using a piece of kitchen paper, you can wipe a thin Ålm of sunÆower or vegetable oil over the top of the bun/mufÅn tin, before lining the holes with paper cases, if you like. If the cupcakes then rise above their cases during baking, the greased surface will help to prevent the tops of the cupcakes sticking to the tin.

Preheat the oven to 180°C/350°F/Gas Mark 4. Line a 12-hole cupcake or bun tin with paper cases.

Put the butter and caster sugar in a large bowl. Using a wooden spoon or an electric mixer, beat together until the mixture is pale, light and Æuffy.
3.
Gradually beat in the eggs. Add about 1 tablespoonful at a time and beat thoroughly after each addition. Beat in the vanilla extract.
4.
Using a large metal sieve, sift the Æour into the bowl. Using a metal spoon, gently fold the Æour into the mixture until thoroughly incorporated.
5.
Add the milk and fold gently into the batter. The cupcake batter should have a smooth consistency and drop easily from the spoon if tapped on the side of the bowl.
6.
Carefully spoon the batter into the paper cases, dividing it evenly and taking care not to over-Åll them.

Sugars, syrups and honey – Caster sugar is ideal for baking as its Åne grains dissolve easily, making it ideal to cream smoothly with softened butter or margarine.

Other sugars, such as soft light and dark brown sugars, have more depth of Æavour than white sugars and add richness and colour to your cupcakes. If possible, choose unreÅned or muscovado brown sugars which have an excellent Æavour.

Flour – Cupcake recipes either use self-raising Æour or a combination of plain Æour
and baking powder or bicarbonate of soda. Always check that self-raising Æour has not passed its best before date, as the raising agent will be less effective. To make your own self-raising Æour, add 2 level teaspoons of baking powder to each 225 g/ 8 oz of plain white Æour.
To incorporate as much air and lightness into the cupcake batter as possible, sift the Æour before using. If using wholemeal Æour, remember to tip any bran left in the sieve into the mixing bowl, as this is the most nutritious and Æavoursome part.
• Demerara sugar has large golden crystals, which add crunch and texture when sprinkled over the tops of cupcakes before baking. Icing sugar has a Åne powdery texture that dissolves easily, making it perfect for buttercream, royal and glacé icings and frostings.
Only buy these raising agents in small quantities and check the best before date before using as they have a limited shelf-life.
•
Golden syrup, maple syrup and honey are all useful sweet syrups to keep in the storecupboard. They can be used in place of sugar in some cupcake recipes or for frostings and glazes.
•
Eggs – For the best baking results, always use fresh eggs at room temperature. If eggs are too cold, they will curdle the creamed butter and sugar mixture. Be sure to use the correct egg size for the recipe – the recipe or cookbook should give guidance on the size of eggs required.
Raising agents – Both baking powder and bicarbonate of soda are used as raising agents to produce light and airy cupcakes. Baking powder is a mixture of cream of tartar and bicarbonate of soda.
Flavouring extracts – Vanilla and almond extracts, when used sparingly, can add a
wealth of Æavour to a simple cupcake batter and other natural extracts, such as lemon, orange and peppermint, are also available. Be sure to buy natural extracts, not synthetic Æavourings (essences). For delicately scented cupcakes, invest in a small bottle of rosewater and orange Æower water.

Cocoa powder – Cocoa powder is a Åne, reddy-brown powder that has a bitter but
intense chocolate Æavour. Unsweetened cocoa powder is widely used as a Æavouring in cupcakes, other cakes, bakes and desserts. It can also be lightly sifted over baked cupcakes as a decoration.

1. Preheat the oven to 180°C/350°F/Gas Mark 4. Put 16 paper cases in bun trays. 2. Put the pistachio nuts in a food processor or blender and process for a few seconds until finely ground. Transfer the ground nuts to a large bowl and add the butter, caster sugar, flour, eggs and yogurt. Using an electric mixer, beat everything together until smooth. 3. Spoon the mixture into the paper cases. Bake in the preheated oven for 20–25 minutes, or until risen, golden and firm to the touch. Transfer to a wire rack and leave to cool. 4. To make the frosting, put the butter, lime cordial and a little green food colouring, if using, in a bowl and beat until fluffy. Sift in the icing sugar and beat until smooth. Spoon the frosting into a piping bag fitted with a large star nozzle. Pipe a swirl of frosting on top of each cupcake and decorate with the chopped pistachio nuts.

Kadhi is a traditional Gujarati preparation of a wonderful sweet and spicy curd mixture thickened with gram flour. This authentic Gujarati-style spiced yogurt soup is slightly thinner in texture than the Punjabi version of the same dish. They both have a balance of sweet, sour and spice flavours. serves : 4
1 litre/1¾ pints water 500 ml/18 fl oz natural yogurt 3 tbsp gram flour 4 fresh green chillies, slit lengthways 1 tbsp finely grated ginger 1 tbsp palm sugar 1 tsp ground turmeric salt, to taste 1 tbsp vegetable oil 1 tbsp ghee 2 dried red chillies, broken into pieces 8 fresh curry leaves 1 tsp cumin seeds

Mix the water, yogurt and gram flour together in a large saucepan until smooth. Add the green chillies, ginger, palm sugar, turmeric and salt. Bring the mixture to the boil, then immediately reduce the heat to low and cook, stirring frequently, for about 8–10 minutes.

Stir the spiced oil into the yogurt mixture in the saucepan. Ladle into warmed bowls, scatter over the coriander and serve hot.

Meanwhile, heat the oil and ghee together in a small frying pan over a medium heat. Add the dried red chillies, curry leaves, cumin seeds, mustard seeds and asafoetida and cook, stirring constantly, for 2–3 minutes, or until the seeds splutter and pop.

The base is a store-bought, crispy-fried puffed ‘cracker’ called panipuri, which is available from Asian grocery stores. If you cannot get hold of them, you can use any thin, wheat crackers you can find. Sev are thin, crispy strands of spiced, fried chickpea flour. serves : 4
200 g/7 oz dried chickpeas 400 g/14 oz natural yogurt 1 tsp grated fresh ginger 1 tsp chilli powder ½ tsp ground cumin

Soak the chickpeas in a bowl of cold water for 6–8 hours. Drain, then place the chickpeas in a saucepan of cold water and bring to the boil. Cook for 25–30 minutes, or until tender. Drain well and set aside

Whisk the yogurt in a bowl until smooth, then stir in the ginger, chilli powder, ground cumin, ground coriander, salt and pepper. Set aside.

Place about 1 tablespoon of potato on top of each panipuri. Divide the chickpeas over the top and drizzle over the spiced yogurt. Spoon the sweet chilli sauce and coriander chutney on top. Scatter over the red onion, chopped coriander and sev. Finally, scatter over the pomegranate seeds and serve immediately.

Break each panipuri gently with a fork to create a tiny opening on the top. Arrange the panipuris in a single layer on a large serving platter.

Saturn has a surface of clouds, which form bands attributable to the rotation of the planet on its axis. Saturn’s clouds are calmer and less colourful than those of Jupiter. Temperatures in the highest (white) clouds reach -140o C (-220o F) and a layer of fog extends over them.
Just like Jupiter, Saturn is a huge ball of gas that encompasses a small solid core. To an onlooker, it would seem like a just another yellow-tinted star; however, with the help of a telescope, its rings can be clearly distinguished. In the distance, a rumble. Thunder, maybe. But no – it gets closer,
develops a rhythm, remains steady and builds. Then, over the hill, a
herd of horses appears, the gold of a low sun behind them. They surge over the green and yellow pasture like a flock of birds through the sky, sharing one instinct but with many hearts pounding as strongly as the hooves. The wind catches their manes and tails, sweat glistens on their burnished coats as they gallop by, swerving around a stand of woodland then sweeping back over the hill and out of sight. But we stand watching for some time, hoping they might come back.

he power of horses running together stirs a sense of freedom and excitement in us – we find the collective power of animals in a group hugely appealing. The thunder of hooves is an evocative sound, raising adrenalin and inspiring us to scramble for a good view – but from a safe position! No one would risk standing in the way of galloping horses and that collective power sums up much of the strength that the herd offers. A horse alone is vulnerable to predators, but as part of a herd it shares the collective eyes, ears and instincts of all its companions for protection. The safety of the herd is central to the way horses perceive the world. When a herd of horses – and to the horse, a herd is any number greater than one – is resting, usually one individual will remain watchful, either 10
’’
standing while others lie down, or lying up on its chest while the others lie out flat. The watchhorse may seem to be dozing too, but it will look up instantly if there is even a slight change in the surroundings. It is a very relaxed group indeed in which one horse does not remain more alert than the others, and this usually only happens when all-round visibility is good. Even domestic horses, raised for generations in countries where there are no large predators, retain this instinctive sense of watchfulness. When horses are grazing, if one raises its head or wanders off, the others will soon follow. If they drift apart as they seek the best grass, it is not long before the group re-forms. The sense of unseen communication is strong and the bonds of the group are reinforced by synchronized behaviour.

The youngest son, a kind man who had always put his father and brothers before himself, was left nothing but his father’s cat. “What will become of me?” said the young miller’s son with a sigh, looking at his cat. “Buy me a fine pair of boots and I will help you make your fortune, for your father thought you deserved it,” replied the cat. A talking cat! The miller’s son could not believe his ears. So the miller’s son bought the cat a fine pair of boots and the two of them set off to seek their fortune. After a while they came to a grand palace. “Wouldn’t it be wonderful to live so grandly?” said the miller’s son. Later, while the miller’s son was sleeping, the cat went hunting and caught a rabbit. He put it in a sack and took it to the palace.

“A gift to the king from my master, the Marquis of Carabas,” said the cat, presenting it to the king’s servant. The cat went back to the miller’s son and told him what he had done. “Now the king will want to know who the Marquis of Carabas is,” laughed the cat. A clever cat! The miller’s son could not believe his ears. Every day for a week, the cat delivered a gift to the king, each time saying it was from the Marquis of Carabas. After a while, the king became very curious and decided he’d like his daughter to meet this mysterious nobleman, whoever he might be.

The Ugly Duckling
O
nce upon a time, there was a proud and happy duck. “I have six beautiful eggs and soon I will have six beautiful ducklings,” she told the other creatures of the riverbank as they passed by. It wasn’t long before she heard a CRACK! And one beautiful duckling popped her little head out of the shell. “Isn’t she a beauty!” Mother Duck exclaimed. Soon there was another… and then another… until she had five beautiful little ducklings, drying their fluffy yellow wings in the spring air.

“Just one egg left,” quacked Mother Duck, “and it’s a big one!” For quite a while, nothing happened. Mother Duck was starting to worry when, at last, the big egg began to hatch. Tap, tap, tap! Out came a beak. Crack, crack, crack! Out popped a head. Crunch, crunch, crunch! Out came the last duckling. “Oh, my!” said Mother Duck. “Isn’t he… DIFFERENT!” The last duckling did look strange. He was bigger than the other ducklings and didn’t have such lovely yellow feathers. “That’s all right,” said Mother Duck. “You’re my special little duckling. Now come on into the water,” she told her little ones. “You must learn to swim straight away.” One by one, the ducklings hopped into the water, landing with a little plop. But the ugly duckling fell over his big feet and landed in the water with a great big SPLASH! The other ducklings laughed at their clumsy brother. “Now, my little chicks,” said Mother Duck, “stick together and stay behind me!”
