Macaroons MACARONS
In France a pastry chef is only considered as a real artist if he is able to make „quality“ macarons. The wording has italian sources and comes from „maccare“ and means nothing more than „to make“. The French pastry house „Ladurée“ claims the invention of the macarons in 1791, but in fact they first appeared during a Royal Wedding in 1533 served with paté de foie gras.

Place the ground almonds and icing sugar in a food processor and process for 15 seconds. Sift the mixture into a bowl. Line two baking sheets with baking paper.

Place the egg whites in a clean, grease-free bowl and whisk until holding soft peaks. Gradually whisk in the caster sugar to make a firm, glossy meringue. Whisk in the vanilla extract.

SERVES 8–10 PREP TIME: 25 minutes COOKING TIME: 60 minutes
INGREDIENTS 180 g/6¼ oz butter, softened, plus extra for greasing
2 eggs 90 g/3¼ oz cream cheese 225 g/8 oz plain flour, plus extra for dusting

Preheat the oven to 160°C/325°F/Gas Mark 3. Generously grease a 27-cm/11-inch loaf tin. Dust with flour and line the base with baking paper.

Put the butter, sugar and vanilla extract into a large mixing bowl and beat with an electric mixer until light and fluffy. Add the eggs, one at a time, beating after each addition until incorporated (picture 1).

Add the cream cheese and beat until well combined. Sift together the flour, baking powder and salt into a separate bowl. Put the sultanas into a small bowl. Add 30 g/1 oz of the flour mixture to the sultanas and stir until they are well coated (picture 2). Gradually add the remaining flour mixture to to the batter, alternating with the buttermilk, and mix until smooth. Add the sultanas and stir with a wooden spoon until well combined.

Transfer the mixture to the prepared tin (picture 3), using a spatula to smooth the surface. Bake in the middle of the preheated oven for about 1 hour, until golden, and a cocktail stick inserted into the centre comes out clean. Remove from the oven and leave to cool in the tin for 10 minutes. Using a flexible spatula, separate the cake from the sides of the tin and transfer to a wire rack.

Meanwhile, to make the icing, combine the sugar and lemon juice in a small bowl and stir until smooth. Spread the icing over the warm cake and leave to cool completely. Cut into slices and serve..

Pour the mixture into a piping bag fitted with a 1-cm/½-inch plain nozzle. Pipe 32 small rounds onto the prepared baking sheets. Tap the baking sheets firmly onto a work surface to remove air bubbles. Leave at room temperature for 30 minutes. Preheat the oven to 160°C/325°F/Gas Mark 3.

Bake in the preheated oven for 10–15 minutes. Cool for 10 minutes, then carefully peel the macaroons off the baking paper. Leave to cool completely.

To make the filling, beat the butter and vanilla extract in a bowl until pale and fluffy. Gradually beat in the icing sugar until smooth and creamy. Use to sandwich pairs of macaroons together.

The image of a tea cake often brings thoughts of afternoon tea and a serving of a flat semi sweet cookie or biscuit. Actually tea cakes are defined differently in every country. The Irish tea cakes first were very poor and dry because nobody in Ireland could afford the necessary ingredients. It’s only since the 1920s that more and more dry fruit were incorporated.

Using a spatula, fold the almond mixture into the meringue one third at a time. When all the dry ingredients are thoroughly incorporated, continue to cut and fold the mixture until it forms a shiny batter with a thick, ribbon-like consistency.

PREP TIME 30 minutes COOK TIME 20 minutes INGREDIENTS: 125 g/4½ oz plain flour 65 g/2¾ oz cocoa powder 1½ tsp baking powder ¼ tsp salt 115 g/4 oz unsalted butter, at room temperature, plus extra for greasing 200 g/7 oz caster sugar 2 tsp vanilla extract 2 large eggs 125 ml/4 fl oz double cream Frosting & topping 115 g/4 oz unsalted butter, softened 125 g/4½ oz smooth peanut butter 185–315 g/6½–10¾ oz icing sugar 2 tbsp milk pinch of salt 225 g/8 oz plain chocolate coating
1. Preheat the oven to 180°C/350º/Gas Mark 4 and grease a 23 x 33cm/9 x 13-inch cake tin. 2. To make the cake, put the flour, cocoa powder, baking powder and salt into a medium-sized bowl. 3. Put the butter and sugar into a large bowl and beat with an electric mixer set on high speed for several minutes, until pale yellow and fluffy. Add the vanilla extract, then add the eggs, one at a time, beating after each addition until incorporated. Add half the flour mixture and beat on medium speed until incorporated. Scrape down the side of the bowl, add the cream, and beat until incorporated. Scrape down the side of the bowl, add the remaining flour mixture and beat until just incorporated.

9. To make the topping, put the chocolate coating and oil into a small microwaveable bowl and heat on Low for 30 seconds at a time, until the chocolate is mostly melted. Stir vigorously with a fork until the chocolate is completely melted. 10. Spoon the chocolate over the tops of the frosted cakes so that the frosting is completely covered in chocolate. Chill in the refrigerator for 5–10 minutes, until the chocolate is set. Serve at room temperature.

Place the cake on a flat surface and use a 6-cm/2½–inch round cutter to cut out 12 rounds. 7. If making 475-ml/16-fl oz jars, place one round of cake in the base of each of six wide-mouthed jars. Spoon 2–3 tablespoons of frosting on top, smoothing with the back of a spoon. Top the frosting with a second layer of cake and top that with a second layer of frosting, smoothing the top. 8. If making twelve 225-ml/8-fl oz jars, layer them with 1 round of cake and 1 layer of frosting.

Cook's Tips Refrigerate the cakes in the covered jars for up to 3 days or freeze them for up to 3 months. Bring to room temperature before serving.

PREP TIME 45 minutes COOK TIME 24 minutes INGREDIENTS: non-stick baking spray, for greasing 200 g/7 oz plain flour 1½ tsp baking powder ¼ tsp salt 115 g/4 oz unsalted butter, at room temperature 200 g/7 oz caster sugar 2 tsp vanilla extract 4 large egg whites 125 ml/4 fl oz milk red, yellow, green and blue gel food colouring multi-coloured hundreds and thousands, to decorate Frosting 3 egg whites 175 g/6 oz sugar 225 g/8 oz unsalted butter, at room temperature 1 tbsp vanilla extract

1. Preheat the oven to 180°C/350ºF/Gas Mark 4. Spray the insides of six 225-ml/8-fl oz wide-mouthed preserving jars with baking spray and place the jars on a Swiss roll tin. 2. To make the cakes, put the flour, baking powder and salt into a medium-sized bowl and mix to combine. 3. Put the butter and sugar into a large bowl and beat with an electric mixer set on high speed until pale and fluffy. Add the vanilla extract, then add the egg whites, one at a time, beating after each addition until incorporated. Colour one bowl purple with 8 drops of red food colouring and 4 drops of blue.
Cook's Tips To store the cakes, follow the recipe until the cooked cakes have cooled to room temperature. Do not prepare the frosting. Seal the jars with their lids and store the cakes in the refrigerator for up to 5 days or in the freezer for up to 3 months. Bake in the preheated oven for 22–24 minutes, until a cocktail stick inserted into the centre of a cake comes out clean. Remove from the oven and leave to cool. 6. Meanwhile, to make the frosting, heat some water in the base of a double boiler until just simmering. Put the egg whites and sugar into the top of the double boiler and mix to combine. Set over the simmering water (the pan should be touching the water) and whisk constantly for about 5 minutes, until the sugar is completely dissolved (carefully dip in a

• Die Wacholderbeeren in einem Mörser zerstoßen. Die Wildschweinschulter mit Salz, Pfeffer und Wacholderbeeren einreiben. • Schalotten, Karotten und Sellerieknolle schälen. Die Schalotten grob hacken, die Karotten in Scheiben und die Sellerieknolle in Würfel schneiden. Die Porreestange putzen, unter fließendem Wasser waschen und in Ringen schneiden. • Den Backofen auf 180 °C vorheizen. • Das Butterschmalz in einem Bräter auf dem Herd erhitzen und das Fleisch darin von allen Seiten kräftig anbraten. Gemüse und Tomatenmark zugeben und kurz anrösten. Lorbeerblatt, Gewürznelke und Pfefferkörner unterrühren und alles mit dem Wein ablöschen. • Den Bräter in den Ofen stellen und den Braten etwa 45 Minuten braten. • Für die Streichholzkartoffeln die Kartoffel waschen, schälen und mit einem Gemüsehobel in etwa 3 mm breite und 5 cm lange streichholzgroße Streifen hobeln. In einer Schüssel mit Wasser kurz wässern, dann auf einem Küchentuch trocknen lassen. • Das Pflanzenöl in einem großen Topf auf 160 °C erhitzen. Die Streichholzkartoffeln portionsweise darin frittieren, bis sie gebräunt sind. Mit einem Schaumlöffel herausnehmen, auf Küchenpapier abtropfen lassen und salzen. • Den Braten aus dem Bräter nehmen und warm stellen. Für die Sauce den Bratensatz vollständig vom Boden lösen und durch ein Sieb in einen Stieltopf passieren. Wildfond und Sahne unterrühren, kurz aufkochen und mit Salz und Pfeffer abschmecken. • Den Wildschweinbraten in Scheiben schneiden und mit Sauce und Streichholzkartoffeln servieren.

300 g Zartbitterkuvertüre 4 Eier 50 g Zucker 2 EL ungesüßtes Kakaopulver 4 cl Kirschwasser 50 ml Espresso 1 Prise Salz 250 g Schlagsahne 20–30 g Vollmilchschokolade
• Die Zartbitterkuvertüre in Stücke schneiden und in einer Schüssel über einem Wasserbad (s. S. 78) unter ständigem Rühren mit einem Schneebesen langsam schmelzen lassen. • Die Eier trennen und das Eiweiß im Kühlschrank kalt stellen. Eigelb und Zucker mit einem Handrührgerät schaumig rühren. • Kakaopulver, Kirschwasser und Espresso in die Eiermasse rühren. Dann die geschmolzene Schokolade unterrühren, bis eine glatte Creme entsteht. • Eiweiß und Salz steif schlagen und den Eischnee mit dem Schneebesen in die Creme rühren. • Die Sahne ebenfalls steif schlagen und mit einem Teigschaber unterheben. Die Mousse mindestens 2 Stunden im Kühlschrank kalt stellen. • Mit einem Esslöffel große Kugeln aus der Mousse löffeln und in Gläser füllen. Mit einem Sparschäler kleine Röllchen von der Schokolage schälen und diese vor dem Servieren über die Mousse streuen.

To decorate • 1 cup confectioners’ sugar • 2 tablespoons lemon juice
1 Preheat the oven to 350°F. Grease three cookie sheets. 2 Sift the flour, ginger, and baking soda together into a bowl. Add the butter and rub into the flour until the mixture resembles fine breadcrumbs, then stir in the brown sugar. 3 In another bowl, beat together the egg and light corn syrup with a fork. Pour this mixture into the flour mixture and mix to make a smooth dough, kneading lightly with your hands. 4 Roll out the dough on a lightly floured surface to about 1⁄4 inch/5 mm thick and cut into shapes using a snowflake-shaped cutter. Transfer the cookies to the prepared cookie sheets. 5 Bake in the preheated oven for 10 minutes, until golden brown. Let cool for 5 minutes before transferring to a wire rack to cool completely. 6 Once the cookies are cool, combine the confectioners’ sugar and lemon juice until smooth and spoon into a pastry bag fitted with a fine tip. Pipe snowflake shapes onto each cookie with the icing. Let set for a few hours.

Red Salad with Beetroots & Radish SERVES 4 8 small cooked beetroots, quartered 1 small red onion, cut into thin wedges 1 bunch radishes, sliced 1 tbsp chopped fresh mint 125 ml/4 fl oz extra virgin olive oil 1 tbsp whole-grain mustard
Avocado, Feta & Rocket Salad SERVES 4
1 tbsp balsamic vinegar 1 tbsp lemon juice 2 tsp honey salt and pepper flatbread, to serve
2 ripe avocados 4 handfuls rocket 125 g/4 1/2 oz feta cheese, crumbled 100 ml/3 1/2 fl oz cup olive oil 2 tbsp white wine vinegar 1 shallot, finely chopped
1. Toss together the beetroot, onion and radishes and stir in half the mint. Arrange on four serving plates.
1. Halve, peel, pit and slice the avocados and arrange on a serving dish with the rocket. Top with the feta cheese.
2. To make the dressing, put the oil, mustard, vinegar, lemon juice and honey into a screw-top jar and shake well to mix. Season with salt and pepper to taste.

Limoncello Cupcakes INGREDIENTS makes 12 1½ cups all-purpose flour 1½ teaspoons baking powder ¼ teaspoon salt 1 stick unsalted butter, softened 1 cup superfine sugar or granulated sugar
2 extra-large eggs finely grated zest and juice of 1 lemon ¼ cup milk rainbow sprinkles, to decorate
frosting 3 extra-large egg whites ¾ cup superfine sugar or granulated sugar 2 sticks unsalted butter, softened ¼ cup Limoncello finely grated zest of 1 lemon
METHOD
1. Preheat the oven to 350°F and line a 12-cup cupcake pan with paper liners. 2. Sift together the flour, baking powder, and salt in a bowl. Put the butter and sugar into a separate bowl and beat until pale and fluffy. Add the eggs, one at a time, beating after each addition. Add half of the flour mixture, the lemon zest and juice, and milk and beat until incorporated. Add the remaining flour mixture and mix. 3. Spoon the batter into the paper liners and bake in the preheated oven for 20 minutes, until a toothpick inserted into the center of a cupcake comes out clean. Remove from the oven and let cool in the pan for 1–2 minutes, then transfer to a wire rack to cool completely. 4. To make the frosting,put the egg whites and sugar in the top of a double boiler (or use a heatproof bowl set over a saucepan of gently simmering water) and whisk over simmering water until the sugar has completely dissolved. Remove from the heat and whisk the mixture for 4–5 minutes. Add the butter, 2 tablespoons at a time, and continue to beat until it holds stiff peaks. Add the Limoncello and lemon zest and beat until just combined. 5. Spoon the frosting into a pastry bag fitted with a starshape tip and pipe the frosting onto the cupcakes. Top with the rainbow sprinkles and serve.

8. Arrange the polenta on serving plates. Place the beetroot and a slice of horseradish butter on top. Add a handful of rocket to each plate and serve immediately.

Place 4 beetroot halves and a thyme sprig on a square of thick foil. Season to taste. Wrap in a loose parcel, sealing the edges. Repeat with the remaining beetroots and place on a baking sheet. 5. Roast in the preheated oven for about 1 hour or until just tender. 6. Meanwhile, mash the horseradish with the butter, ½ teaspoon of salt and ¼ teaspoon of pepper. Roll into a log using a piece of clingfilm and chill in the refrigerator.

1. Heat the oil in a large frying pan over a medium– high heat. Add the onion and red pepper and fry, stirring, for 3–5 minutes, or until soft. Add the garlic, chilli powder, coriander, cumin and cayenne pepper and stir for a further minute. 2. Add the tomatoes, passata, thyme and sugar and season with salt and pepper. Bring to the boil, stirring, then reduce the heat so the liquid just bubbles and leave to cook for 15–20 minutes until the sauce reduces by about half. 2

1. Put the quinoa in a saucepan with the water. Bring to a boil, then cover and simmer over a very low heat for 15 minutes. Remove from the heat but leave the pan covered for a further 5 minutes to allow the grains to swell. Fluff with a fork and set aside.

How did large herbivorous dinosaurs manage to transport blood to the brain?
Dinosaurs are an example of adaptation to the environment. They dominated Earth for more than 150 million years. These animals appeared in the Triassic era and disappeared at the end of the Cretaceous era, for reasons that are still not clear today. The large sauropods had very long necks and it has been suggested that the heart would need to pump blood with great force to be able to reach the brain. lice was beginning to get very tired of sitting by her sister on the bank and of having nothing to do. It was hot, which made her feel very sleepy and slow.
She was considering whether the pleasure of making a daisy-chain would be worth the trouble of getting up and picking the daisies, when suddenly a White Rabbit with pink eyes ran close by her. There was nothing so very remarkable in that; nor did Alice think it so very unusual to hear the Rabbit say to itself, “Oh dear! Oh dear! I shall be too late!” But when the Rabbit actually took a watch out of its waistcoat pocket, looked at it and hurried on, Alice realised that she had never before seen a rabbit with either a waistcoat pocket, or a watch to take out of it. So she ran across the field after it and was just in time to see it pop into a large rabbit hole. In another moment, in went Alice after it. The rabbit hole went straight on like a tunnel and then dipped suddenly down, and Alice found herself falling into what seemed like a deep well. It was too dark to see where she was falling to, but she could see that the sides of the well were filled with cupboards and bookshelves. She picked a jar labelled ‘Orange Marmalade’ from one shelf. Sadly it was empty, so she put it back. Down and down she fell. There was nothing else to do so Alice started thinking about her cat. “Dinah, my dear, I wish you were down here with me!” Alice felt that she was dozing off and had just begun to dream, when suddenly, thump! Down she came on a heap of dry leaves, and the fall was over.

Dorothy looked confused. “You’re very kind, but I haven’t killed anyone.” The woman laughed. “Well, your house did! Look!” Dorothy turned and saw two legs with silver shoes on the end of them, sticking out from under a corner of the house. “Oh, dear!” she cried. The woman smiled reassuringly. “Don’t worry. She was one of the two wicked witches who rule in our Land of Oz. The other lives in the West. I’m the good Witch of the North, and the other good witch rules in the South. But even more powerful than us witches is the great Wizard of Oz, who lives in Emerald City.” Dorothy felt overwhelmed by all this talk of witches and wizards and she began to sob. “I must get home to my uncle and aunt,” she said. “Can you help me?” The good witch shook her head. “Only the Wizard of Oz can help you. You must travel to the Emerald City. Oz is a dangerous land, but my kiss will keep you from harm.” She kissed Dorothy on the forehead then handed her the Wicked Witch’s silver shoes. “Wear these. They have special magical powers. And now, just follow the yellow-bricked road.” And with that, she disappeared in a puff of smoke.
